Abstract:Food packaging is an essential line to defend against the intrusion of undesirable external factors to protect food. The antibacterial edible films are considered as promising food packaging due to their biodegradability, environmental friendliness, and safety. In this paper, recent research progress on antimicrobial edible films based on polysaccharides, proteins, and lipids is reviewed. It is worth noting that polysaccharides and proteins are the main substrates of antimicrobial edible films, while lipids are mainly plasticizers and carriers of active substances in composite films. For example, second-generation liposomes have been investigated as promising carriers for antimicrobial substances or other bioactive substances due to their excellent stability. Moreover, recent advances and future trends of antimicrobial edible films are then analyzed. Linking antimicrobial edible film materials to delivery systems for stable loading of bioactive substances is a promising future direction, such as nanoemulsion and microencapsulation technologies. In addition, a smart and active packaging that allows consumers to directly determine the freshness of food products without unwrapping the package has come into the limelight. Currently, pH-sensitive films and smart fluorescent "on–off" sensors for humidity have been investigated as smart and active packaging materials for monitoring the freshness of food products, which can be vigorously explored in the future.

Abstract:Mortality ascertainment was extended through 1990 for a cohort of 1271 workers involved in the production of cellulose triacetate fiber at a plant in Rock Hill, South Carolina. Each subject was employed for at least three months between 1 January 1954 and 1 January 1977 in jobs that entailed exposure to the highest concentrations of methylene chloride. Median exposures in 1977 ranged from 140 to 745 ppm (8-h time-weighted average). The observed numbers of deaths from specific causes were compared with the expected numbers of deaths computed from rates in York County, South Carolina. For most causes of death, there was little if any association with employment. Among causes of particular interest, no new deaths were observed from cancer of the liver and biliary tract, although the excess from the earlier study persisted (4 observed, 1.34 expected). No excess mortality was observed for cancer of the pancreas (2 observed, 2.42 expected) or for ischemic heart disease (43 observed, 47.8 expected).

Abstract:Currently, the exploration of natural colorants from vegetal waste has gained particular attention. Furthermore, incorporation of these natural sources into biopolymers is an encouraging environmentally friendly approach to establishing active films with biological activities for food packaging. The present study developed bioactive antioxidant films based on gelatin-sodium alginate (NaAlg) incorporated with aqueous beetroot peel extract (BPE). Firstly, the effects of combining gelatin-NaAlg and BPE at 0.25, 0.5, and 1% on the mechanical, physical, antioxidant, and antibacterial properties of the films were analyzed. With increasing BPE, mechanico-physical properties and antioxidant and anti-foodborne pathogen capacities were enhanced. Likewise, when added to gelatin-NaAlg films, BPE remarkably increased the instrumental color properties. Moreover, during 14 days of storage at 4 °C, the impact of gelatin-NaAlg coating impregnated with BPE on microbial and chemical oxidation and on the sensory characteristics of beef meat samples was periodically assessed. Interestingly, by the end of the storage, BPE at 1% limited the microbial deterioration, enhanced the instrumental color, delayed chemical oxidation, and improved sensory traits. By practicing chemometrics tools (principal component analysis and heat maps), all data provided valuable information for categorizing all samples regarding microbiological and oxidative properties, sensory features, and instrumental color. Our findings revealed the ability of gelatin-NaAlg with BPE as an antioxidant to be employed as food packaging for meat preservation.

Abstract:Innovative active and pH-colorimetric composite films were fabricated from gelatin/poly(vinyl alcohol) (Gel/PVA) integrated with copper-based metal-organic frameworks (Cu-MOFs) and red cabbage anthocyanin (RCA). The incorporation of Cu-MOFs improved the tensile strength, water resistance, and UV shielding properties of the developed composite films. The addition of anthocyanins and 3 wt% Cu-MOFs endowed the polymer matrix with excellent antioxidant (100 % against ABTS and DPPH radicals) and antibacterial (against Gram-positive and Gram-negative foodborne pathogenic bacteria) functions. The fabricated composite films exhibited significant color change at alkaline conditions of pH 7-12 and a marked color change upon exposure to ammonia. The designed indicator films used for shrimp freshness tracking and a visual color change from pink (for fresh shrimp) to green (for spoiled shrimp) was observed during storage at 28 °C for 24 h. The potential applications of the engineered composite films were studied by shrimp packaging, and the quality parameters of packaged samples were monitored during storage. The synergistic effects of adding anthocyanins and MOF nanostructures works for better product freshness preservation and responds well to shrimp spoilage level, introducing novel active and intelligent packaging options for practical smart packaging applications.

Abstract:Betalains are water-soluble nitrogen pigments with beneficial effects, including antioxidant, antimicrobial, and pH-indicator properties. The development of packaging films incorporated with betalains has received increasing attention because of pH-responsive color-changing properties in the colorimetric indicators and smart packaging films. As such, intelligent and active packaging systems based on biodegradable polymers containing betalains have been recently developed as eco-friendly packaging to enhance the quality and safety of food products. Betalains could generally improve the functional properties of packaging films, such as higher water resistance, tensile strength, elongation at break, and antioxidant and antimicrobial activities. These effects are dependent on betalain composition (about its source and extraction), content, and the kind of biopolymer, film preparation method, food samples, and storage time. This review focused on betalains-rich films as pH- and ammonia-sensitive indicators and their applications as smart packaging to monitor the freshness of protein-rich foods such as shrimp, fish, chicken, and milk.

Abstract:A gelatin/carrageenan (Gel/Car) based antibacterial and pH-responsive intelligent film was developed by incorporating a Cu-metal organic framework (Cu-MOF) and anthocyanins from red cabbage ( Brassica oleracea ). Cu-MOF and anthocyanin were mixed compatibly with the polymer matrix to form a dense, flexible, and strong film. The film incorporated with 3 wt% Cu-MOF displayed excellent UV-barrier ability (98.5% in the UV-A and 99.9% in the UV-B), strong antioxidant efficacy against ABTS (100%), and DPPH (100%) and exhibited strong antibacterial activity to completely stop the growth of Gram-positive and Gram-negative bacteria after 3 h of incubation. In addition, the film exhibited pH-dependent color change under various pH conditions (pH 2 to 12), and freshness monitoring tests of shrimp demonstrated a qualitative and quantitative color change of the film (decreasing the redness, a -value, from 24.5 to 3.7). In packaging experiments using shrimp, this packaging film delayed the quality change rate of foods during storage and extended the shelf life of these foods. The gelatin/carrageenan-based multifunctional film combined with a Cu-metal organic framework is expected to help visualize food changes before consumption, extend processed foods' shelf life, and significantly reduce food waste problems.

Abstract:Blueberry pomace‐based carbon dots (CDs) and anthocyanin were added to gelatin (GEL) to fabricate smart packaging films with improved UV blocking potent antioxidant potential compared to the neat GEL film. Packaging minced pork, fish and shrimp with films has shown that indicator films work efficiently and non‐destructively and monitor their real‐time freshness. Consumers and food industry stakeholders have expressed great interest in using simple, non‐destructive and inexpensive methods to control/maintain or monitor the freshness of perishable foods. The idea of smart packaging has been introduced to address these requirements satisfactorily, revolutionizing conventional food packaging. Vaccinium corymbosum (VC)–based carbon dots (CDs) and anthocyanin were matrixed on gelatin (GEL) to fabricate smart packaging film. The VC biowaste–derived carbon dots (VC‐CDs) were characterized using photoluminescence, fluorescence spectrometry, FTIR, antibacterial/antioxidant potential, TEM and XPS analysis. Fabricated films were subjected to physico‐chemical, antioxidant and optical properties, SEM, TGA simulation and in vivo food model system. The VC‐CDs exhibited excellent functional properties like ultraviolet (UV) blocking and antibacterial properties. The reinforcement with 1.5% VC‐CDs and 6% VC anthocyanins (VCA) in the GEL polymer matrix improved UV blocking (> 189%) properties and showed potent antioxidant potential (> 164%) compared to the neat GEL film. In vivo food packaging (minced pork, fish and shrimp) with films has shown that indicator films work efficiently and non‐destructively and monitor real‐time freshness. The GEL/VC‐CDs/VCA‐based active and intelligent films are expected to be applied as multifunctional nanocomposite packaging materials that can indicate quality changes in real time, maintain quality and prolong the shelf life of packaged foods.

Abstract:In this study, active and smart packaging films were prepared by individually adding betacyanins-rich plant extracts (red pitaya flesh extract (RPFE), prickly pear fruit extract (PPFE), red beetroot extract (RBRE), globe amaranth flower extract (GAFE) and red amaranth leaf extract (RALE)) into starch/polyvinyl alcohol. The structural, physical and functional properties of the films containing betacyanins from different plant sources were compared for the first time. Results showed betacyanins from RPFE, PPFE and RBRE were betanin-type betacyanins. Betacyanins from GAFE and RALE were gomphrenin-type and amaranthin-type betacyanins, respectively. The films containing RPFE and PPFE presented more uniform cross-sections and had the highest water vapor barrier (9.37 and 9.26 × 10-11 g m-1 s-1 Pa-1) and mechanical strength (8.26 and 7.87 MPa). However, the film containing GAFE presented the lowest light transmittance but the highest 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity (EC50 = 0.47 mg/mL). All the films containing betacyanins are sensitive to pH 8-12 buffer solutions and volatile ammonia. Notably, the film containing RPFE exhibited distinct color changes (from purple-red to pink) when shrimp spoiled. Our results suggest the structural, physical and functional properties of betacyanins-rich films are closely related to the source and type of betacyanins.

Abstract:In the context of food waste and human diseases caused by food pollution, color renderement intelligent packaging came into being. Improving its indicator stability and sensitivity is essential for application. On the basis of our previous work, corn starch/polyvinyl alcohol was used as the matrix, the synthesized zirconium-based UiO-66 and anthocyanin-loaded ovalbumin-carboxymethylcellulose nanocomposites were embedded in to stabilize anthocyanins and improve gas adsorption performance of film. The study found that incorporating appropriate amount of UiO-66 (3%) in films resulted in uniform distribution and formation of holes. Mechanical properties, water stability and barrier properties were significantly improved, and gas adsorption capacity increased by approximately 10 times. More crucially, films that incorporate UiO-66 can react more quickly and visibly to lower concentrations of ammonia gas. The color change of SP/OVA-CMC-ACNs/3% UiO-66 film was noticeable (from purple to gray and then to green) when applied to monitor freshness of shrimp and pork.

Abstract:An intelligent edible film was produced and characterized using cassava starch and pomegranate peel powder (PPP) and the possibility of using production films to monitor the freshness of lamb meat. The amount of total volatile basic nitrogen (TVB‐N) of the meat was measured, and a clear relationship was observed between the color change of the film and the TVB‐N value. This study demonstrated that the film based on cassava starch and PPP could be used as an intelligent and pH‐sensitive film to monitor the freshness of meat and meat products. Nowadays, the development of pH‐sensitive smart edible films using biopolymers and natural plant extracts (especially those rich in anthocyanins) has attracted much attention. Therefore, in this study, the intelligent edible film was produced and characterized using cassava starch and pomegranate peel powder (PPP) and the possibility of using production films to monitor the freshness of lamb meat. The smart films were prepared using different concentrations of PPP (2, 4, 6, and 8% w/w) and the solvent casting method. The results showed that the incorporation of PPP had a significant effect on the mechanical parameters of the starch films. With increasing the levels of PPP, the color of the films became darker and redder. Abstract:Smart films based on basil seed gum/chitosan/red cabbage anthocyanin (RCA) fabricated. RCA concentration significantly affected the antioxidant activity of composite films. Ten‐percent RCA indicated obvious color changes against different pH and ammonia gas levels. Fabricated smart films successfully monitored fish freshness during the storage time. Novel green intelligent films based on basil seed gum (BSG)/chitosan containing red cabbage extract (RCA) (0, 2.5, 5, and 10, % (v/v)) as a colorimetric indicator for food freshness detection were fabricated by casting method. The physicochemical, barrier, mechanical, and antioxidant characteristics, as well as sensitivity to pH and ammonia gas of smart edible packaging films, were investigated. The interaction of anthocyanin extract as a natural dye with biopolymers in films characterized by FTIR spectroscopy and SEM images revealed their suitable compatibility. The film with maximum anthocyanin content (10% (v/v)) appeared robust color changes against various pH and ammonia gas levels. The color of indicator films when exposed to alkaline, neutral and acidic buffers are indicated with green, blue, and red colors, respectively. The DPPH radical scavenging activity of smart BSG/chitosan films improved from 23% to 90.32% with increasing RCA content from 2.5 to 10% (v/v). Generally, the incorporation of RCA in film structure enhanced their solubility, WVP, ΔE, turbidity, and flexibility, and reduced tensile strength. The observations successfully confirmed the efficacy of pH‐sensitive indicator smart film based on BSG/chitosan for evaluation of fish spoilage during storage.

Edible film production using Aronia melanocarpa for smart food packaging

Abstract:Although smart packaging systems protect food, they also provide information about the shelf life of the content. This information is provided by the formation of severe shifts in color as a result of the reaction of the gases released by the decomposition of the food, the colorant used in smart packaging. The inks or films used in smart packaging systems may exhibit this feature. Because both ink and film materials come into direct contact with the food product in smart packaging, it is more suitable for the intended use of the packaging to be produced from edible and natural resources. In this study, we aimed to investigate the production of films and their use in active packaging systems using the natural source starch and another bio source black chokeberry (Aronia melanocarpa) fruit in order to produce smart packaging. In this study, the coloring matter was extracted from Aronia melanocarpa fruit using ethyl alcohol. The monomeric anthocyanin and total phenol contents of the extracted Aronia melanocarpa were determined by the pH differential method. Colorimetric edible films sensitive to pH changes were produced using starch biopolymer by adding different amounts of the obtained aronia extract. The chemical structures of the produced films were determined by ATR-FTIR, the color properties were determined using spectrophotometer, and the contact angles were determined using goniometer. In addition, the swelling ability was calculated based on the pH. The disk diffusion method was applied to the obtained films against gram-positive and gram-negative bacteria, and the antibacterial properties of the films were determined. The swelling ability of the films prepared with aronia and starch was approximately half as low as the blank film. The prepared films maintained their stability at all pH levels, including high acids and bases. While the edible films produced had a pink-red color at acidic pH, they turned dark blue at basic pH values. This shows that the color of the films changes depending on the nitrogen output from the spoiled meat and can be used as smart packaging. When the antibacterial properties were examined, the blank film (F0) did not have any antibacterial properties, however as the amount of aronia increased, an increase of 17–22 mm (F1 to F4) against gram-positive bacteria and 4–9.9 mm (F1 to F4), respectively, was observed against gram-negative bacteria. In addition, the fact that the films produced have inhibitory properties against gram-positive bacteria adds an extra feature to the packaging material, as it protects the food against degradation.

Abstract:A new and green development in the field of food packaging is the use of colorimetric films containing anthocyanins, which not only can respond to food spoilage but also have no environmental risk and help the environment full of unacceptable and polluted substances created by humans. In this research, a completely natural film (GCNG) was made using natural materials including tragacanth gummifer (G), chitosan nanoparticles (C), and an extract containing anthocyanins of a type of wild grape called Sardasht black (G) with Alumina nanoparticles (N) for use in food packaging. This biodegradable film (GCNG) presented relatively wide color differences from red to blue in different buffer solutions (pH 2–12), which was clearly observed by the naked eye. Sardasht black grape extract contains large amounts of anthocyanins and antioxidants that can be extracted and used in the preparation of packaging films. The properties of prepared films, including mechanical properties, permeability to water vapor, solubility, swelling, as well as antimicrobial properties were checked by measuring the diameter of the diffusion area by agar disk test. GCNG films showed strong antioxidant activity and good antibacterial activity against E. coli and S. aureus . The results suggested this film has promising potential as an active and smart packaging material for applications in the food industry.

Intelligent Food Packaging: Quaternary Ammonium Chitosan/Gelatin Blended Films Enriched with Blueberry Anthocyanin-Derived Cyanidin for Shrimp and Milk Freshness Monitoring

Abstract:Blueberry anthocyanin-derived cyanidin (BAC) was used to prepare a series of responsive food freshness packaging films by compounding it with quaternary chitosan (QC) and gelatin (G). The fundamental properties, pH sensitivity, and functional attributes of the films were examined. The BAC solutions exhibited notable variations in color (from red to pink to violet) under different pH conditions. The incorporation of BAC resulted in improved UV-vis shielding capabilities but compromised the mechanical strength of the films (with tensile strength values from 85.02 to 44.89 MPa, elongation at break from 13.08% to 3.6%, and water vapor transmission rates from 5.24 × 10-9 to 7.80 × 10-9 g m-1 s-1 Pa-1). The QC-G-BAC films, containing 5-15 wt% BAC, exhibited noticeable color changes in acidic/ammonia environments within a short timeframe, easily discernible to the naked eye. Furthermore, the inclusion of BAC significantly enhanced the antioxidant and antimicrobial properties of the films. The addition of 5-15 wt% BAC to QC-G-BAC films could be employed for assessing the freshness of fresh shrimp (from red to dark red) and pasteurized milk (from red to dark earthy yellow). Among them, the total color difference (ΔE) of QC-G-BAC5 film was significantly correlated with the pH, acidity, and total colony count of pasteurized milk (R = 0.846, -0.930, -0.908, respectively). This new concept in smart packaging offers a straightforward and user-friendly freshness indicator.

Abstract:The pH-response color-changeable films were prepared by adding different contents (1 %, 2 % and 3 %) of hyacinth bean anthocyanins (HBA) into guar gum/polyvinyl alcohol blend matrix. The structural characterization and optical, barrier, mechanical, thermal, antioxidant and color-changeable properties of the films were determined. The films were applied to monitor the freshness of chilled shrimp and pork. Results showed that HBA were pH-dependent color-changeable pigments that endowed the films with purple color. 2 % and 3 % of HBA improved the uniformity and compactness of the films by forming hydrogen bonds with film matrix. The barrier ability of the films against UV–vis light, water vapor and oxygen was significantly elevated by 2 % and 3 % of HBA. The mechanical, thermal and antioxidant properties of the films were improved by HBA. The films containing HBA were much sensitive to pH variation and ammonia vapor, presenting obvious color changes (purple→green→yellow-green). The films containing HBA showed good color stability when stored at 4 °C for 30 days. Moreover, the film containing 2 % HBA showed color changes (purple→green) when the chilled shrimp and pork decayed. The results suggested that the film containing 2 % HBA was suitable to monitor the freshness of meat products in intelligent packaging field.

Abstract:This study aimed to improve the physicochemical performance of fish gelatin–based films. In this regard, the reinforced gelatin-based films were developed by covalent interaction with oxidized guar gum (OGG) containing green tea extract as an active food packaging system. The reinforced films were prepared by covalent crosslinking between the amino groups of gelatin and the aldehyde groups of OGG using the casting method. Then, the properties and structure of films were studied through Fourier transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM), thermogravimetric analysis (TGA), mechanical properties, water solubility, moisture content (MC), and water vapor permeability (WVP) analyses. After the crosslinking between gelatin and OGG with a ratio of 2:1 (OGG 0.25% w/v): (gelatin 5% w/v), a significant (<i>p</i> < 0.05) decrease was observed in solubility, moisture content, and water vapor permeability of film. The covalent bond formation between OGG and gelatin was also proved as successful by FTIR spectroscopy. The tensile strength of the optimized gelatin-OGG film (78.99 ± 0.4 MPa) was ~ 2-fold higher than that of the gelatin-GG film. Moreover, thermal stability of the optimized film was improved after crosslinking. The optimized film showed higher antioxidant activity due to the presence of green tea extract (0.5 and 1% w/v). The antimicrobial activities were also evaluated against <i>Staphylococcus aureus</i> as the gram-positive bacterium. The obtained results suggested that the optimized film could be considered as a good candidate to be used as an active food packaging system.
