Abstract:In recent years,China’s market has an novel edible oil-fish oil supplemented blend oil(FO),however,there is no data on its ability to be used for deep frying,how safe it is,and if it will produce a large number of transfatty acids,as well as how the dynamic changes of 20:5n-3and 22:6n-3during the frying process.The objective of the present study was to investigate the changes of fatty acids and other physical and chemical parameters in different doses of FO during deep frying.Two liters of soybean blend oil(SO),and 1.5%,3.0%,6.0%and 12.0% FO were used to fry fresh potato chips at the temperature of 180℃,respectively,for total 6days,each day frying 10times,each time frying 120g potato chips for 3minutes,and the interval of 5minutes between each frying.Oil was kept for 1.5hours at 180℃after daily deep frying.Gas liquid chromatography(GLC)was used to analyze the fatty acid composition(% of total fatty acid),and other physical and chemical parameters were determined according China National Standard(GB).The results showed that the main trans fatty acids(TFAs) produced during deep frying were t18 : 1,t18 : 2n6,t18 : 3n-6and t18 : 3n-3.The proportions of t18 : 1and t18 : 2n-6were increased with frying time,which was significantly higher in FO than that in SO.The proportion of t18 : 3n-6and t18 : 3n-3in 3.0%and 6.0% FO were increased in the first stage(0-12h),and then decreased.However,they were decreased in SO,1.5%and 12.0% FO with frying time.With the prolonging of the deep frying time,the proportions of 20 : 5n-3and 22 : 6n-3 decreased in different doses of FO,with 12.0% FO decreased most.After 4h,the acid value had a significant increasing trend;during 4-24h,acid value of SO was significantly lower than FO(P < 0.01).Anisidine value and polymer showed a similar trend with acid value.However,with the prolonging of the deep frying time,the peroxide value showed a rising trend,but overall peroxide value of SO was significantly higher than that of FO(P <0.01),which may be associated with antioxidant activity of 20 : 5n-3and 22 : 6n-3.In conclusion,FO and SO can be used for cooking safely,however,they are not suitable for long-term repeated deep frying.

Abstract:Abstract It is recognized that hazardous emissions produced from frying oils may be related to oil properties, particularly the fatty acid composition. However, investigations have been limited and partial. In this work, the emissions from deep-frying foods with three oils (palm, olive, and soybean oils) with distinct fatty acid profiles were comprehensively examined in a simulated kitchen, and the interrelationship among emitted substances, oil quality parameters, and fatty acids profiles was explored. Firstly, palm oil emitted the highest number concentration of total particle matters ((3895 ± 1796) × 10 3 #/cm 3 ), mainly in the Aitken mode (20–100 nm). We observed a positive correlation between particle number concentration and levels of palmitic acid, a major saturated fatty acid (SAFA) (r s = 0.73, p < 0.05), and total polar compounds (TPC) (r s = 0.68, p < 0.05) in the fried oil, a degradation marker which was also positively correlated with that of black carbon (BC) (r s = 0.68, p < 0.05). Secondly, soybean oil emitted the highest level of gaseous aldehydes (3636 ± 607 μg/m 3 ), including acrolein, propinoaldehyde, crotonaldehyde, hexanal, and trans-2-heptenal; the total aldehyde concentration were positively correlated with α-linolenic acid (ALA) percentage (r s = 0.78, p < 0.01), while hexanal and trans-2-heptenal were with linoleic acid (LA) (r s = 0.73 and 0.67, p < 0.05). LA and ALA were two major polyunsaturated fatty acids in non-tropical plant oils. Thirdly, palm oil emitted the most particle-bound polycyclic aromatic hydrocarbons (PAHs), and a positive association was discovered between two PAHs and SAFA percentage. Olive oil seems superior to soybean and palm oils with regards to toxic emissions during deep-frying.

Effectiveness of different antioxidants in suppressing the evolution of thermally induced peroxidation products in hemp seed oil

Abstract:Several scientific studies have warned that the ingestion of dietary lipid oxidation products (LOPs) may initiate or exacerbate the development of several chronic non-communicable diseases in humans. Indeed, the constantly increasing consumption of culinary oils by larger global populations indicates the need for scientific techniques to suppress the evolution of LOPs in thermo-oxidised oils. This study employed a 600.13 MHz frequency NMR spectrometer in evaluating the effect of 10, 50, and 100 ppm concentrations of chemical compounds reported to have antioxidant properties in continuously-stirred and thermally stressed polyunsaturated fatty acid (PUFA)-rich hemp seed oil at a frying temperature of 180℃ for 180 min. Research data acquired showed that the antioxidants α- and γ-tocopherol, γ-oryzanol, β-carotene, eugenol, resveratrol, ascorbyl palmitate, gentisic acid, and L-ascorbic acid all played a vital role in suppressing the evolution of secondary aldehydic lipid oxidation products in hemp seed oil. However, the most ineffective LOP-suppressing agent was L-lysine, an observation which may be accountable by its poor oil solubility. Nonetheless, trends deduced for compounds acting as antioxidants were mainly unique for each class of agent tested. Conversely, the antioxidant capacity of resveratrol was consistently higher, and this effect was found to be independent of its added amounts. This report provides a direct approach in developing scientific methods for the suppression of LOPs in thermo-oxidatively susceptible PUFA-rich cooking oils.

Abstract:Lipid oxidation of edible oil during frying process is a complex process and involves free radical chain reactions. Soybean oil with high amount of unsaturated fatty acids was used to investigate the impact of frying time on oxidative stability of oil. Electron spin resonance (ESR) spectroscopy technique was applied to identify and quantify the formed radicals, along with the assessment of physicochemical parameters including peroxide value, oxidative stability, fatty acid composition, and volatile profile. Results showed that the amount of formed free radicals determined by ESR in frying oil increased with the prolongation of frying time. The availability of this method was compared with physicochemical properties and the well correlation coefficients were obtained. Besides, main volatile aldehyde compounds produced by β-scission homolytic cleavage of peroxide group in frying oil during thermal oxidation were derived from oxidation of oleic and linoleic acid.

Abstract:The present study investigated the lipid oxidation degree of soybean oil during regularly discontinuous 40 h-deep-frying process. Electron spin resonance (ESR) spectroscopy technique was applied to identify and quantify the formed radicals, along with evaluation of physicochemical parameters including acid value (AV), peroxide value (PV), p-anisidine value (p-AnV), polar compounds (PC), fatty acid composition and volatile profile. Results showed the AV, p-AnV, PC and free radical of frying oil samples increased significantly with the increasing frying time. The results of fatty acids showed that unsaturated fatty acid such as C18:1 and C18:2 decreased by 19.98% and 14.58%, respectively, with prolonged frying time, while the content of C16:1, trans C18:1 and C18:2 increased by 20.38%, 425% and 42.86%, respectively, when compared to the fresh oil samples. In contrast, the content of saturated fatty acid had little change. In total, 37 volatile compounds were detected revealing a complex aroma profile of frying soybean oil, composed of 15 aldehydes, 8 alcohols, 4 ketones, 4 acids, 5 alkanes and 1 furan. Principal component analysis and hierarchical clustering analysis indicated that hexanal, heptanal, (E)-2-hexenal, octanal, (E)-2-heptenal, nonanal, (E)-2-octenal, undecanal, (E,E)-2,4-heptadienal, (E)-2-decenal, 2-undecenal, (E,E)-2,4-decadienal, 1-pentanol, 2,2-dimethyl-3-hexanol, (Z)-2-dodecenol, 1-octen-3-ol, pentanoic acid, octanoic acid, nonanoic acid and 2-pentyl-furan may be potential markers for evaluating lipid oxidation of frying soybean oil.

Abstract:1H NMR was applied as a fast method to determine soybean oil deterioration during deep frying and its correlations with conventional analytical methods were evaluated. Very high correlations (R = 0.925–0.968) were observed between the secondary oxidation products (n-alkanals, aldehyde, (E,E)-2,4-alkadienals) determined by 1H NMR and the total polar compounds (TPCs) determined by conventional silica gel column method. Strong correlations were found between 1H NMR and conventional gas chromatography method for analyzing linoleic (correlation coefficient R = 0.988), inolenic (R = 0.946) and oleic acids (R = 0.869). Moderate correlations (R = 0.664–0.742) were presented between the secondary oxidation products (n-alkanals, aldehyde, (E,E)-2,4-alkadienals) determined by 1H NMR and p-anisidine value (AnV) determined by conventional spectrophotometer method. The very high correlations between the formation of aldehydes and TPCs found in this study makes 1H NMR a potential tool to predict the maximum number of times that oil can be re-used during frying.
Comparative Analysis of Frying Performance: Assessing Stability, Nutritional Value, and Safety of High-Oleic Rapeseed Oils

Abstract:Frying is a critical process in the food industry, where selecting appropriate vegetable oils is key to achieving optimal results. In this study, French fries were fried at 175 °C with five different oils, the changes in the physicochemical indexes and free radical scavenging rate of the oils during the frying process were investigated, and the most suitable oils for frying were identified through comparative analysis using principal component analysis (PCA). We assessed the frying performances of hot-pressed high-oleic-acid rapeseed oil (HHRO), cold-pressed high-oleic-acid rapeseed oil (CHRO), soybean oil, rice bran oil, and palm oil utilizing principal component analysis over an 18 h period. The HHRO and CHRO showed lower acid values (0.31, 0.26 mg/g), peroxide values (2.09, 1.96 g/100 g), p-anisidine values (152.48, 178.88 g/mL), and total polar compound percentages (27.60%, 32.10%) than other oils. Furthermore, both the HHRO and CHRO demonstrated enhanced free radical scavenging abilities, indicative of their higher antioxidant capacities, as corroborated by the PCA results. Benzopyridine, 3-monochloropropane-1,2-diol ester, squalene, tocopherols, and polyphenol from the HHRO and CHRO during frying were compared. A comprehensive examination of harmful substances versus nutrient retention during frying revealed that the HHRO contained fewer hazardous compounds, while CHRO retained more nutrients. Therefore, this study analyzes the oxidation regulation of HHRO in frying applications, highlights the prospects of HHRO for frying in terms of health and economy, and contributes valuable insights for informed vegetable oil selection within the food industry.

Abstract:The cooking fumes generated from thermal cooking oils contains various of hazardous components and shows deleterious health effects. The edible oil refining is designed to improve the oil quality and safety. While, there remains unknown about the connections between the characteristics and health risks of the cooking fumes and oils with different refining levels. In this study, the hazardous compounds, including aldehydes, ketones, polycyclic aromatic hydrocarbons (PAHs), and particulate matter (PM) in the fumes emitted from heated soybean oils with different refining levels were characterized, and their health risks were assessed. Results demonstrated that the concentration range of aldehydes and ketones (from 328.06 ± 24.64 to 796.52 ± 29.67 μg/m3), PAHs (from 4.39 ± 0.19 to 7.86 ± 0.51 μg/m3), and PM (from 0.36 ± 0.14 to 5.08 ± 0.15 mg/m3) varied among soybean oil with different refining levels, respectively. The neutralized oil showed the highest concentration of aldehydes and ketones, whereas the refined oil showed the lowest. The highest concentration levels of PAHs and PM were observed in fumes emitted from crude oil. A highly significant ( p < 0.001) positive correlation between the acid value of cooking oil and the concentrations of PM was found, suggesting that removing free fatty acids is critical for mitigating PM concentration in cooking fumes. Additionally, the incremental lifetime cancer risk (ILCR) values of PAHs and aldehydes were 5.60 × 10 −4 to 8.66 × 10 −5 and 5.60 × 10 −4 to 8.66 × 10 −5 , respectively, which were substantially higher than the acceptable levels (1.0 × 10 −6 ) established by US EPA. The present study quantifies the impact of edible oil refining on hazardous compound emissions and provides a theoretical basis for controlling the health risks of cooking fumes via precise edible oil processing.

Analysis of oxidation products and toxic compounds in edible and blended oil during the deep-frying of french fries

Abstract:This study sought to analyze the oxidative products [acid value (AV), free fatty acids (FFA), conjugated dienoic acid (CDA), p-anisidine value (p-AV), antioxidant-prooxidant balance (APB) value] and toxic compounds [3-monochloropropane diol (3-MCPD), glycidyl ester (GE)] in edible oils after deep-frying. The deep-frying edible oils evaluated herein included soybean oil (S), palm oil (P), canola oil (C), grape seed oil (G), and a 1:1 blend (SC, SG, PC, PG, and CG). As frying time increased, the level of AV in PC, total FFA contents in CG, and p-AV in CG significantly increased up to 200%, 45.5%, and 410.5%, respectively (p < 0.05). The levels of 3-MCPD, and GE were 0.81-6.28 µg/mL and 0.14-2.84 µg/mL, respectively. The levels of 3-MCPD, GE, CDA, and APB changed significantly as frying time increased. Analysis of the correlation between oxidation products and toxic compounds indicated that the contents of 3-MCPD and palmitic acid were positively correlated. Quantification and Monitoring the Heat-Induced Formation of Trans Fatty Acids in Edible Oils by Raman Spectroscopy

Abstract:Trans fatty acids (TFAs), a type of unsaturated fatty acids, has been linked to increased risks of coronary heart disease and other health problems. Thus, efficient and reliable detection methods for TFAs are of great importance for both industrial applications and research purposes. In this study, a rapid and pretreatment-free quantification approach was developed for TFAs in 13 edible oils (including 2 soybean oils, 2 peanut oils, 2 rapeseed oils, blend oil, oleum camelliae, sunflower oil, rice oil, sesame oil, olive oil and corn oil) with Raman spectroscopy and chemometric methods. The commercial oils contained 0–0.397% (w/w) of trielaidin and each of the oils were further added with 0.1–5% of trielaidin, resulting in a total of 130 samples. Results show that the concentration of TFAs in various oils can be well-predicted based on the Raman spectral features in the region of 1640–1680 cm−1 (characteristic to C=C stretching modes), yielding a residual predictive deviation (RPD) of 4.639. This approach exhibits high sensitivity in quantification, and TFAs added in different kinds of edible oils combined with their initial levels can be successfully quantified with good descriptive statistics (Rc = 0.9657, Rcv = 0.9598, Rp = 0.9634, RMSEC = 0.351, RMSECV = 0.391 and RMSEP = 0.302). Furthermore, in order to understand the heat-induced formation of TFAs during food preparation, the TFA concentrations of the oil heated under different temperatures was investigated based on the above predication model. The results indicate that the concentration of TFAs increased sharply when the oils were heated at 169–250 °C for 10 min.

Abstract:High field (400 and 600 MHz) proton NMR spectroscopy has been employed to investigate the thermally-induced autoxidation of glycerol-bound polyunsaturated fatty acids present in intact culinary frying oils and fats. Heating of these materials at 180 degrees C for periods of 30, 60 and 90 min. generated a variety of peroxidation products, notably aldehydes (alkanals, trans-2-alkenals and alka-2,4-dienals) and their conjugated hydroperoxydiene precursors. Since such aldehydes appear to be absorbed into the systemic circulation from the gut in vivo, the toxicological significance of their production during standard frying practices is discussed.

Abstract:In obesity, adipose tissue (AT) and liver are infiltrated with Th‐1 polarized immune cells, which are proposed to play an important role in the pathogenesis of the metabolic abnormalities of obesity. Aging is also associated with increased adiposity, but the effects of this increase on inflammation and associated metabolic dysfunction are poorly understood. To address this issue, we assessed insulin resistance (IR) and AT and liver immunophenotype in aged, lean (AL) and aged, obese (AO) mice, all of whom were maintained on a standard chow diet (11% fat diet) throughout their lives. For comparison, these variables were also assessed in young, lean (YL) and young diet‐induced obese mice (41% fat diet, YO). Despite similar body weight and fat accumulation, YO mice were substantially more IR and had greater liver steatosis compared to AO mice. YO also had elevated infiltration of macrophages/dendritic cells in AT and liver, but these increases were absent in AO. Furthermore, liver immune cells of YO were more Th‐1 polarized then AO. Notably, aging was associated with accumulation of T cells, but this occurred independent of obesity. Together, the data suggest that reduced inflammation in AO underlies the improved insulin sensitivity and lowered steatosis compared to YO.
Evaluation of the non-aldehyde volatile compounds formed during deep-fat frying process

Abstract:To investigate the non-aldehyde volatile profile resulting from deep-fat frying, volatile compounds formed during the processes of heating soybean oil (SO), frying wheat dough (WD), and frying chicken breast meat (CBM) were comparatively studied. By using gas chromatography-mass spectrometry and internal standard method, alkanes, alkenes, alkynes, alcohols, ketones, nitrogen-containing volatiles (NCVs), and other volatiles were qualitatively and relatively quantitatively detected. NCVs were detected only in CBM-fried oil samples. Some volatiles (e.g. 2-pentylfuran and 2-pentylpyridine) were observed to increase in concentration, whereas others (e.g. 4-methyl-1,4-heptadiene and 7-methyl-3,4-octadiene) were observed to first increase and then decrease in concentration as the heating or frying time increased. Reduced quantity and concentrations of volatiles were observed in the food-fried oil samples which might be related to the intensified reactions induced by food components. The detection of some harmful volatiles in considerable concentrations indicated further attention might be paid to the safety of deep-fat frying.

Abstract:The induction of a type C virus from a strain of human embryonic lung cells (HEL-12) by iododeoxyuridine (IdUrd) was examined at various times during in vitro propagation. IdUrd did not elicit type C virus production immediately following initiation of cultures from frozen primary HEL-12 cells. After overnight treatment with 30 microgram/ml IdUrd the cells expressed viral antigens and produced a type C virus between the 25th and 80th day of in vitro growth. Production of the induced type C virus was transient. Single-cell clones of the parental HEL-12 strain were likewise susceptible to type C virus production by IdUrd. The ability of IdUrd to induce virus terminated with the onset of spontaneous type C virus production from HEL-12 cells at between 80 and 120 days of in vitro growth.

Abstract:Several polyunsaturated fatty acids are considered to have beneficial health effects, while saturated fatty acids and industrial trans fatty acids (TFAs) are linked to negative health consequences. Given the increased formation of TFAs during heating, many studies already investigated compositional changes in oils after prolonged heating or at extremely high temperatures. In contrast, our aim was to measure changes in fatty acid composition and in some health-related indices in edible oils after short-time heating that resembles the conventional household use. Potatoes were fried in palm, rapeseed, soybean, sunflower and extra virgin olive oils at 180 °C for 5 min, and samples were collected from fresh oils and after 1, 5 and 10 consecutive heating sequences. Regardless of the type of oil, the highest linoleic acid and alpha-linolenic acid values were measured in the fresh samples, whereas significantly lower values were detected in almost all samples following the heating sequences. In contrast, the lowest levels of TFAs were detected in the fresh oils, while their values significantly increased in almost all samples during heating. Indices of atherogenicity and thrombogenicity were also significantly higher in these oils after heating. The present data indicate that prolonged or repeated heating of vegetable oils should be avoided; however, the type of oil has a greater effect on the changes of health-related indices than the number of heating sequences.

Abstract:Heating edible oils generates aldehydes, potentially leading to adverse health effects, making their analysis essential for quality control. This study presents a convenient miniaturized kapok fiber-supported liquid-phase extraction/in-situ derivatization method for the simultaneous extraction and derivatization of aldehydes in oils. The method involves placing 150 mg oil into a 1 mL pipette tip packed with 25 mg kapok fiber, adding 150 μL ACN with 1.5 mg mL-1 DNPH, and post 30-minute static extraction, retrieving the extractant with a pipettor for liquid chromatography-tandem mass spectrometry analysis. By optimizing critical parameters through a Box-Behnken design, the method exhibits good linearity (1-500 ng g-1, R2 ≥ 0.991), low detection limits (0.2-1.0 ng g-1), excellent accuracy (95.3-107.1%) and high precisions (relative standard deviation < 7.9%). This method simplifies sample preparation processes, cuts solvent use, and facilitates automation. It effectively identifies ten aldehyde variations in six heated oils, displaying distinct profiles consistent with prior research.
