Abstract:Increasing demands by consumers for fresh, nutritional, and convenient food has led to the increase of fresh-cut produce market. Nowadays, there is a turn towards the investigation of natural products (i.e., essential oils, organic acids, and edible coatings) in an effort to lower the usage of chemical synthetic compounds (i.e., chlorine) as postharvest sanitizers. The aim of the present study was to assess the effectiveness of Origanum majorana essential oil (EO), ascorbic acid (AA), chitosan, and their combinations on quality attributes of fresh-cut lettuce stored for six days at 7 °C. When applied, Chitosan+AA resulted to a less acceptable product (visual quality and aroma), while the application of marjoram EO was able to preserve the visual quality of fresh-cut lettuce and at the same time resulted in a pleasant aroma. The application of EO+AA and Chitosan+AA increased total phenolics and antioxidant levels of fresh-cut lettuce on the fourth and sixth day of storage. The EO and EO+AA increased damage index (hydrogen peroxide and lipid peroxidation) of fresh-cut lettuce, while at the same time these treatments decreased the activity of enzymes related with plant tissue browning (i.e., peroxidase activity and polyphenol oxidase). Chitosan decreased total valuable counts and yeasts and molds counts on the sixth day of storage, while EO, AA, EO+Chitosan, and Chitosan+AA decreased yeasts and molds after four days of application. The findings of the present work indicating that the combination of marjoram EO, AA, and chitosan could be considered further as alternative means for fresh-cut produce preservation.

Abstract:Using the lettuce as the experimental material, the effects of non-membrane packaging (control group) , polyvinyl chloride (PVC) packaging, polyethylene (PE) packaging and microporous film packaging on their storage quality under 4 ℃ storage conditions were studied. The changes of indicators including Vc content, chlorophyll content, weight loss rate, soluble solids content, decay index, and organoleptic evaluation in storage period of lettuce were measured. The results showed that: compared with the control group, different packaging materials have different degrees of preservation of lettuce. The microporous membrane is superior to PVC membrane and PE membrane in inhibiting the oxidation of Vc, water loss, decay, chlorophyll decomposition and loss of soluble solids. Microporous film can be considered as material for the storage of lettuce because of the characteristics of non-toxic pollution-free, strong ductility, and heat and cold tolerance.

Abstract:Modified atmosphere packaging and related technologies are increasingly used to extend shelf-life of fresh products. This paper covers the effect of such techniques on increasing shelf life. Salad-cut lettuce was washed in different solutions for a period of 1 min. Then, salad-cut lettuce was packed in modified atmosphere (3–5% CO2, 3–5% O2, 97–95% N2) and stored at 4 °C for 12 days. Quality indicators of packaged lettuce including color, texture, sensory properties, total phenol content and antioxidant activity were analyzed at 1, 3, 6, 9 and 12 days of storage. This study showed that combination of sodium hypochlorite and ascorbic acid was the best treatment to maintain most of the qualitative indicators of lettuce during storage at 4 °C (p < 0.05). Ascorbic acid and cysteine caused synergistic effect in preventing oxidation. Treatments containing calcium lactate and heat shock, caused better crispiness till the 9th day of storage. According to the results of current study, application of MAP alongside implementation of food grade chemicals showed to be remarkably effective in increasing the shelf life of lettuce.

Abstract:The purpose was to create a novel composite food preservative for fresh-cut lettuce using flavonoids and chitosan from sea buckthorn leaves (SBL). Sea buckthorn leaves were extracted with ethanol as the extraction solvent and ultrasonic-assisted extraction to obtain flavonoid from sea buckthorn leaf crude (FSL), and then the FSL was secondarily purified with AB-8 resin and polyamide resin to obtain flavonoid from sea buckthorn leaf purified (FSL-1). Different concentrations of FSL-1 and chitosan were made into a composite preservative (FCCP) by magnetic stirring and other methods, containing 1% chitosan preservative (CP) alone, 0.5–2 mg/ml of FSL-1 and 1% chitosan composite preservative (FCCP-1, FCCP-2, FCCP-3, and FCCP-4), and the FSL-1 concentrations were analyzed the effect of FSL-1 concentration on the physicochemical properties of the composite preservatives, including their film-forming ability, antioxidant capacity and ability to prevent bacterial growth, was analyzed. To further investigate the effect of the combined preservatives on fresh-cut lettuce, different FCCPs were applied to the surface was stored at 4°C for 7 days. Then the changes in weight loss, hardness, browning index, total chlorophyll content, SOD and MDA were analyzed. It was used to assess the physicochemical indicators of fresh-cut lettuce throughout storage. According to the results of Fourier transform infrared spectroscopy, FSL-1 and chitosan interacted to form hydrogen bonds, and the contact angle and viscosity of FCCP increased on both horizontal glass and polystyrene plates, indicating the good film-forming properties of the composite preservation solution. With the diameter of the antibacterial zone of Staphylococcus aureus , Escherichia coli , Salmonella typhimurium , and Listeria monocytogenes being (21.39 ± 0.22), (17.43 ± 0.24), (15.30 ± 0.12), and (14.43 ± 0.24) mm, respectively. It was proved that the antibacterial activity of FCCP became stronger with the increase of FSL-1 concentration and had the best antibacterial effect on S. aureus . The complex preservative showed the best scavenging effect on ferric reducing antioxidant capacity, DPPH radicals (96.64%) and 2,2'-Azinobis- (3-ethylbenzthiazoline-6-sulphonate) (ABTS) radicals (99.42%) when FSL-1 was added at 2 mg/ml. When fresh-cut lettuce was coated with FCCP for the same storage time, various indicators of lettuce such as weight loss, hardness, browning index, SOD activity and MDA content were better than the control group showing good potential in fresh-cut vegetables and fruits preservation. FCCP holds great promise for food safety quality and shelf-life extension as a new natural food preservative. The waste utilization of sea buckthorn leaves can greatly improve his utilization and economic benefits.

Stability of enterocin AS-48 in fruit and vegetable juices

Abstract:Enterocin AS-48 is a candidate bacteriocin for food biopreservation. Before addressing application of AS-48 to vegetable-based foods, the interaction between AS-48 and vegetable food components and the stability of AS-48 were studied. Enterocin AS-48 had variable interactions with fruit and vegetable juices, with complete, partial, or negligible loss of activity. For some juices, loss of activity was ameliorated by increasing the bacteriocin concentration, diluting the juice, or applying a heat pretreatment. In juices obtained from cabbage, cauliflower, lettuce, green beans, celery, and avocado, AS-48 was very stable for the first 24 to 48 h of storage under refrigeration, and decay of activity was markedly influenced by storage temperature. In fresh-made fruit juices (orange, apple, grapefruit, pear, pineapple, and kiwi) and juice mixtures, AS-48 was very stable for at least 15 days at 4 degrees C, and bacteriocin activity was still detectable after 30 days of storage. Gradual and variable loss of activity occurred in juices stored at 15 and 28 degrees C; inactivation was faster at higher temperatures. In commercial fruit juices (orange, apple, peach, and pineapple) stored at 4 degrees C, the bacteriocin was completely stable for up to 120 days, and over 60% of initial activity was still present in juices stored at 15 degrees C for the same period. Commercial fruit juices stored at 28 degrees C for 120 days retained between 31.5% (apple) and 67.71% (peach) of their initial bacteriocin activity. Solutions of AS-48 in sterile distilled water were stable (120 days at 4 to 28 degrees C). Limited loss of activity was observed after mixing AS-48 with some food-grade dyes and thickening agents. Enterocin AS-48 added to lettuce juice incubated at 15 degrees C reduced viable counts of Listeria monocytogenes CECT 4032 and Bacillus cereus LWL1 to below detection limits and markedly reduced viable counts of Staphylococcus aureus CECT 976.

Abstract:Lettuce, a leafy vegetable used in cuisines worldwide, is a highly perishable product sensitive to postharvest losses caused by biotic and abiotic factors. The existing technologies and approaches used during plant cultivation, harvest, processing, transportation, and storage can limit the postharvest issues, but further improvements are needed to meet a growing demand for excellent product appearance, combined with superb quality, biosafety, and low economic and environmental cost. This review summarizes our current understanding of lettuce postharvest physiology and genetics with focus on enzymatic discoloration of wounded surfaces and rapid tissue deterioration. Discussed are existing and emerging integrated technologies and approaches that can facilitate achieving outstanding postharvest quality of lettuce products.

Influence of process operations on shelf-life and microbial population of fresh-cut vegetables

Abstract:Cut lettuce salads and shredded carrots were prepared according to four different procedures in order to determine the influence of various operations on the shelf-life of these ‘minimally processed’ foods. In particular, the level of active chlorine used or its residue after washing as well as the processing time were considered. The results emphasize the role of free chlorine in reduction of the contamination level and its effectiveness toward Pseudomonadaceae and Enterobacteriaceae. Moreover a 12-h delay without refrigeration, after pre-washing or removal of ends, caused a lengthening of the processing time, enough to allow microbial proliferation and subsequent shortening of shelf-life. Shelf-life extension and the improvement of safety and quality of these products can be obtained by means of adequate processing operations.

Effect of chitosan coating, carbon dots and ultrasound treatment on microorganisms and physicochemical quality of fresh-cut lettuce

Abstract:The effect of chitosan (CH) coating, carbon dots (CDs) and ultrasound (US) treatment on microorganisms and the physicochemical quality of fresh-cut (FC) lettuce was investigated. FC lettuces were treated by US and dipped into CD/CH coating, then packed and stored for 15 d at 4 °C. Results presented that CD/CH coating exhibited a superior effect on the depressing growth of aerobic plate count, mould and yeast, the decrease of respiratory rate, the inhibition of peroxidase and polyphenol oxidase activities, the maintenance of ascorbic acid and chlorophyll contents, the reduction of mass loss, the restriction of water distribution in US-treated FC lettuce. This exhibited that CD/CH coating effectively kept the microbial and physicochemical quality of FC lettuce.

Abstract:Fresh-cut red oak leaf lettuce was produced by six different processing lines in order to assess the effect of water jet cutting (nozzle diameter 0.1 mm, pressure 2,500 bar) versus blade cutting as well as washing with cold and warm water (4 and 45 °C, 120 s) prior to and after shredding, respectively. Throughout refrigerated storage (4 °C, 12 days), O2 and CO2 levels in the modified atmosphere of the consumer-sized sample bags were monitored, and fresh-cut products and process water were subjected to microbiological analysis. As further quality parameters, phenylalanine ammonia lyase (PAL) activity as well as levels of chlorophyll a and b, β-carotene and cyanidin 3-O-(6”-O-malonyl)-glucoside were determined by HPLC with diode array detection (HPLC-DAD) and HPLC coupled with diode array detection and tandem mass spectrometry (HPLC-DAD-MSn) throughout storage. Additionally, visual appearance and cut edge browning were assessed by sensorial evaluation and stereo microscopy on storage day 8. Microbiological quality throughout commercial shelf life was best retained by warm water washing of shredded lettuce. Furthermore, moderate heat treatment significantly reduced PAL activity and cut edge browning without affecting pigment contents and vitality of the lettuce tissue. Additionally, warm water treatment significantly lowered the microbial load in the process water. Throughout storage, water jet cutting did not affect the microbial, physiological and sensorial fresh-cut lettuce quality compared to blade cutting using a newly sharpened blade, thus indicating a similar degree of wounding due to the cutting techniques applied. The application of a pre-washing step prior to shredding was found to be suitable to reduce the risk of cross-contamination in subsequent process steps.

Abstract:Chitosan and organic acids are natural preservatives with proven antimicrobial efficacies. This study investigated the effects of chitosan coating combined with organic acids on inhibiting Listeria monocytogenes in ready-to-eat (RTE) shrimps during storage at 4°C. Cooked shrimps inoculated with L. monocytogenes were coated with 0.5 and 1 % chitosan solutions in combination with 2 % organic acids (acetic, citric, lactic, and malic acids) for 5 min and then stored at 4°C for 16 days. Bacterial counts, pH, and sensory properties were analyzed every 4 days. The results indicated that the antimicrobial effects of chitosan were significantly enhanced (P < 0.05) when it was combined with 2 % acetic, citric, lactic, or malic acid. Chitosan at 1 % combined with 2 % acetic acid was the most effective treatment, which caused a 5.38-log CFU/g bacterial reduction after 16 days in comparison with the controls. Transmission electron microscopy further confirmed the enhanced antimicrobial effects of the combination of chitosan and organic acids. Such combined treatments also maintained the sensory properties of RTE shrimps. The use of chitosan coating combined with organic acids significantly lowered (P < 0.05) the pH values of RTE shrimps compared with the use of chitosan alone. Therefore, we conclude that chitosan coating combined with acetic acid could be a promising antimicrobial method to prevent the proliferation of L. monocytogenes in RTE shrimps with extended shelf life.

Abstract:This study aimed to enhance the durability of selected green leafy vegetables, including Lettuce and Palak, by manipulating influential factors such as storage conditions (Ambient (35±5°C) and Refrigerated (5±5°C)), packing substrate (Low-density polyethylene and High-density polyethylene covers), and gas composition using modified atmosphere packaging. Factorial completely randomized design (FCRD) was employed, incorporating a total of 12 treatments for each crop. The evaluation primarily relied on calculating physiological weight loss. Lettuce showed optimal results with treatment T5 (0.38%) exhibiting superior performance, followed by T6 (0.45%) and T3 (0.58%) under ambient conditions. Similarly, for palak, T5 (0.18%) outperformed T3 (0.19%) and T2 (0.37%). Thus, it is advisable to adopt T5 (R1G3M1) as the preferred treatment with T3 (R1G2M1) as a viable alternative for ambient storage conditions. Refrigerated lettuce performed optimally with T11 (0.54%) leading, followed by T7 (0.56%) and T9 (0.69%). Similarly, palak exhibited superior results with T9 (0.61%) in the fore, succeeded by T11 (0.77%) and T7 (0.97%). Notably, produce stored under ambient conditions had a relatively short shelf life of approximately 5 days, while refrigeration extended it to 15 days, after which a decline in quality was observed across all treatments. Therefore, refrigerated produce has an extended shelf life, with T9 (R2G2M1) followed by T7 (R2G1M1) yielding highly favorable outcomes.

Abstract:SUMMARY: The endogenous respiratory rate of non-photosynthetic Euglena gracilis var. bacillaris is remarkably constant under varied conditions of growth and incubation. After 60–90 min. of slightly more rapid respiration, the endogenous oxygen uptake averages about 6.5 μl. O2/million cells/ hr., and this rate can be maintained for at least 26 hr. The respiratory quotient of the endogenous metabolism is 1.0. Fluoroacetate inhibits endogenous oxygen consumption about 70%. A variety of evidence suggests that the polysaccharide paramylum is the major endogenous substrate. Tracer experiments indicate that the endogenous metabolism continues during the oxidation of exogenous substrates, but that the assimilated substrate mixes with, and dilutes the endogenous reserves. The time-course of this dilution process indicates that the most recently assimilated reserves are the first to be oxidized.

Abstract:The present work focused on the effects of the Modified Atmosphere Packaging (MAP) 1 (5% O 2 and 10% CO 2) or 2 (2% O 2 and 5% CO 2) and the previous addition of Lactoperoxidase System (LPS) and Oregano essential oil or chlorine washing on the quality of fresh-cut lettuce during refrigerated storage at +4˚C. Our results showed the significant effect of this combined treatment on quality improvement during storage. Thus, mesophilic bacteria was reduced in treated samples compared to those untreated with number which not exceeded the critical of 5 × 10 7 UFC∙g -1 (p < 0.05). In addition, the elevated O 2 and CO 2 levels created by both atmosphere were not significantly different between the two treatments (p > 0.05). Brightness of lettuce samples was significantly reduced during storage. Thereafter, the PCA data showed the effect of combined treatment on the preservation of hygienic, physico-chemical and sensory quality up to the 7 th day of refrigerated storage of these treated samples. The results obtained draw attention to modified atmosphere packaging lettuce and the addition of bio-preservatives which could be an alternative of choice to replace chlorine to preserve the sanitary quality of green products.
Prevention of microbes-induced spoilage in sodium chloride-free cucumber fermentations employing preservatives

Abstract:This study evaluated preservatives to stabilize sodium chloride (NaCl)-free-cucumber fermentations. The brining of air-purged laboratory cucumber fermentations with 100.0 mM calcium chloride (CaCl2 ) and 25.0 mM acetic acid resulted in immediate rises in pH, the chemical reduction of the medium, and malodors. Supplementation with 3.0 mM sodium benzoate or 3.0 mM potassium sorbate enabled a decline in pH, a continuous oxidative state of the medium, and delayed rising pH spoilage. However, lactic and acetic acids eventually disappeared in fermentations supplemented with preservatives. The amount of preservatives needed to suppress growth of brined-cucumber-spoilage microbes was determined in Fermented Cucumber Juice Medium (FCJM). Supplementation of FCJM with 10.0 mM sodium benzoate was inhibitory for the spoilage yeasts, Issatchenkia occidentalis and Pichia manshurica, and the lactobacilli, Lentilactobacillus buchneri and Lentilactobacillus parafarraginis, but not of Zygosaccharomyces globiformis. Potassium sorbate inhibited the spoilage yeasts at 15.0 mM in FCJM but not the lactobacilli. Supplementation of FCJM with 20.0 mM fumaric acid had a bactericidal effect on the spoilage-associated lactobacilli. As expected, NaCl-free-commercial cucumber fermentations brined with 100 mM CaCl2 , no acetic acid, and 6 mM potassium sorbate resulted in complete fermentations, but supported rising pH, microbially induced spoilage during long-term storage. Post-fermentation supplementation with 12 mM sodium benzoate, 10 mM fumaric acid, a combination of the two, or 10 mM fumaric acid and 2 mM AITC prevented microbial activity during long-term bulk storage. PRACTICAL APPLICATION: Several preservative-based strategies for stabilizing NaCl-free cucumber fermentation in a commercial production setting were developed, enabling the implementation of a processing technology that reduces wastewater volumes and environmental impact.

Abstract:In this study, the shelf life of fresh-cut iceberg lettuce (Lactuca sativa L.) was evaluated. Lettuce samples were washed with disinfectant agents and sodium hypochlorite and then soaked in an ascorbic acid solution. Next, samples were stored in packaging films containing three levels (1% and 3% and 0% as a control film) of nano-bentonite particles (NBPs) as a filler in a modified atmosphere for 12 days at 4 °C. Various physicochemical parameters such as color, texture, pH, titratable acidity, dehydration, moisture, dry matter, chlorophyll content, microbial quality, and sensory properties were investigated. Results indicated that nano-packaging had a significant ability to maintain the sensory physicochemical properties of lettuce at the fifth (1% nano-composite film) and ninth (3% nano-composite film) days of storage when compared to the control films. The greatest growths of molds and yeasts were observed in the control films, which demonstrates the effectiveness of the application of bentonite nanoparticle fillers.

Abstract:Fresh-cut fruits and vegetables (F&V) play a pivotal role in modern diets due to their convenience and nutritional value. However, their perishable nature renders them susceptible to rapid spoilage, causing quality deterioration, safety risks, and economic losses along the supply chain. Traditional preservation methods, while effective to some extent, often fall short in maintaining the quality and safety of fresh-cut F&V. This comprehensive review examines the utilization of slightly acidic electrolyzed water (SAEW) as a novel preservation technique for fresh-cut F&V. The review encompasses the production mechanisms, sterilization principles, classifications and application of SAEW. It explores the effects of SAEW on microbial inactivation, quality parameters, and metabolic pathways in fresh-cut F&V. Additionally, it assesses the synergistic effects of SAEW when combined with other preservation methods. SAEW demonstrates remarkable potential in extending the shelf life of fresh-cut F&V by effectively inhibiting microbial growth, suppressing browning, preserving chemical content, and influencing various metabolic processes. Moreover, its synergy with different treatments enhances its overall efficacy in maintaining fresh-cut F&V quality. The review highlights the promising role of SAEW as an innovative preservation approach for fresh-cut F&V. However, challenges regarding its widespread implementation and potential limitations require further exploration. Overall, SAEW stands as a significant contender in ensuring the safety and quality of fresh-cut F&V paving the way for future research and application in the food industry.
Control of Browning, Enzyme Activity, and Quality in Stored Fresh-cut Fruit Salads through Chitosan Coating Enriched with Bergamot Juice Powder

Abstract:In this study, fresh-cut fruit salads composed of apples, pears, kiwis, and pineapples were stored at +4 °C for 18 days under distinct conditions: non-coated (NC), chitosan-coated (CH), and bergamot juice powder extract-enriched chitosan-coated (CHBE). Storage endpoint decay percentages were as follows: NC group: 100%, CH group: 26.67-53.3%, CHBE group: 13.33-26.67%. CHBE had the highest moisture content (87.05-89.64%), soluble solids (12.40-13.26%), and chroma values (2.35-6.60). CHBE and NC groups had 2.10% and 6.61% weight loss, respectively. The NC group had the highest polyphenol oxidase activity (19.48 U mL-1) and browning index (0.70 A420/g); CH group: 0.85 U mL-1, 0.35 A420/g; CHBE group: 0.57 U mL-1, 0.27 A420/g. CHBE showed a titratable acidity of 1.33% and pH 3.73 post-storage, impeding microbial proliferation with the lowest counts (2.30-3.24 log CFU g-1). The microbial suitability of the NC group diminished after day 6, with an overall preference score of 1.00. Conversely, the CH and CHBE groups scored 3.15 and 4.56, highlighting the coatings' effectiveness. Bergamot juice powder extract further enhanced this, mitigating browning and enhancing quality. Results reveal tailored coatings' potential to extend shelf life, improve quality, and enhance fruit salads' acceptability. This study underscores the importance of edible coatings in addressing preservation challenges, emphasizing their role in enhancing food quality and consumer acceptability. Incorporating edible coatings is pivotal in mitigating deterioration issues and ensuring the overall success of fresh-cut fruit products in the market.
