Abstract:A novel agar-based Pickering emulsion stabilizer was developed through the hydrophobic modification and microgelation of agar. After hexanoylation, the three-phase contact angle of hexanoylated agar (HAG) particles was adjusted from approximately 60° to 96° closing to neutral wettability. After microgelation, the particle size of the modified agar microgel was approximately 2 μm and Zeta potential reached -23.63 mV. Confocal laser microscopy and cryogenic scanning electron microscopy showed that HAG microgels formed a gel network or embedded on the surface of oil droplets, thus providing a dense barrier for oil droplets to coalesce and Ostwald ripening. The oil volume fraction and particle concentration had a significant effect on the droplet size and rheological properties of the Pickering emulsion. Pickering emulsion gels with long-term storage stability was prepared at low particle concentrations (0.7 wt%) and lower oil fractions (φ = 0.3- 0.5), which might become a new effective delivery system for bioactive substances.

Abstract:Pickering emulsions was successfully fabricated using ball-milled agar particles with sizes and sulfate content around 7 μm and 0.62 %, respectively. These particles were obtained through a simple media-milling process using agar powders initially sized at 120 μm. The lamellated agar is aggregated into a mass after the milling process. The surface charge and hydrophobicity of the ball-milled agar particles were characterized through zeta potential and contact angle measurements, respectively. The droplet size of Pickering emulsions was related to oil fraction and particle concentration, ranging from approximately 45 μm to 80 μm. Ball-milled agar stabilized emulsions were sensitive to pH and salt conditions. The results of confocal laser scanning microscopy and cryo-SEM showed that at low particle concentrations and oil fractions, ball-milled agar stabilized the emulsions by dispersing particles on the surface of the oil droplets through electrostatic repulsion. Conversely, ball-milled agar stabilized the emulsions under high particle concentrations and oil fractions by forming a gel network structure to bind the oil droplets. In this research, this developed method provides the basis for the high-value application of agar and a new idea for preparing stable food-grade Pickering emulsion-based functional foods using raw-food material without surface wettability.

Immune response to non-O157 Vero toxin-producing Escherichia coli in patients with hemolytic uremic syndrome.

Abstract:The incidence and time course of the immune response to Vero toxin-producing Escherichia coli (VTEC) other than O157 (O26, O55, O111, O128) were determined in 107 children with enteropathic hemolytic uremic syndrome (HUS) by ELISA and compared to antibody profiles of 125 healthy pediatric controls and 100 children with community-acquired uncomplicated diarrhea. Six of 8 HUS patients with non-O157 VTEC isolates exhibited a serologic response to the homologous lipopolysaccharide antigen similar to that of patients infected with E. coli O157. In addition, elevated IgM or IgG antibodies were demonstrated in 7 of 19 culture- and O157 serology-negative HUS patients. Serogroup-specific antibodies decreased below cutoff levels within several months after convalescence. Anti-non-O157 antibodies were found in 14% of the diarrheic controls. Unexpectedly, a high proportion (27/82) of anti-O157 lipopolysaccharide antibody-positive HUS samples reacted with LPS from E. coli O55:B5, suggesting shared epitopes with endemic VTEC O157 strains.
Gelatin-Based Nanocomplex-Stabilized Pickering Emulsions: Regulating Droplet Size and Wettability through Assembly with Glucomannan.

Abstract:Particle size and surface wettability play leading roles in the distribution of particles on the oil-water interface and the stability of emulsions. This work utilized nanocomplexes assembled from gelatin and tannic acid to stabilize Pickering emulsions. The sizes and surface wettability of particles were further regulated by using a polysaccharide. The sizes of nanocomplexes ranged from 205.8 to 422.2 nm and increased with the addition of polysaccharide. Their contact angles decreased from 84.1° to 59.3°, revealing their hydrophilic nature. Results of fluorescence microscopy and cryo-scanning electron microscopy indicated that nanocomplexes were located at the oil-water interface. Interfacial shear and dilatational rheological data revealed a fast and irreversible adsorption behavior, which differed from rearrangement of gelatin molecules at the oil-water interface. The minimal concentration of nanocomplexes required to stabilize emulsions was 0.1 wt %. Our results demonstrated that protein-polyphenol-polysaccharide nanocomplexes had the potential to be applied to form stable surfactant-free food emulsions for the delivery of nutraceuticals.

Pickering-stabilized emulsion gels fabricated from wheat protein nanoparticles: Effect of pH, NaCl and oil content

Abstract:A novel Pickering-stabilized emulsion gel with controlled rheological properties was derived from wheat gliadin nanoparticles-stabilized emulsions by altering preparation conditions (pH, ionic strength or oil content). The formed nanoparticles were relatively small uniform spheres particles (d < 120 nm), whose surface potential (ζ-potential) changed from +9.9 mV to −14.19 mV with the pH of the solution increased from 3.5 to 9. The isoelectric point of gliadin nanoparticles was around pH 6.8. The nanoparticles were highly susceptible to aggregation at pH values near their isoelectric point due to a reduction of electrostatic repulsion between them. Pickering-stabilized emulsions could be formed by blending the nanoparticles with oil and water, and Pickering-stabilized emulsion gels were obtained by altering pH, ionic strength or oil content of the dispersions. Creaming stabilities and rheological properties of the emulsion gels were modulated. Stable Pickering-stabilized emulsion gels with relatively large elastic modulus were formed with 70% oil content at pH 5.5 and 6.0 in the absence of NaCl. The viscosity increased with the increasing of oil content and salt concentration, and the viscosity enhanced when the pH around the isoelectric point. These results may facilitate the design of novel viscoelastic emulsion gels with the Pickering-stabilize mechanism which are suitable for utilizing in foods and other products.

Abstract:Emulsion gel was developed to provide desirable texture, palatability and functionality to food products. Tunable stability of emulsions is often desired, as in certain situations, the chemical content release usually relies on emulsion induced destabilization of the droplet. However, the destabilization for emulsion gel is difficult because of the formation of highly entangled networks. To address this issue, a fully biobased Pickering emulsion gel stabilized by cellulose nanofibrils (CNF) modified with a CO 2 responsive rosin-based surfactant, maleopimaric acid glycidyl methacrylate ester 3-dimethylaminopropylamine imide (MPAGN) was reported. The emulsification/de-emulsification can be reversibly regulated because this surfactant has sensitive CO 2 responsive property. MPAGN can be reversibly between active cationic (MPAGNH + ) and inactive nonionic (MPAGN) responsive to CO 2 and N 2. The microstructure of the emulsion gel was observed and compared before and after the response. The rheological properties of emulsion gel stabilized by different concentrations of MPAGNH + and different contents of CNF were studied separately. As 0.2 wt% CNF was dispersed in 1 mM MPAGNH + solution, the obtained emulsion can be self-standing for long duration. The rheology study indicated that these emulsions show typical gel characteristics with shear-thinning behavior. The stabilization mechanism of these gel emulsion is a synergistic effect caused by the combination of CO 2 responsive Pickering emulsion and intertwined network caused by the hydrogen-bond interaction among CNF.

Abstract:In this paper, we demonstrate the use of gliadin/chitosan complex particles (GCCPs) as particulate stabilizers of oil-in-water emulsions of natural oils and water. For this purpose, we fabricated GCCPs through a facile anti-solvent procedure and demonstrated their usage in the formation of Pickering emulsions and Pickering high internal phase emulsions (HIPEs). The GCCPs can be used to produce surfactant-free o/w Pickering emulsions and Pickering HIPEs; unfortunately these emulsions were labile to coalescence. NaCl addition and/or pH regulation, and the combination were used to modify the surface wettability of the complex particles to achieve stable emulsions. The microstructures, e.g., interfacial frameworks, GCCP partition between the continuous phase and interfacial region, and the state of the droplets, of Pickering emulsions were visualized by confocal laser scanning microscopy (CLSM), confirming that the inclusion of NaCl and slightly adjusting pH toward 4.0 and/or 5.0 benefited the adsorption and accumulation of colloid particles at the droplet surface to form an engineered interfacial structure, bridging droplets together through a percolating layer of colloidal particles at the oil/water interface. A schematic representation for the formation route of the emulsions is proposed to relate the physical performance and rheological property with the interfacial structures and aggregate behaviors in the Pickering system stabilized by the complex particles. Interestingly, direct freeze-drying of the emulsions transformed unstable Pickering emulsions into stable oil powders. This study opens a promising route based on Pickering HIPEs or oil powders to structure liquid oils into solid-like fats without artificial trans-fat, which outlines new directions for future fundamental research.

Abstract:In the present work, sodium carboxymethyl cellulose (CMCNa) was utilized to improve the emulsifying property of gliadin colloid particles (GCPs). We demonstrated the use of gliadin/CMCNa complex particles (GCCPs) as stabilizer to stabilize oil-in-water emulsions in a wide pH range (3.0–9.0) at a very low protein concentration (0.1%, w/v) which could be kept at room temperature for three months without oil-leakage. The effect of gliadin/CMCNa ratio, pH and ionic strength on emulsifying property of gliadin-based particles was investigated, and the stability of Pickering emulsions fabricated by GCCPs at a series of pH (3.0–9.0) to a four-week-long storage was evaluated. The optimized emulsifying property of particles was achieved at a gliadin/CMCNa ratio of 2:1, and Pickering emulsions stabilized by GCCPs at this ratio had a high tolerance for aqueous phase pH variation. Furthermore, the possible mechanisms were discussed by investigating the effect of gliadin/CMCNa ratio on wettability and adsorption behavior of particles at pH 4.0 and pH 7.0. Moderate wettability was achieved at the gliadin/CMCNa ratio of 1:1 at pH 4.0 and 2:1 at pH 7.0. The surface loading percentage of protein of Pickering emulsions increased from 70.28 ± 1.97% to 82.02 ± 6.20% and the surface protein loading (τ) decreased from 267.53 ± 5.31 mg/m2 to 149.17 ± 4.45 mg/m2 with the increase of CMCNa concentration, indicating the adsorption and emulsifying activity of particles could be enhanced by CMCNa addition.

Abstract:Background: Food-grade Pickering particles, particularly plant proteins, have attracted significant interest due to their bio-based nature, environmental friendliness, and edibility. Mulberry-leaf protein (MLP) is a high-quality protein with rich nutritional value and important functional properties. It has special amphoteric and emulsifying characteristics, making it valuable for use in Pickering emulsions. This study aimed to investigate the feasibility of using MLP nanoparticles as solid particles to stabilize Pickering emulsions. Results: The particle size of MLP nanoparticles was less than 300 nm under neutral and alkaline conditions. At pH 9, the zeta potential value reached -34.3 mV, indicating the electrostatic stability of the particles. As ion concentration increased, the particle size of MLP nanoparticles increased, and the zeta potential decreased. Throughout the storage process, no obvious aggregation or precipitation was observed in the dispersion of MLP nanoparticles, indicating strong stability. The particle size of the Pickering emulsion decreased with the increase in protein concentration. When the protein concentration was low, the particles on the oil-water interface became sparse, resulting in poor stability of the prepared emulsion and making it susceptible to aggregation and thus larger particle sizes. Increasing the oil-phase ratio to 70% (v/v) promotes the formation of Pickering emulsions, which exhibit exceptional stability when MLP nanoparticles are fixed at a concentration of 20 mg mL-1. Conclusion: The overall findings indicated that MLP nanoparticles have potential as food-grade materials for Pickering emulsions, marking a novel application of these nanoparticles in the food industry. © 2024 Society of Chemical Industry.
Synergistic effect and mechanism of stabilization of Pickering emulsion by carboxymethyl starch and xanthan gum

Abstract:Pickering emulsions were prepared using different proportions of carboxymethyl starch (CMS) and xanthan gum (XG) combined systems as emulsifying stabilizers (The mass ratios of CMS and XG were 10:0, 9:1, 7:1, 5:1, 3:1 and 1:1, respectively). The synergistic mechanism between CMS and XG was also explored. The results demonstrated that CMS particles were uniformly and densely embedded in the gel-like structure formed by XG, and the electrostatic repulsion between CMS and XG led to a reduction in droplet size (from 3370 nm to 482 nm), resulting in a more compact and orderly droplet distribution. Combined systems of CMS and XG at different proportions enhanced the hardness (3.05–8.36 g), adhesiveness (3.26–8.41 g), and chewiness (4.05–8.20 g) of the emulsion. AFM observed that the emulsion particles were finer and more evenly dispersed. After heat treatment at 25 °C, 60 °C and 80 °C, the emulsion showed no significant stratification phenomenon, and CMS/XG enhanced the heat stability of the emulsion. LF-NMR confirmed that the oil and water could be evenly distributed and the emulsification of the system was complete. Especially when the ratio of CMS and XG was 3:1 and 1:1, the emulsion with a stable and long storage period could be obtained.

Abstract:In this paper, WPI-chitosan complex particles (WCCPs) were prepared as a novel Pickering stabilizer based on high hydrostatic pressure (HHP). The mean particle size of WCCPs was larger than that of pure WPI gel particles (WGPs), and the zeta potential reversed from negative to positive, showing that chitosan molecules were adsorbed on the surface of WGPs. The three-phase contact angle (θo/w) of WGPs was about 120.7° while after addition of chitosan that of WCCPs can reach to 88.9°, indicating that WCCPs could be effective emulsifiers for Pickering emulsions. Rheological measurement demonstrated the formation of Pickering emulsion gels stabilized by WCCPs. The particle concentration of WCCPs affected the droplet size and creaming index of the Pickering emulsion gels significantly. Additionally, the emulsion gels strengthened as increasing the particle concentration of WCCPs. The interfacial structure of the Pickering emulsion gels was observed through the confocal laser scanning microscope images which showed that WCCPs coated densely on the surface of oil droplets performing like a compact barrier against coalescence. The effects of environmental stresses, including ionic strengths, pH and thermal treatment, were also evaluated. Lycopene was encapsulated in the WCCPs-stabilized Pickering emulsion gels and its stability during storage and in vitro release under simulated digestion were measured. Overall, these results showed that WCCPs were suitable for stabilizing Pickering emulsion gels and had the potential as a delivery system for bioactive compounds.

Abstract:Pasteurization, as a meaningful part of food processing, has received growing attention for regulating Pickering emulsion stability. In this research, the role of pasteurization and konjac glucomannan (KGM) in the modulation of Pickering emulsion properties was investigated. The results showed that the network structure formed by KGM inhibited the agglomeration of droplets due to pasteurization, which improved the heat stability of the Pickering emulsion. Increasing the concentration of KGM improved the densification of its network structure, as evidenced by the enhanced viscoelasticity of the emulsion after pasteurization. The retention rate of β-carotene encapsulated in the Pickering emulsion could reach 99% after pasteurization at 65 °C for 30 min. Moreover, pasteurization further enhanced the inhibitory effect of KGM on free fatty acid release and implemented a manageable release of β-carotene. This research offers theoretical guidance for the construction of highly stable Pickering emulsions for delivering temperature-sensitive hydrophobic ingredients.

Abstract:Application of Pickering emulsions in food systems is often limited by their compatibility and their effectiveness in delivering food actives. In this work, we developed a model Pickering emulsion hydrogel system using chitosan as the Pickering emulsifier and Ca-alginate hydrogel beads as the carrier. The synergistic effects between the two materials on the physicochemical stability of the hydrogel formed and the delivery of the immobilized emulsions were investigated. The Ca-alginate hydrogel was found to efficiently immobilize the chitosan-stabilized Pickering emulsions with an immobilization efficiency exceeding 99%, even at a high oil loading of 70% v/v and a chitosan concentration as low as 0.1% w/v. Both the adsorbed chitosan particles on the oil-water interfaces and excess non-adsorbed chitosan particles interacted electrostatically with the alginate matrices to enhance the hydrogel network strength. In comparison to the hydrogel beads containing Tween-80-stabilized emulsions and non-stabilized emulsion, the hydrogels containing Pickering emulsion were significantly more stable under high osmotic pressure and in the presence of low concentrations of destabilizing ions. In the in vitro studies, the Ca-alginate matrices prevented the release of the emulsions at pH 1.2. The emulsions were fully released at pH 7.4 and the release rate was found to be influenced by the concentration of chitosan particles. Interestingly, the chitosan particles remained adsorbed on the oil droplets upon release. This work demonstrates that the alginate-based chitosan-stabilized Pickering emulsion hydrogel system could be an effective immobilization and delivery system for food applications.

Abstract:The effect of konjac glucomannan (KGM) on the stability and digestion characteristics of xanthan gum/lysozyme nanoparticles (XG/Ly NPs) stabilized Pickering emulsions was investigated. Results indicated that the high viscosity of KGM prompted the particles to be adsorbed toward the interface, which decreased the particle size and increased the stability of emulsions. As the concentration of KGM increased, the G′ and G′′ of emulsions became larger and approached a "solid-like" state. When the KGM concentration was ≥0.2 %, the large amplitude sweeps of the emulsion exhibited a "weak strain overshoot". The network structure formed by KGM molecular chain and particles was intertwined around the droplets to form a polysaccharide layer and fibrous network structure. Emulsions containing KGM showed a "spider web" epidermal network pattern. It was found by illumination for 4 h that samples with 0.2 % KGM concentration increased the retention of β-carotene by 18.74 %. KGM decreased the release rate of fatty acids and bioaccessibility by hindering bile salt and lipase adsorption.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.

Pickering emulsion with high freeze-thaw stability stabilized by xanthan gum/lysozyme nanoparticles and konjac glucomannan

Abstract:In this study, freeze-thaw cycle experiments were conducted on food-grade Pickering emulsions co-stabilized with konjac glucomannan (KGM) and xanthan gum/lysozyme nanoparticles (XG/Ly NPs). The rheological properties, particle size, flocculation degree (FD), coalescence degree (CD), centrifugal stability, Differential scanning calorimetry (DSC), X-ray diffraction (XRD) and microstructure of Pickering emulsion stabilized by KGM before and after freeze-thaw were characterized. It was found that as the concentration of KGM increased, the flocculation degree (FD) and coalescence degree (CD) of the emulsion decreased after the freeze-thaw cycle compared to the control sample, and the microscopic images showed that the droplets became smaller and less affected by the freeze-thaw cycles. The rheological and water-holding properties also confirmed that the KGM-added emulsions still had a strong gel network structure and prevented the separation of the continuous and dispersed phases of the droplets after freezing and thawing. Freeze-thaw treatments had a negative effect on the stable emulsion of XG/Ly NPs, while the addition of KGM improved the freeze-thaw stability of the emulsion, which provided a theoretical basis for the development of emulsion products with high freeze-thaw stability.

Investigation and Characterization of Pickering Emulsion Stabilized by Alkali-Treated Zein (AZ)/Sodium Alginate (SA) Composite Particles

Abstract:Pickering emulsions stabilized by food-grade colloidal particles have attracted increasing attention in recent years due to their "surfactant-free" nature. In this study, the alkali-treated zein (AZ) was prepared via restricted alkali deamidation and then combined with sodium alginate (SA) in different ratios to obtain AZ/SA composite particles (ZS), which were used to stabilize Pickering emulsion. The degree of deamidation (DD) and degree of hydrolysis (DH) of AZ were 12.74% and 6.58% respectively, indicating the deamidation occurred mainly in glutamine on the side chain of the protein. After the treatment with alkali, AZ particle size decreased significantly. Moreover, the particle size of ZS with different ratios was all less than 80 nm. when the AZ/SA ratio was 2:1(Z2S1) and 3:1(Z3S1), the three-phase contact angle (θo/w) were close to 90°, which was favorable for stabilizing the Pickering emulsion. Furthermore, at a high oil phase fraction (75%), Z3S1-stabilized Pickering emulsions showed the best long-term storage stability within 60 days. Confocal laser scanning microscope (CLSM) observations showed that the water-oil interface was wrapped by a dense layer of Z3S1 particles with non-agglomeration between independent oil droplets. At constant particle concentration, the apparent viscosity of the Pickering emulsions stabilized by Z3S1 gradually decreased with increasing oil phase fraction, and the oil-droplet size and the Turbiscan stability index (TSI) also gradually decreased, exhibiting solid-like behavior. This study provides new ideas for the fabrication of food-grade Pickering emulsions and will extend the future applications of zein-based Pickering emulsions as bioactive ingredient delivery systems.

Abstract:Transforming growth factor‐β1 (TGF‐β1) has been implicated in the positive regulation of angiogenesis in vivo, whereas it inhibits the proliferation of endothelial cells in vitro. To reconcile these apparently contradictory effects, we have investigated the effect of TGF‐β1 on bovine aortic endothelial cells that exhibit spontaneous angiogenesis in vitro. We show that concentrations of TGF‐β1 which stimulate proliferation of cells that form endothelial cords and/or tubes inhibit proliferation of the same cells grown at subconfluent densities. An increase in cell number of 35% over control cultures was achieved with 0.5 ng TGF‐β1/ml. The proliferative effect was blocked by antibodies against TGF‐β. Immunological detection of BrdU‐labeled nuclei revealed an increase greater than 220% in cells treated with TGF‐β1. Moreover, a population of cells within the cords appeared to be a selective target for this cytokine. The stimulatory effect was not restricted to bovine aortic endothelial cells, as similar results were obtained with endothelial cells derived from rat microvessels. Significant levels of active TGF‐β1 were detected in cultures containing cords/tubes, whereas only latent TGF‐β1 was detected in subconfluent cultures. We show further that endothelial cells exhibiting angiogenesis in vitro secrete plasminogen activator, an enzyme that regulates activation of TGF‐β. The major increases in mRNA transcripts for extracellular matrix proteins that are typically associated with TGF‐β1 were not seen in cells exhibiting angiogenesis in vitro. Since the formation of tubular networks requires both invasion and proliferation, we propose that TGF‐β1 is a major morphoregulatory factor in angiogenesis that specifically controls endothelial cell proliferation and extracellular matrix turnover.
Carrageenan-Based Pickering Emulsion Gels Stabilized by Xanthan Gum/Lysozyme Nanoparticle: Microstructure, Rheological, and Texture Perspective

Abstract:In this study, Pickering emulsion gels were prepared by the self-gel method based on kappa carrageenan (kC). The effects of particle stabilizers and polysaccharide concentrations on the microstructure, rheological characteristics, and texture of Pickering emulsion gels stabilized by xanthan gum/lysozyme nanoparticles (XG/Ly NPs) with kC were discussed. The viscoelasticity of Pickering emulsion gels increased significantly with the increase of kC and XG/Ly NPs. The results of temperature sweep showed that the gel formation mainly depended on the kC addition. The XG/Ly NPs addition could accelerate the formation of Pickering emulsion gels and increase its melting temperature (Tmelt), which is helpful to improve the thermal stability of emulsion gels. Cryo-scanning electron microscope (Cryo-SEM) images revealed that Pickering emulsion gel has a porous network structure, and the oil droplets were well wrapped in the pores. The hardness increased significantly with the increase of XG/Ly NPs and kC. In particular, the Pickering emulsion gel hardness was up to 2.9 Newton (N) when the concentration of kC and XG/Ly NPs were 2%. The results showed that self-gelling polysaccharides, such as kC, could construct and regulate the structure and characteristics of Pickering emulsion gel. This study provides theoretical support for potential new applications of emulsion gels as functional colloids and delivery systems in the food industry.

Abstract:There is fast increasing interest in the development of food grade high internal phase emulsions (HIPEs; with oil fractions > 0.74) stabilized by protein-based particles, due to their potential applications in food, cosmetics and biomedical fields. This work reported that soy glycinin (SG), an important soy storage globulin, exhibited a potential to act as Pickering stabilizers for HIPEs; and the glycation with soy soluble polysaccharide (SSPS) greatly improved the emulsification performance of SG, the gel network formation and stability (against heating or freeze-thawing) of the resultant HIPEs. In the work, two selected glycation incubation periods (24 and 72 h) were applied to obtain the glycated SG. The results indicated that the glycation progressively decreased the minimal concentration required for the formation of gel-like HIPEs, and droplet size, but increased the gel network strength, in an incubation period dependent manner. The improvement of emulsification performance by the glycation was mainly associated with the enhanced adsorption, as well as facilitated subunit dissociation at the interface, during the HIPE formation. All the HIPEs stabilized by untreated or glycated SG exhibited an excellent coalescence stability against a long-term storage. The structural analyses of non-adsorbed and adsorbed SG indicated that although untreated SG showed a high whole structural integrity with no distinct changes in structures after adsorption at interface, it tended to aggregate (due to its high surface hydrophobicity); in contrast, glycated SG easily dissociated into subunits at the interface, but the dissociated subunits exhibited a high structural stability at the tertiary and secondary levels. The findings would be of importance not only for the development of soy protein-based Pickering stabilizers for emulsions or HIPEs, but also for extending the knowledge about the modification of emulsifying properties of proteins by glycation with carbohydrates.
