Abstract:Changes in the starch digestibility and the properties of the starches isolated from waxy, low-, and high-amylose rice kernels subjected to heat-moisture treatment (HMT) at 100 degrees C for 16 h at a moisture content of 25% were investigated. The results showed that amylose content is important in determining pasting properties for both HMTrice starches and in-kernel HMTrice starches. Amylose leaching, swelling power, and solubility index decreased in hydrothermal treatment of both isolated rice starches and rice kernels. The gelatinization temperatures of both hydrothermal-treated samples were affected by different treatments to different extents, and the changes were more pronounced for starches isolated from the treated rice kernels. The relative crystallinity increased in the starch from treated waxy and low-amylose rice kernels but decreased in the starch from treated high-amylose rice kernels. Starch digestibility study suggested that thermal treatment of rice kernels was more effective in producing low-glycemic-index starch-based foods than the same treatment of isolated starch. The study showed that HMT on rice kernels had significant impacts of physicochemical properties and starch digestibility of waxy, low-, and high-amylose rice starches to various extents.
Physicochemical and Crystalline Properties of Heat-Moisture-Treated Rice Starch: Combined Effects of Moisture and Duration of Heating

Abstract:BACKGROUND Currently there is much interest in the application of physical modification techniques such as heat-moisture treatment (HMT). The effects of HMT on normal and waxy rice starches, subject to different levels of moisture content and duration of heating, were investigated. RESULTS Water solubility index (determined at 90 °C) decreased after HMT for normal and waxy rice starches, while swelling power (determined at 90 °C) showed inconsistent results (decrease for normal type, increase for waxy type) after HMT. Values in pasting parameters of normal and waxy rice starch increased initially, but the extent of increase slowed down with moisture content and length of treatment increasing. HMT decreased gelatinization temperatures with 4 h and 8 h treatment, but when length of treatment was prolonged to 16 h gelatinization temperature increased. Degree of crystallinity decreased for all treatments, and decreased much more at higher levels of moisture content. CONCLUSION Variations in levels of moisture content and duration of heating had significant effects on physicochemical and crystalline properties to different extents.

Abstract:The effect of high-pressure treatment (0.1 to 500MPa for 10min) on the moisture sorption properties of brown rice (Feng Liang You Xiang No. 1) was investigated. Air was maintained at selected conditions (temperature between 20 degrees C and 40 degrees C, equilibrium relative humidity between 11% and 75%) and equilibrium moisture content was measured. The control attained a higher equilibrium moisture content than treated samples, while the 300MPa treated sample had the lowest. The area of hysteresis of the 300MPa test sample was the largest and the BET model was applied to determine the monolayer moisture content.

Abstract:Changes in functional properties of rice bran proteins as influenced by high-pressure (HP) treatment (100–500 MPa, 10 min) were studied. Properties evaluated were protein solubility, water absorption capacity, oil absorption capacity, foaming capacity, foam stability, emulsifying activity, emulsion stability, least gelation concentration, and surface hydrophobicity. HP treatment at 100 and 200 MPa significantly improved the solubility and oil absorption capacity, while water absorption and foaming capacities increased further reaching the maximum at 500 MPa. Compared with the untreated control sample, the emulsifying activity and foam stability of treated samples were significantly higher and least gelation concentration was lower, but none of them showed any specific trend with pressure level. Emulsion stability and surface hydrophobicity increased with the pressure level until 400 MPa and decreased slightly at 500 MPa. Pearson correlation coefficients clearly showed that surface hydrophobicity was positively correlated with water absorption capacity, foaming capacity, emulsifying activity index, and emulsion stability index, but negatively correlated with least gelation concentration. The pressure treated rice bran protein possessed good functional properties for use as a food ingredient in the formulations.

Abstract:Physicochemical modification methods have been widely applied to increase resistant starch (RS) content of waxy starch, but their effects on the functional properties of non-waxy starches are not fully understood. In this study, five non-waxy rice starches with intermediate to very high apparent amylose contents (AAC) were modified by pullulanase (PUL), heat-moisture treatment (HMT) and citric acid (CA). RS contents, AAC, crystalline structures, pasting properties and thermal properties were analyzed. The three modification treatments were effective in increasing the RS contents, especially CA modification. PUL modified starches had relatively higher AAC and relative crystallinity (RC), and their crystalline patterns changed from A-type to mixed B + V type. Both HMT and CA increased gelatinization temperature significantly but had opposite effects on changing paste viscosity of different rice starches. Compared with other non-waxy rice varieties, high-amylose rice starch exhibited the highest RS, AAC, and RC after modification. This study provides practical information for improving the nutritional benefits of rice.

Abstract:The changes in rice starch fine structures and functional properties induced by drought, elevated CO2 (eCO2) and combined treatments remain to be elucidated comprehensively. In this study, starch molecular structures were characterized by size-exclusion chromatography and fluorophore-assisted carbohydrate electrophoresis, and the data from amylopectin chain-length distributions was fitted with a mathematical model to obtain parameters for statistical analysis. Starch crystalline structures, thermal and pasting properties of rice flour were also analyzed. All the treatments decreased the seed setting rate and increased chalky grains, reflecting the abnormal starch accumulation. However, eCO2 partially increased the seed setting rate and chalky grains under drought stress. The stress-treated starch samples had shorter amylopectin short and intermediate chains, the lower degree of ordered structures, but similar amylose content and relative crystallinity. This led to lower onset gelatinization temperature and paste viscosities, which may be responsible for the worse sensory quality of rice grains.
Rheological properties and calorimetric analysis on zein under high pressure treatment

Abstract:To investigate the influence of high pressure treatment on the rheological behavior and thermal property of zein, the rotating viscometer and differential scanning calorimetric (DSC) were employed to obtain the property parameters, including shear stress (τ), shear rate (γ), viscosity (η), crystallization temperature (Tc), melting temperature (Tm), and crystallizationenthalpy (ΔHm). Then their relationship curve and mathematical model were fitted and established by rheological testing and calorimetric analyzing. The structures of zein solution under different high-pressure treatment were characterized by scanning electron microscopy (SEM). The results indicated that the zein solutions with high pressure treatment showed a pseudo plastic fluid characteristic. As the pressure increased, the viscosity of the solution first increased, and then decreased, and then increased once again. When the pressure was 400 MPa, the viscosity of the solution reached the highest value. When the shear temperature increased, the viscosity of the solution first decreased, and then increased, and reached the lowest value at 40℃. With the shear rate increased, the viscosity of the solution reduced, and reached a plateau when the shear rate was close to 100 s-1. Zein powders were treated under 400 MPa pressure, melting temperature(Tm) increased and crystallization enthalpy(ΔHm) decreased. The width of DSC melting peak(Tm-Tc) under high pressure treatment broadened, proving the coordination of zein structure became lower. SEM showed that zein particles under 400 MPa pressure treatment condensed in a ring or chain structure.
Effect of presoaking high hydrostatic pressure on the cooking properties of brown rice

Abstract:Effects of presoaking-high hydrostatic pressure (PHHP) on cooking time, hardness, gumminess, springiness, and microstructure of brown rice were evaluated. Compared with traditional soaking treatment, PHHP significantly shorten the cooking time of brown rice from 34 to 14 min. The hardness of brown rice treated by PHHP reduced remarkably, which is lower than that treated by soaking process and similar to that of white rice. The gumminess and springiness of brown rice dramatically decreased under pressure above 500 MPa. However, the water uptake capacity of brown rice treated by PHHP was not obviously affected, whose moisture contents were much lower than that of soaked samples. The analysis of thermal properties revealed that the enthalpy of brown rice was influenced by PHHP, and the denaturation of brown rice components generated. These results and microstructure analysis revealed that the structures of pericarp and aleurone layer of brown rice were damaged by PHHP, which allows water to be easily absorbed by the rice kernel during cooking process. PHHP treatment could be a potentially applicable pretreatment for improving cooking properties of brown rice.

Abstract:Abstract Native rice starches were treated with five periods of ultra-high pressure homogenization (UHPH) under each of 60, 80, 100, 120, 140 and 160 MPa, respectively. The morphological, structural and physicochemical properties of starches treated with UHPH were examined. The mean particle diameter of starch nanoparticles ranged between 154.20 and 260.40 nm. SEM revealed that the granular amorphous region of starch granules was damaged under pressures between 60 and 80 MPa, and the crystalline region was further destroyed under pressures as high as 100–160 MPa. DSC demonstrated that the gelatinization temperatures and enthalpies of nanoparticles reduced. The relative crystallinity reduced from 22.90 to 13.61% as the pressure increased. FTIR showed that the absorbance ratio at 1047/1022 cm −1 decreased, and increased at 1022/995 cm −1 . RVA results indicated that the viscosity of starch samples increased between 60 and 120 MPa, and the reverse effect was observed under 140 and 160 MPa.

Abstract:The influences of various gelatin emulsion additions on gelatinization, rheology, retrogradation and structural properties of waxy rice starch (WRS) were investigated. The gelatin emulsion was uniformly dispersed in the starch pastes, which increased the particle size through agglomerating around the starch powder particles. As gelatin emulsion content increased, the pasting viscosity of WRS pastes significantly increased (P < 0.05), whereas its setback value, gelatinization and retrogradation enthalpy decreased. Rheological measurements indicated that the addition of gelatin emulsion did not change the shear thinning behavior of WRS pastes blends, and the storage modulus and loss modulus were positively correlated with gelatin emulsion content. During the heating stage of the pasting process, the interfacial organization consisting of gelatin undergoes disintegration and melting, reconfiguring the emulsion system. Gelatin dispersed in the interfacial and continuous phases interacts with starch to form hydrogen bonds and inhibit starch rearrangement. The starch-lipid complex formed by the interaction between lipids released from emulsion and starch is capable of destroying the crystalline region. Therefore, after 14 d of storage at 4 C-degrees, the relative crystallinity of WRS decreased by 72.4 % as the gelatin emulsion addition was increased from 0 % to 14 %. The addition of gelatin emulsion induced the formation of steric hindrance effects, which impeded the mobility of water molecules and improved freeze-thaw stability. These results may contribute to the creation of high-quality and innovative water-oil-starch mixture food products that remain fresh for a longer period.

Abstract:High hydrostatic pressure (HHP) is a novel technology used in the food-processing industry. Starch is an important renewable natural resource. The applications of starch are determined by its properties, which in turn are determined by its structure. In this study, the effects of HHP treatment on starch structure (granular structure, crystalline structure, molecular structure, and molecular conformation) and properties (pasting, retrogradation, thermal, digestive, rheological, swelling, solubility, water absorption, and oil absorption properties) are summarised. Additionally, the mechanism of HHP-induced gelatinisation is discussed. First, the strong hydration ability of starch molecules under high pressure facilitates the binding of water molecules to starch molecules via hydrogen bonding. These bound water molecules may block the channels inside the starch granules, leading to the formation of a sealed space. Finally, the granules disintegrate because of the intra/extra pressure difference. This study provides a reference for the application of HHP to starch processing and modification.

Abstract:The rheological, structural properties and in vitro digestibility of starch with high methoxyl pectin (HMP) and further modified by dynamic high-pressure microfluidization (DHPM) were investigated. The viscosity and elasticity increased on addition of HMP and were more pronouncedly affected by 10% HMP. However, after DHPM treatment, the viscosity and elasticity decreased with increasing DHPM pressure. After 100 MPa DHPM treatment, the ordered and crystalline structures were further increased compared with starch-HMP mixtures. A compact and dense surface of starch paste was formed under 100 MPa DHPM and 10% HMP treatment, thus significantly slowing down the digestibility. In contrast, the crystalline and semicrystalline structure of starch were disrupted by intense shear force under 200 MPa DHPM. This study provides theoretical information regarding starch-HMP interaction and improves their functional and physicochemical properties through a promising strategy for better applications in food formulation.
Starch Granule-Associated Proteins Affect the Physicochemical Properties of Rice Starch

Abstract:The objective of this study was to investigate the effect of starch granule-associated proteins on the physicochemical properties of waxy, low-amylose rice and high-amylose rice starch. Starch granule-channel proteins (GCP) and total starch granule-associated proteins (tSGAP) were selectively removed. Extraction of GCP was responsible for increases in amylose leaching, swelling power and solubility, and caused drops in apparent crystallinity, final viscosity, gelatinization temperature, storage modulus, loss modulus and complex viscosity. Meanwhile, the removal of tSGAP led to an increase in solubility, peak viscosity and breakdown and decrease in apparent crystallinity, final viscosity, setback, gelatinization temperature, storage modulus and complex viscosity. Protein removal had no significant effect on the gelatinization enthalpy, double helix structure and hydrogen bond strength of amylopectin. Overall, GCP had a more substantial role in physicochemical changes than did starch surface proteins. GCP, tSGAP and the amylose/amylopectin ratio all contributed to the physicochemical properties of rice starch.

High-pressure (HP), freeze-thaw cycle (FTC), and germination-parboiling (GP) treatments were used to improve the texture characteristics and in vitro digestibility of starch in brown rice (BR). The texture of FTC-treated BR was the closest to the texture of white rice. Improved water absorption ratio, HP and FTC induced modification of the bran layer, and GP induced partial starch gelatinization were considered to be responsible for improving the texture of BR. All treatments improved the in vitro digestibility of BR starch, and FTC < HP < GP with respect to the order of increase. FTC treatment also resulted in the minimal glycemic index (GI), while GP treatment resulted in higher GI. In general, the amylose content was lower for untreated BR than for treated BR. Further, the HP, GP, and FTC treatments showed improved amylose/amylopectin ratios. HP and GP decreased the gelatinization enthalpy, while FTC increased it. GI had a positive correlation with amylose content and amylose/amylopectin ratio, while gelatinization enthalpy had a negative correlation. Supramolecular structure and pasting/digestion behaviors of rice starches following concurrent microwave and heat moisture treatment

Abstract:From a supramolecular structure viewpoint, we concern how concurrent microwave and heat moisture treatment (M/HMT) tailors the pasting and digestion features of indica rice starch (IRS) and waxy rice starch (WRS), using combined analytical methods such as scanning electron microscopy and small-angle X-ray scattering. The results confirm that, for the starches (especially IRS), M/HMT led to a concave granule surface, weakened alignment of helices in lamellae, loosened packing of chains in amorphous regions, and somewhat disrupted crystallites. Consequently, the susceptibility of starch structures to hydrothermal effects was insignificantly altered, as reflected by unchanged pasting temperature; the enzyme absorption/hydrolysis could be properly accelerated, as affirmed by a modestly increased digestion rate and slightly reduced enzymatic resistance. Also, compared to WRS, IRS had more amylose with relatively long branches, which probably contributed to starch chain interactions during M/HMT. This tended to reduce the paste viscosity related to the swelling degree of starch granules, and increase the paste stabilities during heating and cooling related to the robustness of swelled granules and the reorganization of glucan chains.
Structural characterization and in vitro digestibility of rice starch processed with the combination of ultra‐high pressure homogenization, debranching, and temperature‐cycled crystallization

Abstract:The starch suspension was treated by ultra‐high pressure homogenization under various pressures, the starch granules were broken. Subsequent pullulanase debranching produced large amounts of short linear amylose. The final temperature‐cycled crystallization promoted the formation of the double helix structure by hydrogen bonds between starch chains. This study examined the structural characterization and in vitro digestibility of rice starch processed with the combination of ultra‐high pressure homogenization (UHPH), debranching, and temperature‐cycled crystallization under various pressures (0–160 MPa). After UHPH treatment, the degree of branching (DB) of processed starches (0.65%–2.03%) was lower than that of the native rice starch (NS, 2.96%). Assessment of chain length distribution suggested that the considerable amylose was produced after treatments. Processed starches exhibited an irregular fragmented structure, and the crystalline structure was transformed from A‐type (native rice starch) into B + V‐type (processed starches). Moreover, the relative crystallinity (RC) and the absorbance ratio of 1047/1022 cm−1 (R1047/1022) of processed starches decreased from NS (RC, 22.99%; R1047/1022, 0.79) to 13.47%–18.21% (RC) and 0.51–0.78 (R1047/1022), respectively. Iodine binding curves revealed that processed starches possessed the higher degree of polymerization (DP). Furthermore, the contents of slowly digestible starch (SDS) and resistant starch (RS) increased in all processed starches, and the RS content of starch treated under 160 MPa (35.33%) was notably greater than that of native starch (9.37%). These results suggested that the UHPH can be used as a pretreatment strategy to reduce the digestibility of starch products. Practical applications UHPH pretreatment disrupts starch molecular chains to produce the large amounts of short linear amylose. Debranching followed by temperature‐cycled crystallization can increase the content of resistant starch (RS), yielding a raw material suitable for boosting the health of the digestive system and overall health. Therefore, UHPH pretreatment has a high application value in the field of starch modification.

Abstract:High pressure processing is a promising non-thermal technology for the development of fresh-like, shelf-stable foods. The effect of high pressure on starch has been explored by many researchers using a wide range of techniques. In general, heat and pressure have similar effects: if sufficiently high, they both induce gelatinization of starch in excess water, resulting in a transition of the native granular structure to a starch paste or gel. However, there are significant differences in the structural and rheological properties between heated and pressurized starches. These differences offer benefits with respect to new product development. However, in order to implement high-pressure technology to starch and starch-containing products, a good understanding of the mechanism of pressure-induced gelatinization is necessary. Studies that are published in this area are reviewed, and the similarities and differences between starches gelatinized by pressure and by temperature are summarized.

Abstract:Hydroxypropylation and cross-linking were carried out on three rice starches with 6.93%, 19.02% and 48.41% AAC respectively. AAC affected the efficiency of modification, with AAC increased, the molar substitution of hydroxypropylated starch decreased while degree of substitution of cross-linked starch increased. Modifications decreased starch relative crystallinity while the impacts were dependent on rice varieties. Starch granules of high AAC rice were liable to be disrupted by modification. High AAC rice starch had better processability, modifications have more pronounced influences on starch properties of high AAC. Different modifications showed different influences on starch properties, cross-linking decreased AAC content, pasting clarity and swelling power of all three starches, while hydroxypropylation increased pasting clarity and swelling power of high AAC starch. High-degree modifications decreased starch digestibility, higher-CLD crosslinked starch showed constant digestion rate and might be a suitable modification for produce starchy food for equilibrium glucose level.

Abstract:This paper evaluated the relationship between multi-scale structure and high-pressure gelation properties of nine types of starches with different amylose (AM) content and crystalline polymorphic structure by RVA 4800. Higher average chain lengths of long amylopectin (AP) chains (DP > 36) and AM content, and lower relative content of short AP chains (DP <= 36) contributed to the higher peak temperature and peak time at 95-140 degrees C, and lower peak viscosity, through viscosity, and final viscosity at 95-110 degrees C. Rheological and texture parameters including storage modulus, loss modulus, hardness, and gumminess, had no significant correlation with starch structural parameters at 95-120 degrees C, but were instead controlled by AM molecular structure at 130-140 degrees C. AM content was mainly responsible for the rheological behaviors of starch gels at 130-140 degrees C, and short and intermediate AM chains were mainly associated with the texture of starch gels at the temperature ranges.
