Abstract:The current study aims to perform microencapsulation of R. tuberosa L. extracts using chitosan crosslinked to sodium tripolyphosphate (NaTPP) as wall materials by spray drying and to analyze their in vitro biological activities. The influence of manufacturing conditions, like pH, chitosan concentration, and stirrer time, was assessed. Results showed that microcapsules prepared in pH 4 with a concentration of 0.1% (w/v) chitosan, and 90 min stirring time had 51.80% encapsulation efficiency and high in vitro biological activity. These were shown by high in vitro alpha amylase inhibition and antioxidant activity with IC50 values of 50.65 μg/mL and 123.97 μg/mL, respectively. Releases of the bioactive compounds in microcapsules of R. tuberosa L. were carried out on phosphate buffer medium pH 2.2 and pH 7.4 with times release of 30, 60, 90, and 120 min. The bioactive compounds were released in pH 2.2 in 120 min at 2.48%. At pH 7.4, the active ingredients were more easily released, by 79.90% in 120 min. The microcapsules' morphology showed a rough surface with spherical forms and the average sizes were 53.41 μm. This study supports the essential role of microencapsulation in improving plant extracts with reserved biological activities.
Influence of Technological Factors on the Quality of Chitosan Microcapsules with Boswellia serata L. Essential Oil

Abstract:Essential oils contain many volatile compounds that are not stable and lose their pharmacological effect when exposed to the environment. The aim of this study is to protect Boswellia serrata L. essential oil from environmental factors by encapsulation and determine the influence of chitosan concentration and types (2%, 4%; medium and high molecular weights), essential oil concentration, different emulsifiers (Tween and Span), and technological factors (stirring time, launch height, drip rate) on the physical parameters, morphology, texture, and other parameters of the generated gels, emulsions, and microcapsules. For the first time, Boswellia serrata L. essential oil microcapsules with chitosan were prepared by coacervation. Hardness, consistency, stickiness, viscosity, and pH of chitosan gels were tested. Freshly obtained microcapsules were examined for moisture, hardness, resistance to compression, size, and morphology. Results show that different molecular weights and concentrations of chitosan affected gel hardness, consistency, stickiness, viscosity, mobility, and adhesion. An increase in chitosan concentration from 2% to 4% significantly changed the appearance of the microcapsules. It was found that spherical microcapsules were formed when using MMW and HMW 80/1000 chitosan. Chitosan molecular weight, concentration, essential oil concentration, and stirring time all had an impact on the hardness of the microcapsules and their resistance to compression.

Abstract:The orange peel extract (OE) is an additive material that has been used widely as a natural antioxidant source and bioactive compounds in Pharmaceutical and food sector. The poor stability and degradation of this extract were considered problems in the industry. New technologies have been introduced recently to prevent this degradation as encapsulation. In this work, chitosan (CS) and Prunus avium gum (PG) were proposed as promising based materials for encapsulation OE via ionic gelation method. The effect of different ratios of CS: PG and CS: OE on encapsulation efficiency (EE %) and the capsules size were investigated. The EE% of CS-PG was ranged from 60.63 to 87.06 % with a size range of 40 to 95nm according to Atomic Force Microscope (AFM) images. The formulation with the highest EE% was chosen to be characterized by FTIR, scanning electron microscope (SEM), and in vitro release study. The FTIR spectra confirm the cross-linking between the NH3+ group in CS and the negative functional group (-COO-) in PG. According to SEM micrographs, the capsules showed a spongy porous structure. The in vitro release study indicated that the release of OE from CS-PG matrix in the acidic and neutral medium was 55.15 and 52.67% respectively after incubation for 240 minutes. This study found that CS-PG can be used as an effective wall matrix for encapsulating OE and delivering it into the gastrointestinal system.
Chitosan-Coated Nanoliposomes: Exploring the Impact on Physicochemical Properties, Stability, Antioxidant Activity, and Molecular Characterization of Chlorella-Peptide Fractions

Abstract:The aim of this study was to characterize and evaluate the antioxidant activity of Chlorella peptide fractions coated with chitosan-modified nanoliposomes. Additionally, the release process of these peptide fractions under simulated gastric and intestinal conditions was evaluated. Protein hydrolysates were obtained from Chlorella through enzymatic hydrolysis, resulting in increased concentrations of antioxidant and hydrophobic amino acids. Peptide fractions were selected and separated based on their molecular weights, and it was observed that the fractions with lower molecular weights (less than 10 kDa, PF-10) contained higher amounts of hydrophobic and antioxidant amino acids. Among the fractions, PF-10 exhibited the highest radical inhibition activity for DPPH and ABTS, as well as enhanced reducing power and chelating activity towards copper ions. PF-10 and PF-30 (peptide fractions with a molecular weight less than 30 kDa) also demonstrated higher inhibition of nitric oxide radicals and total antioxidant activity (TAA) compared to the hydrolyzed form and other fractions. The analysis of physicochemical properties identified PF-10 as the most favorable treatment due to its size, polydispersity index (PDI), zeta potential, and encapsulation efficiency (EE). Coating the nanoliposomes with chitosan resulted in an increase in particle size and PDI but significantly improved the preservation of EE during storage. Chitosan coating also enhanced the activity of DPPH and OH radical scavenging. Fourier-transform infrared spectroscopy (FTIR) confirmed the localization of peptides within the polar regions and the bilayer membrane of nanoliposomes, while scanning electron microscopy (SEM) revealed agglomerated and spherical structures. Overall, our findings highlight the effectiveness of nanoliposomes as carriers for delivering peptide fractions with high antioxidant activity. The formulation of chitosan-coated nanoliposomes as carriers for Chlorella-peptide fractions represents an innovative advancement, providing opportunities for the creation of functional and stable formulations. These formulations hold the potential to provide benefits regarding human health and environmental considerations.

Abstract:Proanthocyanidins are important compounds known for their antioxidant and radical scavenging properties, but they are highly sensitive to light, heat, oxygen, and pH. In our study, proanthocyanidin was encapsulated using sodium alginate and carboxymethyl cellulose to enhance controlled release, pH stability, metal ion tolerance, temperature resistance, time release, the microencapsulation of food additives stability, antioxidant capacity analysis, and the storage period tolerance of proanthocyanidin. Fourier transforms infrared (FTIR) analysis and full-wavelength UV scanning indicated the successful immobilization of proanthocyanidins into the polymeric microcapsules. The flowability and mechanical properties of the microcapsules were enhanced. Moreover, proanthocyanidin microcapsules exhibited higher thermal, pH, metal ion, time, and microencapsulation food additive stability. In addition, due to their high antioxidant properties, the proanthocyanidin microcapsules retained a greater amount of proanthocyanidin content during the gastric phase, and the proanthocyanidin was subsequently released in the intestinal phase for absorption. Thus, the study provided a systematic understanding of the antioxidant capabilities and stability of proanthocyanidin microcapsules, which is beneficial for developing preservation methods for food additives.
Chitosan Nanoparticles as a Promising Nanomaterial for Encapsulation of Pomegranate (Punica granatum L.) Peel Extract as a Natural Source of Antioxidants

Abstract:The encapsulation of pomegranate peel extract (PPE) in chitosan nanoparticles (CSNPs) is an advantageous strategy to protect sensitive constituents of the extract. This study was aimed to develop PPE-loaded CSNPs and characterize their physical, structural morphology, antioxidant and antimicrobial properties. Spherical NPs were successfully synthesized with a mean diameter of 174–898 nm, a zeta potential (ZP) of +3 – +36 mV, an encapsulation efficiency (EE) of 26–70%, and a loading capacity (LC) of 14–21% depending on their loaded extract concentrations. Based on these results, CSNPs with chitosan:PPE ratio of 1:0.50 (w/w) exhibited good physical stability (ZP = 27 mV), the highest loading (LC = 20%) and desirable encapsulation efficiency (EE = 51%), and thus, selected as optimally loaded NPs. The FTIR analysis of PPE-CSNPs demonstrated no spectral changes indicating no possible chemical interaction between the PPE and CSNPs, which confirms that the PPE was physically entrapped within NPs. Moreover, FTIR spectra of pure PPE showed specific absorption bands (at 3293–3450 cm−1) attributed to the incidence of phenolic compounds, such as tannic acid, ellagic acid and gallic acid. Total phenolic content (TPC) and antioxidant analysis of selected CSNPs revealed that the encapsulated NPs had significantly lower TPC and antioxidant activity than those of pure PPE, indicating that CSNPs successfully preserved PPE from rapid release during the measurements. Antibacterial tests indicated that pure PPE and PPE-loaded CSNPs effectively retarded the growth of Gram-positive S. aureus with a minimum inhibitory concentration (MIC) of 0.27 and 1.1 mg/mL, respectively. Whereas Gram-negative E. coli, due to its protective cell membrane, was not retarded by pure PPE and PPE-CSNPs at the MIC values tested in this study. Gas chromatography-mass spectroscopy analysis confirmed the incidence of various phytochemicals, including phenolic compounds, fatty acids, and furfurals, with possible antioxidant or antimicrobial properties. Overall, CSNPs can be regarded as suitable nanomaterials for the protection and controlled delivery of natural antioxidants/antimicrobials, such as PPE in food packaging applications.

Abstract:The stability and bioavailability of green tea polyphenols, crucial for their health benefits, are compromised by environmental sensitivity, limiting their use in functional foods and supplements. This study introduces a novel water-in-oil-in-water double emulsion technique with microwave-assisted extraction, significantly enhancing the stability and bioavailability of these compounds. The primary objective of this study was to assess the effectiveness of several encapsulating agents, such as gum Arabic as control and native and modified starches, in improving encapsulated substances' stability and release control. Native and modified starches were chosen for their outstanding film-forming properties, improving encapsulation efficiency and protecting bioactive compounds from oxidative degradation. The combination of maltodextrin and tapioca starch improved phenolic content retention, giving 46.25 ± 2.63 mg/g in tapioca starch microcapsules (GTTA) and 41.73 ± 3.24 mg/g in gum arabic microcapsules (GTGA). Besides the control, modified starches also had the most potent antioxidant activity, with a 45 % inhibition (inh%) in the DPPH analysis. Oat oil was utilized for its superior viscosity and nutritional profile, boosting emulsion stability and providing the integrity of the encapsulated polyphenols, as indicated by the microcapsules' narrow span index (1.30 ± 0.002). The microcapsules' thermal behavior and structural integrity were confirmed using advanced methods such as Differential Scanning Calorimetry (DSC) and Fourier-Transform Infrared Spectroscopy (FT-IR). This study highlights the critical role of choosing appropriate wall materials and extraction techniques. It sets a new standard for microencapsulation applications in the food industry, paving the way for future innovations.

Abstract:The present experiments were undertaken to investigate the mechanism of spasmolytic action of 4-methylumbelliferone (4-MU). It has been reported that the spasmolytic actions of trihydroxybenzene derivatives and trihydroxypropiophenone (THPP) in the biliary system are partially due to the inhibition of catechol-O-methyltrasferase (COMT) activity. On the other hand, resorcinol, a dihydroxybenzene isomer is used as a synthetic material for 4-MU. Utilizing epinephrine as a substrate and S-adenosylmethionine as a methyl donor, the effects of pyrogallol and 4-MU on rat liver COMT activity were determined. Pyrogallol showed inhibition of enzyme activity depending on the concentration added, however, 4-MU was ineffective at any concentration. Contractile responses of the isolated rabbit aorta to transmural electrical stimulation and exogenously applied epinephrine were potentiated by pretreatment with pyrogallol, but were rather inhibited at high concentrations of 4-MU. The phasic and tonic contractions in the isolated rabbit sphincter of Oddi induced by KCl in normal nutrient solution were little affected by either THPP or 4-MU in low concentrations, but were inhibited, in high concentrations. On the other hand, these contractions were inhibited by papaverine in any concentration, but not so by atropine. The contractile responses of the isolated rabbit sphincter of Oddi to CaCl2 and BaCl2 in Ca++ free medium were significantly inhibited by THPP, papaverine and 4-MU, but not so by atropine. The transmural electrical stimulation applied to the sphincter of Oddid caused contractions of the two components, the initial one during stimulation and the other following stimulation. These two components were inhibited by papaverine and 4-MU, depending on the concentration added, but were only slightly inhibited by THPP in high concentrations. It was observed, however, that atropine usually converted the initial component to a relaxation. The late component was unaffected by atropine. The mechanism of spasmolytic action of 4-MU has been discussed herein.
Lemongrass Oil Containing Chitosan Microcapsules by Ionotropic Gelation

Abstract:Ionotropic gelation using sodium tripolyphosphate (STPP) as the crosslinker was successfully used to formulate lemongrass oil containing chitosan microcapsules. Formation of oil in aqueous chitosan polymer solution was followed by crosslinking with STPP. Optimum formulation for the synthesis of microcapsules was found varying the amounts of lemongrass oil (1-3 g), chitosan solution (1-2%) and STPP (0.5-1.0 g). Microcapsules were characterized by Fourier transform infrared spectroscopy, scanning electron microscopy and stage microscope. Encapsulation efficiency, oil content, oil load and release rates were determined by UV-visible spectroscopy. The SEM images indicated that the oil loaded capsules are spherical in shape and possess a smooth surface and their size varied between 100-1000 nm. FTIR spectra confirmed successful encapsulation of lemongrass oil within chitosan. At polymer: 1 g, oil: 3 g and crosslinker: 0.5 g gave microcapsules with higher stability and steady controlled release.
Stabilization of Black Locust Flower Extract via Encapsulation Using Alginate and Alginate–Chitosan Microparticles

Abstract:Black locust flower extract contains various polyphenols and their glucosides contribute to the potential health benefits. After intake of these bioactive compounds and passage through the gastrointestinal tract, their degradation can occur and lead to a loss of biological activity. To overcome this problem, the bioactive compounds should be protected from environmental conditions. This study aimed to encapsulate the black flower extract in the microparticles based on biodegradable polysaccharides, alginate, and chitosan. In the extract, the total antioxidant content was found to be 3.18 ± 0.01 g gallic acid equivalent per 100 g of dry weight. Also, the presence of lipids (16), phenolics (27), organic acids (4), L-aspartic acid derivative, questinol, gibberellic acid, sterol, and saponins (2) was confirmed using the UHPLC–ESI–MS analysis. In vitro assays showed that the extract has weak anti-α-glucosidase activity and moderate antioxidant and cytotoxic activity against the HeLa cell line. The extrusion method with secondary air flow enabled the preparation of microparticles (about 270 μm) encapsulated with extract. An encapsulation efficiency of over 92% was achieved in the alginate and alginate–chitosan microparticles. The swelling study confirmed a lower permeability of alginate–chitosan microparticles compared with alginate microparticles. For both types of microparticles, the release profile of antioxidants in the simulated gastrointestinal fluids at 37 °C followed the Korsmeyer–Peppas model. A lower diffusion coefficient than 0.5 indicated the simple Fick diffusion of antioxidants. The alginate–chitosan microparticles enabled a more sustained release of antioxidants from extract compared to the alginate microparticles. The obtained results indicated an improvement in the antioxidant activity of bioactive compounds from the extract and their protection from degradation in the simulated gastric conditions via encapsulation in the polymer matrixes. Alginate–chitosan showed slightly slower cumulative antioxidant release from microparticles and better antioxidant activity of the extract compared to the alginate system. According to these results, alginate–chitosan microparticles are more suitable for further application in the encapsulation of black locust flower extract. Also, the proposed polymer matrix as a drug delivery system is safe for human use due to its biodegradability and non-toxicity.

Abstract:Polymer encapsulation is commonly adopted in drug delivery systems to form encapsulation that can assist in delivering active compounds to the targeted area. Acalypha indica (AI) crude extract was obtained from AI plants through ultrasound-assisted extraction. It is naturally unstable in the external environment and, thus, needs to be encapsulated to protect against volatility. Herein, this study emphasized the development of the encapsulations of AI extracts using a chitosan-polycaprolactone (PCL) blend by emulsion-solvent evaporation and freeze-dried methods. Four parameters for Al encapsulation were studied by fixing one parameter at a time. The percentage of encapsulation efficiency (EE%) was recorded as a response for each parameter. The study proceeded with central composite design (CCD) as the response surface methodology (RSM) optimization tool to study the interactions between the factors. Central points were taken from the preliminary data obtained in one-parameter experiments. The validation was carried out with two data of the highest and lowest EE% suggested by CCD. The highest EE% recorded was 98.70%, and the lowest EE% was 87.80%. The results showed a difference between predicted and experimental values at a percentage lower than 7.5%. Fourier Transform Infrared Spectroscopy (FTIR), scanning electron microscopy (SEM), particle size analyzer, and zeta potential were used to analyze the properties of selected microencapsulated samples. Overall, the encapsulation of AI extracts was successful and has the potential to be used in drug delivery.
Encapsulation of propolis extracted with methylal in the chitosan nanoparticles and its antibacterial and cell cytotoxicity studies

Abstract:In this study we develop novel type of antibacterial chitosan-propolis NPs to improve theantimicrobial activity against various pathogens. To this aim, we primarily extracted propolis with methylal and ethanol as green solvents and its encapsulation with chitosan NPs. The developed propolis loaded chitosan NPs indicated antimicrobial and anti-biofilm properties against various gram positive and negative. FTIR revealed the successful encapsulation of the propolis extract with Ethanol (PE) and Methylal (PM) into the chitosan nano career matrix. HPLC and GC-MASS also confirmed the presence of flavonoids and phenols compounds of propolis extracted with both solvents. In addition, we confirmed the total phenolic and flavonoid compounds in propolis by calorimetric method of Folin-Ciocalteu and aluminum trichloride complex formation assays, respectively. PE-CH and PM-CH were optimized regarding physicochemical properties such as particle size, zeta potential, and poly dispersity index (PDI) index. DLS and SEM micrographs confirmed a spherical morphology in a range of 360-420 nm with Z potential values of 30-48 mV and PDI of 0.105-0.166 for PE-CH and PM-CH, respectively. The encapsulation efficiency was evaluated using colorimetric analysis, with median values ranging from 90 to 92%. The MIC values within the range of 2 to 230 µg/ml and MBC values between 3 to 346 μg/ml against both gram-positive and negative bacteria. While both PE and PM showed a significant reduction in the number of E. coli, S. aureus, and S. epidermidis, the use of PE-CH and PM-CH led to a statistically significant and greater reduction in number of E. coli, S. aureus, and S. epidermidis strains on the biofilm, pre-formed biofilm and planktonic phases. Besides, the DPPH assay showed significant antioxidant activity for these NPs within the range of 36 to 92%. MTT assay for MHFB-1, HFF, L929, MDF, and MCF-7 cells exhibited statistically significant differences in each other that show the IC50 between 60-160 µg/ml for normal cells and 20 for cancer cells. Finally the present study indicated that both PM and PM-CH greater than PE and PE-CH in which contain high flavonoid and phenolic contents with a high antioxidation potential antioxidant properties, which could be beneficial for cell proliferation and antibiotic and anticancer applications.

Abstract:Maqui berries contain a high percentage of anthocyanins with high antioxidant and anti-inflammatory capacity but that are unstable in the colonic site. Nanocarriers based on polysaccharides and/or proteins can protect against the degradation of anthocyanins. The aim of this study was the nanoencapsulation of maqui extract (ME) in chitosan–tripolyphosphate (CTPP-ME), chenopodin (CH-ME), and chenopodin–alginate (CHA-ME). A standardised ME was prepared and then encapsulated in the nanosystems. The physicochemical properties, encapsulation parameters, and the interactions of ME with the nanovehicles were characterised. The cyanidin-3-glucoside released and ORAC activity in phosphate buffer at pH 7.4 were evaluated. The content of ME was 8–9 mg of cyanidin-3-glucoside/g of extract. CTPP with ME at 3% obtained the highest encapsulation efficiency (EE = 91%), and no significant differences were observed in size (274–362 nm), PDI (0.5–0.7), and zeta potential (+34–+41 mV) when the concentration of ME changed from 1% to 5%. CH-ME was shown to be smaller (152 nm) than CTPP-ME, and CH-ME and CHA-ME showed lower EE (79% and 54%, respectively) than CTPP-ME. FT-IR revealed a stronger interaction of ME with CTPP-ME than with CH-ME. Both systems showed a significantly lower release than free ME, and the T50 value of CTPP-ME 3% (328 min) was higher than CH-ME (197 min). Both protected the ORAC activity of ME.

Abstract:Crotalaria longirostrata (chipilin) leaves contain phenolic compounds with antioxidant activity. These phenolic compounds, however, could easily degrade after extraction. Microencapsulation is a possible solution for avoiding this degradation. Frequently, microencapsulation is carried out using conventional encapsulating agents. The aim of this work was to evaluate the effect of several non-conventional encapsulating agents on microencapsulation by spray drying of phenolic compounds from chipilin, stability and release of phenolic compounds were also studied. Maltodextrin (MD), gum Arabic (GA), soy protein (SP), cocoa shell pectin (CSP), and protein (PC), as well as the gum (GC) of Cajanus cajan seeds were used. Different blends of these matrixes containing phenolic compounds from chipilin leaves were spray dried at 120 °C. After drying, the yield and microencapsulation efficiency were determined. All results were analyzed by an ANOVA test (p < 0.05). The release kinetics of phenolic compounds were modeled using zero, first-order, Higuchi and Korsmeyer-Peppas models. The R2 was calculated for each model. The blends of encapsulating agents allowed the formation of an efficient polymer matrix with yields between 46 and 64% and microencapsulation efficiency between 65 and 92%. Results show that maltodextrin with soy protein allowed the highest (92%) microencapsulation efficiency, although maltodextrin and cocoa shell pectin were more effective protective agents, showing greater stability. The Korsmeyer-Peppas model was the best in predicting the phenolic compounds release with R2 values higher than 98%. The stability time for microcapsules with MD–CSP was 8.88 years and 1.43 years at 4 °C and 30 °C, respectively.

The total mass of fruit rind in a watermelon reaches around 30 percent and this fruit rind can increase the quantity of organic waste in Indonesia. The outer portion of the watermelon rind has a green layer containing a large amount of anthocyanin and a white layer containing flavonoids. In this study, the extract of watermelon rind containing anthocyanins and flavonoids was protected from damaging conditions using the ionic gelation encapsulation method. Chitosan (CN) was used as a natural polymer in this encapsulation method and sodium tripolyphosphate (TPP) was used as an ionic crosslinking agent. The total of flavonols content (TF), microstructure test, in vitro releasing test, and shelf life of microcapsules were observed in the various ratio between watermelon rind and the solvent. From the process, can be concluded that higher watermelon skin levels will produce the most flavonoid microcapsules (70g/35 mL). At 70g/35 mL or 2:1 g/mL watermelon skin levels give the best flavonoid release test results, especially if it will be applied to the pharmaceutical industry, which follows a controlled release method.

Abstract:Citrus reticulata 'Chachiensis' is a citrus cultivar in the Rutaceae family, and its peel is commonly utilized as a raw material for Guangchenpi. This study used flavonoid extract from the peel of immature Citrus reticulata 'Chachiensis' (CCE) as the raw material to investigate the encapsulation ability of different wall materials (plant-based proteins, including soybean protein isolation (SPI), pea protein (PP), and zein; carbohydrates, including maltodextrin (MD), Momordica charantia polysaccharide (MCP), and gum acacia (GA); and composite wall materials of both types) on CCE. The wall material with the highest encapsulation rate was selected for the preparation of CCE microcapsules. Furthermore, the physicochemical characteristics, antioxidant capacity, bioavailability, and storage stability of the CCE microcapsules were explored. The results indicated that among all wall materials, the composite wall material PPMD had the highest encapsulation rate, which was 84.44 ± 0.34%. After encapsulation, the microcapsules tended to have a yellow color and exhibited characteristics such as system stability, low moisture content, and low hygroscopicity. In vitro antioxidant assays revealed that the encapsulation of CCE significantly increased the scavenging rates of DPPH and ABTS free radicals. In vitro gastrointestinal digestion experiments indicated that the release rate of PPMD-CCE in intestinal fluid was significantly greater than that of free CCE, ultimately reaching 85.89 ± 1.53%. Storage experiments demonstrated that after 45 days under various temperature and light conditions, the retention rate of CCE in the microcapsules was significantly greater than that of free CCE. The above findings provide new possibilities for the application of PP and plant proteins and lay a foundation for the future industrial application of CCE.

Abstract:Encapsulating antioxidant-rich plant extracts, such as those found in red clover, within microcapsules helps protect them from degradation, thus improving stability, shelf life, and effectiveness. This study aimed to develop a microencapsulation delivery system using chitosan and alginate for microcapsules that dissolve in both the stomach and intestines, with the use of natural and synthetic emulsifiers. The microcapsules were formed using the extrusion method and employing alginate or chitosan as shell-forming material. In this study, all selected emulsifiers formed Pickering (β-CD) and traditional (white mustard extract, polysorbate 80) stable emulsions. Alginate-based emulsions resulted in microemulsions, while chitosan-based emulsions formed macroemulsions, distinguishable by oil droplet size. Although chitosan formulations with higher red clover extract (C1) concentrations showed potential, they exhibited slightly reduced firmness compared to other formulations (C2). Additionally, both alginate and chitosan formulations containing β-CD released bioactive compounds more effectively. The combined use of alginate and chitosan microcapsules in a single pill offers an innovative way to ensure dual solubility in both stomach and intestinal environments, increasing versatility for biomedical and pharmaceutical applications.
