Abstract:The effect of traditional stir-frying process at different heating temperatures (50-150 °C) and time periods (5-20 min) on hydrophilic part (total and individual phenolics), lipophilic part (tocopherol and phytosterol compounds) and their corresponding antioxidant capacities in pine nut kernels were investigated. The concentrations of total phenolics, phenolic acids, tocopherols and phytosterols in raw pine nut kernels were 15.76 mg gallic acid equivalents/100 g dry weight (mg GAE/100 g DW), 12.15 mg/100 g DW, 28.67 mg/100 g DW and 198.81 mg/100 g DW, respectively. Stir-frying at low temperatures over short time periods led to an increase of phenolics, phytosterols and hydrophiliic antioxidant capacities. However, these values decreased under the longer heating time and the higher temperature. Tocopherols and lipophilic antioxidant capacities did not show clear changes at lower heating temperatures or shorter heating times, while they had an apparent decreasing trend at higher heating temperatures or longer heating times. Gallic acid might be the main component, which is responsible for the hydrophilic antioxidant capacity (R(2 )= 0.84, 0.81 and 0.81 using DPPH, FRAP and H-ORAC assays), and tocopherols might be the main antioxidant components in the lipophilic part (R(2 )= 0.87 and 0.89 using DPPH and L-ORAC assays).

Abstract:Shrimp fried in vegetable oil is a very popular food, so it is important to study the changes in the quality of the oil during frying. In order to more precisely study the nature of frying oil during the cooking process, this study investigated the quality changes of high-oleic sunflower oil during the frying of South American white shrimp (Litopenaeus vannamei). The oxidation and hydrolysis products of frying oils were investigated by integrating the proton nuclear magnetic resonance technique with traditional oil evaluation indexes in an integrated manner. The results showed that the color difference as measured using the ΔE* value increased gradually during the process. Moreover, the acid value, carbonyl value, and total oxidation significantly increased with prolonged frying time. The major oxidation products formed during frying were (E,E)-2-alkenals, (E,E)-2,4-alkadienals, and E,E-conjugated hydroperoxides. This indicated that longer treatment times corresponded with an increased accumulation of aldehydes and ketones, and an increased degree of oxidative deterioration of the oil. However, the proportion of oleic acid in the frying oil increased with the frying of shrimp, reaching 80.05% after 24 h. These results contribute to our understanding of the oxidative deterioration of high-oleic oils during frying, and provide an important reference for the application properties of high-oleic oils.

Abstract:The present study investigated the lipid oxidation degree of soybean oil during regularly discontinuous 40 h-deep-frying process. Electron spin resonance (ESR) spectroscopy technique was applied to identify and quantify the formed radicals, along with evaluation of physicochemical parameters including acid value (AV), peroxide value (PV), p-anisidine value (p-AnV), polar compounds (PC), fatty acid composition and volatile profile. Results showed the AV, p-AnV, PC and free radical of frying oil samples increased significantly with the increasing frying time. The results of fatty acids showed that unsaturated fatty acid such as C18:1 and C18:2 decreased by 19.98% and 14.58%, respectively, with prolonged frying time, while the content of C16:1, trans C18:1 and C18:2 increased by 20.38%, 425% and 42.86%, respectively, when compared to the fresh oil samples. In contrast, the content of saturated fatty acid had little change. In total, 37 volatile compounds were detected revealing a complex aroma profile of frying soybean oil, composed of 15 aldehydes, 8 alcohols, 4 ketones, 4 acids, 5 alkanes and 1 furan. Principal component analysis and hierarchical clustering analysis indicated that hexanal, heptanal, (E)-2-hexenal, octanal, (E)-2-heptenal, nonanal, (E)-2-octenal, undecanal, (E,E)-2,4-heptadienal, (E)-2-decenal, 2-undecenal, (E,E)-2,4-decadienal, 1-pentanol, 2,2-dimethyl-3-hexanol, (Z)-2-dodecenol, 1-octen-3-ol, pentanoic acid, octanoic acid, nonanoic acid and 2-pentyl-furan may be potential markers for evaluating lipid oxidation of frying soybean oil.

Effectiveness of different antioxidants in suppressing the evolution of thermally induced peroxidation products in hemp seed oil

Abstract:Several scientific studies have warned that the ingestion of dietary lipid oxidation products (LOPs) may initiate or exacerbate the development of several chronic non-communicable diseases in humans. Indeed, the constantly increasing consumption of culinary oils by larger global populations indicates the need for scientific techniques to suppress the evolution of LOPs in thermo-oxidised oils. This study employed a 600.13 MHz frequency NMR spectrometer in evaluating the effect of 10, 50, and 100 ppm concentrations of chemical compounds reported to have antioxidant properties in continuously-stirred and thermally stressed polyunsaturated fatty acid (PUFA)-rich hemp seed oil at a frying temperature of 180℃ for 180 min. Research data acquired showed that the antioxidants α- and γ-tocopherol, γ-oryzanol, β-carotene, eugenol, resveratrol, ascorbyl palmitate, gentisic acid, and L-ascorbic acid all played a vital role in suppressing the evolution of secondary aldehydic lipid oxidation products in hemp seed oil. However, the most ineffective LOP-suppressing agent was L-lysine, an observation which may be accountable by its poor oil solubility. Nonetheless, trends deduced for compounds acting as antioxidants were mainly unique for each class of agent tested. Conversely, the antioxidant capacity of resveratrol was consistently higher, and this effect was found to be independent of its added amounts. This report provides a direct approach in developing scientific methods for the suppression of LOPs in thermo-oxidatively susceptible PUFA-rich cooking oils.
Dynamic changes of fatty acids and related physical & chemical parameters during deep frying in fish oil supplemented blend oil

Abstract:In recent years,China’s market has an novel edible oil-fish oil supplemented blend oil(FO),however,there is no data on its ability to be used for deep frying,how safe it is,and if it will produce a large number of transfatty acids,as well as how the dynamic changes of 20:5n-3and 22:6n-3during the frying process.The objective of the present study was to investigate the changes of fatty acids and other physical and chemical parameters in different doses of FO during deep frying.Two liters of soybean blend oil(SO),and 1.5%,3.0%,6.0%and 12.0% FO were used to fry fresh potato chips at the temperature of 180℃,respectively,for total 6days,each day frying 10times,each time frying 120g potato chips for 3minutes,and the interval of 5minutes between each frying.Oil was kept for 1.5hours at 180℃after daily deep frying.Gas liquid chromatography(GLC)was used to analyze the fatty acid composition(% of total fatty acid),and other physical and chemical parameters were determined according China National Standard(GB).The results showed that the main trans fatty acids(TFAs) produced during deep frying were t18 : 1,t18 : 2n6,t18 : 3n-6and t18 : 3n-3.The proportions of t18 : 1and t18 : 2n-6were increased with frying time,which was significantly higher in FO than that in SO.The proportion of t18 : 3n-6and t18 : 3n-3in 3.0%and 6.0% FO were increased in the first stage(0-12h),and then decreased.However,they were decreased in SO,1.5%and 12.0% FO with frying time.With the prolonging of the deep frying time,the proportions of 20 : 5n-3and 22 : 6n-3 decreased in different doses of FO,with 12.0% FO decreased most.After 4h,the acid value had a significant increasing trend;during 4-24h,acid value of SO was significantly lower than FO(P < 0.01).Anisidine value and polymer showed a similar trend with acid value.However,with the prolonging of the deep frying time,the peroxide value showed a rising trend,but overall peroxide value of SO was significantly higher than that of FO(P <0.01),which may be associated with antioxidant activity of 20 : 5n-3and 22 : 6n-3.In conclusion,FO and SO can be used for cooking safely,however,they are not suitable for long-term repeated deep frying.
Reduction of toxic aldehydes in heated flaxseed oil using sesame and perilla protein enzymatic hydrolysates

Abstract:Reducing ability of sesame meal protein enzymatic hydrolysates (SMH) and perilla protein enzymatic hydrolysates (PMH) on the content of toxic aldehydes including acetaldehyde, formaldehyde, 2-hydroxylhexenal (HHE), and 2-hydroxyl nonenal (HNE), were evaluated in heated flaxseed oil at concentrations ranging from 0.01 to 1.0 g. Adding SMH and PMH decreased the formation of secondary oxidation products and toxic aldehydes during heating. In particular, HHE and HNE were not detected, even at 0.01 g of protein concentration. Free radical scavenging activities in heated flaxseed oil significantly increased when 1.0 g of SMH and PMH were added (p < 0.05). Some volatiles including 2-ethylpyridine, pyrazines, and trimethylamine were formed or increased substantially in flaxseed oils with higher concentrations of SMH and PMH. In general, SMH showed higher antioxidative activity and reducing ability on the toxic aldehydes than PMH. Plant protein enzymatic hydrolysate could control the formation of toxic aldehydes during oxidation of ω-3 edible oil.

Abstract:Summary Linoleic acid has been shown as a very important precursor for meat flavor and heating parameters may affect the reaction of linoleic acid with free amino acids (FAAs) or myofibrillar proteins (MPs) and the production of volatile organic compounds (VOCs). This study was aimed to identify the VOCs during heating of linoleic acid only or with FAAs and MPs for different times by gas chromatography‐ion mobility spectrometry(GC‐IMS). Reaction systems were set up to simulate meat, and the transformation pathway of VOCs was tracked by GC‐IMS. Finally, sixty‐two VOCs were identified, of which the content of aldehydes, which had the greatest impact on the aroma of meat, reached the peak (15.94%) when heated to 60 min, and then decreased. Principal component analysis (PCA) showed that the effect of heating temperature on the flavor of the system was much greater than that of heating time, and heating at 90 °C for 60 min might be considered to obtain the best flavor.. The results showed that FAAs played a critical role in the formation of VOCs that were derived from the oxidation and thermal degradation of linoleic acid, controlling the composition of FAAs may further optimize the flavor of processed meat products.

Abstract:This study investigated the effect of oleic/linoleic acid ratio (2:1, 1:1, and 1:2) on the simultaneous formation of epoxy fatty acids and polar compounds (TPC) in fried edible oil. The findings revealed that oleic acid resulted in higher levels of epoxy fatty acids, while linoleic acid contributed to higher TPC levels. After 24 h of frying, two oils (C18:1/C18:2 = 2:1 and 1:2) were criticized due to their respective contents of 7.19 mg/g epoxy fatty acids and 30.0 g/100 g TPC. When the TPC index reached 25 g/100 g (discarding point in most countries), the contents of epoxy fatty acids were 7.58 mg/g (at 23.4 h), 4.59 mg/g (at 27.2 h), and 2.74 mg/g (at 20.2 h) for the oils with different ratios. It is important to note that a higher content of oleic acid in the oil does not necessarily indicate better frying stability. Considering the balance of epoxy fatty acids, TPC, and frying time, our results supported the oil (C18:1/C18:2 = 1:1) to be a suitable option for frying applications.

Abstract:Presently, there is an increasing shift towards the utilization of natural antioxidants and compounds with protective attributes for fatty acids in order to replace synthetic counterparts that may pose health risks. This transition aligns with the growing emphasis on promoting healthy and organic food choices. Essential oils stand out in this context due to scientific validations of their antioxidant properties. There are few published research results concerning changes in the fatty acid composition in model systems with the addition of essential oils. This study aims to investigate the impact of incorporating peppermint and thyme oils on inhibiting changes in the fatty acid profile of sunflower oil stored at both room temperature with exposure to daylight and in a thermostat set at 40 °C. The experimental procedure involved the addition of peppermint and thyme oils, along with butylated hydroxyanisole (BHA), to batches of sunflower oil. The samples were then stored for 11 months. The study observed a detrimental influence of storage conditions on the quantitative changes in the fatty acid profile of the sunflower oil. The addition of BHA stabilized the content of linoleic acid in the sunflower oil (approximately 53 g/100 g of linoleic acid compared to approximately 58 g/100 g in the control sample). Meanwhile, the model system of sunflower oil with the addition of peppermint and thyme oils (40 °C) exhibited a statistically significant decrease in the concentration of linoleic acid to approximately 8 g/100 g after eleven months of thermostating. Similar trends to those observed for linoleic acid were noted for the total fatty acid content in the sunflower oil. Notably, the efficacy of the selected substances in inhibiting adverse transformations in fats was contingent upon their concentration and the storage temperature.

Abstract:It is necessary to study the formation of aldehydes in oil at high temperature. Different from the traditional heating mechanism, microwave heating is widely used, and its effect on aldehydes is also noteworthy. In this paper, we mainly investigated the changes of volatile and non-volatile aldehydes in high oleic sunflower oil (HOSO) under various microwave powers and treatment times. The findings indicate that the oil heated by microwave produces more than 20 volatile aldehydes and 4 non-volatile aldehydes (glycerol ester core aldehydes, GCAs). Hexanal, nonanal, (E)− 2-heptenal, (E)− 2-decenal, and (E,E)− 2,4-decadienal were higher in volatile aldehydes content, while GCAs gradually grew as microwave powers and treatment times increased. The GCAs concentration can increase to 0.72 ± 0.07 mg/kg when the oil is treated at 700 W for 30 min, with the content of four GCAs (8-oxo, 9-oxo, 10-oxo-8, 11-oxo-9) being 0.06 ± 0.01, 0.51 ± 0.06, 0.10 ± 0.00, 0.05 ± 0.00 mg/kg. In particular, GCAs (9-oxo) represented the majority of the overall amount of GCAs during the entire procedure.

Abstract:Oxidative stability is a key quality characteristic of edible oils, and the oil's antioxidant capacity decreases during the deodorization stage. This study explores the changes in radical formation, molecular structure, oxidative characteristics, fatty acids, and main bioactive compounds in soybean oil during deodorization. The lag phase decreased, whereas the total amount of spins of free radicals increased as the deodorization time increased from 90 to 150 min. The total amount of spins and percentage of alkyl radicals varied dramatically under different times and temperatures (220 ∼ 260 ℃). Results showed that identifying and quantifying the formed radicals can provide useful information for monitoring and controlling oil oxidation in vegetable oil refining systems. Therefore, to control early oxidation events, maximize refined oil product yield, and reduce energy consumption in the refining plant, the priority should be to minimize temperature during the oil refining process and then shorten the deodorization time.

Abstract:Enzymatically prepared aromatic oils commonly have high purity and aroma quality. However, amino acid type and content vary greatly according to the type of oil, which impacts overall aroma and quality. In this study, the effects of lysine (Lys), arginine (Arg), proline (Pro), and glutamic (Glu) acid on physicochemical indices, nutrients, hazardous substances, fatty acid composition, and flavor during fragrant rapeseed oil (FRO) enzymatic preparation were investigated using the Maillard reaction (MR). In the lysine-treated group, the unsaturated fatty acids (93.16 %), α-tocopherol (183.06 mg/kg), γ-tocopherol (404.37 mg/kg), and δ-tocopherol (12.69 mg/kg) contents were the highest, whereas the acid value (1.27 mg/g) and moisture (0.10 %) and benzo[a]pyrene (1.45 μg/kg) contents were the lowest. Sensory evaluation showed that lysine effectively enhanced FRO flavor by enhancing the nutty/toasted flavor (4.80 scores). Principle component analysis (PCA) showed that the nutty/toasted flavor correlated mainly with 2,6-dimethylpyrazine, 2,5-dimethyl-pyrazine, 2-methyl-pyrazine, and trimethylpyrazine, nutty/toasted flavor strength increased with pyrazine content, which were the highest in the lysine group (24.02 μg/g). This study provides a guide for FRO preparation by adding external MR prerequisites.

Abstract:To investigate the non-aldehyde volatile profile resulting from deep-fat frying, volatile compounds formed during the processes of heating soybean oil (SO), frying wheat dough (WD), and frying chicken breast meat (CBM) were comparatively studied. By using gas chromatography-mass spectrometry and internal standard method, alkanes, alkenes, alkynes, alcohols, ketones, nitrogen-containing volatiles (NCVs), and other volatiles were qualitatively and relatively quantitatively detected. NCVs were detected only in CBM-fried oil samples. Some volatiles (e.g. 2-pentylfuran and 2-pentylpyridine) were observed to increase in concentration, whereas others (e.g. 4-methyl-1,4-heptadiene and 7-methyl-3,4-octadiene) were observed to first increase and then decrease in concentration as the heating or frying time increased. Reduced quantity and concentrations of volatiles were observed in the food-fried oil samples which might be related to the intensified reactions induced by food components. The detection of some harmful volatiles in considerable concentrations indicated further attention might be paid to the safety of deep-fat frying.

Abstract:The flavor of fried green onion oil (Allium fistulosum L.) is widely applied and popular in Chinese cuisine. This work aimed to explore the effects of different varieties of vegetable oils on the flavor profile generation of fried green onion oil. The volatile flavor components of seven different kinds of fried green onion oils, i.e., soybean oil, palm oil, olive oil, corn oil, sunflower oil, camellia oil, and colza oil, were identified and analyzed by sensory analysis, gas chromatography-mass spectrometry (GC-MS) and electronic nose. The results showed that sensory analysis and electronic nose were accepted to detect the odor diversities of different kinds of fried green onion oil sensitively. A total of 103 volatile flavor components were identified positively, and the key aromas included aldehydes and sulfur-containing compounds that correlated highly with green grass, oily, pungent and shallot scent attributes. Meanwhile, fatty acid compositions showed that there were no significant changes in the types of fatty acids before and after frying, but the relative content was not different. Accordingly, the unsaturated fatty acids (UFA, C18:1, C18:2, C18:3, and C20:1) had a significant influence on the flavor of frying oil, which was peculiarly prone to oxidation and heat degradation reactions. These results provided a theoretical basis for further application of fried onion flavor in the food industry.
Effect of natural extracts on the stability of sunflower oil and acrylamide formation at different thermal treatments

Abstract:This study was conducted to reduce the simulated chemical changes of sunflower oil during intermittent heating and / or frying model technique, and to improve the thermal stability of oil, and to study the effects on acrylamide formation level by some additives such as oleoresin thyme (OTE) and rosemary extracts (ORE) at different levels (100, 200, 300, 400, 500 and 600 mg-1L oil), in comparison to standard oil sample (without addition of extracts) and / or (with addition 200 mg-1L oil of BHA), and the chemical changes were correlated with acrylamide content aiming at establishing prediction models for estimating acrylamide content; during intermittent heating and / or frying model technique of potato chips at 175o C for 24 hrs. at three consecutive days (8 hrs. daily). The results could be concluded that addition of OTE and/ or ORE to sunflower oil kept its characteristics from being deteriorated. During the simulated heating and / or frying model technique, the OTE or ORE act as an antioxidant taking part in the chain radical oxidation, as well as simultaneously inhibiting the thermal processes occurring in oil. Induction period (IP) was decreasedby increasing the thermal treatment period. Moreover, the addition of OTE and/ or ORE up to 400 mg-1L oil increase IP before thermal treatment then slows down the decreasing of the IP in comparison to the control samples, and TPCs, TBA and acrylamide content of control oil samples were significantly lower than that of the oil samples treated with OTE and/or ORE.Under the conditions simulated heating and / or frying model technique, the OTE inhibits oxidative processes more strongly than ORE or BHA. The results demonstrate that the heating model technique causes a slower increase in acrylamide content during treatment at 175o C in comparison to frying model technique, (39.18 %) under heating model technique.While, ORE reduced the acrylamide ranged by 25.54% and 27.48% fewer than500 mg-1L oil during frying and heating model technique respectively. The correlation coefficient between acrylamide level and frying time was very high (r = 0.986) for control sample, and an equation for prediction the acrylamide was γ = -190.9 + 0.116 X. The correlation coefficient between acrylamide level and TPCs content was very high (r = 0.994) for control sample, while the correlation coefficient between acrylamide level and TPCs (r = -0.621) for oil treated with OTE at 400 mg-1L during frying, and (r = 0.732) during heating model system.During the progressive frying of the potato chips, the sensory panel could distinguish a difference in flavor between the fried potato chips in sunflower oil with and without OTE or ORE. Panelists preferred the chips fried in oil treated with OTE or ORE.
