Abstract:The evolution of tissue microstructure and its association with the quality attributes of frozen-thawed tuna meat during salting were investigated. With the extension of salting, the myofibers shrank initially under osmotic pressure and then swelled with the disappearance of intracellular voids. The intracellular microstructural recovery, myofiber swelling, and debilitated connective tissue were closely associated with the high water-holding capacity and distinctive textural properties. However, extended salting time caused more protein loss and denaturation and enlarged extracellular spaces significantly (p < 0.05). These changes resulted in reduced water-holding capacity and cohesiveness. The improved water-holding capacity, textural properties, and appealing appearance of lightly salted fish products are closely associated with the physicochemical and microstructural modifications under optimal salting conditions.

Abstract:The characteristics of ice crystals, tissue recoverability, protein properties, and lipid oxidation were investigated to reveal the effects of salting time (0-8 h) on the frozen storage stability of tuna meat. After 2 w of frozen storage, the ice crystals in tuna meat with different salting time varied in morphological properties, evolving from large columns (0 h) to ellipsoid (0.5-3 h) and plate shape (5-8 h). The ice crystals in tuna meat with salting time of 1-3 h were more stable with the extension of frozen storage. The enhanced water-holding capacity, springiness, and cohesiveness were attributed to the modified morphology and stability of ice crystals and tissue recoverability after thawing with the formation of moderate protein-protein interactions under proper salting conditions. The declined oxidative stability of salted tuna meat was likely associated with the loss of redox balance with the extension of salting as indicated by aggravated oxidation of lipid and myoglobin and discol-oration. Salting time must be taken into account for the frozen storage stability of salted aquatic products, which could modify the microstructure of both frozen and thawed meat, protein properties, redox status of tissue, and thus quality attributes.

Abstract:The effects of salting and subsequent freezing on the physicochemical and histological properties of frozen thawed tuna meat were investigated. Salting facilitated the microstructural recovery as indicated by the decrease or disappearance of intracellular holes. The yield of the 0.5 M and 1 M salted samples increased by 20% which was evaluated by the mass ratio of products to raw material. Morphological transformation from ice columns to spherical or ellipsoidal ice crystals was tentatively attributed to the extraction/solubilization of myofibrillar proteins, contributing to increased water-holding capacity. However, increased thawing loss and centrifuging loss after thawing were observed in the 2 M and 3 M salted samples with large ice crystals and enlarged extracellular spaces. These modifications were closely associated with the changes in protein properties. In conclusion, enhanced water-holding capacity, high yield, and good freezing stability can be achieved by optimal salting.

Abstract:SUMMARYEffects of frozen storage temperature on the quality and oxidative stability of lightly salted tuna were investigated. The bright and vivid colour became totally brown after 4 weeks at −20 °C and 8 weeks at −30 °C, where the a*/b* value decreased from 1.35 to 0.38 and 0.58, respectively. Discoloration and lipid oxidation occurred concurrently in lightly salted tuna flesh, and it was speculated that the oxidation of oxymyoglobin to metmyoglobin exacerbated lipid oxidation and vice versa. Storage at −40 °C or lower temperatures effectively suppressed the discoloration and maintained the high water‐holding capacity and unique textural properties of lightly salted flesh. It was attributed to the reduction in the conformational changes and particularly hydrophobic interactions among proteins, protecting the myoglobin from oxidative damages during frozen storage. Considering the quality maintenance and energy savings, storage at −40 °C was appropriate for lightly salted tuna flesh.

Abstract:This study assessed the combined effect of slightly acidic electrolyzed water (SAEW) and slightly acidic electrolyzed water ice (SAEW-ice) on the quality of pomfrets over a period of 18 d of cold storage at 4 degrees C. A presoak for 5 min in SAEW solution (22 mg/L) was used before the pomfrets were placed on SAEW-ice (pH: 6.45; ORP: 803 mV; ACC: 18 mg/L); The changes in physicochemical properties (i.e., pH, thiobarbituric acid, total volatile basic nitrogen and texture profile), microbial loads and sensory characteristics were all analyzed. Compared with the tap water (TW) group, the total bacterial counts of the SAEW group significantly decreased by 1.27 log(10) CFU/g after immersion (p<0.05). The shelf life of the pomfrets was prolonged by 9 d by the combined treatment of SAEW and SAEW-ice during storage at 4 degrees C. On the 18th day, the gumminess and chewiness values of the pomfrets in the SAEW+SAEW-ice group were 195 g and 3.97 mJ, respectively, which were significantly higher than those of the other groups (p<0.05). The results suggested that SAEW+SAEW-ice treatments have great potential as a novel method to maintain the quality and extend the shelf life of pomfrets during refrigerated storage.

Abstract:Abstract The demand for products to replace high-cost raw materials, such oil and fish meal, in the manufacture of feed for use in aquaculture, while also guaranteeing the nutritional quality of the diets, is increasing. Silage produced with fish and vegetables residues is a low-cost and efficient protein source. The objective of the present study was to evaluate the physiological and biochemical responses of tambaqui fingerlings fed four different levels of silage included in commercial feed with 28% crude protein, over two periods: 45 and 90 days. Each treatment was carried out over three replications, with 10 tambaqui in each 100 L experimental tank. At the end of each established period, blood samples were collected from five animals from each repetition to determine the hematological and biochemical variables. Body weight and total length, hepatosomatic and liposomal indices and hematocrit of specimens fed with diets supplemented with silage did not exhibit significant changes in both assessment period. After 45 days of feeding, the hemoglobin concentration increased when tambaqui were fed a diet including 20% silage. The red blood cell count, mean corpuscular volume and mean corpuscular hemoglobin did not change between treatments in either period. The total protein concentrations increased significantly in the plasma of tambaqui fed with diets with the inclusion of 5 and 10% of silage, evaluated after feeding for 45 days. It was found that the groups which had silage included in their diet did not exhibit significant alterations in the evaluated parameters, and the diet was therefore not consider harmful to the health of tambaqui. Therefore, the use of silage as a feed supplement during tambaqui farming is a sustainable alternative for producers, as it leads to a reduction of impacts of fish and vegetables waste disposal.

Abstract:Fish is one of the most highly perishable food product and its quality aspects are of significance to retailers and consumers. The purpose of this study was to investigate the change in quality of hake (Merluccius capensis) fish preserved at -14°C over a period of seven weeks in other to evaluate fish spoilage indicators. The fish quality parameters assessed were pH, trimethylamine nitrogen (TMA-N) and total volatile bases nitrogen (TVB-N). The data revealed that there was an increase in pH from 7.4 to 7.7 during the storage period. The concentration of TVB-N in the hake samples increased from 7.21 to 23.35 (± 0.036) mg-N/100g while that of TMA-N increased from (range: mean ± std) 3.18 - 3.34: 3.25 ± 0.068 to 13.90 – 15.01: 14.29± 0.493 mg-N/100 g within the seven weeks of preservation, with percent increase of 69.13% (TVB-N) and 77.26% (TMA-N) of the initial amount. The overall data exhibited a steady and consistent increase in the amount of TVB-N, TMA-N and pH in the flesh of hake fish preserved at the temperature and duration of the study. This steady increase in these chemical parameters is a significant potent warning to consumers to resist lengthy storage of fresh fish and its products before consumption. One-way analysis of variance was adopted to assess the validity of the parallel increase of TVB-N, TMA-N, pH with storage duration at low temperature and the analysis revealed no significant differences between increase in the three chemical parameters and storage time. In other words increase in TVB-N, TMA-N, pH content is directly proportional to the increase in storage time. This study have provided useful data to benefit South African retailers on storage and maintenance of TVB-N and TMA-N limits of acceptance in the consumption quality of hake to be sold to consumers and also for consumers on storage duration of hake in their refrigerators before consumption.
A Sustainable Diet for Tambaqui Farming in the Amazon: Growth Performance, Hematological Parameters, Whole-Body Composition and Fillet Color

Abstract:The aim of this study was to produce feed based on locally sourced ingredients for tambaqui farming in Amazon. Diets were formulated with increasing levels (0, 25, 50, 75 and 100%) of defatted black soldier fly larvae meal (BSFL) as a replacement for fish meal (FM), and cassava by-products in the same proportion (tuber residues, peel and leaves). A conventional diet (CO) was used as the control. Juvenile tambaqui (24.61 ± 1.14 g) were housed in 24 tanks in a recirculation aquaculture system. Neither diet rejection nor mortality were observed. Fish fed cassava by-products showed similar feed conversion rates (FCR 1.76); however, these values were worse than those observed in fish fed the CO (FCR 1.33). No differences were observed in the whole-body composition of the fish. The fillets of fish fed cassava by-products had a yellow color due the carotenoids present in the leaves. Dietary BSFL and cassava by-products can contribute to the sustainability of Amazonian aquaculture. Further studies with a lower proportion of cassava leaves in the diet formulation are recommended so as to ensure enhanced diet digestibility and less impact on the color of the fillets.

Abstract:To prolong the shelf life of large yellow croaker(Pseudosciaenacrocea),water solution of Antioxidants of Bamboo Leaves(AOB)with concentrations of 0.1% and 0.2% were applied to soak the fish samples before refrigeration at(4±1)℃,meanwhile 0.2% of Tea Polyphenols(TP)and saline were used as positive control and blank control,respectively. During the refrigeration process,the thiobarbituric acid(TBA)value,pH,texture,the volatile basic nitrogen(TVB-N)value and the K value were determined to evaluate the effect of AOB as a biological preservative. The results showed that AOB and TP both could effectively extend the shelf life of refrigerated large yellow croaker,and AOB showed even better effect than TP under the same concentration. The best performance of AOB was observed at the concentration of 0.1%,indicating the potential of AOB applied as biological preservative of aquatic.

Abstract:Effect of base trehalose solution on quality of prepared weever during repeated freeze-thaw cycles has been studied. L* (lightness), b* (yellowness), expressible moisture and total volatile base nitrogen (TVBN) of weever sample dipped in base trehalose solution reduced comparing with the control (without treatment), while pH, a* (redness), shear force, moisture content of treated samples increased (p .05) with the increased freeze-thaw cycle. As the number of freeze-thaw cycles increased, the peak temperatures (Peak 1 T-max and Peak 2 T-max) of all samples were less than that of fresh weever. The treated samples showed larger average cell area and smaller cell space than the control (p .05). Base trehalose solution could effectively improve the water retention of fish product and restrain the degradation of protein, which might constitute an available operation in industrial fish processing. Practical applications The objective of this study was to investigate the effect of base trehalose solution on quality of prepared weever during the repeated freeze-thaw cycles. The results indicated that base trehalose solution could effectively improve the water retention of fish product and retain the degradation of protein, which might be an available operation in industrial fish processing. Therefore, this work could lead the processing of prepared aquatic products industrially and provide theoretical fundament for the development of new cryoprotectants of protein-based food.
Effect of brine concentration on the quality of salted large yellow croaker during processing and refrigeration

Abstract:This study aimed to evaluate the effect of brine concentrations (4%, 8%, 12%, 16%) on the quality of salted large yellow croakers. During the wet salting processing, increased salinity inhibited myogenic fibers swelling and extracellular space expansion, and resulted in lower water content and higher salt content of salted large yellow croaker products. During refrigeration of salted large yellow croakers at 4 °C for 24 days, SDS-PAGE patterns showed that high salinity slowed down the degradation of proteins, which was further confirmed by changes in free amino acids (FAAs) and biogenic amine contents. The increases in K value, total volatile basic nitrogen (TVB-N) content, total viable counts (TVC) and the deterioration in sensory were delayed by increasing salinity. Notably, high salinity enhanced malondialdehyde (MDA) accumulation. The results suggested that high salinity inhibited tissue structure destruction, microbial growth, protein degradation and freshness reduction, but accelerated lipid oxidation of salted large yellow croakers. Physicochemical and Microbiological Changes Associated with Processing in Dry-Cured Tuna

Abstract:Dry-cured tuna is a traditional product manufactured in the Mediterranean region of Spain, known as mojama. The traditional salting-drying elaboration process attributes new organoleptic characteristics to the final product, changing its flavor, color, and nutritional value. This study aimed to evaluate the changes in physicochemical, biochemical, and microbiological parameters taking place during the process. The physicochemical parameters were affected by the processing steps (salting, salt-washing, and drying), except for total acidity and pH. The water activity value and relative moisture percentage decreased to 0.86 and 33.03%, respectively. Moreover, the addition of salt and the drying step increased the water-holding capacity. The lipid oxidation values increased from raw tuna loins to the final product (1.37 vs. 5.56 mg malondialdehyde/kg). Moreover, the total volatile basic nitrogen values increased in the final product, fundamentally due to the concentration effect caused by the water loss, although may also be due to the degradation of proteins during processing. The microbiological analysis showed that the values obtained in the dry-cured tuna were below the limits established by the reference regulation for dry-cured fish products.

Abstract:This study investigated the impact of lyophilized Euterpe oleracea (LEO) in the diet of tambaqui (Colossoma macropomum) on antioxidant capacity following transport stress. Six diets with varying LEO concentrations (0.00, 0.63, 1.25, 2.50, 5.00, and 10.0%) were administered. After a 30-day feeding period, the fish from each diet were subjected to simulated transport for 3, 6, 12, and 24 h. No mortality was observed during the posttransport simulation. Dietary LEO appeared to conserve dissolved oxygen in water. The inclusion of 1.25% and 10.0% LEO enhanced the hepatic total antioxidant capacity by 42% and 53%, respectively, compared to the control during transport for up to 12 h. Additionally, 5.00%–10.0% LEO mitigated lipid peroxidation in the brain, gills, and liver of tambaqui for up to 12 h, remaining effective in the gills for 24 h. Consequently, considering its potential to alleviate oxidative stress, the incorporation of 5.00% to 10.0% LEO into the diet is a promising strategy for enhancing the resilience of fish during transport lasting up to 12 h.

Abstract:Fish are important sources of protein and micronutrients for combating malnutrition. Since fish are highly perishable, methods for processing and preserving them should be the main focus to increase their shelf life and maintain their quality. The present study assessed the effectiveness of the superheated steam dryer (SSD) in processing sardines, and examined the effects of packaging and storage conditions on their microbiological quality. Sardines collected from the Mafia Island were dried in SSD, air-packed and stored at room temperature (AR), air-packed and stored at chilling temperature (AC), vacuum-packed and stored at room temperature (VR), and vacuum-packed and stored at chilling temperature (VC) for 49 days. Following drying, the total viable bacterial counts (TVBC) and total yeast and mould counts (TYMC) both decreased from the initial values of 9.14 (TVBC) and 2 (TYMC) log CFU/g in the fresh samples to 0.00 log CFU/g. The AR samples had the highest microbial growths during storage (7.48 (TVBC) and 2.82 (TYMC) log CFU/g), whereas the VC samples had the lowest (1.79 (TVBC) and 1.42 (TYMC) log CFU/g). The AR treatment was rejected within 21 days, whereas the AC, VR, and VC treatments prolonged the sardines’ shelf life throughout the storage time. Abstract:This study evaluated the digestibility of whole mango (Mangifera indica) meal (WMM) and determined the growth performance, intestinal enzyme activity, and metabolic and hematologic responses of tambaqui (Colossoma macropomum) juveniles fed diets containing different proportions of corn meal (CM) substitution by WMM. Fish fed with graded levels of WMM (0 (control), 80, 160, 240, and 320 g kg diet-1), replacing part of the dietary CM. The apparent digestibility coefficients of WMM were above 96%. Diets with WMM did not affect growth performance or intestinal enzyme activity. However, they showed a positive linear effect on plasma glucose, amino acids, and albumin levels and a negative linear effect on hepatic aspartate aminotransferase activity and hepatic glycogen, plasma cholesterol, and hemoglobin levels. Increased erythrocyte values and decreased plasma triglyceride levels were verified in fish fed 80 and 160 g WMM kg diet-1. In conclusion, the WMM may be a viable alternative to the tambaqui juveniles' diet, and WMM could replace up to 16% of CM without harming the growth and health of tambaqui juveniles.

Abstract:In order to clarify the individual role of freezing and frozen storage on the quality of fish, fillets of large-mouth bass (Micropterus salmoides) were subjected to different freezing rates (freezing with -18 °C (A), -60 °C (B), and -60 °C with forced air circulation at 2 m/s (C), respectively) followed by frozen storage at -18 °C for 30 and 90 days. Another two groups were frozen at -60 °C, followed by storage at -40 °C (D) and -60 °C (E), respectively. Results showed that water-holding and TVBN were mainly affected by storage time. No significant changes were found in free thiol content among treatments. A greater freezing rate and lower storage temperature generally led to lower TBARS. GC × GC-TOFMS revealed a total of 66 volatile compounds, which were related to lipid oxidation. PLS-DA showed that fresh samples were separated from the frozen-thawed ones, and fillets in groups D and E were relatively close to fresh fillets in the composition of oxidation-related volatiles. In conclusion, freezing rate and storage temperature had a significant impact on lipid oxidation and protein denaturation in the fillets of large-mouth bass, while protein oxidation was more affected by freezing rate.

Abstract:Mango fruits are a rich source of nutrients, however, due to their perishability and seasonality, minimal processing and drying offer the potential ensure a shelf stable and safe product. The use of sodium metabisulphite (SMB) as pre-treatment in the dried fruit industry has been widely adopted, but sulphite residue remains a health public concern. Therefore, this study investigated the effects of alkaline and acidic electrolyzed water (AIEW and AEW, mg/mL) as alternative pre-treatments to SMB (1% w/w) for 'Tommy Atkins' mango slices prior to hot air drying at 60 °C. Fresh-cut and untreated samples were used as a control. During the drying process the weight of the slices were monitored every 60 min for 10 h, which was used to calculate moisture ratio (MR), drying rate (DR), and the experimental data of the samples were subjected to eight thin layer models. Colour parameters (L*, a*, and b*) were measured, and use to determine colour intensity (C*), hue angle (h°), and total colour difference (TCD) before and after drying. Based on measured weight, continuous decline in MR was recorded for all dried mango slices over the drying time irrespective on treatment. Out of the eight applied thin layer models Henderson & Pabis and Logarithmic were the best appropriate models describing and predicting the drying behavior of 'Tommy Atkins' mangoes (R2 = 0.94, RMSE ≥ 0.0006). Samples treated with AEW treated samples had lowest L*, h°, and TCD values (p < 0.05). No significant different were found in h° values amongst all pre-treated and dried samples (p > 0.05), but these samples were significantly different from dried untreated (control) and fresh samples (p < 0.05). Pre-treatments maintained the visual quality of dried 'Tommy Atkins' mango slices; SMB > AIEW > AEW > untreated (control). This study provided science-based evidence for the application of acidic and alkaline electrolyzed water as an alternative pre-treatment to sodium metabisulphite for the drying of 'Tommy Atkins' mango.

Abstract:Postharvest processing and preservation of fish have great influence on fish quality and consumption. Freshwater fish in Sudan are facing problems related to bad handling and improper storage which reduce their quality. This study investigated the changes in the chemical composition, mineral contents, pH and acid value during storage (−18°C) of five commercial fish species (Bagras bayad, Lates niloticus L., Mormyrus casahive L., Oreochromis nilotica L., and Synodrontis schall) from the River Nile coast of Sudan. The fish species are rich in protein (17.22%–23.60%) but have low fat and ash contents. Frozen storage of the fishes for 45 days reduces their protein contents while the fat and ash contents were increased (p ≤ .05). Potassium and iron are the predominant major and trace minerals and their values were increased with storage period. The pH range from 5.74 (O. niloticus) to 6.24 (B. bayad) while acid value range from 0.02 (M. casahive) to 0.12 (L. niloticus). Both pH and acid values increased with storage period. In conclusion, storage of these fish species for up to 45 days did not adversely affect their nutritional value.

Abstract:n the Intergovernmental Panel on Climate Change (IPCC) Third Assessment Report, Working Groups (WGs) I and II reviewed the state of knowledge regarding certain low-probability–high-consequence changes in climate (Houghton et al. 2001; McCarthy et al. 2001). Figure 2 in the WG II Summary for Policy Makers (SPM) identifies " risks from future large-scale discontinuities " as one of five " reasons for concern " arising from projected future climate change. The SPM states Projected climate changes during the twenty-first century have the potential to lead to future large-scale and possibly irreversible changes in Earth systems resulting in impacts at continental and global scales. These possibilities are very climate scenario– dependent and a full range of plausible scenarios has not yet been evaluated. Examples include significant slowing of the ocean circulation that transports warm water to the North Atlantic [and] large reductions in the Greenland and West Antarctic Ice Sheets.. .. The likelihood of. .. these changes in Earth systems is not well-known, but is probably low; however, their likelihood is expected to increase with the rate, magnitude, and duration of climate change.. .. In the 4 years that have elapsed since the review of scientific literature that led to these summary state-Examination of systemic characteristics can improve assessments of the global climate system's vulnerability to abrupt change and growing instabilities already suggest an urgency for precautionary action. We have the wrong model of what's going on in the world of climate. It's not global warming we should be concerned about, but the likelihood that the long period of relative climatic stability—a 10,000-year period in which all of human civilization happened to develop—may be ending. Its replacement will be a period of profound cooling. The leading indicator of such an event—the freshening of the waters of the North Atlantic—is already happening. Perhaps as soon as 10 years from now, Europe might look a lot like Canada, and the climate of California could begin to resemble North Africa.
