Abstract:The quality of fried products greatly depends on the changes occurring during frying. The purpose of this work was to study the lipid quality changes taking place in selected frozen foods after domestic deep-frying. Conventional, high-linoleic sunflower oil (HLSO) and high-oleic sunflower oil (HOSO) were used, and the frozen foods selected were French fries, croquettes, and nuggets. The foods were fried in domestic fryers under discontinuous conditions. Analyses included fatty acid composition, sterols, tocopherols, squalene, and lipid alteration levels. In all fried foods, the content of lipids increased after frying, which is consistent with previous findings. However, the lipid exchange between the food and the oil greatly depended on the food characteristics. Specifically, the levels of frying oil in the food lipids were about 90, 40, and 58% for French fries, croquettes, and nuggets, respectively. The main results obtained showed that lipid alteration levels considerably decreased and amounts of sterols and tocopherols significantly increased in French fries' lipids after frying. In both chicken products, croquettes and nuggets, the best quality improvement observed was a significant decrease in cholesterol in food lipids due to the lipid exchange. Overall, frying with HLSO and HOSO improved the quality and nutritional properties of all products tested.
Similar degrees of obesity induced by diet or aging cause strikingly different immunologic and metabolic outcomes

Abstract:In obesity, adipose tissue (AT) and liver are infiltrated with Th‐1 polarized immune cells, which are proposed to play an important role in the pathogenesis of the metabolic abnormalities of obesity. Aging is also associated with increased adiposity, but the effects of this increase on inflammation and associated metabolic dysfunction are poorly understood. To address this issue, we assessed insulin resistance (IR) and AT and liver immunophenotype in aged, lean (AL) and aged, obese (AO) mice, all of whom were maintained on a standard chow diet (11% fat diet) throughout their lives. For comparison, these variables were also assessed in young, lean (YL) and young diet‐induced obese mice (41% fat diet, YO). Despite similar body weight and fat accumulation, YO mice were substantially more IR and had greater liver steatosis compared to AO mice. YO also had elevated infiltration of macrophages/dendritic cells in AT and liver, but these increases were absent in AO. Furthermore, liver immune cells of YO were more Th‐1 polarized then AO. Notably, aging was associated with accumulation of T cells, but this occurred independent of obesity. Together, the data suggest that reduced inflammation in AO underlies the improved insulin sensitivity and lowered steatosis compared to YO.
Efficacy of exogenous natural antioxidants in stability of polyunsaturated oils under frying temperature

Abstract:The demand for plant source of polyunsaturated fatty acid (PUFA) is increasing due to the health concern over animal oils, but oxidation in PUFA-rich oils occurs rapidly during frying process. Under frying conditions, numerous reactions take place with the formation of degradative products which reduce nutritional quality and shelf-life of frying oil and fried foods. Using natural antioxidants instead of synthetic ones has been the tendency for retarding oil deterioration during frying. The chemical degradation of natural antioxidants during frying operation, seems to be the major pathway for antioxidant loss. This suggest to require a continuous modification to enhance their performances. In fact, much study was carried out on the activities of natural antioxidative agents at ambient or accelerated storage temperatures. The information on the fate of natural antioxidants at frying conditions is limited. Nevertheless, the need to develop a safe, potent, and stable natural antioxidative agent for frying operation still remains an appealing task. This review highlights the recent information on the performance of exogenous natural antioxidants in frying stability of polyunsaturated oils. The present investigations indicate that the stability is not just a function of individual components but may be a cumulative effect of various endogenous and exogenous antioxidants. Most of common antioxidants such as β-carotene, tocochromanols etc. may retard oxidative degradation during storage at lower temperature, they are less effective under frying conditions. Tocopherol, β-carotene and phenolic acids may form synergistic mixture. Under frying conditions, γ-oryzanol and phenolic compounds offer good protection of oils against oxidative deterioration.

Abstract:The objective of this study was to determine the effects of some minor components such as squalene and mono- and diglycerides (MDG) on the frying stability of olive pomace oil. Refined olive pomace oil was distilled using a falling film type short-path distillation unit at 230 °C under a pressure of 0.02 mbar to remove minor components. Distilled olive pomace oil was introduced with approximately 10,000 mg/kg of squalene and 2.5% of MDG. Fryings were performed 8 times/day at 180 °C for 3 min. Whole frying procedure proceeded for 5 days. Total polar compounds, polymerized triglycerides (PTG), free fatty acids, viscosity, color index, <em>p</em>-anisidine value, smoke point, fatty acid composition and iodine values of the oils were monitored. Results indicated that all criteria except smoke point and iodine value increased in all fractions during fryings. The lowest total polar compound was obtained in distilled olive pomace oil while PTG was the lowest in the MDG added fraction. Lower increases in viscosity and color indexes were recorded in squalene incorporated samples. It was observed that squalene and MDG were not effective on the oxidation rate of unsaturated fatty acids during frying.

Abstract:The distribution of polar compounds (PCs) in palm oil (PO), rapeseed oil (RO), and high-oleic sunflower oil (HOSO) were monitored in French fries (FF), chicken nuggets (CN), and fish nuggets (FN) real restaurant deep-frying systems by high-performance size exclusion chromatography. The PO with long frying life (100–186 h) showed better oxidation stability in all frying systems compared with RO and HOSO. All the oils had a close increasing trend in triacylglycerol hydrolysis products (THP), while RO and HOSO had higher levels of oxidized triacylglycerol monomers (OTG) and oxidized triacylglycerol polymers (TGP) than PO during frying. During FF frying, the oils deteriorated slowest from the aspect of PCs rising to the discard point (27 %). The oils underwent more serious hydrolysis and polymerization while CN and FN were fried compared to FF frying. However, OTG contents in oils altered irregularly and there was no obvious disparity among different foods frying. Oil type, fried food, and even the interaction between them significantly (p < 0.001) affected polar compound distribution.

Abstract:The objective of the present study was to evaluate the therapeutic potential of bovine lactoferrin or lactoferricin in combination with penicillin G against Staphylococcus aureus. Minimal inhibitory concentrations of lactoferrin, lactoferricin, penicillin, and combinations of lactoferrin or lactoferricin with penicillin were determined for 15 S. aureus strains including several strains resistant to beta-lactam antibiotics. The fractional inhibitory concentration index indicated a synergistic effect between lactoferrin and penicillin. Combination of lactoferrin with penicillin increased the inhibitory activity of penicillin by two- to fourfold and reduced the growth rate in S. aureus strains tested, whereas the increase in the inhibitory activity of lactoferrin by penicillin was 16- to 64-fold. The addition of iron to the medium containing a combination of penicillin and lactoferrin had no effect on growth inhibition. Electron microscopy revealed that concentration below the minimal inhibitory concentrations of penicillin induced important ultrastructure alterations, which were further enhanced by the presence of lactoferrin. When S. aureus cells were grown in the presence of a combination of penicillin and lactoferrin, changes in the protein profile of the bacteria, including the disappearance of several protein bands due to the presence of lactoferrin, were observed. These data suggest that bovine lactoferrin or lactoferricin in combination with beta-lactam antibiotics can increase the antibacterial activity of these antibiotics against S. aureus resistant to antibiotics.

Abstract:One of the commonly used food preparation methods is frying. Fried food is admired by consumers due to its unique taste and texture. Deep frying is a process of dipping food in oil at high temperature, usually 170–190 °C, and it requires a relatively short time. The aim of this study was to analyze the thermo-oxidative changes occurring during the deep frying of products such as potatoes and tofu in cold pressed rapeseed oils and palm olein. Cold pressed rapeseed oil from hulled seeds (RO), cold pressed high oleic rapeseed oil from hulled seeds (HORO), and palm olein (PO) (for purposes of comparison) were used. Characterization of fresh oils (after purchase) and oils after 6, 12, and 18 h of deep frying process of a starch product (potatoes) and a protein product (tofu) was performed. The quality of oils was analyzed by determining peroxide value, acid value, p-anisidine value, content of carotenoid and chlorophyll pigments, polar compounds, smoke point, color (CIE L*a*b*), fatty acids content and profile, calculation of lipid nutritional quality indicators, and oxidative stability index (Rancimat). Cold pressed high oleic rapeseed oil was more stable during deep frying compared to cold pressed rapeseed oil, but much less stable than palm olein. In addition, more thermo-oxidative changes occurred in the tested oils when deep frying the starch product (potatoes) compared to the deep frying of the protein product (tofu).

Abstract:The aim of this study was to assess the food nutritional profiles of potato chips, chicken nuggets, and broccoli and their palatability after deep-frying with different oils. The trials consisted of 4 cycles of deep-frying at 180°C for 4 minutes using extra virgin olive oil (EVOO), canola, and grapeseed oils. Samples of food and oils were taken untreated and after the treatments for sensorial and chemical analysis. EVOO and canola oil deep-fried food were preferred by their colour, but canola fried food was disliked because of its flavour. Results showed that there is a transference between food and oils regarding fatty acid profile and antioxidant content as well as trans fatty acids (TFAs) and polar compounds (PCs). All food presented more antioxidants and monounsaturated fatty acids after having been cooked with EVOO than after cooking with canola and grapeseed oils. Highest PCs in food were found when using canola oil and grapeseed oils. EVOO was shown to decrease the PCs in chips and chicken nuggets. PCs were not detected in raw broccoli, and broccoli cooked in EVOO showed the lowest PCs content. Canola and grapeseed oils increased the TFAs in food, whereas EVOO decreased the TFAs in the chips and maintained the initial TFAs levels in chicken nuggets and broccoli. This study shows that EVOO improves the nutritional profile of the food when compared with canola and grapeseed oils when deep-frying without any negative impact on palatability or appearance.

Abstract:Aiming to understand the nutritional impact of Moringa oleifera oil (MOO) on the quality of fried potatoes as consumed, a frying study using intermittent frying at 180 °C was conducted over 5 days, with a total heating time of 15 h, against olive (OO) and sunflower (SFO) oils. Additionally, due to MOO's higher costs, a SFO/MOO blend (80/20 w/w) was tested. With similar fat incorporation and moisture contents, potato lipid composition revealed the impact of oil oxidation over the frying time, gradually decreasing the content of unsaturated fatty acids and antioxidants, including vitamin E, carotenoids and ascorbic acid, and increasing the incorporation of trans fatty acids (TFAs) and volatile aldehydes. When the potatoes fried at the ninth hour of heating are compared, MOO and OO were still able to protect potato ascorbic acid better than SFO, due to the low oxidative stress imposed by their fatty-acid composition. SFO, on the contrary, with linoleic acid as the main fatty acid, and despite its higher content of vitamin E, demonstrated higher oxidative stress and increased incorporation of alkenals and alkadienals. Acrylamide content was generally low, as were the trans fatty acids formed and incorporated with frying time, with MOO fried potatoes having lower amounts of all these process contaminants. Interestingly, the blend SFO/MOO (80/20 w/w) doubled the amount of vitamin E in fried potatoes when compared with SFO alone, increased the ascorbic acid protection and reduced by half the amounts of volatile aldehydes, indicative of an efficient reduction of the oxidative status of the SFO-fried potatoes, with benefits to the consumer from a health point of view.
Comparative Analysis of Frying Performance: Assessing Stability, Nutritional Value, and Safety of High-Oleic Rapeseed Oils

Abstract:Frying is a critical process in the food industry, where selecting appropriate vegetable oils is key to achieving optimal results. In this study, French fries were fried at 175 °C with five different oils, the changes in the physicochemical indexes and free radical scavenging rate of the oils during the frying process were investigated, and the most suitable oils for frying were identified through comparative analysis using principal component analysis (PCA). We assessed the frying performances of hot-pressed high-oleic-acid rapeseed oil (HHRO), cold-pressed high-oleic-acid rapeseed oil (CHRO), soybean oil, rice bran oil, and palm oil utilizing principal component analysis over an 18 h period. The HHRO and CHRO showed lower acid values (0.31, 0.26 mg/g), peroxide values (2.09, 1.96 g/100 g), p-anisidine values (152.48, 178.88 g/mL), and total polar compound percentages (27.60%, 32.10%) than other oils. Furthermore, both the HHRO and CHRO demonstrated enhanced free radical scavenging abilities, indicative of their higher antioxidant capacities, as corroborated by the PCA results. Benzopyridine, 3-monochloropropane-1,2-diol ester, squalene, tocopherols, and polyphenol from the HHRO and CHRO during frying were compared. A comprehensive examination of harmful substances versus nutrient retention during frying revealed that the HHRO contained fewer hazardous compounds, while CHRO retained more nutrients. Therefore, this study analyzes the oxidation regulation of HHRO in frying applications, highlights the prospects of HHRO for frying in terms of health and economy, and contributes valuable insights for informed vegetable oil selection within the food industry.

Abstract:To investigate the antioxidant activity and physicochemical properties of oil, sunflower (SFO) and corn oil (CO) and their combinations with sesame oil (SO) were prepared. The analyses of fatty acid composition (GC-FID), oxidative stability index (Rancimat), smoke point, and antioxidant activity (DPPH) were done on oil samples. Then, the frying process in presence of potato chips was done for 3 days at 180°C. Oil samples were gathered after each frying cycle and chemical analysis (peroxide value, free fatty acid, p-anisidine value, TOTOX, total polar content, TBARS, and conjugated diene and triene) was measured. The major fatty acid composition of oil samples was linoleic acid, oleic acid, palmitic acid, and stearic acid. The OSI of oil samples was reported as CSO > SSO > SO > CO > SFO . The smoke point of all samples was in the standard limit. The SFO with 266.50°C had the highest smoke point. The antioxidant activity of samples was reported as SO > CSO > CO > SSO > SFO . The IC50 of SO was 52.17 mg/g which was higher than other samples. The result of frying indicated that prolonged heating process would increase the thermal oxidation. It was shown that oils blended with SO had good stability during deep frying. Therefore, blending oil with SO is considered as an economic approach to improve the oil oxidation stability.
Analysis of 8-oxooctanoate, 9-oxononanoate, fatty acids, oxidative stability, and iodine value during deep-frying of French fries in edible oils blended with palm oil

Abstract:Four blended oils including palm + corn oil (PC), palm + grapeseed oil (PG), corn + grapeseed oil (CG), and palm + corn + grapeseed oil (PCG) were used as frying media. The 8-oxo and 9-oxo content, fatty acid composition, oxidative stability index, and iodine value of samples (n = 42) were analyzed. As the frying cycles increased, the content of 8-oxo and 9-oxo also increased significantly (p < 0.05) and showed the highest content of 965.56 ± 0.706 μg/g in 100 frying cycles of PCG. After 20-40 frying cycles in CG, the amount of palmitic, stearic, oleic and linoleic acid increased up to 15.5% (p < 0.05). The oxidative stability of palm oil was the highest at 16.76-18.33 h (p < 0.05). The iodine value of grapeseed oil was the highest at 144.96 ± 2.569-153.64 ± 2.233 g iodine/100 g oil (p < 0.05). Among the examined oils, PC was the most suitable alternative to palm oil.

Abstract:Abstract The purpose of this study is to evaluate the safety of degummed water‐extracted wild almond oil as a frying medium. Changes in the physicochemical properties of the oil as well as those of the fried potato sticks were evaluated over 10 h of frying at 180°C. Compared to a reference commercial frying oil, free fatty acid content, smoke point, anisidine value, conjugated dienes concentration, total polar compounds, color index, and viscosity did not change significantly during the frying process. French fries prepared during the 10 h of frying in the wild almond oil indicated lower fat levels than those prepared in the commercial frying oil. This can contribute to the well‐being of the consumers as well as to the cost‐efficiency of the process. The color indices are additional quality measures for the fried products that were similar for potatoes fried in both oil sources indicating the safe application of water‐extracted wild almond oil for frying purposes. The application of water‐extracted wild almond oil for frying purposes is found to be a safe process to consider in future frying applications.

Abstract:In recent years,China’s market has an novel edible oil-fish oil supplemented blend oil(FO),however,there is no data on its ability to be used for deep frying,how safe it is,and if it will produce a large number of transfatty acids,as well as how the dynamic changes of 20:5n-3and 22:6n-3during the frying process.The objective of the present study was to investigate the changes of fatty acids and other physical and chemical parameters in different doses of FO during deep frying.Two liters of soybean blend oil(SO),and 1.5%,3.0%,6.0%and 12.0% FO were used to fry fresh potato chips at the temperature of 180℃,respectively,for total 6days,each day frying 10times,each time frying 120g potato chips for 3minutes,and the interval of 5minutes between each frying.Oil was kept for 1.5hours at 180℃after daily deep frying.Gas liquid chromatography(GLC)was used to analyze the fatty acid composition(% of total fatty acid),and other physical and chemical parameters were determined according China National Standard(GB).The results showed that the main trans fatty acids(TFAs) produced during deep frying were t18 : 1,t18 : 2n6,t18 : 3n-6and t18 : 3n-3.The proportions of t18 : 1and t18 : 2n-6were increased with frying time,which was significantly higher in FO than that in SO.The proportion of t18 : 3n-6and t18 : 3n-3in 3.0%and 6.0% FO were increased in the first stage(0-12h),and then decreased.However,they were decreased in SO,1.5%and 12.0% FO with frying time.With the prolonging of the deep frying time,the proportions of 20 : 5n-3and 22 : 6n-3 decreased in different doses of FO,with 12.0% FO decreased most.After 4h,the acid value had a significant increasing trend;during 4-24h,acid value of SO was significantly lower than FO(P < 0.01).Anisidine value and polymer showed a similar trend with acid value.However,with the prolonging of the deep frying time,the peroxide value showed a rising trend,but overall peroxide value of SO was significantly higher than that of FO(P <0.01),which may be associated with antioxidant activity of 20 : 5n-3and 22 : 6n-3.In conclusion,FO and SO can be used for cooking safely,however,they are not suitable for long-term repeated deep frying.

Abstract:The degradation occurring in soybean oil, camellia oil, and binary blends at five ratios during deep frying of french fries at 180°C for five consecutive days was monitored. The decrease in polyunsaturated and increase in saturated fatty acids during the frying operation was more prominent in soybean oil as compared to the camellia oil and blended oils. Among the frying periods, camellia oil, blend (60:40) and blend (50:50) after frying did not change significantly in the overall fatty acid composition. In addition, results of physicochemical properties of the frying media, namely the free fatty acid, peroxide value, p‐anisidine value, total polar components, and color, indicate that camellia oil has the least degradation, while soybean oil has the highest. What is more, these results reveal that increase in oxidative stability is correlated with the increase in camellia oil levels, due to the high content of phenolic compounds and monounsaturated fatty acid. Therefore, the present study clearly indicated that partial replacement of soybean oil with camellia oil can significantly improve frying stability for deep frying of french fries. Practical applications: The results are useful for home cooking, restaurants, or fast foods sellers providing them with newly developed frying stability oils, camellia oil, and camellia/soybean blended oils for deep frying of french fries. Furthermore, discarding time was provided for soybean oil, camellia oil, and their blends when used as media for french fries frying, this suggestion allows preparing safe fried foods for consumers. Total polar compounds of oils during 5 days of usage for deep frying of french fries. Sterol Migration during Rotational Frying of Food Products in Modified Rapeseed and Soybean Oils

Abstract:This study explores the impact of rotational frying of three different food products on degradation of sterols, as well as their migration between frying oils and food. The research addresses a gap in the existing literature, which primarily focuses on changes in fat during the frying of single food items, providing limited information on the interaction of sterols from the frying medium with those from the food product. The frying was conducted at 185 ± 5 °C for up to 10 days where French fries, battered chicken, and fish sticks were fried in succession. The sterol content was determined by Gas Chromatography. This research is the first to highlight the influence of the type of oil on sterol degradation in both oils and food. Notably, sterols were found to be most stable when food products were fried in high-oleic low-linolenic rapeseed oil (HOLLRO). High-oleic soybean oil (HOSO) exhibited higher sterol degradation than high-oleic rapeseed oil (HORO). It was proven that cholesterol from fried chicken and fish sticks did not transfer to the fried oils or French fries. Despite initially having the highest sterol content in fish, the lowest sterol amount was recorded in fried fish, suggesting rapid degradation, possibly due to prefrying in oil with a high sterol content, regardless of the medium used.

Abstract:Frying is a popular cooking method that produces delicious and crispy foods but can also lead to oil degradation and the formation of health-detrimental compounds in the dishes. Chemical reactions such as oxidation, hydrolysis, and polymerization contribute to these changes. In this context, emerging technologies like ultrasound-assisted frying (USF) and microwave (MW)-assisted frying show promise in enhancing the quality and stability of frying oils and fried foods. This review examines the impact of these innovative technologies, delving into the principles of these processes, their influence on the chemical composition of oils, and their implications for the overall quality of fried food products with a focus on reducing oil degradation and enhancing the nutritional and sensory properties of the fried food. Additionally, the article initially addresses the various reactions occurring in oils during the frying process and their influencing factors. The advantages and challenges of USF and MW-assisted frying are also highlighted in comparison to traditional frying methods, demonstrating how these innovative techniques have the potential to improve the quality and stability of oils and fried foods.

Abstract:Deep-frying is an attractive food preparation method and has been in use for centuries. It is a very popular culinary practice worldwide and can be used both industrially and domestically. Deep-fried food has a unique sensorial property, such as flavor, aroma, and texture. However, the chemical quality of the frying oil can be affected by the high temperatures normally used in deep-frying. Complex series of reactions that occur in vegetable oils during deep-frying (hydrolytic and oxidative rancidity processes) they are related to several mechanisms, such as reactive species, chemical composition of the lipid, environment, and process, influencing the speed and nature of the oxidative process. This paper aimed to analyze the quality of the vegetable oils most consumed by the population (refined soybean and sunflower oils) used in domestic short-term deep-frying process, using a domestic-grade electric fryer and a conventional method. French fries were used because they are a convenient product, highly consumed in industrialized countries. Domestic events of short-term deep-frying were carried out for three days, with one-week intervals. After each frying events, the refined oils were analyzed. Methodology consists in bromatological analyses of quality research applying analyzes of acidity and peroxide, in which the free acidity content, compounds formed by hydrolytic rancidity, and hydroperoxides content, the first compounds formed in the oil ́s oxidative rancidification process, were analyzed. These parameters will be fundamental in oils oxidative evaluating during frying. According to the results, fresh vegetable oils samples remained within regulatory limits. However, after short-term deep-frying, free fatty acids and hydroperoxides content increased in both domestic short-term deep-frying using both vegetable oils, exception of sunflower oil after last day of frying. Additionally, there was no significant difference in the fatty acids value increase comparing with both domestic frying techniques. However, there was significant difference in hydroperoxide value comparing the oils between deep-frying techniques. However, in general even the oils have shown great thermal quality, bromatological analyses demonstrated that must be taken careful when reusing oils for short-term deep-frying. Seeing that the electric fryer is effective in oil quality compared preservation comparing with conventional method, probably due to temperature control and better sealing efficiency.
