Abstract:Fish processing is an indispensable part of fish food production. It mainly involves de-heading, gutting, filleting, skinning, trimming, and slicing, with the cutting operations holding a critical role. Unfortunately, inefficiency, low quality, and poor safety are the primary problems facing the fish processing industry today, dramatically hindering the automation and intelligence of fish processing. Consequently, it is vital to develop intelligent cutting in current fish processing in an efficient, high-quality, and safe manner. This review summarizes the main cutting techniques for fish processing. The critical techniques to achieve intelligent cutting in fish processing from imaging, image processing, and modeling dimensions are outlined, with their applications in practical fish processing. Fish characteristics, cutting mechanisms, and cutting process control are emphasized. In addition, Industry 4.0 technologies, especially the Internet of Things (IoT), big data analytics, and digital twins (DT), are emphasized. Finally, challenges and future work are highlighted, which will serve as references for subsequent researchers and enterprises engaged in this field to promote the automation and intelligence of fish processing production, ultimately realizing the high-efficiency, high-quality, and safe production of fish food products.
Synergism Effect of Low Voltage Electrostatic Field and Antifreeze Agents on Enhancing the Qualities of Frozen Beef Steak: Perspectives on Water Migration and Protein Aggregation

Abstract:In this study, a synergistic strategy utilizing low-voltage electrostatic field (LVEF) and antifreeze agents (4% sucrose +4% sorbitol) was proposed to reduce quality deterioration of prepared beef steak during freezing. The effects of the synergistic treatment on the water holding capacity, texture and muscle ultrastructure, myofibrillar protein (MP) aggregation was studied. Results showed that co-treatment significantly reduced thawing losses (about 41%) by preventing the migration of immobilized water to free water and reduced ice crystal size compared to air freezing (AF). In addition, co-treatment positively affected texture properties by shortening the gap between muscle fibers and maintaining the structural integrity of the sarcomeres. Moreover, synergistic treatment inhibited the unfolding of the MP structure and the formation of MP aggregates by strengthening non -covalent interactions. These results seem to demonstrate that LVEF can remarkably enhance the effects of cryoprotectants, which provides a new perspective on food cryoprotection. Industrial relevance: Freezing is the most common method of preserving prepared meat products, however, the formation of large ice crystals and the denaturation of muscle proteins are two major causes of quality deteri-oration during conventional air-freezing. In this study, a LVEF system was applied to the freezing process of prepared meat products, and a comparative and synergistic study was carried out with the current industry common chemical freezing protection methods (addition of antifreeze). The results showed that the synergistic treatment greatly promoted the nucleation of food products, shortened the phase transition time, reduced the ice crystal size and effectively reduced the thawing losses by approximately 41%. The green freezing system can be easily adapted to scenarios such as cold chain transport and cold storage. And the LVEF intensifies the interaction of antifreeze molecules with protein and water molecules, which seems to open up even more possibilities in cryopreservation.

Abstract:Cryopreservation, one of the most effective preservation methods, is essential for maintaining the safety and quality of food. However, there is no denying the fact that the quality of muscle food deteriorates as a result of the unavoidable production of ice. Advancements in cryoregulatory materials and techniques have effectively mitigated the adverse impacts of ice, thereby enhancing the standard of freezing preservation. The first part of this overview explains how ice forms, including the theoretical foundations of nucleation, growth, and recrystallization as well as the key influencing factors that affect each process. Subsequently, the impact of ice formation on the eating quality and nutritional value of muscle food is delineated. A systematic explanation of cutting-edge strategies based on nucleation intervention, growth control, and recrystallization inhibition is offered. These methods include antifreeze proteins, ice-nucleating proteins, antifreeze peptides, natural deep eutectic solvents, polysaccharides, amino acids, and their derivatives. Furthermore, advanced physical techniques such as electrostatic fields, magnetic fields, acoustic fields, liquid nitrogen, and supercooling preservation techniques are expounded upon, which effectively hinder the formation of ice crystals during cryopreservation. The paper outlines the difficulties and potential directions in ice inhibition for effective cryopreservation.

Abstract:Low temperature environments can effectively inhibit the growth of microorganisms in raw meat products due to the reduced activity of enzymes, which is conducive to the long-term preservation of foodstuffs. At present, mainstream technologies include ultrasonic-assisted freezing, high-voltage electric and magnetic field-assisted freezing, and liquid nitrogen freezing technologies are widely used in the freezing process. In this paper, the freezing processes and devices for the fresh meat products were reviewed. The formation mechanism of ice crystals during the freezing of meat products was analyzed. The influence of the shape and size of ice crystals on their quality was studied. Also, the effect of different freezing processes and freezing device on the quality of meat products was studied. The key technologies regarding cold chain storage and transportation of meat products should move in the direction of intelligence, information, efficiency, and the unmanned. Finally, the key processes and device regarding freezing, cold chain, storage, and transportation were planned for the future development.

Abstract:Freezing is one of the most widespread used preservation methods for meats including fish meat. Traditional freezing methods such as air blast freezing and cryogenic freezing could induce some quality deterioration such as damage to cell structure, increased drip loss, and poor sensory value. Therefore, novel freezing methods have been developed to minimize the disadvantages of traditional freezing methods. This review describes the enhancement of quality attributes of muscle tissues frozen by novel freezing technologies, including high pressure freezing, electrically and magnetically assisted freezing, ultrasound assisted freezing and antifreeze protein. These quality attributes include microstructure, moisture loss, color, tenderness, protein denaturation, lipid and protein oxidation, and microbial counts. In this review, the principles of these emerging freezing technologies are introduced, and the impacts of these technologies on controlling the formation and growth of ice crystals and on complex changes of protein are also discussed. The current review shows that the novel freezing methods have positive effects on promoting the quality of frozen muscle. At a micro level, the majority of the novel methods have some certain ability on controlling the formation and growth of ice crystals, thus creating smaller, and more homogeneous and regular distribution of ice crystals, leading to better microstructure and enhanced quality attributes of frozen meats. Meanwhile, complex changes of protein take place under some of these novel freezing processes, and therefore the possible negative effect of the changes of protein should also be considered for commercial applications of these technologies in the frozen food industry.

Abstract:With advances in artificial intelligence (AI) technologies, the development and implementation of digital food systems are becoming increasingly possible. There is tremendous interest in using different AI applications, such as machine learning models, natural language processing, and computer vision to improve food safety. Possible AI applications are broad and include, but are not limited to, ( a) food safety risk prediction and monitoring as well as food safety optimization throughout the supply chain, ( b) improved public health systems (e.g., by providing early warning of outbreaks and source attribution), and ( c) detection, identification, and characterization of foodborne pathogens. However, AI technologies in food safety lag behind in commercial development because of obstacles such as limited data sharing and limited collaborative research and development efforts. Future actions should be directed toward applying data privacy protection methods, improving data standardization, and developing a collaborative ecosystem to drive innovations in AI applications to food safety. Abstract:This paper provides a review of an emerging field in the food processing sector, referring to efficient and safe food supply chains, ’from farm to fork’, as enabled by Artificial Intelligence (AI). The field is of great significance from economic, food safety and public health points of views. The paper focuses on effective food production, food maintenance energy management and food retail packaging labeling control, using recent advances in machine learning. Appropriate deep neural architectures are adopted and used for this purpose, including Fully Convolutional Networks, Long Short-Term Memories and Recurrent Neural Networks, Auto-Encoders and Attention mechanisms, Latent Variable extraction and clustering, as well as Domain Adaptation. Three experimental studies are presented, illustrating the ability of these AI methodologies to produce state-of-the-art performance in the whole food supply chain. In particular, these concern: (i) predicting plant growth and tomato yield in greenhouses, thus matching food production to market needs and reducing food waste or food unavailability; (ii) optimizing energy consumption across large networks of food retail refrigeration systems, through optimal selection of systems that can be shut-down and through prediction of the respective food de-freezing times, during peaks of power demand load; (iii) optical recognition and verification of food consumption expiry date in automatic inspection of retail packaged food, thus ensuring safety of food and people’s health.

Abstract:Global food systems confront the urgent challenge of supplying sustainable, nutritious diets in the face of escalating demands. The advent of Artificial Intelligence (AI) is bringing in a personal choice revolution, wherein AI-driven individual decisions transform food systems from dinner tables, to the farms, and back to our plates. In this context, AI algorithms refine personal dietary choices, subsequently shaping agricultural outputs, and promoting an optimized feedback loop from consumption to cultivation. Initially, we delve into AI tools and techniques spanning the food supply chain, and subsequently assess how AI subfields$\unicode{x2013}$encompassing machine learning, computer vision, and speech recognition$\unicode{x2013}$are harnessed within the AI-enabled Food System (AIFS) framework, which increasingly leverages Internet of Things, multimodal sensors and real-time data exchange. We spotlight the AIFS framework, emphasizing its fusion of AI with technologies such as digitalization, big data analytics, biotechnology, and IoT extensively used in modern food systems in every component. This paradigm shifts the conventional "farm to fork" narrative to a cyclical "consumer-driven farm to fork" model for better achieving sustainable, nutritious diets. This paper explores AI's promise and the intrinsic challenges it poses within the food domain. By championing stringent AI governance, uniform data architectures, and cross-disciplinary partnerships, we argue that AI, when synergized with consumer-centric strategies, holds the potential to steer food systems toward a sustainable trajectory. We furnish a comprehensive survey for the state-of-the-art in diverse facets of food systems, subsequently pinpointing gaps and advocating for the judicious and efficacious deployment of emergent AI methodologies.

Abstract:Background: Meat, as protein-rich food, provides essential nutrition to humans. Meat consumption is expected to increase by 15% over the next decade, requiring the meat industry to boost its capacity. However, the meat cutting industry's harsh working environment and long-term heavy workload result in a labor shortage. Lowmargin and low capacity require innovative processing methods. Hence, some novel automation methods are urgently demanded to meet these challenges. Accompanied by the development of Industry 4.0, robotization and intelligent systems are progressively applied in the meat cutting industry, which can provide a flexible, adaptive, and sustainable processing approach. Scope and approach: The paper selected 50 papers using the systematic literature review method. This paper provides an overview of the current research and commercial applications of cutting robotization from livestock, poultry, and fish in the meat industry. Additionally, intelligent sensing technologies, advanced cutting techniques, and a novel manufacturing concept called the meat factory cell, are emphasized to promote efficiency, scalability, and modularization. Finally, we discuss the potential applications of digital technologies in the meat cutting industry and the focal points of future research aiming to promote cutting robotization. Key findings and conclusions: The meat cutting process can be highly robotized by integrating dexterous cutting robots, advanced sensing techniques, and digital systems, driving the transformation from manual labor to robotic, efficient, and intelligent manufacturing. Consequently, robotization and intelligent digital systems can provide a brand-new manufacturing method to the meat cutting industry and advance the Meat factory 4.0.

Abstract:Recent advancements in imaging, electronics, and computer science have engendered significant progress in non-destructive testing and quality monitoring within the agro-food industry. As a non-contact method, AI-based TI holds promise in detecting various quality attributes and has found extensive applications in agriculture, food processing, and post-harvest fruit handling. This paper delves into recent applications of AI-based thermal imaging, specifically in post-harvest fruit handling. The introduction provides a comprehensive overview of the challenges faced in the post-harvest fruit handling industry while emphasizing the advantages of AI-driven thermal imaging technology. The detailed thermal imaging system encompasses both passive and active thermography techniques. This paper provides an in-depth exploration of artificial intelligence, focusing on machine learning and deep learning. It highlights the significance of convolutional neural networks (CNNs) and their architectural phases. Subsequently, critical applications of AI-based thermal imaging in post-harvest fruit quality assessment are discussed. These applications encompass bruise detection, maturity identification, condition monitoring, grading and sorting, pest and disease detection, and considerations for packaging and supply chain management. Furthermore, this paper addresses the challenges and limitations of AI-based thermal imaging in post-harvest fruit handling. Abstract:With the world population rapidly increasing, transforming our agrifood systems to be more productive, efficient, safe, and sustainable is crucial to mitigate potential food shortages. Recently, artificial intelligence (AI) techniques such as deep learning (DL) have demonstrated their strong abilities in various areas, including language, vision, remote sensing (RS), and agrifood systems applications. However, the overall impact of AI on agrifood systems remains unclear. In this paper, we thoroughly review how AI techniques can transform agrifood systems and contribute to the modern agrifood industry. Firstly, we summarize the data acquisition methods in agrifood systems, including acquisition, storage, and processing techniques. Secondly, we present a progress review of AI methods in agrifood systems, specifically in agriculture, animal husbandry, and fishery, covering topics such as agrifood classification, growth monitoring, yield prediction, and quality assessment. Furthermore, we highlight potential challenges and promising research opportunities for transforming modern agrifood systems with AI. We hope this survey could offer an overall picture to newcomers in the field and serve as a starting point for their further research.

Abstract:Steroidogenic acute regulatory (StAR) protein is synthesized in response to tropic hormones to facilitate cholesterol transport to the inner mitochondrial membrane-bound P450 side-chain cleavage enzyme (P450scc), the first enzymatic step in the steroid hormone biosynthetic pathway. Gonadotropins activate expression of their target genes via the cAMP second messenger system. We have demonstrated that cAMP administration to rat luteal cells stimulates expression of both StAR messenger RNA and protein. Because cholesterol delivery is the first regulated step in steroidogenesis, and because StAR messenger RNA levels are increased in response to tropic hormone and cAMP stimulation, the mechanism by which tropic hormones/cAMP stimulate transcription needs to be elucidated. To this end, approximately 2.7 kb of the rat StAR promoter was isolated and sequenced. Sequence analysis revealed the presence of a TATA-like element as well as multiple regulatory motifs including steroidogenic factor 1 (SF-1) binding sites, an estrogen receptor half-site, and two AP-1 sites within the promoter region. 5'-RACE experiments determined the transcription start site to be located 82 bp upstream of the ATG translation start codon. Electrophoretic mobility shift assays and supershift analysis demonstrated SF-1 binding to three SF-1 binding sites in the rat StAR promoter with high affinity and two SF-1 binding sites with low affinity. Transfection of mouse Y1 adrenal tumor cells and human bladder carcinoma cells (HTB9s) with the rat StAR promoter demonstrated that SF-1 was able to activate transcription of the luciferase reporter gene and that the rat StAR promoter was responsive to cAMP. Nested deletions of the rat StAR promoter (1.9 kb) identified a region between -1413 and -998 that is essential for maximal activation of the rat StAR gene in HTB9 cells; however, deletion of this region does not affect responsiveness to cAMP. 5'-Deletion and site-directed mutagenesis experiments demonstrated that the SF-1 motifs identified within the rat StAR promoter (located at positions -764, -455, and -106) were sufficient to activate transcription as well as confer cAMP responsiveness to the rat StAR gene. Site-directed mutagenesis studies using the smallest promoter fragment demonstrated that the two proximal SF-1 binding sites are crucial for StAR gene transcription, both at a basal level and in response to cAMP stimulation. These studies provide novel insights into the regulation of the rat StAR gene at the transcriptional level by SF-1.

Abstract:Cultured meat has the potential to provide a complementary meat industry with reduced environmental, ethical, and health impacts. However, major technological challenges remain which require time- and resource-intensive research and development efforts. Machine learning has the potential to accelerate cultured meat technology by streamlining experiments, predicting optimal results, and reducing experimentation time and resources. However, the use of machine learning in cultured meat is in its infancy. This review covers the work available to date on the use of machine learning in cultured meat and explores future possibilities. We address four major areas of cultured meat research and development: establishing cell lines, cell culture media design, microscopy and image analysis, and bioprocessing and food processing optimization. This review aims to provide the foundation necessary for both cultured meat and machine learning scientists to identify research opportunities at the intersection between cultured meat and machine learning.

Abstract:Climate change is considered primarily as a human-created phenomenon that is changing the way humans live. Nowhere are the impacts of climate change more evident than in the food ecosphere. Climate-induced changes in temperature, precipitation, and rain patterns, as well as extreme weather events have already started impacting the yield, quality, and safety of food. Food safety and the availability of food is a fundamental aspect of ensuring food security and an adequate standard of living. With climate change, there have been increasing instances of observed changes in the safety of food, particularly from a microbiological standpoint, as well as its quality and yield. Thus, there is an urgent need for the implementation of advanced methods to predict the food safety implications of climate change (i.e., future food safety issues) from a holistic perspective (overall food system). Artificial Intelligence (AI) and other such advanced technologies have, over the years, permeated many facets of the food chain, spanning both farm- (or ocean-) to-fork production, and food quality and safety testing and prediction. As a result, these are perfectly positioned to develop novel models to predict future climate change-induced food safety risks. This article provides a roundup of the latest research on the use of AI in the food industry, climate change and its impact on the food industry, as well as the social, ethical, and legal limitations of the same. Particularly, this perspective review stresses the importance of a holistic approach to food safety and quality prediction from a microbiological standpoint, encompassing diverse data streams to help stakeholders make the most informed decisions.

Abstract:This research article presents a systematic literature review on the current state‐of‐the‐art artificial intelligence (AI) methodologies used in aquaculture applications. As the demand for seafood continues to grow, the aquaculture industry faces numerous challenges, including disease management, feeding optimization, water quality monitoring, and extraction of aquaculture area. To address these challenges effectively and sustainably, AI techniques have been increasingly applied in aquaculture systems over recent years. This review aims to analyze various AI methodologies utilized within different aspects of aquacultural practices. By examining existing studies and identifying trends and gaps in research areas related to AI integration into aquaculture practices, this paper provides valuable insights for further advancements. The purpose was to synthesize current knowledge on application and its challenges in implementing AI technologies within the commercial aquaculture industry. Specifically, the review is to identify and analyze peer‐reviewed studies reporting on applications of AI technologies in aquaculture industry, to classify and summarize the key findings from the selected studies in aquaculture operations through AI, and to evaluate and discuss any challenges reported regarding the implementation and adoption of AI solutions in commercial aquaculture. The overall goal was to comprehensively assess these via a systematic literature review process. Challenges of AI technologies and methods were identified in the research literature for applying AI to optimize commercial aquaculture practices and production. An exhaustive search of a scholarly database from Scopus, was performed and papers published in English between 2020 and 2024 were considered for inclusion. After a rigorous screening process involving over 116 studies, 57 highly relevant works were identified and analyzed according to key themes involving demonstrated AI applications, employed methodologies and challenges that are expected when applying such methods. The findings revealed that AI‐driven tools such as computer vision, machine learning, and predictive modeling hold much potential for enhancing sustainability, efficiency, and productivity within aquaculture operations through applications like disease monitoring, environmental management, and production optimization. However, the review also uncovered substantial challenges that will continue limiting widespread adoption, including restricted access to representative data, prohibitive expenses, technical complexities, lack of social acceptance, and data privacy and security concerns. This comprehensive synthesis of the current evidence available provides an empirical foundation upon which further progress can be built by identifying priority areas requiring additional research efforts to fully address challenges on the responsible integration of suitable solutions for the commercial aquaculture industry globally.

Abstract:Increasing meat demand in terms of both quality and quantity in conjunction with feeding a growing population has resulted in regulatory agencies imposing stringent guidelines on meat quality and safety. Objective and accurate rapid non-destructive detection methods and evaluation techniques based on artificial intelligence have become the research hotspot in recent years and have been widely applied in the meat industry. Therefore, this review surveyed the key technologies of non-destructive detection for meat quality, mainly including ultrasonic technology, machine (computer) vision technology, near-infrared spectroscopy technology, hyperspectral technology, Raman spectra technology, and electronic nose/tongue. The technical characteristics and evaluation methods were compared and analyzed; the practical applications of non-destructive detection technologies in meat quality assessment were explored; and the current challenges and future research directions were discussed. The literature presented in this review clearly demonstrate that previous research on non-destructive technologies are of great significance to ensure consumers' urgent demand for high-quality meat by promoting automatic, real-time inspection and quality control in meat production. In the near future, with ever-growing application requirements and research developments, it is a trend to integrate such systems to provide effective solutions for various grain quality evaluation applications.
