Abstract:In this study, carboxymethyl cellulose (CMC) was used to interact with whey protein isolate (WPI) to prepare conjugates as emulsifiers and embedding agents, which can be used under acidic conditions. Firstly, the effects of ratios and pH values on the formation of WPI-CMC conjugates were investigated. The turbidity and particle size of WPI were reduced in the presence of CMC at pH 4.6 (near the isoelectric point). Then the characterization of physicochemical properties indicated that electrostatic interactions played a major role in the formation of WPI-CMC conjugates, thereby changing the structure and function of conjugates. CMC and WPI reached the optimal aggregation state at pH 4.6 and a ratio of 4:1. The conjugates exhibited excellent emulsifying activity and stability for the oil-in-water emulsions. WPI-CMC conjugates also could provide protection to allicin by preventing degradation under environmental stresses, while maintaining its antioxidant activity.
Influence of thermal denaturation on whey protein isolates in combination with chitosan for fabricating Pickering emulsions: a comparison study

Abstract:Composite natural emulsifiers such as whey protein isolate (WPI) and chitosan (CS) are commonly used in Pickering emulsions to address the effect of thermal deformation of proteins before complexation with CS and heating after complexation. In this study, the properties of WPI and CS composites were investigated by complexing CS with either unmodified WPI or thermally denatured WPI (DWPI). Three types of composite particles were prepared, WPI-CS, DWPI-CS, and D(WPI-CS). Atomic force microscopy revealed that the composite particles formed larger aggregates with increased contour size and surface roughness compared to CS and WPI, whereas the interfacial tension decreased, indicating improved emulsifying abilities. Fourier-transform infrared analysis revealed differences in the hydrogen bonds between CS and WPI/DWPI. All three composite particles formed stable emulsions with droplet sizes of 20.00 ± 0.15, 27.80 ± 0.35, and 16.77 ± 0.51 μm, respectively. Thermal stability experiments revealed that the curcumin emulsion stabilized with WPI-CS and DWPI-CS exhibited relatively better thermal stability than that stabilized with D(WPI-CS). In vitro experiments results indicated that the bioaccessibility of the curcumin emulsion stabilized with WPI-CS was 61.18 ± 0.16%, significantly higher than that of the emulsions prepared with the other two composite particles (p < 0.05). This study will enable the customized design of WPI composite-based Pickering emulsions for application in the food and nutrition industries.

Abstract:The potential of ultrasonication-driven molecular self-assembly of whey protein isolate (WPI) with chitosan (CS)/chitooligosaccharide (COS) to stabilize Pickering emulsions was examined, based on CS/COS ligands-induced partial unfolding in remodeling the Pickering particles features. Multi-spectral analysis suggested obvious changes in conformational structures of WPI due to interaction with CS/COS, with significantly higher unfolding degrees of WPI induced by COS. Non-covalent interactions were identified as the major forces for WPI-CS/COS conjugates. Ultrasonication enhanced electrostatic interaction between CS's -NH 3 groups and WPI's -COO − groups which improved emulsification activity and storability of WPI-COS stabilized Pickering emulsion. This was attributed to increased surface hydrophobicity and decreased particle size compared to WPI-CS associated with differential unfolding degrees induced by different saccharide ligands. CLSM and SEM consistently observed smaller emulsion droplets in WPI-COS complexes than WPI-CS/COS particles tightly adsorbed at the oil-water interface. The electrostatic self-assembly of WPI with CS/COS greatly enhanced the encapsulation efficiency of quercetin than those stabilized by WPI alone and ultrasound further improved encapsulation efficiency. This corresponded well with the quantitative affinity parameters between quercetin and WPI-CS/COS complexes. This investigation revealed the great potential of glycan ligands-induced conformational transitions of extrinsic physical disruption in tuning Pickering particle features.

Abstract:In this paper, WPI-chitosan complex particles (WCCPs) were prepared as a novel Pickering stabilizer based on high hydrostatic pressure (HHP). The mean particle size of WCCPs was larger than that of pure WPI gel particles (WGPs), and the zeta potential reversed from negative to positive, showing that chitosan molecules were adsorbed on the surface of WGPs. The three-phase contact angle (θo/w) of WGPs was about 120.7° while after addition of chitosan that of WCCPs can reach to 88.9°, indicating that WCCPs could be effective emulsifiers for Pickering emulsions. Rheological measurement demonstrated the formation of Pickering emulsion gels stabilized by WCCPs. The particle concentration of WCCPs affected the droplet size and creaming index of the Pickering emulsion gels significantly. Additionally, the emulsion gels strengthened as increasing the particle concentration of WCCPs. The interfacial structure of the Pickering emulsion gels was observed through the confocal laser scanning microscope images which showed that WCCPs coated densely on the surface of oil droplets performing like a compact barrier against coalescence. The effects of environmental stresses, including ionic strengths, pH and thermal treatment, were also evaluated. Lycopene was encapsulated in the WCCPs-stabilized Pickering emulsion gels and its stability during storage and in vitro release under simulated digestion were measured. Overall, these results showed that WCCPs were suitable for stabilizing Pickering emulsion gels and had the potential as a delivery system for bioactive compounds.

Abstract:Objectives/Hypothesis: The objective of this study was to determine whether glycopyrrolate is useful as a vestibular suppressant in patients with Meniere's disease. The tested hypotheses were that glycopyrrolate would decrease the perception of dizziness measured by the Dizziness Handicap Inventory in patients with Meniere's disease and that placebo would cause no such decrease. Study Design: Randomized, prospective. Methods: Thirty‐seven subjects with a diagnosis of Meniere's disease were administered either 2 mg of glycopyrrolate or placebo twice daily as needed for vertigo. All were also administered the regimen of 1500 mg sodium/day diet and diuretic. The following indices were examined: Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, Beck Depression Inventory, hearing examination, and electronystagmography. After 4 to 6 weeks of the drug regimen, Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, and Beck Depression Scale were reexamined. Paired t tests were performed to verify the significance of improvement before and after treatment. Results: Subjects who received glycopyrrolate had statistically significant reduction in Dizziness Handicap Inventory, Beck Depression Score, and Modified Somatic Perception Score. In the placebo group, no improvement in any index was found. Conclusions: The hypothesis that glycopyrrolate is a useful vestibular suppressant in patients with Meniere's disease was statistically verified. Laryngoscope, 108:1442–1445, 1998
Interfacial Characterization of an Oxidative Pickering Emulsion Stabilized by Polysaccharides/Polyphenol Complex Nanogels via a Multiscale Study

Abstract:Incorporating antioxidants into the soft colloidal emulsifiers has been necessarily required to prepare antioxidant Pickering emulsions. Establishing interfacial properties-physical and chemical properties relationships has not been deeply explored by a comprehensive multiscale approach. Herein, the polysaccharide composite nanoparticles acted as antioxidants interface-anchored reservoirs were designed via non-covalent interaction between hydroxypropyl chitosan (HPCS), sodium alginate (Alg) and purple corn bracts anthocyanins (PCBA) at the molecular level. The orderly packing HPCS-Alg/PCBA composite nanoparticles formed the more highly-dense adsorption layers at oil/water interfaces at the microscopic level. With increasing the PCBA concentration, the bridged network particle aggregates between neighboring droplets resulted in a smaller size at the mesoscopic level and higher bulk stability at the macroscopic level. Interestingly, the bridged structures formed stronger antioxidant shells around dispersed droplets, further improving oxidative stability. These results highlighted the characteristics of the interfacial layers (thickness, strength, and viscoelasticity) that could be engineered to regulate the oxidation stability of Pickering emulsions at different scales. Therefore, this work proposed a novel strategy to protect lipid droplets of emulsions via manipulating the antioxidative soft colloidal particle's interfacial properties in the Pickering emulsions system, further extending the applications of antioxidant Pickering emulsions in food colloidal fields.

Abstract:A compact antioxidant interfacial layer was fabricated by combining phosphorylation treatment with protocatechuic acid (PA) copolymerization to enhance the physical and oxidative stability of high internal phase emulsions (HIPEs) prepared using perilla protein isolate (PPI). The covalent binding between PPI and phosphate groups induced conformational changes, facilitating the interaction between PPI and PA. The formed phosphorylated PPI-PA conjugates (LPPI-PA) exhibited a reduced particle size of 196.75 nm, promoting their adsorption at the interface. HIPEs prepared by LPPI-PA conjugates showed higher storage stability due to decreased droplet size, increased interfacial protein adsorption content (90.48%), and the formation of an interconnected network within the system. Additionally, the combination of LPPI and PA anchored PA to the interface, significantly inhibiting lipid oxidation in HIPEs as evidenced by low levels of lipid hydroperoxide (30.33 μmol/g oil) and malondialdehyde (379.34 nmol/g oil). This study holds significant implications for improving the stability of HIPEs.

Abstract:Summary Tea processing often generates significant waste, resulting in resource inefficiency. However, extracting green tea polysaccharide conjugate (gTPC) from this waste has shown promising bioactivity. Previous studies have confirmed the emulsifying properties of gTPC. Yet, its use as an emulsifier is limited due to its requirement for high surface activity. The findings revealed that a 0.40 wt% soy protein isolate (SPI) and 0.50 wt% gTPC conjugate required 300°C for complete decomposition, demonstrating the highest stability among other ratios. The Pickering emulsion, using a 0.30 wt% emulsifier ratio, exhibited exceptional stability. Moreover, it showed remarkable zeta potential and particle size stability under stressful conditions (temperature, pH, and metal ions). Additionally, it effectively protected curcumin from adverse pH, light, and temperature effects, with a retention rate of over 74.00%. These results highlight the gTPC/SPI combination as an effective stabilizer, offering new prospects for gTPC development and utilization.

Abstract:In this study, the whey protein isolate–high-methoxyl pectin (WPI-HMP) complex prepared by electrostatic interaction was utilized as an emulsifier in the preparation of docosahexaenoic acid (DHA) algal oils in order to improve their physicochemical properties and oxidation stability. The results showed that the emulsions stabilized using the WPI-HMP complex across varying oil-phase volume fractions (30–70%) exhibited consistent particle size and enhanced stability compared to emulsions stabilized solely using WPI or HMP at different ionic concentrations and heating temperatures. Furthermore, DHA algal oil emulsions stabilized using the WPI-HMP complex also showed superior storage stability, as they exhibited no discernible emulsification or oil droplet overflow and the particle size variation remained relatively minor throughout the storage at 25 °C for 30 days. The accelerated oxidation of the emulsions was assessed by measuring the rate of DHA loss, lipid hydroperoxide levels, and malondialdehyde levels. Emulsions stabilized using the WPI-HMP complex exhibited a lower rate of DHA loss and reduced levels of lipid hydroperoxides and malondialdehyde. This indicated that WPI-HMP-stabilized Pickering emulsions exhibit a greater rate of DHA retention. The excellent stability of these emulsions could prove valuable in food processing for DHA nutritional enhancement.

Abstract:This study prepared SPI-Pol-HPMC (SPH) nanoparticles from soybean protein isolate (SPI), hydroxypropyl methyl cellulose (HPMC), and broccoli leaf polyphenol (Pol) and used them as a stabilizer for the Pickering emulsion. The SPH (2:1) nanoparticles have the best ability to encapsulate broccoli leaf polyphenols, with uniform particle size distribution, and a more dense and stable structure. The chemical and hydrogen bonding forces between the SPH nanoparticle components were enhanced. Additionally, the 1.5 % SPH nanoparticle-stabilized emulsions exhibited good physical stability, manifesting as small particle droplets with good rheological properties and uniform dispersion. The volume fraction of the emulsified phase of the 1.5 % SPH nanoparticle-stabilized emulsions was the greatest after 21 days of storage. Interestingly, SPH nanoparticles also improved the oxidative stability of the emulsions, as evidenced through their lower peroxide values and thiobarbituric acid active substances. The aforementioned results suggest that SPH nanoparticles may be used as food-grade emulsifiers that stabilize emulsions and inhibit their lipid oxidation.

Abstract:In this study, Pickering emulsion (PE) stabilized by whey protein isolate/soybean protein isolate (WPI/SPI) composite particles were used as a template to construct Pickering emulsion gel (PEG). The results showed that the PE stabilized by WPI/SPI composite particles had good centrifugal and storage stability at 4 °C (at least 4 months). Furthermore, When SA concentration was 3% and PE:SA ratio of 5:1, the obtained PEG with water-in-oil type exhibited a smaller droplet size, a denser network structure, and solid-like behavior in the linear viscoelastic region using a laser particle size analyzer, rheometer, and confocal laser scanning microscopy. Moreover, the increase of hydrogen bonds after SA addition confirmed that increased of β-sheet in WPI/SPI by Fourier-transform infrared spectroscopy, as β-sheet structure was stabilized by interchain hydrogen bonds, thus forming a denser network structure. In addition, PEGs could effectively encapsulate peptide FDRPFL, with a highest encapsulation efficiency of 72.8%. In vitro digestion behavior revealed that PEGs could improve the bioaccessibility of peptide FDRPFL and mainly followed the release mechanism of non-Fickian superstate II. Taken together, the present findings provide a theoretical framework for the development and application of PEGs stabilized by WPI/SPI composite particles.
Microstructure, Rheology, and Creaming Stability of Pickering Emulsions Stabilized with SPI‐Soy Peptide Nanoparticle Complex

Abstract:Summary The use of two emulsifiers to fabricate a composite emulsifier is a useful strategy used to strengthen the emulsifying capacity. To investigate the feasibility of using soy protein isolate (SPI) to stabilize Pickering emulsions stabilized by soy peptide nanoparticles (SPNs), the SPI was introduced into the SPN system to fabricate SPI‐SPN complex emulsifiers, and the effects of the SPI on the properties of the SPNs and SPN‐stabilized emulsions were investigated with various oil fractions. The addition of SPI significantly reduced the particle sizes and surface hydrophobicities. Furthermore, the SPI increased the structural rearrangements of the SPNs at the oil‐water interface. Compared with emulsions stabilized with the SPN alone, the droplet sizes of the SPI‐SPN emulsions were smaller, and the interface protein adsorption percentages were lower for all oil fractions. The viscosity of the SPI‐SPN emulsion was higher than that of the SPNs emulsion at Φ≤0.60. Decreases in G′ and G′′ were observed when the SPI was added at all Φ values tested. More importantly, the added SPI markedly enhanced the creaming stabilities of the SPN emulsions at low Φ (≤0.40). These results confirmed that SPI improved the emulsifying activity of the SPNs and enhanced the stabilities of Pickering emulsions stabilized with SPNs at low Φ.

Abstract:This paper considers the design of event-triggered simultaneous H∞ controllers for a collection of networked control systems (NCSs). It is shown that conventional point-to-point wiring simultaneous H∞ controllers can be obtained by solving linear matrix inequalities (LMIs). Based on the obtained simultaneous H∞ controllers, two event-triggered transmission policies for preserving L2-gain stability are proposed for reducing network usage. An illustrative example is proposed to verify the obtained results.

Abstract:Forty hospitalized schizophrenics and 40 volunteers from the community listened to sentences in which a click was embedded. Half of the schizophrenic subjects and half of the normal subjects were asked to reproduce the sentences and indicate precisely where the click occurred. The remaining subjects were given the previously heard sentences and asked to recognize the click locations. Results showed that schizophrenic subjects tend to be less accurate than normal subjects in locating the clicks. However, this inferior performance was not due to an inability to use syntactic rules. Rather, the pattern of errors demonstrated that schizophrenic subjects distinguish between sentences which are acoustically identical but syntactically distinct, and that this distinction is maintained under response conditions with varying emphases on sentence retrieval. It is concluded that schizophrenic subjects appear to use syntax as a basis for sentence processing at least to the same extent as normal subjects do.
Study on the mechanism of polyphenols regulating the stability of pea isolate protein formed Pickering emulsion based on interfacial effects

Abstract:To improve the stability of pea isolate protein (PPI) Pickering emulsions, this study compared the stability effects of tannic acid (TA), epigallocatechin gallate, and gallic acid on PPI, and found PPI-TA the strongest binding and the best stability. When TA concentration increased from 0 to 0.5 mmol/L, the average particle size, zeta potential, and surface hydrophobicity of PPI-TA particles decreased by 23.1 %, 17.1 %, and 63.3 % respectively. The highest viscosity and elastic storage modulus G' which was also higher than and parallel to the loss modulus G", and the lowest Turbiscan stability index were observed in the emulsion with 0.5 mmol/L TA, indicating an elastic-based gel-like texture. The concentrations of conjugated diene and thiobarbituric acid reactive substances (TBARS) were also reduced by more than 58 %, showing improved oxidative stability. The study provides new insights into the interfacial behavior of PPI-polyphenols and technical support for their applications in food industry.
Construction of high internal phase Pickering emulsions using cold plasma modified soy protein isolate-proanthocyanidin complex

Abstract:Protein-based high internal phase Pickering emulsions (HIPPEs) feature numerous multi-functionalities and widespread applications. However, the direct use of native proteins for the constructions of HIPPEs is limited since it is fragile under various conditions. Here, cold plasma was used to modify soy protein isolates (SPI) to improve their surficial properties. Meanwhile, proanthocyanidins (PA) were applied to interact with cold plasma-treated SPI to form complex. Furthermore, the well-prepared SPI-PA complex was used to construct novel HIPPEs. Results showed cold plasma treatment significantly improved the functionalities of SPI, which were confirmed by surface hydrophobicity (H0 ＜ 500), sulfhydryl (SH) groups and spectral analysis. Further, the emulsification and oxidation resistance of cold plasma treated SPI were enhanced after forming complex with PA. Soybean oils can be stabilized by SPI-PA complexes to form HIPPEs with a lipid oxidation inhibition rate of ＞ 65%, creaming index (CI) ＞ 80%, excellent rheological properties and better stability compared with conventional emulsion systems. Overall, this SPI-PA complexes provides a unique approach to improve the emulsification and oxidation resistance to engineer HIPPEs with versatile applications.

Abstract:Camellia oil has a high content of unsaturated fatty acids and active ingredients, but it is unstable during production, storage, and application. Camellia oil Pickering emulsions were prepared by utilizing electrostatic complex of glycosylated whey protein isolate (gWPI) and chitooligosaccharide (COS) as the emulsifier can be used as an effective carrier system. The effects of pH level and biomass concentration on polymer interaction and emulsion stability were systematically studied. The emulsion's interfacial properties and rheological behavior were studied by using an interfacial tensiometer and a rheometer, respectively. The mass ratio of 1:1 (1%) and pH 5.0 were the optimal conditions for protein–COS interactions. Compared with WPI-COS, the content of absorbed protein in the O/W interface of gWPI-COS increased, and the diffusion (kdiff) and rearrangement (kR) rates of proteins in the O/W interface of the gWPI/gWPI-COS significantly improved according to the rheokinetics of protein adsorption at the oil/water interface. Moreover, a higher viscoelasticity in the WPI/gWPI-COS stabilized the emulsion system. Subsequent studies on the stability of the emulsion also showed that the Pickering emulsions stabilized by gWPI–COS had better thermal stability, oxidative stability, resistance to oscillatory shear than gWPI/WPI or WPI-COS emulsion.

Abstract:Appropriate pretreatment of proteins and addition of xanthan gum (XG) has the potential to improve the stability of oil-in-water (O/W) emulsions. However, the factors that regulate the enhancement and the mechanism are still not clear, which restricts the realization of improving the emulsion stability by directional design of its structure. Therefore, the effects of whey protein micro-gel particles (WPMPs) and WPMPs-XG complexes on the stability of O/W emulsion were investigated in this article to provide theoretical support. WPMPs with different structures were prepared by pretreatment (controlled high-speed shear treatment of heat-set WPC gels) at pH 3.5–8.5. The impact of initial WPC structure and XG addition on Turbiscan Indexes, mean droplet size and the peroxide values of O/W emulsions was investigated. The results indicate that WPMPs and XG can respectively inhibit droplet coalescence and gravitational separation to improve the physical stability of WPC-stabilized O/W emulsions. The pretreatment significantly enhanced the oxidative stability of WPC-stabilized O/W emulsions. The addition of XG did not necessarily enhance the oxidative stability of O/W emulsions. Whether the oxidative stability of the O/W emulsion with XG is increased or decreased depends on the interface structure of the protein-XG complex. This study has significant implications for the development of novel structures containing lipid phases that are susceptible to oxidation.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.
