Abstract:The purpose of this study was to explore the film-forming properties of cinnamon essential oil (CEO) and chitosan (CS) and the effect of their composite coating on postharvest apple diseases. The results demonstrated that the composite coating exhibits favorable film-forming properties at CEO concentrations below 4% (v/v). The effectiveness of the composite coating in disease control can be attributed to two factors: the direct inhibitory activity of CEO against pathogens in vitro and the induced resistance triggered by CS on the fruits. Importantly, the incorporation of CEO did not interfere with the induction of resistance by CS in harvested apples. However, it is noteworthy that the inhibitory effect of the CS–CEO composite coating on apple diseases diminished over time. Therefore, a key aspect of enhancing the preservation ability of fruits is improving the controlled release properties of CEO within CS coatings. This will enable a sustained and prolonged antimicrobial effect, thereby bolstering the fruit preservation capabilities of the composite coatings.

Abstract:The present research investigates the effectiveness of nano-emulsified coatings (C-1, C-2, and C-3) in preserving the kiwifruit at a temperature of 10‚ÄØ¬±‚ÄØ2‚ÄØ¬∞C with 90‚Äì95‚ÄØ% relative humidity (RH) for 30‚ÄØdays. The nano-emulsions were prepared from varied carboxymethyl cellulose (CMC) concentrations with different combinations of essential oils such as thyme, clove, and cardamom. Dynamic light scattering investigation with Zeta Sizer revealed that C-1, C-2, and C-3 nano-emulsions have nano sizes of 81.3‚ÄØ¬±‚ÄØ2.3, 115.3‚ÄØ¬±‚ÄØ4.2, and 63.2‚ÄØ¬±‚ÄØ3.2‚ÄØnm, respectively. The scanning electron microscopy images showed that the nanoemulsion of C-1 had homogenous spherical globules, C-2 had voids, and C-3 showed a non-porous structure with uniform dispersion. The X-ray diffraction analysis indicated that C-1, C-2, and C-3 nano-emulsion exhibited distinct crystallinity and peaks. The nano-emulsion C-1 had reduced crystallinity, while C-2 had lower intensity peaks, and C-3 had increased crystallinity. The results documented that compared to control kiwifruit samples, the samples coated with C-3 nano-emulsion have decreased weight loss, decay incidence, soluble solids, maturity index activity, ethylene production, total bacterial count, and increased titratable acid, and firmness attributes. The results of current research are promising and would be applicable in utilization in industrial applications.

Characterization of cinnamon essential oil and its application in Malva sylvestris seed mucilage edible coating to the enhancement of the microbiological, physicochemical and sensory properties of lamb meat during storage

Abstract:Aims: Firstly, Cinnamomum zeylani essential oil (CZEO) was isolated and characterized. Secondly, CZEO was used in Malva sylvestris mucilage (MSM) coating and its antioxidant and antimicrobial effects on lamb meat slices were evaluated in 10 days at 4°C. Methods and results: The main chemical compounds and functional groups of the CZEO were identified and quantified by a gas chromatograph coupled to a mass spectrometer and by an Fourier transform infrared spectrometer respectively. The total phenol and flavonoid contents of CZEO were determined by the Folin-Ciocalteu reagent-based and aluminium chloride methods respectively. Various microbiological, physicochemical analyses and sensory evaluations were also utilized regarding the coated lamb meat slices. CZEO contains benzyl benzoate (40.93%), caryophyllene oxide (26.07%) and (E)-cinnamaldehyde (13.01%), with strong radical scavenging activity and antibacterial effect against investigated pathogenic microorganisms. The CZEO-loaded MSM edible coating greatly postponed the growth of microorganisms and extended the product life (>10 days). The pH value, moisture content and hardness of the samples were also preserved more efficiently when high concentrations of the essential oil were incorporated into the edible coating (p < 0.05). The CZEO-rich MSM coating was also able to possess considerable activity against lipid oxidation in lamb meat samples, and significantly decreased the production of primary and secondary oxidation products (p < 0.05). Moreover, sensory parameters of the samples were preserved more efficiently during cold storage when the CZEO-enriched edible coating, particularly MSM + 2% CZEO was used. Conclusions: The use of edible coating based on MSM and CZEO is therefore effective in reducing microbial growth and chemical reactions in lamb meat during the storage period. Significance and impact of the study: The importance of the results of this study is in order to increase the use of natural preservatives, maintain food safety and of course the health of the people in the community.

Abstract:In this study, the spraying quality of four different coating methods (dip coating, brush coating, spray coating and electrostatic spraying) and their effect on the preservation of mango coating were investigated. SEM, AFM and fluorescence microscopy images visually showed the smoothest and flattest surface of the film formed by the DC method. The water-sensitive paper experiment verified that the ES method could spray finer droplets than the SC method. Furthermore, the ES method had the highest transfer efficiency and produced the thinnest films. For mango coating preservation, the ES and DC groups maintained similar hardness, BI, MDA and TPC preservation indices with no significant (p < 0.05) differences. The ES method could save coating solution and drying time, reducing production costs. It could also achieve continuous and automated coating operations, saving manpower and material resources,making it a viable and more economical method for mango coating preservation.

Abstract:This work probes the effects of clove essential oil (EO) (2.5% v/v) and ultrasonic treatments on the physicochemical, rheological, and microbial properties of three starches-based (corn starch, mango kernel, and litchi starch) edible coatings/films. A total of 9 starch-based formulations were prepared to investigate their effects on the shelf life of Khasi mandarins at ambient circumstances (23±3 °C) during storage for 9 days. The results showed that the addition of clove EO and application of ultrasonication significantly influenced the functional and antimicrobial properties of edible coatings and films. The lowest particle size with higher zeta potential activity was observed in edible coating of litchi kernel functionalized with clove EO and ultrasonication treatment (273.9 nm, −41.4 mV) followed by edible coatings made with mango kernel seed starch and corn starch. In addition, the application of different starch-based edible coatings with clove EO and ultrasonication were potential to retain the shelf life of Khasi mandarins. The lowest physiological loss (5.94%) and higher firmness (510.554 N) were found in fruits at significant levels treated with T7 and T9 coatings at day 9. The control fruits were dried and not acceptable on 9 days of storage. The application of T7 treatment was most significant (p < 0.05) in terms of retaining higher TPC (17.86 mg/g), TFC (496.35 mg/g), antioxidant activity (20.41%), lower respiration rate (15.90 CO 2 mg kg −1 h −1 ), and total soluble solids, followed by T8 and T9 treatment.

Abstract:Proper pretreatment of herbal material containing essential oils (EOs) could enhance its volatile components release through either removing physical barriers or conquering chemical bonds and thereby improve hydrodistillation yield. In this regard, a trial pretreatment including pulverization, enzymolysis, short time microwave irradiation and acidolysis of Cuminum cyminum seeds was integrated into the essential oil (EO) preparation to elevate the EO yield. On the basis of Plackett-Burman design analysis, three parameters (acidolysis duration, HCl concentration of acidolysis and sieving mesh) were significant for the EO preparation. Box-Behnken design based optimization of the remaining factors concluded that the optimal pretreatment was pulverizing the seeds to 40 mesh and implementing 45 min acidolysis in 2.5 M L-1 HCl wherein the predicted EO yield of 3.78% was close to that of the experimental value 3.86%. This pretreatment produced an EO yield increase of 50.78% over the control sample of raw seeds (2.56%). In total 53 components were identified in the acidolysis-pretreated cumin EO (AEO) whilst 47 components were identified in the control cumin EO (CEO). In both AEO and CEO, cuminaldehyde was the predominant common component, but the AEO contained more phenols (0.51% vs. 0.18%) and alcohols (7.76% vs. 0.18%) than the CEO did. The compositional features gave the AEO mightier antioxidant potency and stronger antifungal efficacy against four postharvest fungi, viz. Alternaria alternata, Penicillium expansum, Trichothecium roseum and Fusarium sulphureum, as compared with the situations of CEO. In conclusion, the pretreatment elevates the hydrodistillation yield, modifies the EO chemical profiles and confers stronger antioxidant and antifungal activities upon cumin EO.
Novel Approach for Improving Papaya Fruit Storage with Carnauba Wax Nanoemulsion in Combination with Syzigium aromaticum and Mentha spicata Essential Oils

Abstract:Application of hydrophobic coatings, such as carnauba wax nanoemulsions, combined with natural antimicrobials, has been demonstrated to be an effective solution in extending the shelf life of fruits. The present study evaluated the effectiveness of carnauba wax nanoemulsion (CWN) coatings containing free or encapsulated with β-cyclodextrin (β-CD) essential oils of Syzigium aromaticum (CEO) and Mentha spicata (MEO) for the post-harvest conservation of papaya fruit. The chemical composition of the essential oils (EOs) was analyzed using GC-MS. Subsequently, coatings incorporating free and encapsulated EOs were prepared and applied to papaya fruit. Fruit was evaluated for post-harvest quality parameters during 15 days of storage. Clove essential oil presented as main compounds eugenol (89.73%), spearmint and carvone (68.88%), and limonene (20.34%). The observed reduction in weight loss in coated fruit can be attributed to the formation of a physical barrier provided by the coating. Compared to the control group, which experienced the highest weight loss of 24.85%, fruit coated with CWN and CWN-MEO:β-CD exhibited significantly lower weight loss percentages of only 5.78% and 7.5%, respectively. Compared to the control group, which exhibited a release of ethylene at a rate of 1.3 μg kg−1 h−1, fruit coated with CWN, CWN-MEO:β-CD, and CWN-MEO coatings demonstrated a lower ethylene release rate at 0.7 μg kg−1 h−1. Although the physical-chemical properties of papayas, including pH, Brix, titratable acidity, color, and texture, remained largely unchanged during storage with the coatings, analysis of incidence and severity of papaya post-harvest deterioration revealed that coatings containing essential oils effectively acted as antifungals in the fruit. Microscopy images showed that CWN and CWN-MEO:β-CD coatings are more uniform compared to the others. The edible coatings, especially CWN and CWN-MEO: β-CD, can act as antimicrobial coatings on papaya fruit, increasing their conservation during post-harvest storage.

Abstract:The target of this study was to examine the influence of ultrasound pretreatment and edible coatings (xanthan, guar, and wild sage seed gums) on the total phenols content, antioxidant potential, mass transfer rate, effective moisture diffusivity (Deff), and rehydration rate of sweet cherries (SC). For the edible coating of SC, a 0.2% gum solution (xanthan, guar, and wild sage seed) was prepared and the SC were dipped into the aqueous solution. Also, the ultrasound process (40 kHz and 150 W) was performed in an ultrasonic bath for 3 min. The gums coating increased the total phenols content, antioxidant properties, and drying time and decreased the Deff values. The highest value of DPPH (2,2-Diphenyl-1-picrylhydrazyl) radical scavenging activity (61.04 ± 2.09%) was observed on coated SC by guar gum. The mean drying times for uncoated, xanthan gum-coated, guar gum-coated, and wild sage seed gum-coated SC were 130, 160, 175, and 140 min, respectively. In this study, the SC Deff as determined by the second Fick law varied from 1.39 × 10-9 m2/s to 2.46 × 10-9 m2/s. The Midilli model gave the best results for describing single-layer drying of SC. The mean rehydration ratio for uncoated, xanthan gum-coated, guar gum-coated, and wild sage seed gum-coated SC were 141.81, 167.26, 176.21, and 156.87 %, respectively. Considering the total phenols content, antioxidant activity, and rehydration ratio, edible coating and ultrasonic pretreatment will be more promising for SC pretreatment before drying and other processes.
An Easy-to-clean Nanofiber Coating Containing Zanthoxylum Bungeanum Essential Oil/β-Cyclodextrin Inclusion Complex for the Preservation of Mangoes

Abstract:This work aimed to investigat the properties of an antioxidant nanofiber coating incorporating zanthoxylum bungeanum essential oil and its function in the preservation of mangoes. Results showed that with the increase of zanthoxylum bungeanum essential oil-β-cyclodextrin inclusion complex (ZBEO-β-CD-IC) content in the nanofiber coating, the porosity, water vapor permeability, and oxygen permeability of the coating decreased, but the antioxidant activities increased. During storage, the increase of ZBEO-β-CD-IC content in the coating decreased weight loss and the respiration rate, and delayed the softening of tissue and yellowing of peel color. On the twelfth day, as the ZBEO-β-CD-IC content in the coating increased, the contents of flavonoids, total phenols, and ascorbic acid in mangoes increased from 2.36 × 10−2 to 2.87 × 10−2 g kg−1, 23.76 × 10−2 to 28.06 × 10−2 g kg−1, and 24.20 × 10−2 to 39.38 × 10−2 g kg−1, respectively. Hydrogen peroxide content, superoxide anion rate, and malondialdehyde content decreased from 4.62 to 2.98 mmol kg−1, 0.53 to 0.36 μmol min−1 kg−1, and 8.22 to 6.24 μmol kg−1, respectively. The activities of peroxidase, superoxide dismutase, catalase, ascorbate peroxidase were also inhibited after mangoes were coated in nanofibers containing ZBEO-β-CD-IC.

Abstract:Combining CMC‐based coatings with bioactive substances enhances their efficacy in fruit preservation. The exceptional performance of CMC‐based coatings extends the shelf life of fruit. The interaction between additives and CMC presents challenges to composite coatings. Fruits are highly susceptible to quality deterioration and spoilage during postharvest storage. Edible coating emerges as an effective strategy to prolong the postharvest life of fruit and enhance their quality during storage. Carboxymethyl cellulose (CMC) is a polysaccharide derivative widely applied in various industries due to its excellent barrier and mechanical properties. CMC has been utilized as an edible coating material for postharvest preservation of fruit for many years. Ongoing research is centred on the development of composite films by integrating CMC with natural biopolymers or potential active agents to augment their functionality in postharvest fruit preservation. This review consolidates findings on composite coatings of CMC combined with various materials for fruit storage and preservation, shedding light on the challenges associated with such composite coatings.

Abstract:Consumers' pursuit to a healthy lifestyle has promoted people to develop new technologies that can prolong the shelf life of food without the use of preservatives. Compared with other types of preservation, edible microcapsules containing essential oils (EOs) are becoming more and more popular especially the starch microcapsules containing essential oil (EOs-starch microcapsules) because of their environmentally friendly, healthier characteristics and the ability to carry active ingredients. In addition, the EOs-starch microcapsules can also reduce the flavor influence and prolong the action time of essential oil on food through its slow release effect, which can promote the use of EOs in food. Understanding the different collocation of edible starch microcapsules and EOs and the related antibacterial mechanism will be more effective and targeted to promote the application of EOs in the real food system. The review focus on the contribution of EOs-starch microcapsules to prolong the shelf life of food products, (1) binding characteristics of EOs-starch microcapsules were analyzed, (2) systematically summarizing the main materials and methods for preparing the EOs-microcapsules, (3) specifically addressing the action mechanisms of EOs-starch microcapsules on microorganism, (4) discussing the applications of EOs-starch microcapsules in specific food.

Abstract:<p>Drying is one of the oldest and most important food preservation techniques but requires promotion to maintain the quality of products. In this paper, pulsed vacuum drying (PVD) combined with carboxymethyl cellulose (CMC) coating pretreatment was employed as a new approach to improve the drying efficiency and produce dried wolfberry with acceptable quality. To achieve these goals, its influence on drying characteristics, energy consumption, drying shrinkage, color, total polysaccharide content and total polyphenol content in dried wolfberry fruit were comparatively evaluated with PVD and convective drying with hot air (CDHA). The results showed that PVD combined with CMC coating pretreatment allowed significantly higher drying efficiency, lower energy consumption, less drying shrinkage and better preservation of color, total polysaccharide content and total polyphenol content in wolfberry fruit (p ≤ 0.05). Increasing CMC concentration from 0.5% to 3.0% (w/w) resulted in an improved drying efficiency and product quality, and reduced energy consumption, the optimal CMC concentration was 2.0% (w/w). Overall, PVD combined with CMC coating pretreatment could be considered as an effective approach to improve the quality of the dried wolfberry fruit and reduce energy consumption.</p>
Edible chitosan-based Pickering emulsion coatings: Preparation, characteristics, and application in strawberry preservation

Abstract:The long-term application of plant essential oils in food preservation coatings is limited by their poor water solubility and high volatility, despite their recognized synergistic antimicrobial effects in postharvest fruit preservation. To overcome these limitations, a Pickering emulsion loaded with thyme essential oil (TEO) was developed by utilizing hydrogen bonding and electrostatic interactions to induce cross-linking of chitosan particles. This novel emulsion was subsequently applied in the postharvest storage of strawberries. The shear-thinning behavior (flow index <1) and elastic gel-like characteristics of the emulsion made it highly suitable for spray application. Regarding TEO release, the headspace concentration of TEO increased from 0.21 g/L for pure TEO to 1.86 g/L after two instances of gas release due to the stabilizing effect of the chitosan particles at the oil-water interface. Notably, no phase separation was observed during the 10-day storage of the emulsion. Consequently, the emulsion was successfully employed for the postharvest storage of strawberries, effectively preventing undesirable phenomena such as weight loss, a decrease in firmness, an increase in pH, and microbial growth. In conclusion, the developed Pickering emulsion coating exhibits significant potential for fruit preservation applications, particularly for extending the shelf life of strawberries.

Environmental factors, transportation and preservation conditions through postharvest could decrease the storage time and quality. Therefore, prolonging supply time of fruits and vegetables by safer postharvest treatments direct the preservation methods to edible coatings. Active edible coatings incorporating different types of functional substances can be used as a preservation method to boost strategies in improving quality, safety and shelf-life of fruits and vegetables upon storage.</p><h3 class="u-h4 u-margin-m-top u-margin-xs-bottom">Scope and approach</h3><p>This review attempts to present a complete overview of carboxymethyl cellulose (CMC) and pectin as a basis for edible coatings and recent developments related to their application as active coatings for preservation of fruits and vegetables quality.</p><h3 class="u-h4 u-margin-m-top u-margin-xs-bottom">Key findings and conclusion</h3><p>CMC and pectin are two main polysaccharides with great potential in making edible coatings. In this sense, CMC and pectin-based active coatings could provide a great potential both for their protective effect and carrying functional compounds such as antimicrobials, antioxidants, anti-browning agents, texture enhancers and nutraceuticals into their coating matrix to prevent unwanted reactions (e.g., microbial growth, oxidation, enzymatic browning and softening) in horticultural products. Such strategy could inhibit microbial decays and enzymatic or biochemical damages and prevent physical or textural deteriorations in fruits and vegetables during storage.</p>

Associating Chitosan and Nanoemulsion As a Delivery System of Essential Oil; the Potential on Quality Maintenance of Minimally Processed Produce

Abstract:Plant-derived essential oil (EO) has gained more and more attentions resulted from its antioxidant, antiradical, and antimicrobial properties. The ginger EO delivery system based on chitosan nano-emulsion using ultrasound (US) was constructed and the application on the quality attributes of minimally processed cantaloupe was investigated in this paper. Results demonstrated that emulsions with small particle size and excellent stability were produced under US 60% conditions. The addition of 0.5% EO in emulsions enabled the polysaccharide based coating to maintain the quality attributes during storage of minimally processed cantaloupe. The antioxidant capacity and vitamin C content in minimally processed cantaloupe were increased by more than 56%; whereas the total soluble solids and the weight loss were declined by 6.4% and 3.7%, respectively. Furthermore, the microbial development (the total bacterial count is 2 log CFU/g, and the yeast and mold count is 2 log CFU/g) were significantly inhibited after 10 days of storage. In summary, the delivery system of EO prepared with chitosan-based emulsion effectively contributed to the quality maintenance and the shelf-life extension of minimally processed cantaloupe.
Preparation and characterization of edible coating and film composed of sodium alginate/ylang-ylang oil/cellulose nanocrystals Pickering emulsion and its application to post-harvest control of mandarin (Citrus reticulata)

Abstract:Pickering emulsion, a novel technique that uses solid particles as emulsion stabilizers has attracted attention because of its long-term storage stability and good coalescence stability. This can help to prolong the shelf life of fresh produce. The poor water vapor barrier, ultraviolet (UV), mechanical, and antifungal capacities of alginate film limit its application in fruit preservation. In this study, alginate (Alg) films with improved water vapor permeability (WVP), mechanical properties, and ultraviolet (UV) barrier were prepared with ylang-ylang oil (YYO) Pickering emulsion (PE). YYO was added as an antimicrobial agent. Cellulose nanocrystals (CNCs) were used as natural stabilizers to prepare YYO PE. The final coating comprised 1% Alg (alginate), Alg/0.24% CNCs, and Alg/0.5% YYO PE. The impacts of YYO-PE on the properties of Alg films were investigated, and their effects on post-harvest control of mandarins were evaluated. Gas chromatography-mass spectrometry (GCMS) was used to identify the components of YYO. Atomic force microscopy (AFM) and scanning electron microscopy (SEM) showed an increase in the roughness of the films containing the Alg/YYO PE. Fourier transform infrared spectroscopy (FTIR) analysis revealed no new interactions in the Alg/YYO PE films. Moisture content (MC) and thermal properties were lower for Alg/YYO-PE films. The Alg/YYO-PE coating lowered the weight loss (7.84 ± 1.76%) and inhibited (p < 0.05) the growth of Penicillium italicum (P. italicum) and Penicillium digitatum (P. digitatum). The inhibition percentages were 56.02% and 47.98%, respectively, for the inoculated mandarins. In conclusion, the Alg/YYO PE coating and film have the potential to be an eco-friendly active packaging material in the food sector.

Abstract:In order to reduce the quality loss of citrus and extend its storage time after harvest, it is essential to develop coated kraft papers with antibacterial and fresh-keeping properties. In this study, cinnamon essential oil (CEO)/soybean protein isolate (SPI) microcapsules were prepared by the coagulation method, and their properties were optimized. Then, the microcapsules were added to konjac glucomannan (KGM) as a coating solution to enhance the physical, and chemical properties of kraft paper by a coating method. The release behavior of CEO, tensile properties, antibacterial properties and preservation effects of the paper were investigated. The results show that when the ratio of wall to core was 7:3, the highest encapsulation rate was 92.20 ± 0.43 %. The coating treatment significantly reduced the oxygen and water vapor transmission rates of kraft paper. The shelf life of citrus treated with coated Kraft was extended by >10 days. Thus, the CEO/SPI microencapsulation and KGM coating could improve the properties of kraft paper and have the potential for citrus preservation.

Abstract:Pickering emulsions have attracted much attention as a novel emulsifying technology. This research to explore Zein-Citrus pectin nanoparticles stabilized cinnamon essential oil (CEO) Pickering emulsion (ZCCPEs) for constructing Pickering emulsion edible film (PEF). Unlike traditional research, which focuses on antibacterial and antioxidant activities, our research examined the physical properties of PEF, specifically changes in wettability. The results show that PEF has better transparency and tensile strength than the pectin alone direct emulsion film (PAEF), and the spatial distribution of Pickering emulsion droplets gives different wettability on both sides of PEF. The partially hydrophobic upside has important application value in food packaging. At the same time, the PEF is biodegradable and environmentally non-polluting. The edible film loaded with essential oils, developed based on the Pickering stabilization mechanism in this study, possesses several desirable characteristics for potential used as bioactive packaging films in food applications.
