Abstract:Artificial intelligence (AI) is that the theory and development of computer systems ready to perform tasks normally requiring human intelligence. With teeming competition and increasing demand within the food industry, has begun to embrace AI technologies during a bid to maximize profits and explore new ways to succeed in serve the consumers. AI has recently began to fix its application in various sector of the society with food industry as like pharmaceutical industry. This review highlights the impactful use of AI in diverse area of food sector including Sorting, Grading, Food Quality, Cleaning, Efficient Supply chain management, Microbial internal control and various method of food analysis. Chemical and Biological Sensor are used for food quality monitoring as well as application of AI to provide best quality food products. Planning of ordinary reliable procedures to regulate the standard of products may be a major objective. Despite these obstacles, research into optimizing production processes using AI is ongoing. It is crucial to emphasize, however, that the benefit of AI application in the food industry far outweigh the limitations.

Abstract:Artificial intelligence (AI) involves the development of algorithms and computational models that enable machines to process and analyze large amounts of data, identify patterns and relationships, and make predictions or decisions based on that analysis. AI has become increasingly pervasive across a wide range of industries and sectors, with healthcare, finance, transportation, manufacturing, retail, education, and agriculture are a few examples to mention. As AI technology continues to advance, it is expected to have an even greater impact on industries in the future. For instance, AI is being increasingly used in the agri-food sector to improve productivity, efficiency, and sustainability. It has the potential to revolutionize the agri-food sector in several ways, including but not limited to precision agriculture, crop monitoring, predictive analytics, supply chain optimization, food processing, quality control, personalized nutrition, and food safety. This review emphasizes how recent developments in AI technology have transformed the agri-food sector by improving efficiency, reducing waste, and enhancing food safety and quality, providing particular examples. Abstract:Artificial intelligence has the potential to alter the agricultural and food processing industries, with significant ramifications for sustainability and global food security. The integration of artificial intelligence in agriculture has witnessed a significant uptick in recent years. Therefore, comprehensive understanding of these techniques is needed to broaden its application in agri-food supply chain. In this review, we explored cutting-edge artificial intelligence methodologies with a focus on machine learning, neural networks, and deep learning. The application of artificial intelligence in agri-food industry and their quality assurance throughout the production process is thoroughly discussed with an emphasis on the current scientific knowledge and future perspective. Artificial intelligence has played a significant role in transforming agri-food systems by enhancing efficiency, sustainability, and productivity. Many food industries are implementing the artificial intelligence in modelling, prediction, control tool, sensory evaluation, quality control, and tackling complicated challenges in food processing. Similarly, artificial intelligence applied in agriculture to improve the entire farming process, such as crop yield optimization, use of herbicides, weeds identification, and harvesting of fruits. In summary, the integration of artificial intelligence in agri-food systems offers the potential to address key challenges in agriculture, enhance sustainability, and contribute to global food security.

Abstract:With advances in artificial intelligence (AI) technologies, the development and implementation of digital food systems are becoming increasingly possible. There is tremendous interest in using different AI applications, such as machine learning models, natural language processing, and computer vision to improve food safety. Possible AI applications are broad and include, but are not limited to, ( a) food safety risk prediction and monitoring as well as food safety optimization throughout the supply chain, ( b) improved public health systems (e.g., by providing early warning of outbreaks and source attribution), and ( c) detection, identification, and characterization of foodborne pathogens. However, AI technologies in food safety lag behind in commercial development because of obstacles such as limited data sharing and limited collaborative research and development efforts. Future actions should be directed toward applying data privacy protection methods, improving data standardization, and developing a collaborative ecosystem to drive innovations in AI applications to food safety. Abstract:Climate change is considered primarily as a human-created phenomenon that is changing the way humans live. Nowhere are the impacts of climate change more evident than in the food ecosphere. Climate-induced changes in temperature, precipitation, and rain patterns, as well as extreme weather events have already started impacting the yield, quality, and safety of food. Food safety and the availability of food is a fundamental aspect of ensuring food security and an adequate standard of living. With climate change, there have been increasing instances of observed changes in the safety of food, particularly from a microbiological standpoint, as well as its quality and yield. Thus, there is an urgent need for the implementation of advanced methods to predict the food safety implications of climate change (i.e., future food safety issues) from a holistic perspective (overall food system). Artificial Intelligence (AI) and other such advanced technologies have, over the years, permeated many facets of the food chain, spanning both farm- (or ocean-) to-fork production, and food quality and safety testing and prediction. As a result, these are perfectly positioned to develop novel models to predict future climate change-induced food safety risks. This article provides a roundup of the latest research on the use of AI in the food industry, climate change and its impact on the food industry, as well as the social, ethical, and legal limitations of the same. Particularly, this perspective review stresses the importance of a holistic approach to food safety and quality prediction from a microbiological standpoint, encompassing diverse data streams to help stakeholders make the most informed decisions.

Abstract:This paper provides a review of an emerging field in the food processing sector, referring to efficient and safe food supply chains, ’from farm to fork’, as enabled by Artificial Intelligence (AI). The field is of great significance from economic, food safety and public health points of views. The paper focuses on effective food production, food maintenance energy management and food retail packaging labeling control, using recent advances in machine learning. Appropriate deep neural architectures are adopted and used for this purpose, including Fully Convolutional Networks, Long Short-Term Memories and Recurrent Neural Networks, Auto-Encoders and Attention mechanisms, Latent Variable extraction and clustering, as well as Domain Adaptation. Three experimental studies are presented, illustrating the ability of these AI methodologies to produce state-of-the-art performance in the whole food supply chain. In particular, these concern: (i) predicting plant growth and tomato yield in greenhouses, thus matching food production to market needs and reducing food waste or food unavailability; (ii) optimizing energy consumption across large networks of food retail refrigeration systems, through optimal selection of systems that can be shut-down and through prediction of the respective food de-freezing times, during peaks of power demand load; (iii) optical recognition and verification of food consumption expiry date in automatic inspection of retail packaged food, thus ensuring safety of food and people’s health.

Abstract:Artificial Intelligence (AI) technologies have been powerful solutions used to improve food yield, quality, and nutrition, increase safety and traceability while decreasing resource consumption, and eliminate food waste. Compared with several qualitative reviews on AI in food safety, we conducted an in-depth quantitative and systematic review based on the Core Collection database of WoS (Web of Science). To discover the historical trajectory and identify future trends, we analysed the literature concerning AI technologies in food safety from 2012 to 2022 by CiteSpace. In this review, we used bibliometric methods to describe the development of AI in food safety, including performance analysis, science mapping, and network analysis by CiteSpace. Among the 1855 selected articles, China and the United States contributed the most literature, and the Chinese Academy of Sciences released the largest number of relevant articles. Among all the journals in this field, PLoS ONE and Computers and Electronics in Agriculture ranked first and second in terms of annual publications and co-citation frequency. The present character, hot spots, and future research trends of AI technologies in food safety research were determined. Furthermore, based on our analyses, we provide researchers, practitioners, and policymakers with the big picture of research on AI in food safety across the whole process, from precision agriculture to precision nutrition, through 28 enlightening articles.

Abstract:Promoting sustainability in food and nutrition systems is essential to address the various challenges and trade-offs within the current food system. This imperative is guided by key principles and actionable steps, including enhancing productivity and efficiency, reducing waste, adopting sustainable agricultural practices, improving economic growth and livelihoods, and enhancing resilience at various levels. However, in order to change the current food consumption patterns of the world and move toward sustainable diets, as well as increase productivity in the food production chain, it is necessary to employ the findings and achievements of other sciences. These include the use of artificial intelligence-based technologies. Presented here is a narrative review of possible applications of artificial intelligence in the food production chain that could increase productivity and sustainability. In this study, the most significant roles that artificial intelligence can play in enhancing the productivity and sustainability of the food and nutrition system have been examined in terms of production, processing, distribution, and food consumption. The research revealed that artificial intelligence, a branch of computer science that uses intelligent machines to perform tasks that require human intelligence, can significantly contribute to sustainable food security. Patterns of production, transportation, supply chain, marketing, and food-related applications can all benefit from artificial intelligence. As this review of successful experiences indicates, artificial intelligence, machine learning, and big data are a boon to the goal of sustainable food security as they enable us to achieve our goals more efficiently.

Abstract:Due to the increasing global population and the growing demand for food worldwide as well as changes in weather conditions and the availability of water, artificial intelligence (AI) such as expert systems, natural language processing, speech recognition, and machine vision have changed not only the quantity but also the quality of work in the agricultural sector. Researchers and scientists are now moving toward the utilization of new IoT technologies in smart farming to help farmers use AI technology in the development of improved seeds, crop protection, and fertilizers. This will improve farmers' profitability and the overall economy of the country. AI is emerging in three major categories in agriculture, namely soil and crop monitoring, predictive analytics, and agricultural robotics. In this regard, farmers are increasingly adopting the use of sensors and soil sampling to gather data to be used by farm management systems for further investigations and analyses. This article contributes to the field by surveying AI applications in the agricultural sector. It starts with background information on AI, including a discussion of all AI methods utilized in the agricultural industry, such as machine learning, the IoT, expert systems, image processing, and computer vision. A comprehensive literature review is then provided, addressing how researchers have utilized AI applications effectively in data collection using sensors, smart robots, and monitoring systems for crops and irrigation leakage. It is also shown that while utilizing AI applications, quality, productivity, and sustainability are maintained. Finally, we explore the benefits and challenges of AI applications together with a comparison and discussion of several AI methodologies applied in smart farming, such as machine learning, expert systems, and image processing.

Abstract:To enhance the resilience of food systems to food safety risks, it is vitally important for national authorities and international organizations to be able to identify emerging food safety risks and to provide early warning signals in a timely manner. This review provides an overview of existing and experimental applications of artificial intelligence (AI), big data, and internet of things as part of early warning and emerging risk identification tools and methods in the food safety domain. There is an ongoing rapid development of systems fed by numerous, real-time, and diverse data with the aim of early warning and identification of emerging food safety risks. The suitability of big data and AI to support such systems is illustrated by two cases in which climate change drives the emergence of risks, namely, harmful algal blooms affecting seafood and fungal growth and mycotoxin formation in crops. Automation and machine learning are crucial for the development of future real-time food safety risk early warning systems. Although these developments increase the feasibility and effectiveness of prospective early warning and emerging risk identification tools, their implementation may prove challenging, particularly for low- and middle-income countries due to low connectivity and data availability. It is advocated to overcome these challenges by improving the capability and capacity of national authorities, as well as by enhancing their collaboration with the private sector and international organizations.

Abstract:Food security is one of the priorities of every country in the World. However, different factors are making it difficult to meet global targets on food security. Some unprecedented shocks are encumbering food security at the global level. Various interventions have been applied toward food security and artificial intelligence is one of the modern methods that is being used in various stages of the food system. In this paper, the application of artificial intelligence in the whole food production ecosystem ranging from crop production, livestock production, harvesting/slaughtering, postharvest management, food processing, food distribution, food consumption and food waste management is assessed. The objective of this research is to assess the application of artificial intelligence systems in all the stages of food systems. A systematic review was conducted by analyzing 110 articles after the screening of 450 articles based on the inclusion and exclusion criteria. The results indicated that various artificial intelligence algorithms are being applied to all the stages of the food system from crop/livestock production up to food or agro-waste management.

Abstract:Innovations in digital technologies, especially in artificial intelligence (AI), promise substantial benefits to the agricultural sector. Agriculture is increasingly expected to ensure food security and food safety while at the same time considering the environmental aspects. AI in the agricultural sector offers the potential to feed a continuously growing global population and still contribute to achieving the UN's Sustainable Development Goals (SDGs). Despite its promises, the use of AI in agriculture is still limited. We argue that the slow uptake is due to the diverse ways in which AI impacts the agri-food industry, due to the diversity of foods, supply chains, climates, and land in the agricultural sector. We propose that this is also exacerbated by ethical concerns arising from AI use, the varying degrees of technological development and skills, and the economic impacts of agricultural AI. A literature review of multiple disciplines in agricultural AI (economic, environmental, social, ethical, and technological) and a focus group of experts. AI-powered systems in agriculture raise various sets of concerns in multiple disciplines that need to be aligned to provide sustainable AI solutions for the agriculture domain. Our research proposes that it is important to adopt an interdisciplinary approach when developing AI in agriculture. AI in agriculture should be developed by interdisciplinary collaboration because it has a greater chance to be robust, economically-valuable and socially desirable, which may lead to greater acceptance and trust among farmers when using it.

Abstract:Global food systems confront the urgent challenge of supplying sustainable, nutritious diets in the face of escalating demands. The advent of Artificial Intelligence (AI) is bringing in a personal choice revolution, wherein AI-driven individual decisions transform food systems from dinner tables, to the farms, and back to our plates. In this context, AI algorithms refine personal dietary choices, subsequently shaping agricultural outputs, and promoting an optimized feedback loop from consumption to cultivation. Initially, we delve into AI tools and techniques spanning the food supply chain, and subsequently assess how AI subfields$\unicode{x2013}$encompassing machine learning, computer vision, and speech recognition$\unicode{x2013}$are harnessed within the AI-enabled Food System (AIFS) framework, which increasingly leverages Internet of Things, multimodal sensors and real-time data exchange. We spotlight the AIFS framework, emphasizing its fusion of AI with technologies such as digitalization, big data analytics, biotechnology, and IoT extensively used in modern food systems in every component. This paradigm shifts the conventional "farm to fork" narrative to a cyclical "consumer-driven farm to fork" model for better achieving sustainable, nutritious diets. This paper explores AI's promise and the intrinsic challenges it poses within the food domain. By championing stringent AI governance, uniform data architectures, and cross-disciplinary partnerships, we argue that AI, when synergized with consumer-centric strategies, holds the potential to steer food systems toward a sustainable trajectory. We furnish a comprehensive survey for the state-of-the-art in diverse facets of food systems, subsequently pinpointing gaps and advocating for the judicious and efficacious deployment of emergent AI methodologies.

Abstract:This study systematically reviews the transformative role of Artificial Intelligence (AI) in enhancing agricultural productivity and sustainability in the United States. With the aim of understanding how AI technologies can be effectively integrated into farming practices, this research employs a systematic literature review methodology, focusing on peer-reviewed journal articles, conference proceedings, and reputable reports from 2010 to 2024. The methodology includes a structured search strategy, defined inclusion and exclusion criteria, and thematic analysis to categorize findings into relevant themes. Key findings reveal that AI technologies, such as machine learning models, predictive analytics, and robotics, are revolutionizing U.S. agriculture by optimizing resource use, improving crop health monitoring, and enhancing decision-making processes. Despite the promising potential of AI to address challenges like food security and environmental sustainability, the adoption of AI in agriculture faces barriers including technological adoption, data privacy concerns, and the need for significant investment in digital infrastructure. Abstract:The goal of this research was to look into how artificial intelligence (AI) and machine learning (ML) techniques are being used in food industry and to come up with future research directions based on that. This study investigates the articles available on several scientific platforms that link both AI and supply chain from one side and ML and food industry from the other side, using a systematic literature review methodology. The findings of this research stated that although AI and machine learning technologies are yet in their beginning, the prospective for them to enhance the performance of the food industry (FI) is quite promising. Various investigators created AI and ML-related models that were verified and found to be effective in optimising FI, and so the use of AI and ML in FI networks provides competitive advantages for improvement. Other academics suggest that AI and machine learning are both now adding value, while others believe that they are still underutilised and that their tools and methodologies can harness the overall value of the food business. Abstract:Emerging technologies such as computer vision and Artificial Intelligence (AI) are estimated to leverage the accessibility of big data for active training and yielding operational real time smart machines and predictable models. This phenomenon of applying vision and learning methods for the improvement of food industry is termed as computer vision and AI driven food industry. This review contributes to provide an insight into state-of-the-art AI and computer vision technologies that can assist farmers in agriculture and food processing. This paper investigates various scenarios and use cases of machine learning, machine vision and deep learning in global perspective with the lens of sustainability. It explains the increasing demand towards the AgTech industry using computer vision and AI which might be a path towards sustainable food production to feed the future. Also, this review tosses some implications regarding challenges and recommendations in inclusion of technologies in real time farming, substantial global policies and investments. Finally, the paper discusses the possibility of using Fourth Industrial Revolution [4.0 IR] technologies such as deep learning and computer vision robotics as a key for sustainable food production.
