Abstract:In this work, alginate-chitosan microgel particles were formed at different pH levels with the aim of using them as viscoelastic interfacial layers, which confer emulsion stability to food systems. The particles’ size and structural characteristics were determined using laser diffraction, confocal laser microscopy (CLSM), and time-domain nuclear magnetic resonance (TD-NMR). The pH affected the microgel characteristics, with larger particles formed at lower pH levels. T2 relaxation measurements with TD-NMR did not reveal differences in the mobility within the particles for the different pH levels, which could have been related to the more or less swollen structure. The rate of adsorption of the particles at the sunflower oil–water interface differed between particles formed at different pH levels, but the equilibrium interfacial tension of all systems was similar. Higher interfacial dilatational viscoelasticity was obtained for the systems at lower pH (3, 4, 5), with G’ reaching 13.6 mN/m (0.1 Hz) at pH 3. The interfacial rheological regime transitioned from a linear elastic regime at lower pH to a linear but more viscoelastic one at higher pH. The thicker, highly elastic interfacial layer at low pH, in combination with the higher charges expected at lower pH, was related to its performance during emulsification and the performance of the emulsion during storage. As revealed by laser diffraction and CLSM, the droplet sizes of emulsions formed at pH 6 and 7 were significantly larger and increased in size during 1 week of storage. CLSM examination of the emulsions revealed bridging flocculation with the higher pH. Nevertheless, all emulsions formed with microgel systems presented macroscopic volumetric stability for periods exceeding 1 week at 25 °C. A potential application of the present systems could be in the formation of stable, low-fat dressings without the addition of any emulsifier, allowing, at the same time, the release of the bioactive compounds for which such particles are known.
Pickering-stabilized emulsion gels fabricated from wheat protein nanoparticles: Effect of pH, NaCl and oil content

Abstract:A novel Pickering-stabilized emulsion gel with controlled rheological properties was derived from wheat gliadin nanoparticles-stabilized emulsions by altering preparation conditions (pH, ionic strength or oil content). The formed nanoparticles were relatively small uniform spheres particles (d < 120 nm), whose surface potential (ζ-potential) changed from +9.9 mV to −14.19 mV with the pH of the solution increased from 3.5 to 9. The isoelectric point of gliadin nanoparticles was around pH 6.8. The nanoparticles were highly susceptible to aggregation at pH values near their isoelectric point due to a reduction of electrostatic repulsion between them. Pickering-stabilized emulsions could be formed by blending the nanoparticles with oil and water, and Pickering-stabilized emulsion gels were obtained by altering pH, ionic strength or oil content of the dispersions. Creaming stabilities and rheological properties of the emulsion gels were modulated. Stable Pickering-stabilized emulsion gels with relatively large elastic modulus were formed with 70% oil content at pH 5.5 and 6.0 in the absence of NaCl. The viscosity increased with the increasing of oil content and salt concentration, and the viscosity enhanced when the pH around the isoelectric point. These results may facilitate the design of novel viscoelastic emulsion gels with the Pickering-stabilize mechanism which are suitable for utilizing in foods and other products.

Interfacial structure modification and enhanced emulsification stability of microalgae protein through interaction with anionic polysaccharides

Abstract:Microalgae protein (MP) have emerged as a focal point of research within food processing due to its nutritional value and foaming properties. However, its isoelectric point around pH 4 leads to it susceptible to collision, binding, and precipitation. Additionally, MP has poor emulsification properties and only shows stability under strongly alkaline conditions. This study investigated the effects of food-grade anionic polysaccharides (guar gum (GG), gum arabic (GA), low acyl gellan gum (LG), and pectin (PT)) on the molecular structure and emulsification properties of MP. Results indicated that these anionic polysaccharides enhanced the UV absorption of MP near 620 nm, especially at 14 % content, while fluorescence intensity decreased due to amino acid residues masking without structural changes. The addition of polysaccharides resulted in bimodal or multimodal particle size distributions, with LG and PT showing larger particle sizes. At pH 4, negatively charged polysaccharides formed stable complexes with near-neutral MP, improving solution stability via electrostatic repulsion and diminishing turbidity. The droplet distribution analysis indicated that higher anionic polysaccharide ratios (1:4, 1:2, and 1:1) correlated with smaller droplet sizes and increased emulsion stability. Zeta-potential measurements revealed negative charges for emulsions, with LG-MP and PT-MP complexes displaying higher absolute values (15.0 to 20.7 mV) compared to GG-MP and GA-MP complexes, indicating superior stability. Storage stability analysis showed that LG-MP and PT-MP complexes stabilized emulsions had minimal delamination over two weeks. Rheological assessments showed that increasing GG and GA contents from 14 % to 50 % had negligible effects on apparent viscosity, while LG-MP (1:1) complexes stabilized emulsion displayed higher viscosity compared to PT-MP emulsions. Frequency sweep results showed that GG-MP, GA-MP, and LG-MP emulsions had greater elastic moduli (G') than viscous moduli (G"), indicating elastic behavior, whereas PT-MP emulsions transitioned from liquid-like to solid-like behavior as frequency increased. This study illustrates the advantages of high LG and PT content in preventing particle aggregation and enhancing emulsion stability, providing a theoretical and practical foundation for MP applications in food processing.

Abstract:Our lab’s studies have found that heavy calcium carbonate (CaCO 3 ) with sodium alginate (SA) can synergistically stabilize Pickering emulsion. However, there were significant differences in the flow characteristics of the emulsions obtained by different preparation methods during storage. Herein, in this current work, Pickering emulsions were prepared by two-step emulsifying method (SA was added into the primary emulsion stabilized by CaCO 3 for secondary shearing, M1) and one-step emulsifying method (oil phase was added to homogeneous dispersed CaCO 3 -SA solution for one-step shearing, M2), respectively. The particle size, microstructure, rheology and microrheological properties of these two kinds of emulsions and the interaction of CaCO 3 with SA were analyzed. The results showed that the droplet size of M1 emulsion was 21.78–49.62 μm, and that of M2 emulsion was 6.50–11.87 μm. M1 emulsion had stronger viscoelasticity, and could transform into a gel state during storage. However, M2 emulsion remained in flow condition all the time which was related to the interaction between SA and CaCO 3 in the aqueous phase.

Emulsion Stabilized by Biocompatible and Stimuli-Responsive Poly(N-vinylcaprolactam)-Based Microgels: Effects of Electrostatic Repulsion and Deformability on Emulsion Stability

Abstract:Microgels have been widely used for stabilizing emulsions due to their softness and stimulus responsiveness. Although ultrastable emulsions have been prepared by microgel nanoparticles, the role of electrostatic interactions on emulsion stability is still a controversial topic and further investigation of the effect of microgel deformability is required. In the present study, neutral poly(N-vinylcaprolactam) (PVCL) and charged poly(N-vinylcaprolactam)-co-methacrylic acid (P(VCL-co-MAA)) microgels were synthesized and further used as emulsifiers to stabilizing emulsion. The P(VCL-co-MAA) microgel has a swelling ratio larger than that of the PVCL microgel in water. The nanomechanical properties of the microgels in water were characterized by atomic force microscopy with using the tip of different radii. The result reveals that the P(VCL-co-MAA) microgel is more deformable than the PVCL counterpart. Stability tests of the emulsions showed that below the volume phase transition temperature (VPTT) of the microgels, both microgel types can stabilize the emulsions under various conditions. Unexpectedly, most of the emulsions still remain stable above the VPTT. Further increasing the temperature to 60 °C, P(VCL-co-MAA) microgel emulsions remained stable at a pH value above the pKa of MAA while the emulsion was unstable below the pKa. However, phase separation occurs in PVCL microgel-stabilized emulsions at 60 °C. These results demonstrate that electrostatic repulsion and deformability of the microgels can enhance the emulsion stability, providing insights into the rational design and preparation of ultrastable Pickering emulsions.

Abstract:Objectives/Hypothesis: The objective of this study was to determine whether glycopyrrolate is useful as a vestibular suppressant in patients with Meniere's disease. The tested hypotheses were that glycopyrrolate would decrease the perception of dizziness measured by the Dizziness Handicap Inventory in patients with Meniere's disease and that placebo would cause no such decrease. Study Design: Randomized, prospective. Methods: Thirty‐seven subjects with a diagnosis of Meniere's disease were administered either 2 mg of glycopyrrolate or placebo twice daily as needed for vertigo. All were also administered the regimen of 1500 mg sodium/day diet and diuretic. The following indices were examined: Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, Beck Depression Inventory, hearing examination, and electronystagmography. After 4 to 6 weeks of the drug regimen, Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, and Beck Depression Scale were reexamined. Paired t tests were performed to verify the significance of improvement before and after treatment. Results: Subjects who received glycopyrrolate had statistically significant reduction in Dizziness Handicap Inventory, Beck Depression Score, and Modified Somatic Perception Score. In the placebo group, no improvement in any index was found. Conclusions: The hypothesis that glycopyrrolate is a useful vestibular suppressant in patients with Meniere's disease was statistically verified. Laryngoscope, 108:1442–1445, 1998
Investigation and Characterization of Pickering Emulsion Stabilized by Alkali-Treated Zein (AZ)/Sodium Alginate (SA) Composite Particles

Abstract:Pickering emulsions stabilized by food-grade colloidal particles have attracted increasing attention in recent years due to their "surfactant-free" nature. In this study, the alkali-treated zein (AZ) was prepared via restricted alkali deamidation and then combined with sodium alginate (SA) in different ratios to obtain AZ/SA composite particles (ZS), which were used to stabilize Pickering emulsion. The degree of deamidation (DD) and degree of hydrolysis (DH) of AZ were 12.74% and 6.58% respectively, indicating the deamidation occurred mainly in glutamine on the side chain of the protein. After the treatment with alkali, AZ particle size decreased significantly. Moreover, the particle size of ZS with different ratios was all less than 80 nm. when the AZ/SA ratio was 2:1(Z2S1) and 3:1(Z3S1), the three-phase contact angle (θo/w) were close to 90°, which was favorable for stabilizing the Pickering emulsion. Furthermore, at a high oil phase fraction (75%), Z3S1-stabilized Pickering emulsions showed the best long-term storage stability within 60 days. Confocal laser scanning microscope (CLSM) observations showed that the water-oil interface was wrapped by a dense layer of Z3S1 particles with non-agglomeration between independent oil droplets. At constant particle concentration, the apparent viscosity of the Pickering emulsions stabilized by Z3S1 gradually decreased with increasing oil phase fraction, and the oil-droplet size and the Turbiscan stability index (TSI) also gradually decreased, exhibiting solid-like behavior. This study provides new ideas for the fabrication of food-grade Pickering emulsions and will extend the future applications of zein-based Pickering emulsions as bioactive ingredient delivery systems.

Abstract:The emulsification stability of microalgae protein (MP) is limited to strongly alkaline conditions, restricting its applications in food processing. This study aims to investigate the capability of carboxymethyl chitosan (CMCS) to improve MP's emulsification stability over a wider pH range. Results indicated soluble MP-CMCS complexes formed at pH 2, 4, and 7, while aggregation of the complexes occurred at pH 8. The complexes stabilized emulsions exhibited smaller droplet sizes and higher absolute zeta potential at pH 2, 4, and 7 compared to pH 8. After 2 weeks of storage, emulsions remained stable at pH 2, 4, and 7, with significant delamination at pH 8. Laser confocal microscopy confirmed uniform droplet distribution at pH 2 and 7, with slight fusion at pH 4. The complexes stabilized emulsions exhibited higher viscosity and shear stress than MP stabilized emulsions at pH 2, 4, and 7. The stronger viscoelastic properties and higher storage moduli (G') values of MP-CMCS complexes under acidic and neutral conditions indicated stronger intermolecular interactions compared to alkaline conditions. The increase in G' and loss moduli (G") values for emulsions at pH 8 under stress highlighted the significant impact on network structure strength and viscosity in these emulsions. This study elucidated the binding interactions between MP and CMCS under various pH conditions, and demonstrated a feasible approach to improving MP's emulsification stability over a wider pH range.

Abstract:A stable water-in-water (W/W) emulsion was formed by mixing dextran and hydroxypropyl methylcellulose (HPMC) with addition of β-lactoglobulin (Blg) microgels. The microstructure and stability of the W/W emulsion were investigated under different conditions. The microgels accumulating at the liquid–liquid interface led to a stable emulsion at pH 3–5, where the microgels carried positive charges. When the pH was increased above the pI of microgels (∼pH 5), the emulsion was destabilized because the microgels tended to stay in the continuous phase (i.e., dextran) rather than at the interface. The HPMC-in-dextran emulsions were stable under ionic strength levels up to 300 mM. The HPMC-in-dextran emulsion stabilized by Blg microgels was thermally stable, and the heat treatment promoted partial Blg microgel particle–particle fusion on the surface of HPMC droplets at 90 °C. Abstract:In this work, we prepared concentrated Pickering emulsions stabilized by using soybean protein isolate (SPI) and TEMPO-oxidized bacterial cellulose (TOBC) complex. The effects of solid particle content, pH and oil phase volume fraction on the morphology, stability and rheological behaviors of the emulsions had been investigated. It indicated that the emulsion droplets had uniform particle size distribution when the ratio of SPI/TOBC was controlled to 12.5:1 (wt/wt). The emulsification performance could be improved with the increase of solid content from 1.0% to 3.0%. Moreover, the pH played an important role in regulating the structure and properties of the emulsions. With microscopic observation, the emulsions at pH 7.0 had smaller droplet size (10–15 μm) than that (15–40 μm) of the emulsions at pH 3.0. While the emulsions at pH 3.0 maintained a low creaming index (CI) value than those at pH 7.0, and uniform cellular network structure could be seen by SEM observation. It suggested that the electrostatic complexation between soy proteins and anionic bacterial cellulose nanofibrils at pH 3.0 was more favorable for stabilizing emulsions than those at pH 7.0. This work would provide some guidance for regulating the properties of emulsions that stabilized by soy protein and cellulose nanofibrils.

Preparation of Nanoemulgels Containing Lemon Essential Oil and Pectin: Physical Stability and Rheological Properties

Abstract:Nanoemulgels are novel formulations of great interest for their use as dual-release systems and as fat substitutes in foods. Lemon essential oil, with a large number of benefits due to its antimicrobial, antifungal, and medicinal properties, and low methoxyl pectin, a natural polysaccharide capable of gelling by adding divalent ions such as calcium, are very appropriate ingredients to produce nanoemulgels with potential applications in industries such as cosmetics, agrochemistry, pharmaceuticals, or food. In this work, lemon-essential-oil-in-water nanoemulgels containing low methoxyl pectin derived from citrus peels were prepared following a three-step process that involves the preparation of a nanoemulsion, a pectin gel, and the mixture of both. In the first stage, the stirring time and the rotational rate employed during the mixing step were assessed. Once the preparation protocol was established, the pectin gel/nanoemulsion mass ratio was investigated. Different techniques were combined to evaluate the influence of the processing and the composition variables on the particle size distribution, mean diameters, flow curves, and physical stability of different emulgels obtained. It was found that the processing variables studied, stirring time, and rotational rate, do not influence the mean particle size of the emulgel, with values matching those of the starting nanoemulsion. However, 3 min and 200 rpm were selected for exhibiting the lowest TSI values. Regarding the composition, a higher content of pectin gel caused a higher viscosity, and therefore a higher physical stability, with the 75P/25E emulgel being the most stable. Aggregation of gel particles, because the pectin gel was really a sheared gel, was the main responsible contributor to the results obtained. This work highlights the importance of the preparation and formulation variables to develop stable, innovative formulations based on nanoemulgels.

Abstract:Application of Pickering emulsions in food systems is often limited by their compatibility and their effectiveness in delivering food actives. In this work, we developed a model Pickering emulsion hydrogel system using chitosan as the Pickering emulsifier and Ca-alginate hydrogel beads as the carrier. The synergistic effects between the two materials on the physicochemical stability of the hydrogel formed and the delivery of the immobilized emulsions were investigated. The Ca-alginate hydrogel was found to efficiently immobilize the chitosan-stabilized Pickering emulsions with an immobilization efficiency exceeding 99%, even at a high oil loading of 70% v/v and a chitosan concentration as low as 0.1% w/v. Both the adsorbed chitosan particles on the oil-water interfaces and excess non-adsorbed chitosan particles interacted electrostatically with the alginate matrices to enhance the hydrogel network strength. In comparison to the hydrogel beads containing Tween-80-stabilized emulsions and non-stabilized emulsion, the hydrogels containing Pickering emulsion were significantly more stable under high osmotic pressure and in the presence of low concentrations of destabilizing ions. In the in vitro studies, the Ca-alginate matrices prevented the release of the emulsions at pH 1.2. The emulsions were fully released at pH 7.4 and the release rate was found to be influenced by the concentration of chitosan particles. Interestingly, the chitosan particles remained adsorbed on the oil droplets upon release. This work demonstrates that the alginate-based chitosan-stabilized Pickering emulsion hydrogel system could be an effective immobilization and delivery system for food applications.

Emulsions stabilized by nanofibers from bacterial cellulose: New potential food-grade Pickering emulsions

Abstract:In the present work, we investigated the formation and stability of Pickering emulsions stabilized by nanoparticles generated from bacterial cellulose (BC) by hydrochloric acid hydrolysis. The resulting particles, called nanofibers, presented a ribbonlike shape with diameters of 30-80nm and range in length from 100nm to several micrometers. The obtained nanofibers showed good hydrophilic and lipophilic properties and had significant ability to reduce the surface tension of oil/water droplets from 48.55±0.03 to 34.52±0.05mN/m. The oil-in-water Pickering emulsions with a peanut oil concentration of 15% (v/v) were stabilized by only 0.05% (w/v) nanofibers and displayed a narrow droplet size distribution and high intensity with an average droplet size of 15.00±0.82nm. The morphological studies confirmed the nano-scaled droplets of emulsions. The effects of pH values and temperatures on the creaming ability and physical stability were also evaluated by zeta-potential and droplet sizes. Results showed that emulsions displayed relatively lower creaming ability at pH<7, while displayed optimal physical stability and dispersibility at pH≥7. The temperature (20-100°C) and time-dependent test (0-4weeks) indicated that the Pickering emulsions stabilized by only 0.05% (w/v) nanofibers displayed excellent stability. Due to the sustainability and good bio-compatibility of nanofibers from BC, the developed emulsions stabilized by low concentration of nanofibers can be used as new food-grade Pickering emulsions and have great potential to deliver lipophilic bioactive substances in food industry.
Emulsifying performance of the hexadecyltrimethylammonium bromide (CTAB) complexed alginate microgels: Effects from their deformability on oil-water interface

Abstract:Hexadecyltrimethylammonium bromide complexed alginate-Ca 2+ microgels (C/AMGs) were developed as emulsifiers, which shown remarkably improved emulsifying performance than non-complexed alginate-Ca 2+ microgels (AMGs) in previous study. This work focus on the impact of deformability on the emulsifying performance of C/AMGs. By regulating alginate concentration (1.0–4.0 wt%), microgels with different deformability were prepared. Deformability was proved to have great influence on the emulsifying performance of C/AMGs, which was evaluated by Langmuir trough measurements, emulsion appearance, centrifugation stability, digestive behavior, and oxidative stability. Particle size and SEM images indicated microgels prepared with lower alginate concentration are more deformable. C/AMGs (2.0 wt%) exhibits the best emulsifying performance, which could be ascribed to the appreciated deformability and mechanical strength. Digestive behavior and oxidative stability of alginate-Ca 2+ microgel (2.0 wt%) stabilized emulsions were further investigated. Compared with alginate-Ca 2+ microgel (2.0 wt%) stabilized emulsions, C/AMGs (2.0 wt%) stabilized emulsions shown delayed lipid digestion and lower POV. Results of this work supporting that Mickering mechanism have potential in fabricating functional emulsions based on natural polysaccharides.

Abstract:This work investigated the effect of different pH values (4, 7, 11) and nanocellulose morphologies (cellulose nanocrystals (CNCs), cellulose nanospheres (CNSs), and cellulose nanofibrils (CNFs)) on the low-oil gelatin emulsions performance. Results showed the electrostatic complex (pH = 4) transformed into complexes in the form of free molecules (pH = 11), reduced the interaction between gelatin and nanocellulose. The emulsion showed smaller creaming index (CI, 0–49.55%) and larger D 4,3 (30.47–44.63 μm) at pH = 7 in comparsion with pH = 4 (0–59.17%, 28.1–35.1 μm) and pH = 11 (0–58.54%, 21.3–29.47 μm). The microstructure showed the composition of interfacial film was changed from electrostatic complexes (pH = 4) to gelatin (pH = 7) due to competitive adsorption, and the nanocellulose was filled into the continuous phase to form a compact network. While the strong electrostatic repulsion (pH = 11) weakened the network strength, indicating the emulsion at pH = 7 has relatively high stability. Moreover, the nanocellulose morphologies also acted a crucial role in adjusting the properties and network structure of emulsions. The interfacial results displayed the interfacial adsorption of G-CNCs was restrained (84.12%) significantly ( p < 0.05) at pH = 7, which reduced the interface stability, but formed a compact cellulose network, G-CNSs and G-CNFs could form relatively loose network due to small size or easy aggregation. It suggested the G-CNCs at pH = 7 was more conducive to the establishment of stable emulsions. Hence, this work would offer a guiding significance for the practical production of low-oil gelatin emulsions.

Abstract:Pickering emulsion gels represent a novel class of non-toxic and biocompatible emulsions, offering extensive applications in the pharmaceutical and food additive sectors. This study delineates the synthesis of Pickering emulsion gels utilizing native and amidated pectin samples. Phenylalanine amidated pectin (AP) was procured via an ultra-low temperature enzyme method, while the control group (LP) adhered to an identical procedure without papain catalysis. Experimental outcomes revealed that the AP Pickering emulsion gel manifested superior stability compared to pectin emulsion samples (PE and LP). The Pickering emulsion gel from 5 % amidated pectin (5AP) retained stability throughout a 14-day emulsion stability assessment. Furthermore, all emulsion samples were evaluated for their capacity to deliver and sustain curcumin within an in vitro digestion simulation. Rheological properties and oil droplet size results indicated that the 5AP Pickering emulsion gel exhibited optimal cream index and emulsion stability, effectively inhibiting premature water-oil stratification within the emulsion and augmenting curcumin bioaccessibility. Within the in vitro digestion simulation, the 5AP Pickering emulsion gel demonstrated the highest curcumin bioaccessibility, measured at 17.96 %.

Abstract:The scarcity of radio resources coupled with the high data rate demands in the last few years, induced incremental relaying techniques one of the most promising technologies. This is simply because it allows reaping spatial diversity and saving the channel resources at the same time. In this contribution, we make use of the Decode and Forward incremental relaying technique in OFDM cooperative systems by proposing and analyzing two subcarrier mapping algorithms. Based on outage probability, diversity order and power gain analysis, we derive the optimal parameters for these algorithms to enhance the outage performance of DF cooperative system by reducing the effect of error propagation. Also, an incremental relay sharing scheme is proposed allowing multiple sources to share the same relay and results in an improved spectral efficiency, which is critical given the high cost and scarcity of RF spectrum driven by the growing big data.
