Abstract:Pickering emulsions, which are emulsions stabilized by colloidal particles, are being increasingly positioned as novel strategies to develop innovative food product solutions. In this context, the present work aims to develop Pickering emulsions stabilized by natural-based curcumin-loaded particles produced by the solid dispersion technique as promising mayonnaise-like food sauce alternatives. Two particle formulations (KC1 and KC2) were produced using k-carrageenan as the matrix material and different curcumin contents, then employed in the preparation of three Pickering emulsion formulations comprising different oil fractions (φ) and particle concentrations (KC1 φ 0.4 (4.7%), KC2 φ 0.4 (4.7%) and KC2 φ 0.6 (4.0%)). The creaming index tests accompanied by the optical microscopy analysis evidenced the good stability of the developed products for the tested period of 28 days. The final products were tested concerning color attributes, pH, oxidative stability, textural, and nutritional composition, and compared with two commercial mayonnaises (traditional and light products). Overall, the produced emulsions were characterized by a bright yellow color (an appealing attribute for consumers), an acidic pH (similar to mayonnaise), and a considerably improved oxidative stability, implying a foreseeable longer shelf life. The sauce KC1 φ 0.4 (4.7%) showed a similar texture to the light commercial mayonnaise, being a promising alternative to conventional sauces, holding a low-fat content and potentially added benefits due to the curcumin and virgin olive oil intrinsic properties.

Development of Oleogel-in-Water High Internal Phase Emulsions with Improved Physicochemical Stability and Their Application in Mayonnaise

Abstract:Egg-free mayonnaise is receiving greater attention due to its potential health benefits. This study used whey protein isolate (WPI) as an emulsifier to develop high internal phase emulsions (HIPEs) based on beeswax (BW) oleogels through a simple one-step method. The effects of WPI, NaCl and sucrose on the physicochemical properties of HIPEs were investigated. A novel simulated mayonnaise was then prepared and characterized. Microstructural observation revealed that WPI enveloped oil droplets at the interface, forming a typical O/W emulsion. Increase in WPI content led to significantly enhanced stability of HIPEs, and HIPEs with 5% WPI had the smallest particle size (11.9 ± 0.18 μm). With the increase in NaCl concentration, particle size was increased and ζ-potential was decreased. Higher sucrose content led to reduced particle size and ζ-potential, and slightly improved stability. Rheological tests indicated solid-like properties and shear-thinning behaviors in all HIPEs. The addition of WPI and sucrose improved the structures and viscosity of HIPEs. Simulated mayonnaises (WE-0.3%, WE-1% and YE) were then prepared based on the above HIPEs. Compared to commercial mayonnaises, the mayonnaises based on HIPEs exhibited higher viscoelastic modulus and similar tribological characteristics, indicating the potential application feasibility of oleogel-based HIPEs in mayonnaise. These findings provided insights into the development of novel and healthier mayonnaise alternatives.
Stability and Rheological Behavior of Mayonnaise-like Emulsion Co-Emulsified by Konjac Glucomannan and Whey Protein

Abstract:The aim of this work was to study the physical stability and rheological properties of an oil-in-water emulsion stabilized by a konjac glucomannan–whey protein (KGM-WP) mixture at a konjac glucomannan concentration of 0.1–0.5% (w/w) and a whey protein concentration of 1.0–3.0% (w/w). The droplet size, microstructure, stackability, flow behavior, and viscoelastic properties were measured. The experimental results showed that with an increase in KGM and WP concentrations, the droplet size (D4,3) of the emulsion gradually decreased to 12.9 μm, and the macroscopic performance of the emulsion was a gel-like structure that can be inverted and resist flow and can also be extruded and stacked. The static shear viscosity and viscoelasticity generally increased with the increase of konjac glucomannan and whey protein concentration. Emulsions were pseudo-plastic fluids with shear thinning behavior (flow behavior index: 0.15 ≤ n ≤ 0.49) and exhibited viscoelastic behavior with a storage modulus (G′) greater than their loss modulus (G′′), indicating that the samples all had gel-like behavior (0.10 < n′ < 0.22). Moreover, storage modulus and loss modulus of all samples increased with increasing KGM and WP concentrations. When the concentration of konjac glucomannan was 0.3% w/w, the emulsion had similar rheological behavior to commercial mayonnaise. These results suggested that the KGM-WP mixture can be used as an effective substitute for egg yolk to make a cholesterol-free mayonnaise-like emulsion. The knowledge obtained here had important implications for the application of protein–polysaccharide mixtures as emulsifiers/stabilizers to make mayonnaise-like emulsions in sauce and condiments.

Abstract:In this work, the soy protein/chitosan-based microsphere (SCM), as a stable biocompatible vehicle of oleanolic acid (OA), was constructed for the first time under acidic conditions, and OA was firstly used for quality maintenance of minimally processed products. The effect of soybean protein isolate/chitosan ratio, particle concentration and oil fraction on emulsion stability was studied. Additionally, the interfacial characteristics of SCM with and without loading OA were determined by cryo-SEM. Results demonstrated that the encapsulation efficiency of SCM embedded with 0.15% OA (SCM-OA0.15%) rated up to 87.53% +/- 2.23%, and SCM-OA showed smaller particle size, greater stability, and better liquid-state behavior, as well as the enhanced antibacterial and antioxidant properties in comparison to the control and SCM group. The minimally processed apples were used to evaluate the potential application of SCM-OA delivery system and it was evident that SCM-OA contributed to reducing weight loss, maintaining total phenol content and inhibiting color browning of minimally process apples. These findings shed new light on the emerging biocompatible vehicles of plant-derived bioactive substance.

Abstract:Emulsified solid particles adsorbed at the oil–water interface can stabilise Pickering emulsions by acting as a physical barrier to the coalescence of oil droplets. Cellulose nanofibres (CNFs) have been used in food-grade Pickering emulsions because of their excellent performance as a low cost and sustainable material. Nicotinamide mononucleotide (NMN) is a small-molecule zwitterion with polar functionality capable of interacting with the CNFs. The ability of cationic CNFs and NMN to co-stabilise sunflower oil Pickering emulsions was investigated under various conditions using methods such as contact angle measurement, creaming stability, rheology, microscopy, thermal stability, and water-holding capacity. Emulsions with ultra-high stability, good gelation, and high plasticity were obtained using single-step shear dispersion with 0.25 wt% CNFs, 0.05–0.3 wt% NMN, and near-neutral pH. NMN stabilised the oil–water interface through electrostatic interactions and hydrogen bonding with CNFs. NMN transferred into the aqueous phase and interacted with CNFs to form a complex with a three-dimensional network structure, which improved the bulk viscosity and steric hindrance of the emulsion and created more compact adsorption of CNFs at the oil–water interfaces. Overall, the synergistic effects of various factors allow NMN to effectively co-stabilise Pickering emulsions with CNFs, making it an exciting method that can be used to encapsulate oil-soluble substances.

Abstract:The growing interest in sustainable foods has spurred the development of plant protein-based products. This study presents a method for recreating the physical and sensory characteristics of traditional egg-based mayonnaise using a conjugate of pea protein isolate (PPI) and xanthan gum (XG), prepared via a Maillard reaction. The relative ratios of PPI and XG were optimized to improve the conjugate's emulsification and solubility properties, compared to PPI alone. Our results indicate that mayonnaise prepared with the PPI-XG conjugate exhibits a droplet size distribution, rheological behavior, and thixotropic recovery rate similar to egg yolk-based mayonnaise, suggesting similar textural and organoleptic properties. Confocal laser scanning microscopy images revealed an identical network structure between the PPI-XG based mayonnaise and traditional egg yolk mayonnaise, which is known to influence the textural properties. This study highlights the potential of PPI-XG conjugates in developing plant-based mayonnaise, presenting a viable alternative to traditional mayonnaise.

Abstract:Mayonnaise is a semisolid oil-in-water emulsion comprised of egg yolk, oil, and vinegar. One main problem with mayonnaise is its high fat content, so efforts have been made to develop low-fat sauces with similar characteristics to real mayonnaise. The purpose of this study was to evaluate the effect of medium-chain triglycerides (MCTs) blended with edible oil (soybean and olive oil) on the rheological, physicochemical, and sensory properties of low-fat mayonnaise. The results revealed that the shear viscosity decreased with the increase in medium-chain fatty acid (MCFA) contents and decreased with an increasing shear rate. Tan δ was <1, and a semisolid fluid with shear-thinning behavior was formed. The oscillation frequency test showed that the MCFA-containing mayonnaise was viscoelastic. The particle size and oil droplet analyses revealed that the emulsion droplet size and distribution were not significantly different in the MCT group compared to the control. The sensory evaluation demonstrated that the MCFA-containing mayonnaise was acceptable. This study illustrates that MCTs are a good substitute to produce the proper physicochemical properties of mayonnaise.

Abstract:Pre‐gelatinised rice starch effectively stabilises mayonnaise‐based Pickering emulsions at the lowest starch concentration (200 mg mL−1), offering high‐emulsion stability, smaller droplet sizes, shear‐thinning and solid‐like behaviour compared to native and OSA rice starch, highlighting its potential as a plant‐based alternative. Summary Polysaccharide‐based particles present a promising alternative emulsifier to egg yolk to stabilise mayonnaise. Starch granules, inherently hydrophilic, can be modified to enhance their wettability. This study aimed to characterise the rheological and stability of mayonnaise‐based Pickering emulsions stabilised by native and modified rice starch granules. The mayonnaise was formulated with 50% (w/w) olive oil and 50% (w/w) lemon juice, with varying starch concentrations (200 and 400 mg starch mL−1 of oil). The emulsifying capacity and stability of mayonnaise, such as droplet size, morphology, emulsion index, accelerated stability, rheological behaviour and long‐term storage stability of the mayonnaise were investigated at time intervals (1, 7 and 14 days). The result showed that mayonnaise stabilised by pre‐gelatinised rice starch at low‐starch concentrations (200 mg mL−1) exhibited a higher emulsion index of 100% and a smaller droplet size of 17.0 ± 10.55 μm compared to emulsions stabilised by native and OSA rice starch. All mayonnaise‐based Pickering emulsions exhibited shear‐thinning properties, with emulsions stabilised by pre‐gelatinised rice starch exhibited the highest viscosity and viscoelastic properties (G′ > G′′). Thus, it contributed to greater stability in the Pickering emulsion system with longer storage stability. This study offers valuable insights into the potential of modified starch granules as an alternative plant‐based emulsifier in food applications. The use of plant‐based emulsifier (solid particles) instead of egg yolk as emulsifiers provide an insight for food industry in providing healthy plant‐based emulsion formulations.

Abstract:This study investigates to enrich the mayonnaise with novel oil replacer which is from silkworm pupae insect. Due to their health benefits, the well-known omega-3 and omega-6 fatty acid families are the most significant polyunsaturated fatty acids (PUFA) demanded in foods. Insects are traditionally consumed as food in different parts of the world since they are both a good source of protein and rich in essential fatty acids (EPA and DHA). The product Mayonnaise was developed using Encapsulated Silkworm Pupae Oil powder (Mayo-ESOP of 10 g) and Silkworm Pupae Oil (Mayo-SPO OF 10 ML) and was compared with control mayonnaise prepared out of sunflower oil. The mayonnaise samples were analysed for oxidative stability through peroxide values at 0, 7, 14 and day 21 days and after preparation of physical parameters such as droplet size for surface (μm), volume (μm), viscosity (γ=10 s-1), proximate analysis, colour values (*L, *a and *b) fatty acids profile. The study revealed that Mayo-ESOP and Mayo-SPO samples showed better oxidative stability as a result of this not affecting any quality aspects of mayonnaise samples. The proximate composition among the three variations of mayonnaise Mayo-SPO was found to have a maximum fat content of 76.13±0.01g per 100 g, followed by Mayo-ESOP 72.3±0.01g/100 g and Control 66.21±0.01g/100 g respectively. The fat composition indicates that silkworm pupae have a very good fatty acid profile, which includes omega 9 and omega 6. The colour values (L*, a*, b*) and the total colour difference represented as (ΔE values) had no much significant difference show the yellowness colour for mayonnaise sample compared to control due to the presence of carotenoids. Overall, the colour assessment reveals that the oil was of good quality. Oxidative stability indicates the mayonnaise samples stored at a refrigerated temperature for 0, 7, 14, and 21 days had significantly difference on peroxide values due to oxidation of mayonnaise samples.
Compatibility of sodium alginate and konjac glucomannan and their applications in fabricating low-fat mayonnaise-like emulsion gels

Abstract:In this study, the compatibility of alginate (Alg) and konjac glucomannan (KGM) in aqueous solutions was evaluated by dilute solution viscometry (DSV). It was found that when Alg: KGM ratio was lower than 6:4 (w/w), Alg and KGM were compatible, which was subsequently confirmed by SEM, AFM and TEM. Moreover, by dispersing emulsified oil droplets into Alg gel matrix, followed by addition of KGM to thicken the system, where the ratio of Alg: KGM was 5:5, a class of emulsion gels with significant thixotropy and viscoelasticity could be obtained. The prepared emulsion gels displayed good thermal stability and freeze-thaw stability, with no oil droplet coalescence observed after heating at 100°C for 30 min or freezing the gels at -18°C for 24 h. Overall, the mixed Alg/KGM system is expected to provide a template for designing low-fat mayonnaise-like food emulsions.
Bioaccessibility of arsenic(V) bound to ferrihydrite using a simulated gastrointestinal system.

Abstract:The risk posed from incidental ingestion to humans of arsenic-contaminated soil may depend on sorption of arsenate (As(V)) to oxide surfaces in soil. Arsenate sorbed to ferrihydrite, a model soil mineral, was used to simulate possible effects on ingestion of soil contaminated with As-(V) sorbed to Fe oxide surfaces. Arsenate sorbed to ferrihydrite was placed in a simulated gastrointestinal tract (in vitro) to ascertain the bioaccessibility of As(V) and changes in As(V) surface speciation caused by the gastrointestinal system. The speciation of As was determined using extended X-ray absorption fine structure (EXAFS) analysis and X-ray absorption near-edge spectroscopy (XANES). The As(V) adsorption maximum was found to be 93 mmol kg(-1). The bioaccessible As(V) ranged from 0 to 5%, and surface speciation was determined to be binuclear bidentate with no changes in speciation observed post in vitro. Arsenate concentration in the intestine was not constant and varied from 0.001 to 0.53 mM for the 177 mmol kg(-1) As(V) treated sample. These results suggest that the bioaccessibility of As(V) is related to the As(V) concentration, the As(V) adsorption maximum, and that multiple measurements of dissolved As(V) in the intestinal phase may be needed to calculate the bioaccessibility of As(V) adsorbed to ferrihydrite.

Abstract:Single emulsifiers exhibit varying degrees of restriction in stabilizing emulsions. Oppositely charged chitin nanoparticles and fucoidan complex particles were used as emulsifiers to stabilize a o/w Pickering emulsion and explore its stability and antioxidant activity under different environmental stresses. The results showed that the emulsion with the smallest mean particle size (1.02 μm) and strongest zeta potential (−29.3 mV) was formed at pH 7. Moreover, at this pH, it presented the highest physical stability and antioxidant activity and the lowest emulsion creaming index. The investigation of the effect of temperature on the stability and antioxidant activity of the emulsion revealed that, after freezing/thawing at −20 °C, the emulsion was unstable, the particle size increased, and the stability and antioxidant activity were low. In contrast, the emulsions treated at 25, 37, and 60 °C displayed no significant differences and exhibited high stabilities and antioxidant activities. Additionally, increasing the salt ion concentration further decreased the emulsion stability and antioxidant activity. Particularly, the emulsion with a salt concentration of 500 mM displayed the lowest stability, and stratification occurred after 30 d of storage. The Pickering emulsion remained stable under different environmental stresses expect for at a temperature of −20 °C and 500 mM salt ion concentration.

Abstract:Particle concentrations (w) and oil content (Φ) are crucial factors influencing the gel stability of Pickering emulsions. To understand the stabilization mechanism comprehensively, we prepared emulsion gels stabilized by CNF/DMY composite particles at various w (0.5-1.5 wt%) and Φ (0.2-0.6, v/v). The microstructure revealed the adsorption of these particles at the oil-water interface, with excess particles forming a three-dimensional network structure in the continuous phase. Rheological studies showed that the network structure of Pickering emulsions was significantly influenced by w and Φ, resulting in improved emulsion gel strength that hindered the movement of oil droplets and oxygen in the continuous phase, thereby enhancing emulsion stability. Three scenarios for the critical strain (γco) were observed: at Φ = 0.2, γco decreased with increasing w, while at Φ = 0.4, γco increased with increasing w. At Φ = 0.6, γco remained relatively constant regardless of w. In conclusion, adjusting particle concentration and oil content enabled the control of microstructure, rheological properties, and antioxidant capacity of emulsion gels. These findings could be a valuable resource for formulating and ensuring the quality of emulsion gel-based products in the food industry.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.

Abstract:This research aims to optimize the parameters for the production of a stable nanoemulsion containing a mixture of essential oils (EOs) with a surfactant blend (Tween and Span 80) and assess its antimicrobial potency against spoilage bacteria and foodborne pathogens. The impact of a surfactant blend's hydrophilic-lipophilic balance (HLB) as well as surfactant:oil ratio was investigated based on the mean particle size (z-average) and polydispersity index (PDI). Results showed HLB value of 12 and a ratio of surfactant to oil at 0.75:1 exhibited an emulsion with the smallest z-average and PDI. Following this, a response surface methodology (RSM) employing central composite design (CCD) was utilized to formulate an optimal nanoemulsion using the microfluidization (MF) technique. The RSM revealed that the microfluidizer pressure of 15,000 psi and 5 cycles produces a z-average of 38.11 nm, PDI of 0.27, ζ-potential of 37.8 mV, and EE of 83.8%. The comparison between the experimental and anticipated results of the optimized nanoemulsion revealed no significant differences (p > 0.05). The optimal nanoemulsion displayed excellent stability during 30 days of storage at both 4 and 30 °C compared to 5 days for coarse emulsion. The nanoemulsion exhibited potent antimicrobial activity, showing minimum inhibitory concentration (MIC) values in the range of 0.019 to 0.156 μL/mL, surpassing the antimicrobial efficacy of the coarse emulsion, which had MIC values between 0.039 to 0.312 μL/mL. Thus, this study emphasized the efficacy of RSM design in developing an optimal nanoemulsion with enhanced antimicrobial properties using EOs, making it a promising natural food preservative.

Abstract:Novel nanoparticles ( Z -R/H) were successfully fabricated by a resveratrol-grafted zein covalent conjugate (Z-R) combined with quaternary ammonium chitosan (HTCC), which were used as stabilizers to prepare peppermint oil (PO) Pickering emulsions with antioxidant activity. HTCC effectively adjusted wettability of Z -R conjugate, and three-phase contact angle of Z-R/H 3:1 was moderate (95.01°). The influencing factors of Pickering emulsion formation, including volume fraction of PO, concentration of Z -R/H, and mass ratio of Z-R to HTCC, were evaluated by droplet size, ζ-potential, microscopic observation, and stability index analysis. Pickering emulsions stabilized by Z -R/H 3:1 showed excellent physical stability under heat treatment. Z-R/H nanoparticles adsorbed on the oil-water interface yielded a dense filling layer as a physical barrier to improve the emulsion stability, which was validated by confocal laser-scanning microscopy. After 4 weeks of storage, retention rate of PO in Pickering emulsion stabilized by Z -R/H 3:1 remained high (72.1 %). Electronic nose analysis showed that Z -R/H 3:1 -stabilized emulsion effectively prevented volatilization of PO aroma components. Additionally, PO and Z-R/H nanoparticles provided an additive antioxidant effect of Pickering emulsions against DPPH and ABTS free radicals. In summary, these novel Z -R/H nanoparticle offer promising applications as a stabilizer with great potential in preparing functional Pickering emulsions to improve essential oil delivery.
