Abstract:A galactomannan polysaccharide extracted from guar beans, known as guar gum (GG), is one of them, which has a wide range of utilities and possesses popularity among scientists and consumers. This study was aimed to investigate the characteristics, mechanisms, and applications of GG in different food technologies. With the world continuing to push toward modernization and the consumption of processed foods growing at an exponential rate, the demand for texturizing agents and natural additives has also risen as a result. It has become increasingly common to use thickening agents in food products to modify their rheological and textural properties and enhance their quality characteristics. They can be divided into (1) animal derived (chitosan and isinglass), (2) fermentation produced (xanthan and curdlan), (3) plant fragments (pectin and cellulose), (4) seaweed extracts (agar and alginate), and (5) seed flours (guar gum and locust bean gum). The primary functions of these materials are to improve moisture binding capacity, modify structural properties, and alter flow behavior. In addition, some have another responsibility in the food sector, such as the main ingredient in the delivery systems (encapsulation) and nanocomposites. Abstract:Guar gum is a novel agrochemical processed from endosperm of cluster bean. It is largely used in the form of guar gum powder as an additive in food, pharmaceuticals, paper, textile, explosive, oil well drilling and cosmetics industry. Industrial applications of guar gum are possible because of its ability to form hydrogen bonding with water molecule. Thus, it is chiefly used as thickener and stabilizer. It is also beneficial in the control of many health problems like diabetes, bowel movements, heart disease and colon cancer. Abstract:Guar gum (GG) is a natural heteropolysaccharide. Due to its non-toxic, eco-friendly, and biodegradable nature, GG has found wide applications in many areas, in particular food, paper, textile, petroleum, and pharmaceutical industries. Therefore, GG is often called "Black Gold" as well. Due to the presence of hydroxyl groups, GG can be modified by various methods. The physical and biological properties of GG can be modulated by chemical modifications. In this manuscript, various methods for the chemical modifications of GG have been discussed according to the type of modifications. Mechanistic insights have also been provided whenever possible. In addition, potential applications of new GG derivatives have also been briefly mentioned.

Genetic Diversity and Population Structure Analysis in Guar

Abstract:Guar [Cyamopsis tetragonoloba (L.) Taub] was domesticated in India and Pakistan. It is mainly self-pollinated, bushy, and deeply tap-rooted. Guar seed endosperm contains galactomannan gum, which is used in many food products, pharmaceuticals, cosmetics, explosives, meat products, and pet foods, and in the textile industry, yet its genetic diversity remains largely underexplored. Using 7000 high-quality single nucleotide polymorphism (SNP) markers acquired from genotyping by sequencing (GBS), we analyzed the genetic diversity and population structure in 225 guar accessions from India, Pakistan, and the United States. Structure Harvester revealed that K = 3 had the best delta K, whereas K = 2 had the second-highest delta K. Three major genetic clusters (K = 3) were identified using population structure analysis, utilizing an admixture model: 156 accessions (69.3%) were classified into Q1, 23 accessions (10.2%) in Q2, and 16 accessions (7.1%) in Q3. The remaining 30 accessions (13.3%) were included in the admixture. In all three of the subpopulations at K = 3, most of the guar accessions came from India. We also found that these clusters mostly correlated with geographic origins. Results showed that the Q2 and Q3 subpopulations included only guar accessions from India. Genetic resources from Q2 and Q3 may represent an untapped reservoir for introducing beneficial variety into the U.S. breeding populations. This genetic diversity and population structure analysis of the guar gene pool will be of interest to conduct allele mining and donor parent selection for the development of new and better guar germplasm for desired traits.

Abstract:Guar gum (GG), as a non-exudate gum, is extracted from the seed's embryos of Cyamopsis tetragonoloba (a member of Leguminosae family). Recently, this biopolymer has received extensive attention due to its low cost, notable properties, non-toxic biodegradation, ease of availability, and biocompatibility. However, disadvantages such as uncontrolled hydration rate and susceptibility to microbial attack have led many researchers to further modification of guar gum. Further modifications of guar gum heteropolysaccharide have been performed to improve properties and explore and expand its potential. The favorable biostability, improved solubility, and swelling, increased pH sensitivity, and good antibacterial and antioxidant properties indicate the significant advantages of the modified gum structures with different functional groups. In this review, the rapid growth in research on GG derivatives-based materials has been discovered. Besides, the production methods of GG and its derivatives have been discussed in tissue engineering and regenerative medical. Consequently, this review highlights the advances in the production of guar-based products to outline a promising future for this biopolymer by changing its properties and expanding its applications in potential targets.

Abstract:Guar (Cyamopsis tetragonoloba L.), a summer legume, is becoming increasingly important as an industrial crop due to its high gum and viscosity content. This study investigated the effects of methyl jasmonate (MeJA), chitosan (CH), and their combination on the growth, yield, and quality of guar under irrigation regimes. A greenhouse experiment was conducted using a factorial design to evaluate the effect of foliar spraying with MeJA (5, 25, and 50 μM), CH (100, 150, and 200 mg/L), their combination (25 μM MeJA + 150 mg/L CH), and control on two commercial guar varieties (RGC-986 and BR-2017) under different irrigation regimes (100%, 70%, and 40% field capacity). The results showed that the exogenous application of MeJA and CH, individually and in combination, significantly enhanced various morphological traits and yield components in guar, including plant height, pod characteristics, seed yield, and root development. Additionally, the combination treatments improved seed quality parameters, such as gum percentage and viscosity content. Leaf analysis revealed increased levels of total phenolic content, total flavonoid, and anthocyanin contents. The BR-2017 variety showed superior performance in most morphological and qualitative traits, demonstrating greater resistance to irrigation regimes. It maintained yield and quality characteristics under water-deficit conditions, particularly when treated with 25 μM MeJA and 150 mg/L CH. The highest gum percentage (33.67%) and viscosity (4768.5 cP) were observed in the RGC-986 variety, along with enhanced levels of secondary metabolites. This study provides new insights into how MeJA, CH, and their combination can improve the yield and quality of guar under water deficit stress conditions. The results suggest that the use of these elicitors, especially in combination, represents an innovative strategy for improving guar production and quality, with potential variety-specific responses to water-deficit stress.

Abstract:Guar korma and churi protein isolates were assessed for their physicochemical, nutritional, functional, structural, and digestibility properties for their application in the food industry. The water extracted protein isolate of guar korma showed a protein content of 89.7 % and a yield of 48.7 %. Water extracted protein isolate of guar korma showed an excellent protein efficiency ratio, essential amino acid/total amino acids (34.35 %), amino acid score, and protein digestibility corrected amino acid score values, suggesting the existence of high-quality proteins. Water extracted protein isolate of guar korma contains all the essential amino acids except Methionine and Cysteine, according to World Health Organization recommendations for children and adults. The protein profiling of water extracted protein isolate of guar korma was analyzed using 12 % sodium dodecyl sulfate polyacrylamide gel electrophoresis and indicated the presence of eight major protein bands in the range of 17-100 kDa. In vitro digestibility of water extracted protein isolate of guar korma showed the complete digestion of the abundant protein bands within 15 min. Further, the foaming capacity, water/oil holding capacity, and emulsifying stability of water extracted protein isolate of guar korma were comparable with soy protein isolate. Fourier Transform Infrared and Circular Dichroism spectral analysis revealed the presence of several aromatic groups and β-sheets, random coils respectively in water extracted protein isolate of guar korma. The morphological nature of the guar protein isolate was characterized by Scanning Electron Microscopy. Overall, these findings support that water extracted protein isolate of guar korma has excellent functional and nutritional properties and could be a potential alternative plant protein in food industries.

Abstract:Guar ( Cyamopsis tetragonoloba (L.) Taub.) is an important legume plant used as food and industrial crop. Guar forms nitrogen-fixing symbiosis with nodule bacteria (rhizobia) supplying the plant with this important nutrient element. The ability to form symbiosis with rhizobia of various taxonomic groups of genera Bradyrhizobium and Ensifer is a common trait of guar with cowpea and soybean. Pot experiments were performed to compare nodulation and response of guar, cowpea and soybean to inoculation with nine strains isolated from guar nodules and belonging to the above-mentioned genera. Strains assigned to species Bradyrhizobium archetypum and Bradyrhizobium valentinum were isolated from nodules of guar for the first time. Nodule number and biomass on the inoculated guar roots significantly varied depending on the strain from 15 to 40 nodules per plant and from 20 to 54 mg dry weight (DW)/plant, respectively. Eight strains formed nitrogen-fixing symbiosis with cowpea. Nodule number and biomass on the cowpea roots varied depending on the strain from 19 to 67 nodules per plant and from 3 to 61 mg DW/plant, respectively. Significant differences among strains were also observed in acetylene reduction activity and positive effects of inoculation on shoot biomass and nitrogen content in shoots of plant species. However, symbiosis with soybean was inefficient, since only few small white nodules were observed and no effects were found on plant growth. Correlations between the symbiotic parameters in guar and cowpea dependent on the rhizobia strain were found and discussed in view of mechanisms underlying formation and functioning of nitrogen-fixing symbiosis. Several studied strains offer promise as inoculants for guar and cowpea and recommended for further field trials.

Abstract:Gurum (Citrullus lanatus var. Colocynthoide) seed was evaluated for lipid, amino acid, mineral, proximate, sugar, vitamin composition, volatile compound and functional characteristics in seeking to identify nutritious plant containing a higher amount of nutrients that can be employed in food related industries. The gurum seed was found to be rich in fat (33.05%), crude fiber (26.42%), protein (18.55%), carbohydrates (14.41%), and ash (3.40%) and it has sufficient amino acids content. The gurum seed was found to have a higher content of minerals with potassium 2116.83 mg/100 g among highest followed by sodium 461.23 mg/100 g and magnesium 405.63 mg/100 g. Calcium, zinc, iron, copper and manganese are also present in a significant amount. Gurum seeds could be used as an affluent source of vitamins, mainly B6 and B9 with the amounts of 11.37 and 9.24 mg/100 g respectively, while sucrose constituted 41.5% of the all sugars. Oil of gurum seed has an altitude amount of unsaturated fatty acids, with C18:2 and C18:1 as the major acids, whereas, triglycerides as a major component of lipid classes. The gurum seed showed water absorption 3.46 mL /g and oil absorption 2.39 mL/g. The foaming capacity, stability of foam and emulsifying capacity were 18.5%, 16.55%, and 44.2%, respectively. 49 volatile compounds from the extract of gurum seeds were identified; with organic acids as a prime component. This study has shown the potentials of gurum seed, a by-product with a high nutritional value to provide sufficient economic resourceful raw material alternative to food industrial firms.

Investigating the antioxidant activity enhancer effect of Cyamopsis tetragonoloba seed extract on phenolic phytochemicals

Abstract:Introduction: Phenolic phytochemicals are known for antioxidant-mediated pharmacological effects in various diseases (diabetes, cancer, CVDs, obesity, inflammatory and neurodegenerative disorders). However, individual compounds may not exert the same biological potency as in combination with other phytochemicals. Cyamopsis tetragonoloba (Guar), an underutilized semi-arid legume which has been used as a traditional food in Rajasthan (India), is also a source of the important industrial product guar gum. However, studies on its biological activity, like antioxidant, are limited. Methods: We tested the effect of C. tetragonoloba seed extract to enhance the antioxidant activity of well-known dietary flavonoids (quercetin, kaempferol, luteolin, myricetin, and catechin) and non-flavonoid phenolics (caffeic acid, ellagic acid, taxifolin, epigallocatechin gallate (EGCG), and chlorogenic acid) using DPPH radical scavenging assay. The most synergistic combination was further validated for its cytoprotective and anti-lipid peroxidative effects in in vitro cell culture system, at different concentrations of the extract. LC-MS analysis of purified guar extract was also performed. Results and discussion: In most cases, we observed synergy at lower concentrations of the seed extract (0.5-1 mg/ml). The extract concentration of 0.5 mg/ml enhanced the antioxidant activity of Epigallocatechin gallate (20 µg/ml) by 2.07-folds, implicating its potential to act as an antioxidant activity enhancer. This synergistic seed extract-EGCG combination diminished the oxidative stress nearly by double-fold when compared with individual phytochemical treatments in in vitro cell culture. LC-MS analysis of the purified guar extract revealed some previously unreported metabolites, including catechin hydrate, myricetin-3-galactoside, gossypetin-8-glucoside, and puerarin (daidzein-8-C-glucoside) which possibly explains its antioxidant enhancer effect. The outcomes of this study could be used for development of effective nutraceutical/dietary supplements.

Abstract:Basil seed gum (BSG) is a new hydrophilic colloid of natural plant origin. Extracted from basil seeds, it possesses excellent functional characteristics in terms of emulsification, rheology, gelation, stability, and adsorption, which are just as favorable as those of certain commercial gums. Besides, BSG has been widely used in food, medicine, industry, and many other fields for its physiological functions of weight reduction, detoxification, and control of blood sugar and cholesterol as a good dietary fiber. In this paper, we analyzed and discussed the extraction procedures, composition structures, functional characteristics, and modification strategies of BSG. In addition, we summarized the latest research on the applications of BSG in different industries to provide theoretical references for the high-value processing and utilization of BSG.

Abstract:The ideal water-soluble dietary fiber for the fiber-enrichment of foods must be very low in viscosity, tasteless, odorless, and should produce clear solutions in beverages. Partially hydrolyzed guar gum (PHGG) produced from guar gum by enzymatic process has the same chemical structure with intact guar gum but less than one-tenth the original molecular length of guar gum, which make available to be used as film former, foam stabilizer and swelling agent. The viscosity of PHGG is about 10 mPa.s in 5% aqueous solution, whereas 1% solution of guar gum shows range from 2,000 to 3,000 mPa.s. In addition, PHGG is greatly stable against low pH, heat, acid and digestive enzyme. For these reasons, PHGG seems to be one of the most beneficial dietary fiber materials. It also showed that interesting physiological functions still fully exert the nutritional function of a dietary fiber. PHGG has, therefore, been used primarily for a nutritional purpose and became fully integrated food material without altering the rheology, taste, texture and color of final products. PHGG named as Benefiber(R) in USA has self-affirmation on GRAS status of standard grade PHGG. PHGG named as Sunfiber(R) is now being used in various beverages, food products and medicinal foods as a safe, natural and functional dietary fiber in all over the world.

Abstract:Abstract This study focusses on the synthesis of carboxymethyl guar gum (CMG) via monochloroacetic acid under alkaline conditions. The reaction conditions were also optimized during the course of experiment. Guar derivative with variable degree of substitution (DS) were prepared and were confirmed by Fourier transform infrared (FTIR) spectroscopy. The DS was determined quantitatively by titration method for each derivative. The synthesized guar gum derivatives, being the natural thickners, have been used in textile printing technology. Substituted guar gum has been proved environmental friendly thickener as compared to synthetic thickeners. Penetration properties, fixation ability, colour fastness, levelness and fabric handling was compared with alginate thickener (commercially available). Guar gum thickeners showed enhanced properties versus alginate thickener and can be used as an alternative to synthetic thickeners in view of its green, non-hazardous and economical derivatives. Guar gum is the outstanding natural thickener, stabilizer, gelling agent and could possibly be used in various industrial units including food, cosmetic, textile, oil fracturing and mining.

Abstract:In recent years, with the accelerated pace of life and the high incidence of chronic diseases, the demand for functional food has been increasingly urgent. Under such circumstances, germinated edible foods have attracted much attention because of their unique physiological effects. This review mainly summarizes recent studies about the physiological and biochemical changes during edible seeds germination. Further, the different germination treatments and the enrichment of γ-amino butyric acid are discussed. Finally, the applications of germinated seeds in the food sector are mentioned. Germination of edible seeds is a complex process of material transformation, which not only improves the nutritional value of raw seeds, but also accumulates a wide variety of bioactive compounds with health benefits. As a potential source of numerous functional ingredients, germinated edible foods have attracted widespread attention for its physiological benefits. Therefore, germinated grain and legume seeds are expected to be functional dietary supplements with a variety of health benefits and medicinal values. Appropriate germination treatments can enrich bioactive components, which is conducive to the efficient production of bioactive functional food. Research in this area is expected to serve the purpose of preventing and alleviating chronic diseases.
A Study on the Seed Cake Residue of Camellia Oleifera for Ruminant Utilization

Abstract:On the basis of nutrient compositions of the seed cake residue of camellia oleifera (SCR),the nutritive value of SCR for ruminants was evaluated using nylon bags technique and in vitro gas production in this experiment.The results showed that:(1) the concentration of crude protein (CP),ether extract (EE),neutral detergent fiber (NDF),acid detergent fiber (ADF) and acid detergent lignin (ADL) of SCR were13.1％,8.6％,66.12％,44.5％ and 25.4％ (dry matter basis) respectively.(2) the gas produced by SCR was significantly higher (P ＜0.05) than that by Chinese wild rye after being incubated for 2h-12h.However,the gas production of SCR was significantly less (P ＜ 0.05) than that by Chinese wild rye after 36h.This was consistent with dry matter degradability (DMD).The DMD of SCR was significantly lower than that of Chinese wild rye (P ＜0.05) from 24h to 72h.At the early stage (3h-12h),the difference in DMD between the two feeds was not significant statistically (P ＞ 0.05).(3) the potential gas production had no significant difference (P ＞ 0.05),when SCR replaced Chinese wild rye by 25 ％.However,the potential gas production could be significantly lowered and gas production speed significantly was increased (P ＜ 0.05) with the increase of replacement levels.The propionic acid concentration of 25％ group was not significantly different from the 0％ group.The results of this study indicated SCR could be utilized as alternative to conventional feed resources for ruminants for its relative higher CP and EE content,while higher ADL concentration would lower its nutritive value.

Abstract:Background: Guar gum is a water-soluble polysaccharide called galactomannan, obtained from the endosperm of Cyamopsis tetragonolobus, plant belonging to Leguminosae family. Galactomannan is a biopolymer rich in functional groups, particularly hydroxyl groups, which expand the possibilities of its chemical modification and, therefore, of biological applications. Objective: This review aims to present and discuss various methods used in the preparation of guar gum composites and their applications in biomedical, pharmaceutical, food and cosmetic industry. Methods: The published data about the extraction procedure of guar gum and its various physico-chemical properties have been collected and analyzed. Further, the published information about various methods used for the preparation of guar gum composite systems including film, hydrogel and beads have been gathered and comprehensively discussed in this review. The applications of guar gum based composites in the field of biomedical, pharmaceutical, food and cosmetics have also been reviewed in detail. Results: Different guar gum composite systems have shown multifunctional properties, including gelling and emulsifying ability, thickening and binding property, quick solubility in water, good biocompatibility, and biodegradability in the domain of biomedical, pharmaceutical, food, and cosmetic industries. Conclusion: Recent advancements in the preparation and applications of guar gum composites summarized in this review will enhance the practical applications of this polymer in various industries.

Abstract:Guar gum was hydrolyzed using cellulase from Aspergillus niger at 5.6 pH and 50°C temperature. Hydrolyzed guar gum sample was characterized using Fourier transform infrared spectroscopy, differential scanning calorimetry, thermogravimetric analysis, X-ray diffraction, dilute solution viscometry and rotational viscometry. Viscometry analysis of native guar gum showed a molecular weight of 889742.06, whereas, after enzymatic hydrolysis, the resultant product had a molecular weight of 7936.5. IR spectral analysis suggests that after enzymatic hydrolysis of guar gum there was no major transformation of functional group. Thermal analysis revealed no major change in thermal behavior of hydrolyzed guar gum. It was shown that partial hydrolysis of guar gum could be achieved by inexpensive and food grade cellulase (Aspergillus niger) having commercial importance and utilization as a functional soluble dietary fiber for food industry.

Abstract:Wrinkle Floweringquince (Chaenomeles speciose (Sweet) Nakai) seed, as an unexploited forestry residue, contains considerable amount of bioactive carbohydrates with potential functionality, which was not widely concerned. The aim of this study is to determine the basic characterizations (molecular weight and functional group), specific components (carbohydrate, protein and uronic acid contents), and functional properties of Chaenomeles speciosa seed gum (CSG). Results indicated that carbohydrate (63.80%), protein (13.69%) and uronic acid (10.30%) contents were achieved. The CSG (average molecular weight, 9.85×106 u) consists rhamnose, arabinose, xylose and glucose in a molar percentage of 29.77꞉10.54꞉18.55꞉15.84, respectively. The Fourier transform infrared (FT-IR) analysis revealed hydroxyl, carboxyl and methyl groups and α-glycosidic linkages are founded in the CSG. The CSG was surface active and its ability to decrease surface tension was comparable to commercial gums. Moreover, the CSG solutions showed pseudoplastic flow behavior under dynamic shear rate at high concentrations. The GSC also presented good emulsifying and foaming properties, indicating the potential of the GSC as bioresource stabilizer and thickener in industry.
