Abstract:Celery (Apium graveolens) has extensive culinary usage given its characteristic aroma and flavor, which are due to the presence of butylphthalide and sedanolide. The aim of this work was to study the preparation of dried celery stalk slices through hot air or combined microwave and hot air drying at 50, 60, or 70°C with or without blanching pretreatment. The celery stalk slices that were dried at low temperatures retained aroma well. Although blanching reduced drying time (DT) and global color change, it also reduced the retention of the characteristic aroma of celery. Therefore, combined microwave and hot air drying without blanching was selected for celery stalk slices given that it reduced DT, minimized chromatic aberrations, and maximized the retention of the characteristic aroma of celery. Practical applicationsCelery has extensive culinary usage given its characteristic aroma and flavor, owing to the presence of butylphthalide and sedanolide. Dried celery slices can be used as food flavorings in conventionally cooked and ready‐to‐eat products. Hot air and microwave drying with blanching pretreatment was investigated to dry celery to preserve its nutritional value, flavor and reduce postharvest losses. The obtained the process parameters are helpful for the application of combined microwave with hot air drying technology to preserve good quality, especially flavor of dried celery.

Abstract:The effect of different methods of drying celery root enriched with beet juice by vacuum impregnation (VI) was studied. The process of convection drying, vacuum drying and freeze drying was carried out. Compared to dried indigenous celery, dry impregnated tissue was characterized by lower values of dry matter, L* and b* color parameters, as well as higher values of water activity, density and a* color parameter. In addition, VI reduced the drying time. Forty Volatile Organic Compounds (VOCs) were found in celery, while fifty-one VOCs were found in the profile of celery with beetroot juice. The innovative method of vacuum impregnation made it possible to produce a new type of product with changed properties and a variable VOCs profile. The best fit of the drying process kinetics was achieved by using the logistic model. Increasing the temperature during convection drying resulted in shorter drying time, increased values of dry matter, reduced the water activity value and altered VOCs.

Abstract:A group of heterocyclic amines that are mutagens and rodent carcinogens form when meat is cooked to medium and well-done states. The precursors of these compounds are natural meat components: creatinine, amino acids, and sugars. Defined model systems of dry-heated precursors mimic the amounts and proportions of heterocyclic amines found in meat. Results from model systems and cooking experiments suggest ways to reduce their formation and, thus, reduce human intake. Human cancer epidemiology studies related to the consumption of well-done meat products are listed and compared in this review.

Abstract:We have developed a new healthy snack based on celery root enriched with vegetable juices. Vacuum impregnation was used the task of which was to introduce additional valuable substances, improving properties. Thus, prepared material was dried by various methods (sublimation, vacuum, convection) using optimal conditions for the process. In the tested sample, 41 bioactive compounds and 73 volatile compounds were identified. Vacuum impregnation of celery root in the juices of onion, kale and celery stalks significantly affected the profile of bioactive compounds, Volatile Organic Compounds (VOCs), total phenolic content, antioxidant properties, drying process kinetics and physical properties of the dried products. The highest nutrient values were recorded in celery samples after impregnation with kale and onion juice. Due to its good functional and nutritional properties, the material such as celery obtained as a result vacuum impregnation process can be envisioned as the future in creating novel functional foods.

Abstract:The growing world population necessitates the implementation of appropriate processing technologies for edible insects. The objective of this study was to examine the impact of distinct drying techniques, including convective drying at 70 °C (70CD) and 90 °C (90CD) and freeze-drying (FD), on the drying kinetics, physical characteristics (water activity, color), chemical characteristics (chemical composition, amino acid profile, oil properties, total polyphenol content and antioxidant activity, mineral composition, FTIR), and presence of hazards (allergens, microorganisms) of blanched yellow mealworm larvae. The freeze-drying process results in greater lightness and reduced moisture content and water activity. The study demonstrated that the freeze-dried insects exhibited lower contents of protein and essential amino acids as compared to the convective-dried insects. The lowest content of total polyphenols was found in the freeze-dried yellow mealworm larvae; however, the highest antioxidant activity was determined for those insects. Although the oil isolated from the freeze-dried insects exhibited the lowest acid and peroxide values, it proved to have the lowest PUFA content and oxidative stability. All the samples met the microbiological criteria for dried insects. The results of the study demonstrate that a high temperature during the CD method does not result in the anticipated undesirable changes. It appears that freeze-drying is not the optimal method for preserving the nutritional value of insects, particularly with regard to the quality of protein and oil.
Effect of Thermal and Non-Thermal Technologies on Kinetics and the Main Quality Parameters of Red Bell Pepper Dried with Convective and Microwave–Convective Methods

Abstract:The drying process preserves the surplus of perishable food. However, to obtain a good-quality final product, different pretreatments are conducted before drying. Thus, the aim of the study was the evaluation of the effect of thermal (blanching treatments with hot water) and non-thermal technologies (pulsed electric field (PEF) and ultrasound (US)) on the kinetics of the drying process of red bell pepper. The convective and microwave–convective drying were compared based on quality parameters, such as physical (water activity, porosity, rehydration rate, and color) and chemical properties (total phenolic content, total carotenoids content, antioxidant activity, and total sugars content). The results showed that all of the investigated methods reduced drying time. However, the most effective was blanching, followed by PEF and US treatment, regardless of the drying technique. Non-thermal methods allowed for better preservation of bioactive compounds, such as vitamin C in the range of 8.2% to 22.5% or total carotenoid content in the range of 0.4% to 48%, in comparison to untreated dried material. Moreover, PEF-treated red bell peppers exhibited superior antioxidant activity (higher of about 15.2–30.8%) when compared to untreated dried samples, whereas sonication decreased the free radical scavenging potential by ca. 10%. In most cases, the pretreatment influenced the physical properties, such as porosity, color, or rehydration properties. Samples subjected to PEF and US treatment and dried by using a microwave-assisted method exhibited a significantly higher porosity of 2–4 folds in comparison to untreated material; this result was also confirmed by visual inspection of microtomography scans. Among tested methods, blanched samples had the most similar optical properties to untreated materials; however non-thermally treated bell peppers exhibited the highest saturation of the color.

Abstract:Little detailed information is available on the alternative of using varying microwave power during drying of food products. Experiments were made to study microwave drying characteristics and dried product quality. A two-stage microwave power system using a first and second stage power input for varying times during drying was used. The study focuses on describing microwave drying characteristics of carrot and discussing the effect of sample thickness, power applied during first-stage (first-stage power), power applied during the second-stage (second-stage power) and duration of first-stage on β-carotene content, and rehydration ratio. The dehydration rate increased and the drying energy consumption decreased, as the thickness of the sample decreased, power level increased and mass load decreased. There were two falling rate periods when using microwave drying of carrot, the first falling rate period being over moisture contents of 1.0 (d.b.), and the second falling rate period applying at moisture contents less than 1.0 (d.b.). The same water loss will consume more energy and the energy curve was shown to the steeper when the moisture content is less than 1.0 (d.b.). Slice thickness, first-stage power, second-stage power, and duration of the first-stage affected β-carotene content and rehydration ratio. The rehydration ratio of the dried products decreased with increase in duration of the first-stage and slice thickness. β-carotene content decreased with increase of power applied during the second-stage and duration of the first-stage. With the exception of the effect of first-stage power on β-carotene content and duration of the first-stage on the two quality indicators, slice thickness, first-stage power, and second-stage power significantly affected the two quality indicators.

Abstract:Studies were conducted focusing on the drying of chili pepper fruits (Capsicum annuum L.), cultivar Cyklon, using convective (AD), convective-microwave (AMD), vacuum (VD), and freeze-drying (FD) methods. The influence of the drying method and temperature on the kinetics of the process and selected quality attributes of the dried product were evaluated. It was demonstrated that the Midilli model best described the drying kinetics for all methods across the entire measurement range. FD and VD produced dried products with the highest brightness and the greatest value of the a* color parameter. The lowest b* color parameter was observed for the product dried using FD at 40 °C, while the highest b* value was noted for samples dried using AMD (100 W) at 60 °C. The highest carotenoid retention was achieved with the FD method at 40 °C, while the lowest carotenoid content was found in the product obtained using the AMD method (100 W) at 60 °C. The smallest losses of capsaicinoids were observed after FD drying at 40 °C, while the largest were found for AMD (100 W) at 60 °C. The analysis of chili pepper fruit extracts revealed the quantitative composition of 12 main phenolic compounds using the UHPLC-UV method. The highest polyphenol content was obtained with FD, while the lowest total polyphenol content was recorded after AD. Regardless of temperature, the total flavonoid content was highest in extracts from FD products, and the lowest flavonoid content was found after AMD at 100 W. For all drying methods analyzed, the total flavonoid content in the pepper extracts decreased with increasing temperature.

Abstract:Freeze-drying is an important processing unit operation in food powder production. It offers dehydrated products with extended shelf life and high quality. Unfortunately, food quality attributes and grinding characteristics are affected significantly during the drying process due to the glass transition temperature (during drying operation) and stress generated (during grinding operation) in the food structure. However, it has been successfully applied to several biological materials ranging from animal products to plants products owning to its specific advantages. Recently, the market demands for freeze-dried and ground food products such as spices, vegetables, and fruits are on the increase. In this study, the effect of the freeze-drying process on quality attributes, such as structural changes, the influence of glass transition during grinding, together with the effect on grinding efficiency in terms of energy requirement, grinding yield, and morphological changes in the powder as a result of temperature, drying time were discussed. An overview of models for drying kinetics for freeze-dried food sample, and grinding characteristics developed to optimize the drying processes, and a prediction of the grinding characteristics are also provided. Some limitations of the drying process during grinding are also discussed together with innovative methods to improve the drying and grinding processes.

Shaping the Physicochemical and Health-Promoting Properties of Carrot Snacks Produced by Microwave-Vacuum Drying with Preliminary Thermal and Enriching Treatment

Abstract:This study analyzed the effects of thermal pre-treatments such as convective drying (P-CD), water (BL_W), and microwave blanching (M_BL) and osmotic enrichment pre-treatments with juices from pomegranate (PG), chokeberry (CH), and sea buckthorn (SB) on microwave-vacuum-dried (MVD) carrot properties. Convective drying (CD) and freeze-drying (FD) were used as a comparative method. The dry matter content and water activity of MVD carrots were varied, but in many cases, the values were comparable to those of FD-dried carrots. Pre-enrichment in CH juice significantly reduced the values of the color parameters L*, a*, and b*, regardless of the drying method. The smallest changes were observed in microwave pre-blanching (M_BL). The lowest loss in carotenoid content was observed in CD-dried carrots (14–34 mg/100 g d.m.). Blanching and enrichment in SB juice allowed significant retention of these compounds. As a result of drying carrots, the total phenolic content (TPC) increased. Compared to the raw material, the TPC content in dried carrots increased 3–9 times. Drying using the FD and MVD methods gave a similar effect of increasing the TPC content, including a greater effect after enrichment in CH juice. The highest average antioxidant activity against the DPPH• and ABTS•+ radicals was recorded for FD-dried carrots (6.9 and 30.0 mg Trolox/g d.m.). SB juice contributed to a significant increase in the total vitamin C content, even by 89.1%, compared to raw carrots. Applying osmotic pre-enrichment in PG juice increased the sugar content in dried FD and CD samples by 37.4–49.9%, and in MVD by 21–59%.

Abstract:In this study, the drying kinetics and multidimensional quality of Gastrodia elata (GE) obtained through five different drying methods were analyzed. The Page model provided the best fit. Though widely used, hot-air drying (HA-D) showed mediocre performance. Due to strong heat penetration, microwave drying (MV-D) and infrared drying (IR-D) effectively reduced drying time and energy consumption. However, they experienced Maillard and caramelization reactions, resulting in notable cell structure shrinkage, severe browning, pronounced caramel taste, and poor retention of active ingredients. Conversely, freeze-drying (F-D) and vacuum drying (V-D), due to the involvement of low-temperature or vacuum environments, demonstrated optimal performance in preserving microstructure, antioxidant activity, active ingredients, and flavor. However, F-D was time-consuming (1320 min) and had an energy consumption of 2.69 times that of HA-D, limiting its large-scale application. V-D struck the best balance between energy consumption and product quality, making it a highly promising drying method for GE.

Abstract:It has been demonstrated previously in the literature that utilization of PEF or a combination of a pulsed electric field (PEF) and ultrasounds (US) can facilitate dehydration processes and improve the quality of dried products even better than the application of thermal methods such as blanching. The aim of the study was to evaluate the quality of red bell pepper subjected to freeze-drying preceded by blanching or PEF or US treatment applied in a single and combined mode. Furthermore, the freeze-drying was preceded by shock freezing or vacuum freezing performed inside the freeze-dryer as a result of pressure drop during the first stage of freeze-drying. All of the analyzed technological variants enhanced the drying kinetics when compared to the intact material. Freeze-dried bell pepper subjected to non-thermal pretreatment exhibited higher vitamin C, total phenolic and carotenoids content than blanched material despite the fact that blanching reduced drying time the most compared to all other analyzed methods.

Abstract:The aim of this study was to determine the effects that the type of impregnating solution and drying method (freeze drying (FD) and vacuum drying (VD) at 45 °C and convective drying (CD) at 50, 60, and 70 °C) had on the physicochemical and quality properties of courgettes. Courgette slices were vacuum-impregnated (6 kPa) in freshly squeezed onion, kale, and onion and kale (50:50) juices with 3% NaCl solution (N). The application of vacuum impregnation (VI) with impregnating solutions from freshly squeezed onions and kale had a beneficial effect on the bioactive values of courgette. The highest contents of quercetin (41.84 μg/g d.m.) and carotenoids (276.04 μg/g d.m.) were found in courgette impregnated with onion juice after freeze drying. The highest values of lutein and zeaxanthin (216.42 μg/g d.m.) were recorded for courgette impregnated with kale juice and convective dried. By analysing the kinetics of convective drying, the best matching of the logistic model was found. Increasing the drying process temperature from 50 to 70 °C reduced the drying time from 15% to 36%, depending on the type of impregnating solution used. Water activity < 0.6 was recorded for courgette dried by freezing, vacuum, and convection at 60 and 70 °C. Conclusions: The vacuum impregnation process and the impregnation solutions from freshly squeezed vegetables can be used to develop new snacks with high levels of bioactive compounds. The FD method is the most appropriate considering both the bioactive compounds content and the obtained colour and water activity.

Abstract:To extend the shelf life of food, structural, sensory or mechanical properties are analysed to provide superlative quality for the dried product. The purpose of this paper is to examine the impact of drying methods and their parameters on the properties of strawberries (their structure, mechanical parameters and sensory profiles). The drying methods influenced the internal structure of strawberries. At the same temperature (45 °C) among various drying methods, strawberries obtained by vacuum drying (VD) had higher hardness than convective-dried fruits (AD), but it was significantly lower compared to freeze-dried samples (FD). Increase in temperature in the VD method caused changes in the hardness of dried fruits. They differed in the sensory profile including: appearance, texture and taste/flavour. The lowest intensity of cooked strawberries' aroma with high intensity of fresh strawberries' flavour, higher level of sour taste and lower sweetness were obtained in FD. By lowering the temperature in VD, the sensation of crispness or crunchiness decreased, and the intensity for gumminess, the impression of aroma of cooked or fresh strawberries increased. The highest correlations between sensory and mechanical properties were noted for VD fruits dried at temperature of 55 °C and set pressure of 4 kPa.

Abstract:Effects of pretreatments and drying methods on physico-chemical, thermo-physical, energy values were investigated. The longest drying duration was seen in control samples dried in hybrid microwave dryer at 350 W + 50 °C and the shortest in citric acid-treated samples dried in temperature-controlled microwave dryer. Citric acid-treated samples dried in temperature-controlled microwave dryer at 70 °C had the closest color values to fresh ones. Effective diffusion values of dried Jerusalem artichoke samples varied between 4.66 x 10 −8 − 1.33 x 10 −7 m 2 s −1 and activation energy values varied between 14.53 − 41.74 kJ mol −1 . Drying date was estimated with the Midilli-Küçük model. The highest specific heat, thermal conductivity and thermal diffusivity values were observed in control samples dried in temperature-controlled microwave oven at 60 °C and the highest density values were seen in citric acid-treated samples dried in hybrid microwave oven at 70 °C. The highest SMER value was observed in control samples dried in temperature-controlled microwave dryer at 60 °C. The lowest SEC value was seen in control samples dried in temperature-controlled microwave dryer at 60 °C. The lowest total energy consumption was encountered in citric acid-treated samples dried in temperature-controlled microwave dryer at 70 °C.

Abstract:The study focuses on describing the microwave drying characteristics of kidney beans and discussing the effect of drying power and initial mass on drying quality. When the power level increased, the dehydration rate increased while the drying energy consumption and the initial mass decreased. There were two falling rate periods during drying of kidney beans. The first falling rate period was at a moisture content of more than 2.0 (dry basis [d.b.]), and the second falling rate period was at a moisture content of less than 2.0 (d.b.). The same water loss will consume more energy when the moisture content is less than 2.0 (d.b.). The quadratic orthogonal regression experiment was conducted, and models of effect of first-stage drying load-power, second-stage drying load-power and first-stage drying time on sensory quality, rehydration ratio and energy consumption rate (three indices) were established. First-stage drying load-power, second-stage drying load-power and first-stage drying time affected the three indices. For the three indices, the drying factor combination is different. First-stage drying load-power is slightly lower for high sensory quality. Second-stage drying load-power should be lower for high sensory quality and higher for low energy consumption rate. First-stage drying timeshould be long for high sensory quality and moderate for low energy consumption rate and high rehydration ratio. To obtain better results for the three indices, the first-stage power should differ from the second-stage power in drying factor combination. This implies that the alternative microwave power drying on kidney beans should be used.

Abstract:Freeze-drying, also known as lyophilization, is a process in which water in the form of ice under low pressure is removed from a material by sublimation. This process has found many applications for the production of high quality food and pharmaceuticals. The main steps of the freeze-drying process, such as the freezing of the product and primary and secondary drying, are described in this paper. The problems and mechanisms of each step of the freeze-drying process are also analyzed. The methods necessary for the selection of the primary and secondary end processes are characterized. The review contains a description of the effects of process conditions and the selected physical properties of freeze-dried materials, such as structural properties (shrinkage and density porosity), color, and texture. The study shows that little attention is given to the mechanical properties and texture of freeze-dried materials obtained from different conditions of the lyophilization process.

Abstract:The article presents a reasonable analysis and relevance of the study of the drying process of vegetable raw materials (colloidal capillary-porous materials). Drying is an energy-intensive industrial process that is defined from a technological point of view: on the one hand by heat and moisture exchange between the body surface and the environment, on the other hand by heating the body and transferring moisture inside it due to the form of moisture. One of the most effective ways to increase the shelf life of food is to dry it to equilibrium humidity. Very important are the technological parameters of the drying regimes, which, when used rationally, are able to preserve the biochemical properties and nutrients of the raw material at a high level in the obtained dry product. The study of dehydration of vegetable raw materials is widely practiced around the world, especially in countries such as Germany, France, USA, Argentina, Hungary, Brazil, Poland, Korea, China, Malaysia. However, the obtained processed products lose their biologically active components and nutrients, and the processing process is energy consuming. Therefore, the problem is relevant and needs an effective solution. In this paper, the kinetics of the drying process, thermogravimetric studies and a mathematical model for colloidal capillary-porous materials of plant origin were analyzed. According to the results of the highlighted research, the process of convective drying of colloidal capillary-porous materials was intensified above 21% due to the use of innovative step regimes. The developed beet-rhubarb composition is a colloidal capillary-porous material that stabilizes and protects at the biochemical level betanin of the beet from the effects of temperature during convective drying, has in comparison with the components of the composition lower heat of dehydration and increased thermal-stability. Prolonged high-temperature exposure causes instant complete destruction of sugars, proteins and other nutrients components. Derivatographic studies have confirmed that the use of the temperature range of 100 ° C in a stepwise mode of 100/60 ° C for the developed soybean-spinach composition is safe for biologically active substances and it is justified by experimental temperature curves. Numerical modeling of heat and mass transfer during convective drying of crushed beets and crushed soybeans using the known model by A.V. Lykov satisfactorily describes the process and can be used to model the convection drying of colloidal capillary-porous materials.

Abstract:In this study, different drying methods namely, hot air drying (HAD: 60, 80 °C), vacuum freeze-drying (VFD: -40, − 80 °C) and vacuum-microwave drying (VMD: 160, 320 W), showed a significant effect (p < 0.05) on the drying kinetics and quality of WMR obtained from two largely cultivated watermelon cultivars. Wang and Singh and the Logarithmic model having higher R2 were selected as the best-fitted thin-layer drying model to explain the drying characteristics of WMR. The quality parameter studied includes chromatic parameters, bioactive and individual phenolic compounds of dried WMR. Chromatic parameters (L*, a*, b* and ΔE) were greatly influenced by the drying temperature during HAD process. VFD preserves the original nutritional composition of both cultivars and VMD results in increased phenolic and flavonoid compounds extraction as microwave power was increased from 160 to 320 W. The best quality dried product having a high bioactive composition, phenolic compounds and antioxidant capacity was observed in WMR of cultivar Black chairman dried after VFD (− 40 °C) and VMD (320 W) and the lowest was observed in HAD (80 °C). The VFD, with its higher retention of bioactive compounds and coloring parameters, could be used as a substitute for HAD, whereas the VMD, with its faster drying time and higher concentration of bioactive compounds, could be used as a substitute for HAD.Graphical abstract
