Abstract:A novel indicator film incorporating roselle anthocyanin extracts (RAE) was prepared to monitor shrimp freshness. Hydroxypropyl methylcellulose (HPMC) modified polyvinyl alcohol (PVA) was applied as film-forming substrates to obtain better functions. Structural characterization results suggested compositions were well dispersed and confirmed the structural modification. The addition of HPMC would improve film functions through generation of new interactions. The films with a ratio (HPMC-to-PVA) of 3:1 exhibited stronger tensile strength (91.88 ± 0.13 MPa), hydrophobic (moisture content of 10.44 ± 0.65%, water contact angle of 56.40 ± 3.11°), barrier properties and larger color variations in response to pH changes, demonstrating positive influences of physical functions on indication properties. Thus, a relationship among structural, physical and indication functions was proposed. Furthermore, the films were applied for shrimp freshness real-time monitoring. The film color changed from rose-red to light green at 4 d, corresponding to the onset of spoilage, and then turned into yellow at 8 d, when the shrimp was severely spoilage. The strong correlation between total color difference and chemical spoilage indexes (P < .05) was observed. Therefore, the incorporation of HPMC could improve film functional characteristics by structural modification of new interaction formation, and the PVA/HPMC/RAE films could be applied as intelligent packaging for real-time shrimp freshness monitoring.

Abstract:In this study, halochromic smart films were produced, characterized, and applied to monitor the freshness of hairtail and shrimp in real-time. Red cabbage anthocyanins (RCAs) solution illustrated significant color variations (red-pink-blue-green) in different pH environments. RCAs were successfully immobilized into chitosan (CS)/oxidized-chitin nanocrystals (OCN) composites through hydrogen bonding, and cohesive film structures were formed. When the proper concentration of RCAs was incorporated into the composites, improved water vapor permeability (WVP), oxygen permeability (OP), mechanical, UV-blocking, and antioxidant properties were observed. Moreover, the smart films exhibited distinguishable changes of color to ammonia vapor and acidic/alkaline environment within short time intervals, which were easy to discern by naked eyes. Finally, the smart films were applied to monitor the freshness of hairtail (Trichiurus lepturus) and shrimp (Penaeus vannamei). The film color changed significantly during storage time, and three stages of product freshness (fresh, medium fresh, and spoiled) were successfully differentiated. Strong correlations among three freshness indicators and two colorimetric parameters were also identified and analyzed. Overall, the smart system assembled from non-toxic and biodegradable components could contribute to monitoring the freshness of seafood, like hairtail and shrimp, in real-time.

Abstract:A novel intelligent film was developed by immobilizing 1%, 3% and 5% black rice bran anthocyanins (BACNs) into oxidized-chitin nanocrystals (O-ChNCs)/ chitosan (CS) matrix. The ultraviolet-visible spectrum of BACNs solutions showed color variations from red to greyish green in a range of pH 2.0-12.0. Fourier transform infrared spectrum and atomic force microscope of the films showed that O-ChNC and BACNs were well dispersed into the CS matrix. Although the incorporation of BACNs decreased the mechanical and barrier properties of the CS/O-ChNCs/BACNs (COB) films, it endowed the COB films with excellent UV-barrier, antioxidant and pH sensitivity character. The results of the application trial showed that the COB films containing 3% of BACNs (COB-3) were able to monitor the spoiling of fish and shrimp by visible color changes. Therefore, the developed COB-3 films could be used as an intelligent food packaging for monitoring animal-based protein food spoilage.

Abstract:A novel stable PVA/HPMC/roselle anthocyanin (RAE) indicator film co-pigmented with oxalic acid (OA) was prepared, its properties, application effects and stability enhancement mechanism were investigated correspondingly. The structural characterization revealed that more stable network was formed due to the co-pigmentation facilitated generation of molecular interactions. Meanwhile, the co-pigmentation improved film mechanical and hydrophobic properties compared to both PVA/HPMC/RAE newly prepared (PHRN) or stored (PHRS) film, expressing as higher tensile strength values (12.25% and 14.44% higher than PHRN and PHRS), lower water solubility (7.22% and 10.09% lower than PHRN and PHRS) and water vapor permeability values (33.20% and 21.05% lower than PHRN and PHRS) of PVA/HPMC/RAE/OA newly prepared (PHON) or stored (PHOS) film. Compared with the PHRS film, the PHOS film still presented more distinguishable color variations when being applied to monitor shrimp freshness, owing to the stabilization behaviors of co-pigmentation in anthocyanin conformation. Hence, the co-pigmentation was an effective strategy to enhance film stability, physical and pH-responsive properties after long term storage, leading to better film monitoring effects when applied in real-time freshness monitoring.

Abstract:In the context of food waste and human diseases caused by food pollution, color renderement intelligent packaging came into being. Improving its indicator stability and sensitivity is essential for application. On the basis of our previous work, corn starch/polyvinyl alcohol was used as the matrix, the synthesized zirconium-based UiO-66 and anthocyanin-loaded ovalbumin-carboxymethylcellulose nanocomposites were embedded in to stabilize anthocyanins and improve gas adsorption performance of film. The study found that incorporating appropriate amount of UiO-66 (3%) in films resulted in uniform distribution and formation of holes. Mechanical properties, water stability and barrier properties were significantly improved, and gas adsorption capacity increased by approximately 10 times. More crucially, films that incorporate UiO-66 can react more quickly and visibly to lower concentrations of ammonia gas. The color change of SP/OVA-CMC-ACNs/3% UiO-66 film was noticeable (from purple to gray and then to green) when applied to monitor freshness of shrimp and pork.

Abstract:A pH-sensitive food freshness indicator film (PS-CS-BA) was fabricated with potato starch (PS) as film-forming substrate, blueberry anthocyanins (BA) as an indicator, and chondroitin sulfate (CS) as an enhancer. The results exhibited that the presence of CS significantly altered water solubility and improved mechanical properties of films, in particular enhanced pH and ammonia responsiveness. FT-IR and XRD results associated with the enhanced pH sensitivity and colorimetry with the ionic complex between the sulfate group of CS and anthocyanin flavylium ion. When applied in monitoring shrimp freshness at 4 °C, the PS–CS–BA film indicated sensitively with vision recognizable color changes from original pink to light grey and finally to grayish-green, which highly correlated with the deterioration indexes of the total volatile basic nitrogen (TVB-N), total viable count (TVC), and pH values of shrimp. The results provided a novel and highly-sensitive intelligent packaging strategy by the co-pigmentation of CS for freshness monitoring.

Abstract:Anthocyanin extracts from purple tomato (PTA) were incorporated with polyvinyl alcohol (PVA), resulting in a series of colorimetric PVA/PTA films with PTA concentrations of 0%, 1%, 3%, and 5% (based on PVA). The role of anthocyanin on color response, Fourier-transform infrared (FTIR), thickness, water content, mechanical properties, antioxidant activity, and water vapor permeability (WVP) through the films was examined. In addition, its application in smart packaging to assess the freshness of shrimp was studied. It was found that the tensile strength, contact angle and WVP of PVA/PTA films increases with the addition of more PTA, while the elongation at break and water content decreased. FTIR analysis showed that there are interactions between PTA and the PVA matrix. The addition of anthocyanins caused significant improvement in the antioxidant properties of PVA films. Furthermore, the total volatile alkaline nitrogen (TVB-N), total plate count (TPC), and pH value of shrimp were monitored after 4 days of refrigeration, and the color change of the indexes was recorded. The PVA/PTA films changed color from purple to yellow-green during the storage time of 0–4 days for shrimp. This suggests that the film could be used in smart packaging as a real-time freshness indicator for shrimp.

Protective Effect of Curcumin Against Paracetamol-induced Liver Damage 1

Abstract:Curcumin, as well-known dietary pigment derived from the rhizome of curcuma longa L., has been shown to be a potent anti-inflammatory, antioxidant and anticarcinogenic agent. The present investigation aimed at questioning and examining the possible potential protective effect of curcumin against paracetamol-induced hepatotoxicity in an attempt to understand its mechanism of action, which may pave the way for possible therapeutic application. Paracetamol (500 mg/kg.b.w.) administration to rats resulted in massive elevation in serum and hepatic lactate dehydrogenase (LDH) activity and TBARS as well as in serum tumor necrosis factor–alph (TNF) levels, with a significant decrease in serum protein thiols (Pr-SHs), blood glutathione (GSH) levels, blood superoxide dismutase (SOD) and glutathione peroxidase (GPx) activities. On the other hand, paracetamol hepatotoxicity resulted in an increased in hepatic TBARS and depletion of hepatic GSH and Pr-SHs levels as well as in hepatic SOD, GPx, GR, glutathione-s-transferase (GST) and Catalase (CAT) activities. Oral administration of curcumin at a concentration of 50 mg/kg b.w. daily for 15 days to rats treated with paracetamol produced a significant protection against-induced increase in serum and hepatic LDH activities as well as TBARS and tumor necrosis factor–alph (TNF) levels. Also, curcumin (50 mg/kg.B.W.) could inhibit reduce in serum Pr-SHs, blood GSH levels and enhance increase in blood SOD and GPx activities. Hepatic TBARS level was suppressed by administration of curcumin to paracetamol-treated rats. In addition, curcumin enhance increase in hepatic GSH and Pr-SHs levels as well as in hepatic SOD, GPx, GR, GST and CAT activities. These data indicate that curcumin is a natural antioxidant hepatoprotective agent against hepatotoxicity induced by paracetamol model. Thus, curcumin may have a therapeutic value in drug-induced hepatotoxicity as well as in paracetamol

Abstract:Herein, an antioxidant, antibacterial and pH-sensitive multifunctional film is fabricated by incorporating anthocyanins-rich purple sweet potato extract and quercetin-loaded chitosan nanoparticles in agar /sodium alginate polymer matrix for monitoring and maintaining the freshness of shrimp. The film shows distinguishable color changes as pH changes and is highly sensitive to volatile ammonia. Moreover, the digital color information of the film is obtained by smartphone combined with RGB (red/green/blue) analysis. The G/R values are successfully used for the evaluation of shrimp freshness. More importantly, the film exhibits strong UV-blocking, antioxidant, antibacterial properties, and excellent mechanical, water vapor barrier properties, which enables the film to be used as a food packaging film. Notably, shrimp packed with the film can extend shelf life to about 36 h in refrigerated storage. Consequently, the multifunctional film can be applied to intelligent packaging for not only real-time indicating but also high-efficient preserving the freshness of animal-derived foods.

Abstract:Anthocyanin-based smart packaging has been widely used for food freshness monitoring, but it cannot meet the requirements of smart films with antibacterial properties. This study aimed to enhance the antibacterial properties of intelligent films by incorporating Amomum tsao-ko essential oil (AEO) for mantis shrimp spoilage tracking and keeping the product fresh. A smart film was designed by introducing AEO and purple potato anthocyanin (PPA) to a polyvinyl alcohol/cellulose nanocrystal (PVA/CNC) polymer matrix. Our findings revealed that APP and AEO imparted the smart film with a favorable oxygen barrier, UV protection, mechanical properties, and antioxidant and pH/NH3-sensitive functions. Interestingly, the PVA/CNC-AEO-PPA film achieved 45.41% and 48.25% bactericidal efficacy against S. putrefaciens and V. parahaemolyticus, respectively. Furthermore, a visual observation confirmed that the target film (PVA/CNC-AEO-PPA) changed color significantly during mantis shrimp spoilage: rose red-light red-pink-light gray-dark gray. Meanwhile, the PVA/CNC-AEO-PPA film retarded the quality deterioration of the mantis shrimp effectively. The PVA/CNC-AEO-PPA film shows great application potential in mantis shrimp preservation and freshness monitoring; it is expected to become a rapid sensor for detecting seafood quality non-destructively and a multifunctional film for better preservation of product quality.

Abstract:The demand for intelligent packaging in food sub-freshness monitoring is increasing. Herein, a pH and NH3 responsing colorimetric film (PS-CH-LCA) was fabricated based on potato starch (PS), chitosan (CH) and Lonicera caerulea L. anthocyanins (LCA) via controlling the pH value of the film-forming solution, and was applied to the real-time monitoring of shrimp freshness. The PS-CH-LCA pH 2.5 film exhibited the highest tensile strength (6.43 MPa), the lowest water solubility (33.11%) and the most sensitive color responsiveness. Morphological and structural results revealed that CH was attached to the surface of PS via hydrogen bond, and anthocyanins were well immobilized in the film-forming matrix. The sensitive color change and its high correlation with spoilage indices demonstrated the PS-CH-LCA pH 2.5 film well indicated fresh, sub-fresh, spoiled level of shrimp. The results solved the limitation of chitosan-based packaging films in undistinguishable colorimetric endpoints, providing a new strategy for indicating the sub-freshness of food packaging.

Abstract:Food safety is related to public health and environmental safety. Therefore, it is necessary to develop accurate and effective detection methods to assess food quality and safety. In this study, a pH-responsive functional film (BC/GA/FITC/PCA) was generated for the real-time and visual monitoring of shrimp freshness. Bacterial cellulose /Gelatin (BC/GA) was used as a film-forming matrix, and fluorescein isothiocyanate (FITC) and red cabbage (PCA) were used as the response signals. The addition of FITC and PCA increased the shading capacity (< 30 %) and antioxidant properties (22.8 %) of the films. WCA (82.73 ± 0.95°), WVP (1.48 × 10 −11 g·cm/cm 2 ·s·Pa) and OTR (2.42 × 10 −15 cm 3 ·cm/cm 2 ·s·Pa) indicated that the film possessed water resistance and oxygen barrier properties. When exposed to daylight, the film underwent a color transition from purple to green as the ammonia concentration increased. In addition, the blue-green fluorescence of the films gradually increased and the detection limit was low (170 ppb). In particular, the change in film color caused by shrimp spoilage corresponded to the TVBN value. This study work provides a new strategy for controlling and monitoring food safety and has a wide range of applications in the fields of food-active packaging and smart packaging.

Abstract:This paper focuses on duopolistic competition under price and production postponement for two differentiable products that share component commonality. Both price and production postponement are benchmarked in order to investigate the component commonality effect on profit and also their appropriateness in different competition situations. The results show that production postponement is appropriate in situations of market expansion, price postponement to meet customer wants, and integrated price and production postponement for highly customized products. Price and production postponements offer an alternative way for managers to decide how to create products as fighting and mass-customized products. Innovative price and production postponement models represent the new contribution of this paper.

Abstract:In recent years, the utilization of smart colorimetric packaging films for monitoring food freshness has garnered significant concentration. However, their limited tensile strength, hydrophobicity , antioxidant, and antibacterial properties have been substantial barriers to widespread adoption. In this study, we harnessed the potential of biodegradable materials, specifically chitosan/polyvinyl alcohol, alongside shikonin extracted from Radix Lithospermi and ZnO nanoparticles, to create a novel colorimetric sensing film. This film boasts an impressive tensile strength of 82.36 ± 2.13 MPa, enhanced hydrophobic characteristics (exemplified by a final contact angle of 99.81°), and outstanding antioxidant and antibacterial properties. It is designed for real-time monitoring of shrimp freshness. Additionally, we verified the effectiveness of this sensing film in detecting shrimp freshness across varying temperature conditions, namely 25 °C and 4 °C was validated through the measurement of total volatile basic nitrogen (TVB-N). Visual inspection unequivocally revealed a transition in color from dark red to purple-light blue and finally to dark bluish providing a clear indication of shrimp spoilage, which demonstrated a strong correlation with the TVB-N content in shrimp measured through standard laboratory procedures. The colorimetric sensing film developed in this study holds great promise for creating smart labels with exceptional antioxidant and antibacterial properties, tailored for visual freshness monitoring of shrimp.

Abstract:Gelatin/agar-based smart and functional freshness indicator films were fabricated using blue anthocyanin and zinc oxide nanoparticles (ZnO). The anthocyanin was extracted from butterfly pea (Clitoria ternatea) flower, and ZnO was synthesized using a simple hydrothermal method. The butterfly pea anthocyanin (BA) and ZnO were evenly dispersed in the polymer matrix to form a compatible film with the gelatin/agar polymer. The addition of BA and ZnO significantly increased the UV blocking properties and surface hydrophobicity without significant changes in the film's mechanical, thermal stability, and water vapor barrier properties. The BA and BA-added films showed excellent pH-responsive color-change properties as well as good color stability and reversibility. In addition, the composite film showed strong antioxidant and strong bactericidal properties, and the antioxidant function was mainly attributed to the BA, and the antibacterial function was attributed to ZnO. The functional and color indicator film was tested to monitor the freshness of shrimp. It showed distinctive color changes during storage, indicating the degradation of the quality of shrimp accompanied by the total volatile basic nitrogen (TVB-N).

Abstract:Mortality ascertainment was extended through 1990 for a cohort of 1271 workers involved in the production of cellulose triacetate fiber at a plant in Rock Hill, South Carolina. Each subject was employed for at least three months between 1 January 1954 and 1 January 1977 in jobs that entailed exposure to the highest concentrations of methylene chloride. Median exposures in 1977 ranged from 140 to 745 ppm (8-h time-weighted average). The observed numbers of deaths from specific causes were compared with the expected numbers of deaths computed from rates in York County, South Carolina. For most causes of death, there was little if any association with employment. Among causes of particular interest, no new deaths were observed from cancer of the liver and biliary tract, although the excess from the earlier study persisted (4 observed, 1.34 expected). No excess mortality was observed for cancer of the pancreas (2 observed, 2.42 expected) or for ischemic heart disease (43 observed, 47.8 expected).

Abstract:Corn starch (CS)/chitosan (CH) composite film attained higher stability by incorporating rose anthocyanins (RACNs)-encapsulated potato amylopectin nanoparticles (APNPs) as pH indicator applied for shrimp freshness detection. Apart from the physical-chemical characterization of nanoparticles, the effects of different rose anthocyanins-encapsulated by potato amylopectin nanoparticles (ANPs) contents on the mechanical strength, barrier properties and indicative performance of the films were explored. The results illustrated that the mean size of the ANPs was 192.7 nm and their zeta potential was maintained at −6.70 mV, which had the encapsulation efficiency of up to 89.7% and presented as dendritic. At the same time, the addition of ANPs formed new hydrogen bonds with matrix and a tighter network structure, improving film mechanical properties and its barrier to water vapor and light. The pH-responsive films also exhibited sensitivity to ammonia of 28.67% in 30 min and reversible pH-sensing in five alternating CH 3 COOH–NH 3 exposure cycles. During 14-day storage, CS/CH/ANPs films showed higher stability than those with free RACNs at both 4 °C and 25 °C, whose color stability appeared positively correlated with ANPs. Meanwhile, pH-responsive films with ANPs exhibited obvious color changes from pink-colorless-yellow at 4 °C to reflect the deterioration of shrimp, foreshadowing their excellent potential in smart packaging for seafood freshness monitoring.

Abstract:Results indicated that a mixture of curcumin and anthocyanin could be a good indicator material for intelligent film to nondestructively monitor the freshness of shrimp. An intelligent pH‐sensing indicator containing Roselle (Hibiseus sabdariffa L.) (RS) anthocyanin and curcumin (CR) was developed and characterized as on‐package indicator tags to check the freshness of shrimp during the storage at 4°C. FE‐SEM and FT‐IR analysis showed that RS and CR were successfully immobilized in the gelatin–glycerol film‐forming substrate. The addition of various natural dyes increased the thickness and antioxidant action of the colorimetric film. To assess the response to changes in the pH, the colorimetric film was immersed in different buffers. Based on volatile amines secreted by shrimp, a test application of a colorimetric film containing natural dyes at a ratio of CR:RS = 1:4 (v/v) was conducted in shrimp at 4°C. The total volatile basic nitrogen (TVB‐N) and the pH of shrimp were monitored during refrigerated storage for 10 days, and the color changes of the indicator were recorded simultaneously. The results indicated that the designed colorimetric film could produce various colors, which are thought to be indicative of the freshness and spoilage of packaged shrimp. Therefore, the target film can be utilized as a promising smart packaging material for monitoring the freshness of shrimp and aquatic products in real time.

Abstract:The developed trend of novel intelligent packaging materials is changing from food traditional appearance detection to actual spoilage monitoring, aiming to supply a strategy to determine the edibility of food. In this work, a dual-functional electrospun nanofiber film (NFM) noted GZAT was prepared by the co-loading of anthocyanin (ANT) and thymol (THY) into polymer fibers of gelatin and zein. The prepared film was extensively characterized. The GZAT film displayed enhanced mechanical properties and decreased water vapor permeability (WVP) compared with gelatin/zein film (the control). The GZAT film also displayed excellent sensitive colorimetric responses to the pH solutions. Moreover, it exhibited excellent antioxidant property and antibacterial behavior against Escherichia coli ATC25922 (E. coli), Listeria monocytogenes ATCC 19115 (L. monocytogenes) and Staphylococcus aureus ATCC 6538 (S. aureus). Not only that, the dual functions of the GZAT film were confirmed that the shelf life of packaged shrimps was successfully extended to 11 days at 4 °C along with the colorimetric response indicating the freshness of the shrimps. Based on the above characteristic, the prepared GZAT film exhibited great potential as an intelligent packaging film with both real-time freshness indicator and freshness preservation.

Abstract:Chitosan/gelatin (CG) based intelligent pH-sensing indicator films were fabricated by incorporating zinc oxide nanoparticles (nano-ZnO) (CGZ) and different amounts of black peanut seed coat anthocyanins (BPCSA) (CGZ-h). Chitosan/gelatin showed good compatibility with anthocyanins and nano-ZnO, and the addition of nano-ZnO and BPSCA did not affect the original crystal structure of films. Addition with BPSCA simultaneously increased the tensile strength and elongation at break of CGZ-h films. BPSCA decreased the water vapor permeability, whereas they increased the UV barrier property of the CGZ-h films. CGZ-h films exerted strong antioxidant and antibacterial activities, which mainly attributed to the BPSCA and nano-ZnO, respectively. CGZ-h films presented good pH-sensing color-change properties in different buffer solutions. The CGZ-h2 film was used to monitor the freshness of shrimp at 4 °C. The result showed that distinctive color change of the CGZ-h2 film was highly correlated with the change of the total volatile basic nitrogen, pH and total viable count of shrimp. These results revealed the potential application of CGZ-h for real-time monitoring the freshness of food.
