Abstract:Carnobacterium maltaromaticum and Carnobacterium divergens are often predominant in the microbiota of vacuum-packaged (VP) meats after prolonged storage at chiller temperatures, and more so in recent studies. We investigated the antibacterial activities of C. maltaromaticum and C. divergens (n = 31) from VP meats by phenotypic characterization and genomic analysis. Five strains showed antibacterial activities against Gram-positive bacteria in a spot-lawn assay, with C. maltaromaticum strains having an intergeneric and C. divergens strains an intrageneric inhibition spectrum. This inhibitory activity is correlated with the production of predicted bacteriocins, including carnobacteriocin B2 and carnolysin for C. maltaromaticum and divergicin A for C. divergens. The supernatants of both species cultured in meat juice medium under anaerobic conditions retarded the growth of most Gram-positive and Gram-negative bacteria in broth assay in a strain-dependent manner. C. maltaromaticum and C. divergens produced formate and acetate but not lactate under VP meat-relevant conditions. The relative inhibitory activity by Carnobacterium strains was significantly correlated (P < 0.05) to the production of both acids. Genomic analysis revealed the presence of genes required for respiration in both species. In addition, two clusters of C. divergens have an average nucleotide identity below the cutoff value for species delineation and thus should be considered to be two subspecies. In conclusion, both bacteriocins and organic acids are factors contributing significantly to the antibacterial activity of C. maltaromaticum and C. divergens under VP meat-relevant conditions. A few Carnobacterium strains can be explored as protective cultures to extend the shelf life and improve the safety of VP meats. IMPORTANCE The results of this study demonstrated that both bacteriocins and organic acids are important factors contributing to the antibacterial activities of Carnobacterium from vacuum-packaged (VP) meats. This study demonstrated that formate and acetate are the key organic acids produced by Carnobacterium and demonstrated their association with the inhibitory activity of carnobacteria under VP meat-relevant storage conditions. The role of lactate, on the other hand, may not be as important as previously believed in the antimicrobial activities of Carnobacterium spp. on chilled VP meats. These findings advance our understanding of the physiology of Carnobacterium spp. to better explore their biopreservative properties for chilled VP meats.

Abstract:Vanillin, a plant-derived antimicrobial volatile substance, has potential microbial control applications in the food industry. However, the effect of vanillin on the food-borne pathogen Escherichia coli (E. coli) O157:H7 has not been well studied. This study aims to explore the antibacterial mechanism of vanillin against E. coli O157:H7. The minimum inhibitory concentration (MIC) and antibacterial effect of vanillin were determined by microdilution. Scanning electron microscopy (SEM) was used to observe the damage of vanillin to the cell membrane, while cell membrane potential and the leakage of nucleic acid protein were measured to explore the effect of vanillin on the membrane system. Confocal laser scanning and intracellular adenosine triphosphate (ATP) concentration determination were utilized to investigate the effects of vanillin on the energy, life, and death of E. coli. Finally, transcriptome sequencing was conducted to investigate the gene expression differences induced by vanillin treatment. The results showed that vanillin treatment effectively controlled E. coli O157:H7 with an MIC of 2 mg/mL. After treatment, damage to the membrane system, depolarization of the membrane, and leakage of nucleic acid and protein were observed. Meanwhile, vanillin treatment caused decreased ATP content and cell death. Transcriptome analysis showed that vanillin treatment significantly affected the expression of genes involved in cell membrane formation, tricarboxylic acid (TCA) cycling pathway, and oxidative phosphorylation pathway in E. coli O157:H7. In conclusion, membrane damage and energy metabolism disruption are important mechanisms of vanillin's inhibitory effect on E. coli O157:H7. This study provides new insights into the molecular reaction mechanism of vanillin against E. coli O157:H7, highlighting its potential as an antibacterial substance for preventing E. coli contamination in the food industry.

Abstract:AbstractBacteriocins have antimicrobial activities against food-spoiling bacteria and food-borne pathogens. Paracin 1.7, a bacteriocin synthesized by Lactobacillus paracasei HD1-7 isolated from Chinese sauerkraut juice, was studied. Following partial purification with ammonium sulfate precipitation, CM Sepharose Fast Flow and Sephadex G-10 chromatography, the molecular weight of Paracin 1.7 was about 10 kDa based on Tricine-SDS-PAGE results. A 2.87 fold purified bacteriocin was produced, reaching a final yield of 39.93% and the specific activity of 1.56 × 103 AU/mg. The N-terminal amino acid sequence of Paracin 1.7 was VSNTFFA and the LC/LTQ results revealed that the N-terminal amino acid sequence was similar to that of ABC-type oligopeptide transport system protein and N-acetylmuramoyl-L-alanine amidase. Paracin 1.7 was sensitive to protease K, had antimicrobial activities at a broad pH range (3.0–8.0) and was heat resistant (121 °C for 20 min). Paracin 1.7 from Lactobacillus paracasei HD1-7 is a novel bacteriocin that has potential applications in food preservation.

Abstract:Vibrio parahaemolyticus and its biofilm threaten food safety and human health. Bacteriocins are known to inhibit various foodborne bacteria and their biofilms; however, few bacteriocins with antibiofilm activity against V. parahaemolyticus have been reported. Herein, a novel plantaricin Z057 from Lactiplantibacillus plantarum Z057 was extracted with ethyl acetate, purified by Sephadex LH-20 gel chromatography and reversed-phase high-performance liquid chromatography, and identified by nano-liquid chromatography coupled with tandem mass spectrometry. Its molecular mass and amino acid composition were 1272.61 Da and A-G-G-D-G-G-H-G-G-S-I-I-L-Y, respectively. Plantaricin Z057 presented a broad antibacterial spectrum against Gram-positive and Gram-negative pathogens. Moreover, it also exhibited excellent heat tolerance, maintained antibacterial activity at pH 2.0–4.0, and was susceptible to common proteases (pepsin, trypsin, papain, proteinase K). In addition, scanning electron microscopy revealed that plantaricin Z057 destroyed membrane integrity and caused cell deformation and cytoplasmic leakage. The crystal violet staining and XTT reduction assays revealed that plantaricin Z057 markedly decreased biofilm biomass and metabolic activity of V. parahemolyticus . Fluorescence microscopy showed that plantaricin Z057 efficiently inactivated sessile cells, and damaged integrated biofilm structure by reducing the extracellular polymer content. In summary, plantaricin Z057 exhibited significant potential for controlling V. parahaemolyticus and could be used in food production as a biological preservative.

Abstract:Peptide fragment hybridization is an effective method to obtain novel hybrid antimicrobial peptides with higher antibacterial activities. The novel peptide, valine-cecropin A(1–8)-plantaricin ZJ5(1–18) (CA-P), was designed by coupling the amphiphilic N-terminal fragment of CA with the N-terminal core helix of P and adding a valine residue to the N-terminus of the hybrid fragment. CA-P showed higher antibacterial activities than the parental peptide P against all indicator strains in the experiment, with no hemolytic activity against sheep red blood cells. Observations by scanning electron microscopy and transmission electron microscopy confirmed that CA-P destroyed the surface structure of the bacteria and caused leakage of the cellular contents. As determined by fluorescence microscopy, the antibacterial mechanism of CA-P is microorganism killing. It was observed that CA-P and Litsea mollis Hemsl. essential oil showed a significant synergistic effect against Salmonella enterica serovar Newport.

Abstract:Raw vegetables are a key food for a healthy diet, but their increased consumption brings a higher risk for foodborne disease. Contamination of salad greens with Shiga toxin-producing Escherichia coli (STEC) O157:H7 has caused severe disease and important economic losses almost yearly in the United States over the last 10 years. To curb the risk of infections from contaminated produce, approaches based on bacterial virus - commonly known as bacteriophage or phage - have recently started to draw interest among other antimicrobial strategies. Phages enter bacterial cells to reproduce and cause cellular lysis to release their phage progeny at the end of their infection cycle. This lytic effect is caused by lysins, phage-encoded enzymes that have evolved to degrade the bacterial cell wall resulting in hypotonic lysis. When applied externally in their purified form, such enzymes are able to kill sensitive bacteria on contact in a similar way. Their unique bactericidal properties have made lysins effective antimicrobial agents in a variety of applications, from treating multidrug-resistant infections in humans to controlling bacterial contamination in several areas, including microbiological food safety. Here we describe a novel lysin, namely PlyEc2, with potent bactericidal activity against key gram-negative pathogens including E. coli, Salmonella, Shigella, Acinetobacter and Pseudomonas. PlyEc2 displayed high bactericidal activity against STEC to a concentration of 12.5 μg/ml under different pH conditions. This lysin was also able to reduce the bacterial titer of several pathogenic strains in vitro by more than 5 logarithmic units, resulting in complete sterilization. Importantly, PlyEc2 proved to be a powerful produce decontamination agent in its ability to clear 99.7% of contaminating STEC O157:H7 in our Romaine lettuce leaf model. PlyEc2 was also able to eradicate 99.8% of the bacteria contaminating the washing solution, drastically reducing the risk of cross-contamination during the washing process. A sensory evaluation panel found that treatment with PlyEc2 did not alter the visual and tactile quality of lettuce leaves compared to the untreated leaves. Our study is the first to describe a highly effective lysin treatment to control gram-negative pathogenic contamination on fresh lettuce without the addition of membrane destabilizing agents.

Abstract:Bacteriocins from lactic acid bacteria (LAB) arouse general concern in recent years due to their antimicrobial activities against foodborne pathogenic microorganisms. In this study, a novel bacteriocin named as bacteriocin ZFM54, produced by Lactobacillus paracasei ZFM54 isolated from the feces of newborn infant, was purified by a four-step strategy including macroporous resin XAD-16 adsorption chromatography, cation exchange chromatography, Sephadex G-25 gel filtration chromatography, and reverse-phase high-performance liquid chromatography (RP-HPLC). The molecular weight of bacteriocin ZFM54 was 1143.39 Da, the predicted amino acid sequence was ATTLIPPVFGK. Bacteriocin ZFM54 was highly thermostable, active under the acidic condition, sensitive to trypsin and proteinase K, while insensitive to α-amylase, lysozyme, lipase, and ribonuclease A. The bacteriocin possessed a broad-spectrum inhibition against many foodborne pathogens such as Salmonella typhimurium, Micrococcus luteus and Listeria monocytogenes. The mode of action of bacteriocin ZFM54 was related to the pore formation of cell membrane. We further demonstrated that Lipid II, the molecular target of the prototype lantibiotic Nisin, was not the specific target of this bacteriocin. Together, this new bacteriocin has great potential to be used as a biological preservative in the food industry.

Abstract:Bacteriocins produced by lactic acid bacteria (LAB) have good potential for use as food biopreservatives. Lacticaseibacillus paracasei Zhang ( L. paracasei Zhang) is both a food use and a probiotic bacterium. This study aimed to purify and preliminary characterize the active antibacterial metabolite of L. paracasei Zhang. The cell-free supernatant of L. paracasei Zhang was collected and purified by ultrafiltration and gel filtration chromatography. The 1–3 kDa active fraction could inhibit the growth of Staphylococcus aureus but not Escherichia coli . Further antibacterial activity assays revealed its capacity to suppress various foodborne and human opportunistic pathogens (including Staphylococcus aureus , Pseudomonas fluorescens , Pseudomonas aeruginosa , Listeria monocytogenes , and Bacillus cereus ), but not fungi. The antibacterial activity showed good tolerance to heat (40 to 100 °C), acid–base (pH 2–3 and pH 6–10), and digestions by a number of industrial and animal/human enzymes (such as trypsin, pepsin, α-amylase, and protease K, except papain); these desired properties make it a suitable biopreservative to be used in harsh and complex industrial production processes. The high papain sensitivity suggested a proteinaceous/peptide nature of the bioactivity. Moreover, our genomic data mining for bacteriocin through BAGEL4 revealed an area of interest encoding a complete set of putative genes required for bacteriocin production. In conclusion, our study showed that L. paracasei Zhang can produce extracellular functional antibacterial metabolite, likely a class II bacteriocin. Our preliminary extraction and characterization of the active metabolite demonstrated that it has good potential to be used as a biopreservative or an agent for suppressing gastrointestinal infections.

Preservative effects of a novel bacteriocin from Lactobacillus panis C-M2 combined with dielectric barrier discharged cold plasma (DBD-CP) on acquatic foods

Abstract:In this study, a novel bacteriocin Lactocin C-M2 produced by Lactobacillus panis C-M2, combined with dielectric barrier discharged cold plasma (DBD-CP), was used to evaluate the antibacterial effect on aquatic foods. After the purification procedures of ethyl acetate extraction, cation exchange chromatography and semi-preparative liquid phase, the stability of Lactocin C-M2 under DBD-CP environment was determined, and the preservation effect of these two joint treatments was investigated on fresh white fish samples. As revealed by LC-MS/MS and BLAST analysis, Lactocin C-M2 is a new type of class II bacteriocin, with a molecular weight of 863.52 Da and the N-terminal sequence MVKKTSAV. Application of Lactocin C-M2 showed significantly stronger inhibitory effect on bacteria than on yeasts and mold. All the tested 10 Gram positive bacteria and 3 Gram-negative bacteria, including Staphylococcus aureus, Shigella flexneri, Bacillus spp, Lactobacillus spp, Escherichia coli, Pseudomonas aeruginosa, and so on, were inhibited. Lactocin C-M2 also presented stable antibacterial activity after exposure to DBD-CP, with the 95% residual activity against Staphylococcus aureus under the 40∼80 kV voltage for 30∼180 s, indicating the possibility of synergistic application. Combined with addition of 0.9 mg/g Lactocin C-M2, the treatment of DBD-CP with voltage at 60 kV for 90 s on fresh white fish (Culter alburnus) could significantly inhibit the microbial growth, the accumulation of volatile nitrogen and histamine during the storage. Therefore, the Lactocin C-M2, used together with the DBD-CP, is effective in food preservation.

Abstract:Abstract The present study was to investigate and identify the antimicrobial lactic acid bacteria against some gastrointestinal pathogens, to compare the activity between their synbiotic culture and bacteria culture alone, and to characterize the bacteriocins produced by the synbiotic culture of these isolates. Among 600 isolates of selected lactic acid bacteria, three isolates of Lactocaseibacillus paracasei subsp. paracasei, two of Latilactobacillus curvatus subsp. curvatus, and one of Lactiplantibacillus plantarum exhibited the antibacterial activities against four standard reference bacteria, and twelve clinical strains of food-poisoning bacteria especially Vibrio parahaemolyticus. The synbiotic culture of L. paracasei 9/5, L. curvatus 87/6 and L. plantarum 89/4 which are cultured with sweet corn, grand red bean, papaya, star fruit, nashi pear, and black ginger exhibited significant inhibitions to V. parahaemolyticus. Bacteriocin which was harvested from the synbiotic culture of L. curvatus 87/6 and nashi pear demonstrated the strongest activity to the tested bacteria. After partial purification, ultrafiltration, and ion exchange column chromatography, this bacteriocin was anionic with 40-80 kDa and pI at 4-5. Its antimicrobial activities significantly decreased at pH > 8.0, with trypsin and pepsin digestions as well as after heating at > 100°C. Analyzed with SDS-PAGE, the suspected bacteriocin band was detected in the increased intensity, lower intensity, and was not detected after harvested from the synbiotic culture, the bacterial culture alone, and only plant powder extract, respectively. It was concluded that the synbiotic culture of L. curvatus with some prebiotics could induce potent antimicrobial bacteriocin production. Abstract:For a long time, the abuse of antibiotics and the excessive use of synthetic preservatives have caused harm to human health. Bacteriocins produced by lactic acid bacteria (LAB) are nontoxic and exhibit potential as natural preservatives. In this experiment, the bacteriocin 1.0320 produced by Lactobacillus rhamnosus 1.0320 screened from traditional koumiss was used as the research object. The main purpose of the experiment was to purify bacteriocin 1.0320 and study its antimicrobial mechanism. Bacteriocin 1.0320 exhibited antimicrobial activity against gram-positive and gram-negative bacteria. Bacteriocin 1.0320 in cell-free fermentation supernatant (CFS) was purified by ethyl acetate extraction and anion exchange chromatography. The molecular mass of bacteriocin 1.0320 was 1-3.3 KDa as assessed by dialysis and Tricine sodium dodecyl sulphate-polyacrylamide gel electrophoresis (Tricine-SDS-PAGE). The minimum inhibitory concentration of bacteriocin 1.0320 on E. coli UB1005 was 0.072 mg/mL. Bacteriocin 1.0320 can form pores on the surface of cell membrane, increase the permeability of cell membrane, dissipate the cytoplasmic membrane potential and transmembrane pH gradient, and destroy the integrity of cell membrane, causing cell content to flow out and cell death. The effect is related to the concentration of bacteriocin 1.0320. This information provides the theoretical basis for the antimicrobial mechanism of L. rhamnosus bacteriocin.
Unraveling the antibacterial mechanism of 3-carene against Pseudomonas fragi by integrated proteomics and metabolomics analyses and its application in pork

Abstract:Pseudomonas fragi is primarily responsible for the spoilage of various foods, especially meat. The aim of this study was to investigate the antibacterial mechanism of 3-carene against P. fragi. 3-Carene treatment decreased the phospholipid content and the fluidity of the cell membrane, induced reactive oxygen species (ROS) generation and affected respiratory chain dehydrogenase, oxoglutarate dehydrogenase and citrate synthase in P. fragi. Metabolomics and proteomics analyses further showed that in the presence of 3-carene, 519 proteins, 136 metabolites in positive ion mode and 100 metabolites in negative ion mode were differentially expressed. These proteins and metabolites were primarily involved in amino acid metabolism, fatty acid degradation, the tricarboxylic acid cycle (TCA cycle) and other processes. Consequently, the stimulation of 3-carene altered cell membrane properties, disturbed important amino acid and energy metabolism, and even caused oxidative stress. Additionally, the results of total viable counts and the total volatile base nitrogen indicated that 3-carene could significantly improve the preservation of refrigerated pork. This study suggested that 3-carene has promising potential to be developed as a food preservative.
Synergistic effect of propyl gallate and antibiotics against biofilms of Serratia marcescens and Erwinia carotovora in vitro

Abstract:Serratia marcescens NJ01 and Erwinia carotovora , two pathogenic bacteria involved in vegetable spoilage, can persist in leafy vegetables and subsequently form biofilms. The aim of this study was to evaluate the effect of propyl gallate (PG) on the susceptibility of antibiotics against the biofilms of S. marcescens NJ01 and E. carotovora and uncover its anti-virulence mechanism. PG notably inhibited the production of AHLs and enhanced the susceptibility of antibiotics against the biofilm formation of S. marcescens NJ01 and E. carotovora and significantly improved the disrupted effect on the preformed biofilms of S. marcescens NJ01. PG exposure decreased the minimum inhibitory concentrations of these five antibiotics and reduced the production of virulence factors. Further investigation indicated that PG exposure resulted in the downregulation of genes involved in virulence, biofilm formation, and antioxidant enzymes of S. marcescens NJ01. The suppression of antioxidant enzymes caused the enhancement of oxidative stress, increased membrane permeability, and ultimately promoted the susceptibility of bacterial/biofilm cells to antibiotics. The tomato and lettuce infection assay indicated that PG could notably attenuate the pathogenicity of S. marcescens NJ01 and E. carotovora . These findings suggest that PG has the potential to function as an antibiotic accelerant to defend against spoilage pathogens.
Stingray Detection of Aerial Images Using Augmented Training Images Generated by a Conditional Generative Model

Abstract:In this paper, we present an object detection method that tackles the stingray detection problem based on aerial images. In this problem, the images are aerially captured on a sea-surface area by using an Unmanned Aerial Vehicle (UAV), and the stingrays swimming under (but close to) the sea surface are the target we want to detect and locate. To this end, we use a deep object detection method, faster RCNN, to train a stingray detector based on a limited training set of images. To boost the performance, we develop a new generative approach, conditional GLO, to increase the training samples of stingray, which is an extension of the Generative Latent Optimization (GLO) approach. Unlike traditional data augmentation methods that generate new data only for image classification, our proposed method that mixes foreground and background together can generate new data for an object detection task, and thus improve the training efficacy of a CNN detector. Experimental results show that satisfiable performance can be obtained by using our approach on stingray detection in aerial images.
Stability of enterocin AS-48 in fruit and vegetable juices

Abstract:Enterocin AS-48 is a candidate bacteriocin for food biopreservation. Before addressing application of AS-48 to vegetable-based foods, the interaction between AS-48 and vegetable food components and the stability of AS-48 were studied. Enterocin AS-48 had variable interactions with fruit and vegetable juices, with complete, partial, or negligible loss of activity. For some juices, loss of activity was ameliorated by increasing the bacteriocin concentration, diluting the juice, or applying a heat pretreatment. In juices obtained from cabbage, cauliflower, lettuce, green beans, celery, and avocado, AS-48 was very stable for the first 24 to 48 h of storage under refrigeration, and decay of activity was markedly influenced by storage temperature. In fresh-made fruit juices (orange, apple, grapefruit, pear, pineapple, and kiwi) and juice mixtures, AS-48 was very stable for at least 15 days at 4 degrees C, and bacteriocin activity was still detectable after 30 days of storage. Gradual and variable loss of activity occurred in juices stored at 15 and 28 degrees C; inactivation was faster at higher temperatures. In commercial fruit juices (orange, apple, peach, and pineapple) stored at 4 degrees C, the bacteriocin was completely stable for up to 120 days, and over 60% of initial activity was still present in juices stored at 15 degrees C for the same period. Commercial fruit juices stored at 28 degrees C for 120 days retained between 31.5% (apple) and 67.71% (peach) of their initial bacteriocin activity. Solutions of AS-48 in sterile distilled water were stable (120 days at 4 to 28 degrees C). Limited loss of activity was observed after mixing AS-48 with some food-grade dyes and thickening agents. Enterocin AS-48 added to lettuce juice incubated at 15 degrees C reduced viable counts of Listeria monocytogenes CECT 4032 and Bacillus cereus LWL1 to below detection limits and markedly reduced viable counts of Staphylococcus aureus CECT 976.

Abstract:For a long time, food spoilage posed a severe impairment on food safety and public health. Although chemical preservatives are commonly used to inhibit spoilage/ pathogenic microbial growth, the disadvantages of a single target, potential toxicity and high dose of use limit the better use of preservatives. In this research, the combination of natural preservatives: Natamycin (Nat), ε-polylysine (ε-PL), and Chitosan (CS) could achieve an excellent antimicrobial effect including bacteria and fungi, and reduce the usage of a single preservative. Compound preservatives could destroy microbial morphology and damage the integrity of the cell wall/membrane by leakage of protein and alkaline phosphatase (AKP). Besides, high-throughput sequencing revealed that compound preservatives could decrease microbial diversity and richness, especially, Pseudomonas , Acinetobacter , Fusarium , and Aspergillus . Therefore, the combination of 1/8 × MIC CS, 1/4 × MIC ε-PL, and 1/2 × MIC Nat can achieve an excellent antibacterial effect, providing new ideas for food preservation.

Abstract:Spoilage caused by microorganisms is the main problem of fresh-cut fruits during storage, leading to quality deterioration and short shelf life. Lactic acid bacteria (LAB) contribute to fruit preservation by producing secondary metabolites with antibacterial activity, like bactericins, organic acids, and extracellular polysaccharides, etc. In the study, the effects of Lactiplantibacillus plantarum BX62 and LP1-4 on the composition and dynamics of the microbiome on the surface of fresh-cut apples were investigated. L. plantarum survived and remained stable (>7 log CFU/mL). The cell suspensions (9 log cells/mL) of BX62, LP1-4, and BX62+LP1-4 showed varying degrees of antagonistic activity against microorganisms on the surface of fresh-cut apples during cold storage. Moreover, L. plantarum treatment inhibited the increase of bacterial diversity, and their cell suspensions also reduced the relative abundance of Actinobacteria, Acidobacteria, Basidiomycota, Rhodococcus, Pantoea, Ralstonia, Vishniacozyma, and Cystofilobasidium on the surface of fresh-cut apples. The results provide new insight into the characterization of microbial communities on the surface of fresh-cut apples after LAB treatment, which might assist in developing new biocontrol agents to control the microbial contamination of fruits.

Abstract:The Enterococcus genus, a member of the Lactic Acid Bacteria (LAB) is found in various environments, but more particularly in the intestines of humans and other animals. Although sometimes associated with pathogenicity these bacteria have many benefits. They have been found in traditional artisanal fermented products, are used as probiotic cultures and nowadays extensively studied for the production of bacteriocins--the enterocins. Many of these enterocins have been found to be active against Listeria monocytogenes, and a few have also been reported to be active even against Gram negative bacteria, an unusual property for the bacteriocins produced by LAB. These properties have resulted in many studies describing the use of enterocins as preservatives in foods of animal and vegetable origin. This review covers the most recent information on the use of enterocins as food preservatives, either produced in-situ by the addition of enterocin producing strains or as external preservatives in the form of purified or semi-purified extracts, to prevent the growth of spoilage and pathogenic microorganisms.
