Abstract:The influences of different factors in the osmotic dehydration efficie ncy of carrots were studied by the orthogonal experiment, which were the density of sucrose solution/%, ratio of solid to liquid/kg·kg -1 , osmotic d ehydration tim e/min, blanching, slicing direction, thickness of slice, and coring. The results showed that blanching was the most important factor influencing the dewatering rate; the high-density sucrose solution can be helpful to preserve the color; m o st of the dewatering happened in the first 120 minutes of dehydration; and the t hinner was the slices, the higher was the dewatering rate. At last, the optimum method of osmotic dehydration of carrots was put forward.

Abstract:Mass transfer was investigated during osmotic dehydration of fresh carrots over a range of temperature(30～57℃) of osmotic solution and concentration(40%～60%)of osmotic solution.The most significant changes of water content,water loss and solids gain took place during the first 30min of dewatering.Water loss was 3.5～4.5 times higher than solids gain,and higher was temperature and concentration of osmotic solution,higher was water loss and solid gain.

Abstract:The effects of drying on the quality, antioxidant activity and anthocyanin components of blueberry pomace were investigated using hot air drying (HAD), freeze-drying (FD), microwave vacuum drying (MVD) and microwave freeze vacuum drying (MFD). The quality, antioxidant activity, and individual anthocyanin compositions of blueberry pomace were evaluated and compared with the non-dried control. MVD produced the highest levels of total phenols, total anthocyanins, total sugars and color values in blueberry pomace while HAD gave the lowest. The ABTS +and DPPH radical scavenging abilities of blueberry pomace were significantly high when MVD was used. Moreover, FD, MVD, and MFD resulted in the retention of significantly more anthocyanin species than HAD as determined by HPLC coupled to the mass spectrometer. Overall, MVD proved to be the best technique for preservation of antioxidant capacity and natural color. Therefore, MVD of blueberry pomace can improve efficiency and productivity of the blueberry fruit processing industry while reducing the environmental burden.
Sequential phenolic acid co-pigmentation pretreatment and contact ultrasound-assisted air drying to intensify blackberry drying and enhance anthocyanin retention: A study on mass transfer and phenolic distribution

Abstract:In this work, the spraying of ethanol solution containing phenolic acid (ferulic acid or caffeic acid) was performed before subjecting to contact ultrasound-assisted air drying of blackberry. The mass transfer modeling results revealed that sonication intensified both internal water diffusion and external water exchange during drying, and ethanol pretreatment enhanced the effective diffusivity of water. Compared with air drying alone, the drying time for sequential ferulic acid pretreatment and drying with sonication was shortened by 89.2%. Owing to the co-pigmentation between phenolic acid and anthocyanins, the retention of anthocyanins was significantly enhanced after dehydration. At the end of drying, the total anthocyanin contents in the ultrasound-dried samples pretreated with ferulic acid and caffeic acid were 25.3% and 10.5% higher than the sonicated samples without pretreatments, respectively. Furthermore, drying simultaneously with sonication promoted the preservation of non-anthocyaninic soluble phenolics including catechin, phloretic acid, rutin in blackberry compared to air drying alone. Besides, bound phenolics in blackberry were less influences by the applied dehydration treatments. This study demonstrates that the combination of phenolic acid co-pigmentation pretreatment and ultrasound drying could be a promising method to protect anthocyanin pigments during dehydration of berry fruits.

Abstract:Osmotic dehydration (OD) is the most important procedure for obtaining candied wumei (Prunus mume), which is a very popular snack in Eastern Asian countries. This study aims to evaluate the effects of high hydrostatic pressure (HHP) pre-treatment (50–400 MPa) on the mass transfer kinetics and on the water diffusivity of wumei fruit during OD and to investigate the effect on water distribution and cell viability aspects. The results showed that HHP increased initial rate and effective diffusivity of mass transfer values compared to non-treated samples. Time domain nuclear magnetic resonance revealed that, upon HHP treatment, the water redistributed in vacuole, cytoplasm/extracellular spaces, and cell wall/membrane. The application of 400 MPa probably caused some irreversible damages to the cell membranes. The cell viability study determined by fluorescein diacetate staining showed a loss of cell viability at pressures higher than 200 MPa. HHP exhibited an effective pre-treatment to increase mass transfer of wumei fruit during OD process.

Abstract:Candied wumei fruit (Prunus mume) is a traditional product in Eastern Asian countries generally obtained by a long osmotic dehydration (OD) process. This study evaluated the effect of the application of high hydrostatic pressure (HHP) and heating pre-treatments to accelerate the OD process on some bioactive compound content, antioxidant activity, and volatile profile of wumei fruit. Whole fruits were subjected to HPP treatment (50 MPa for 1 min) and heating (100 °C for 1 min) and then to OD in a 40% sucrose solution for 5 days. Results showed that both heating and HPP pre-treatment increased mass transfer in a comparable way; however, HPP allowed a significant higher retention of antioxidant compounds and activity compared with the heating treatment, resulting in similar values to the untreated product. Moreover, HPP promoted the release of various volatile components resulting in a richer volatile profile compared with both control and heat-treated samples. Hence, HPP showed good potentiality as an alternative non-thermal pre-treatment for the production of candied wumei fruit characterized by high nutritional and sensorial properties.

Abstract:This study investigates the osmotic dehydration process of watermelon rind using a solution composed of honey and sucrose. The impact of the ratio of rind-to-solution and temperature on the process is illustrated. Pre-treatments such as blanching, microwaves, and ultrasonication were utilized. Ultrasonication reduces the time needed for osmosis in a sample, resulting in increased fluid loss and solute uptake; therefore, it was selected as the method to investigate the kinetics and modelling of mass transfer. The effective diffusivities for water loss (ranging from 3.02 × 10 −5 to 4.21 × 10 −4 m 2 s −1 ) and solid gain (ranging from 1.94 × 10 −6 to 3.21 × 10 −6 m 2 s −1 ) were shown to increase with process variables such as temperature and the rind-to-solution ratio. The activation energy decreased as the process temperature increased, ranging from 3.723 to 0.928 kJ mol −1 for water loss and from 1.733 to 0.903 kJ mol −1 for solid gain, respectively. The sample treated with microwaves exhibited the maximum dehydration coefficient, rendering it appropriate for producing dehydrated products. Five empirical models were utilized, with the power law model ( R 2 = 0.983) and the Magee model ( R 2 = 0.950) being the most suitable for water loss data and solid gain, respectively.

Abstract:This study investigated the effects of catalytic infrared blanching, ultrasound, and their combined pretreatments on the dehydration of blueberries. The results showed that catalytic infrared blanching for 6 min facilitated the retention of total phenols and total anthocyanins after the osmotic dehydration of blueberries. The polyphenol oxidase relative enzyme activity and hardness were reduced, while the brightness and relative conductivity were increased. Moreover, the solid gain and water loss were significantly increased with the combined pretreatment of catalytic infrared blanching and ultrasound (60, 40, and 40 + 60 kHz). Reducing the contact angle (from 120.8° to 63.5°) may strengthen the ultrasound cavitation. Furthermore, the drying rate, bioactive components, antioxidant capacity, and color of dried blueberries were evaluated. Compared to the control, the retention of total anthocyanin and the brightness increased. Catalytic infrared blanching combined with ultrasound pretreatment was a processing method to improve the osmotic dehydration efficiency of blueberries. This article deals with osmotic dehydration, a method that partially removes water from blueberries. Ultrasound is considered an effective pretreatment for enhancing mass transfer during osmotic dehydration. The waxy coating on the fresh blueberry epidermis, however, greatly reduces the cavitation effect of ultrasound due to an air film between the epidermis and the solution. Catalytic infrared blanching reduces the hydrophobicity of the epidermis. Catalytic infrared bleaching not only inactivates the enzyme activity in blueberries but also reduces the hydrophobicity of the blueberry skin. In this study, catalytic infrared bleaching was first combined with ultrasound for pre-penetration pretreatment of blueberries, which effectively improved water loss and solids increment during the penetration process as well as enhanced retention of blueberry anthocyanins. Highlights CIB reduced the PPO relative enzyme activity and the contact angle. CIB combined with US significantly increased WL and SG. CIB or US pretreatment improved the retention of TAC, TPC, and TFC. CIB reduced the PPO relative enzyme activity and the contact angle. CIB combined with US significantly increased WL and SG. Abstract:In this study, fresh wolfberry in the current season was used as the experimental material, and a radio frequency (RF)-hot air combined segmented drying process was adopted for berry preservation. Ultrasonic treatment, hot water blanching, sucrose infiltration, ultrasonic and blanching, ultrasonic and infiltration, and NaOH and NaCl solution impregnation were used for pre-treatment of combined drying. Taking natural drying and conventional Na 2 CO 3 dewaxing treatment as the control group, the effects of different pretreatment methods on drying characteristics, quality, and microstructure of wolfberry during combined drying were investigated. The drying time after ultrasonic and blanching pretreatment was the shortest (13.5 h), which effectively retained total flavonoids (1.79 mg/g) and enhanced their antioxidant activity ( I = 60.78%). NaCl impregnation treatment significantly increased the total phenol content (8.77 mg/g), whereas the retention rate of soluble sugar (0.73 g/g), ascorbic acid (3.96 mg/100 g), betaine (2.72%), and other nutrients increased significantly after ultrasonic and infiltration treatment, with improved color, rehydration rate and microstructure over other treatment methods. The Weibull distribution function can accurately describe the RF-hot air combined drying process of wolfberry after different pretreatment, and simulated results were consistent with the results of the combined drying characteristic curve of wolfberry. The aim of this study was to explore suitable pretreatment methods to improve the drying rate and ensure the quality of dried products of wolfberry.

Abstract:Mulberry perishes easily due to its high water content and thin skin. It is important to extend the shelf life of mulberry by proper processing methods. In the present study, the influence of three drying techniques, including hot air drying (HAD), vacuum drying (VD), and vacuum freeze-drying (VFD) on the quality maintenance of mulberry was comprehensively evaluated. Bioactive compounds, antioxidant activity, and the sensory and volatile flavor compounds of mulberry have been researched. The results showed that VFD treatment maintained the highest anthocyanins (6.99 mg/g), total flavones (3.18 mg/g), and soluble sugars (2.94 mg/g), and exhibited the best DPPH· (81.2%) and ABTS+· (79.9%) scavenging ability. Mulberry also presented the lowest hardness and the greatest brittleness after VFD. Additionally, VFD maintained the optimal color and presented the best sensory attributes. Furthermore, 30, 20, and 32 kinds of volatile flavor compounds were detected in HAD, VD, and VFD, respectively, among which aldehydes, esters, and ketones were the most abundant compounds. This study indicated the potential application value of VFD for the drying of fruit and vegetable foodstuffs.

Abstract:The phenolic compounds of blackberries extracted with organic solvents cause environmental damage. Therefore, the objective of the present study was to verify if microwave hydrodiffusion and gravity obtain a blackberry extract with a high concentration of phenolic compounds and antioxidant capacity without the addition of any solvent. The results showed that it was possible to reach the objective with 500 W and 10 min of extraction by employing a method that meets green chemistry principles. The extract has a lower cost than the exhaustive method, is microbiologically safe, and is mainly composed of anthocyanins (85%). The presence of 5 anthocyanins and 17 non-anthocyanin phenolic compounds were identified, including hydroxyresveratrol, which was first extracted in blackberries by microwave hydrodiffusion and gravity. The phenolic compound content and antioxidant capacity were lower in the last fractions, which reduced the extraction time to 8 min. The coproduct showed phenolic, antioxidant capacity, and microbiological quality. This study presented a fast, efficient, economical, sustainable, and solvent-free method to extract phenolic compounds from blackberries.

Abstract:The effects of concentrated fruit juices on mass transfer and enhancement of health-promoting properties of apple slices treated by an osmotic dehydration process with (PVOD) and without (OD) a vacuum were investigated. Hot air-drying (AD) was used as the finish drying process to produce apple chips. The apple chips obtained by OD + AD and PVOD + AD with grape juice had a total phenol content ( TPC ) of 81.54 ± 3.66 and 86.09 ± 1.23 mg GAE/100 g of dry matter, respectively, significantly higher than that (24.99 ± 0.46 mg GAE/100 g dry matter) of the chips from fresh apples (control). Similarly, DPPH radical–scavenging activity values of the OD + AD and PVOD + AD chips treated with grape juice were 78.44 ± 3.02% and 81.13 ± 2.47%, respectively, significantly higher than that of the control (26.06 ± 0.53%). The dehydration rate in the OD and PVOD processes was positively correlated with the osmotic pressure difference (Δ π ) between the osmotic solution and the apple tissue following an exponential relation, and thus, Δ π has functioned as the driving force for mass transfer in the OD and PVOD processes. Concentrated fruit juices are shown to be effective osmotic solutions to produce colorful apple chips with enhanced health-promoting properties.

Three-dimensional mass transfer modeling and phenolic chemistry exploration for ultrasound-assisted and microwave drying of goji berry

Abstract:Herein, goji berries were pretreated with sodium carbonate (Na2CO3) and then dried via ultrasound-assisted air drying or microwave drying. Water migration and phenolic chemistry of goji berries were studied under drying. A three-dimensional ellipsoid water transport model, accounting for porosity and temperature fluctuations, was established to explore the intricacies of the drying mechanism. Generally, microwave drying promoted interior water transport compared to ultrasound drying. Among all the drying methods, microwave drying at 240 W (MW-240 W) exhibited the highest De (from 7.34 × 10-9 to 9.61 × 10-9 m2/s) and kc (6.78 × 10-4 m/s) values. The goji berries received a considerably high water content gradient between its surface and center within the first 2 s of all the drying treatments. Microwave drying diminished the water content gradient earlier than air drying and ultrasound-assisted air drying treatments. Furthermore, most correlations observed among phenolics, oxidase activity, and cell wall pectin did not align with the established theories, highlighting the highly nonlinear nature of phenolic chemistry during goji berry drying. This study provides a three-dimensional model to study the mass transfer mechanism of goji berries and analyzes the evolution of polyphenols during the drying process.

Effect of ultrasound-assisted osmotic dehydration pretreatment on the convective drying of strawberry

Abstract:The work was planned to produce dietetic dehydrated strawberries with application of ultrasound osmotic dehydration (UOD) as pretreatment. A Box-Behnken design (BBD) were employed to characterize the UOD strawberry process, optimize and investigate the effect of independent variables like ultrasound time (10, 20 and 30min), concentration of osmotic solution (distilled water, 32.5 and 65 °Brix) and temperature (20, 30 and 40°C) on the water loss (WL), solid gain (SG) and weight reduction (WR). The same BBD were used to estimate the main effects of OD without ultrasound treatment. A multi-criteria optimization based on maximal possible values of WL and WR and minimal value of SG was achieved. This was 20.5min of ultrasound time, 47.5 °Brix osmotic solution concentration and 31°C medium temperature. The effects of UOD carried out under the optimized operating conditions on kinetics of convective air drying of strawberry at 40, 50 and 60°C, and velocity of 1m/s, using the phenomenological model of Coupled Washing/Diffusion (CWD). Starting accessibility, moisture effective diffusivity Deff value and activation energy (Ea) were calculated from similar-Fick's law and analogous Arrhenius equation, respectively with and without shrinkage correction. Color difference, Chroma and hue angle of fresh and UOD-air dried strawberries were evaluated. Quality attributes were estimated through the assessment of the phenolic content, antioxidant activity, rehydration capacity, and X-ray powder diffraction characteristics.
Preparation of anthocyanin-rich mulberry juice by microwave-ultrasonic combined pretreatment

Abstract:The work aims to study the process of microwave-ultrasonic combined treatment to obtain anthocyanin-rich mulberry juice. A Box-Behnken design was employed to analyze the effects of microwave time and citric acid content on the total phenol content, total anthocyanin content, hue, color intensity, DPPH and ABTS radical scavenging activities. Under the optimum conditions (microwave time of 46 s, citric acid addition of 273 mg/kg), the total phenol content, total anthocyanin content, the DPPH and ABTS radical scavenging activities reached 4.24 mg GAE/mL, 3.29 mg C3G/mL, 4.59 mg TE/mL and 11.90 mg TE/mL, respectively. Subsequently, the mulberry juice was processed with ultrasound of different frequencies. It was found that low-frequency ultrasonic treatment (25 kHz) could significantly reduce the loss of total phenolic and anthocyanin monomers and improve the antioxidant capacity of mulberry juice during storage for five weeks. Overall, mulberry juice with microwave-ultrasonic pretreatment is a natural antioxidant.

Abstract:<p>This study aimed at investigating the performances of air drying of blackberries assisted by airborne ultrasound and contact ultrasound. The drying experiments were conducted in a self-designed dryer coupled with a 20-kHz ultrasound probe. A numerical model for unsteady heat and mass transfer considering temperature dependent diffusivity, shrinkage pattern and input ultrasonic energies were applied to explore the drying mechanism, while the energy consumption and quality were analyzed experimentally. Generally, both airborne ultrasound and contact ultrasound accelerated the drying process, reduced the energy consumption and enhanced the retentions of blackberry anthocyanins and organic acids in comparison to air drying alone. At the same input ultrasound intensity level, blackberries received more ultrasound energies under contact sonication (0.299 W) than airborne sonication (0.245 W), thus avoiding the attenuation of ultrasonic energies by air. The modeling results revealed that contact ultrasound was more capable than airborne ultrasound to intensify the inner moisture diffusion and heat conduction, as well as surface exchange of heat and moisture with air. During air drying, contact ultrasound treatment eliminated the gradients of temperature and moisture inside blackberry easier than airborne ultrasound, leading to more homogenous distributions. Moreover, the total energy consumption under air drying with contact ultrasound assistance was 27.0% lower than that of airborne ultrasound assistance. Besides, blackberries dehydrated by contact ultrasound contained more anthocyanins and organic acids than those dried by airborne ultrasound, implying a higher quality. Overall, direct contact sonication can well benefit blackberry drying in both energy and quality aspects.</p>

Effect of Intermittent Microwave Volumetric Heating on Dehydration, Energy Consumption, Antioxidant Substances, and Sensory Qualities of Litchi Fruit during Vacuum Drying

Abstract:To examine the processing characteristics and high quality of an improved microwave vacuum drying system, litchi fruits were dried using intermittent microwave volumetric heating while microwave vacuum drying at 2 W/g was carried out for comparison; the intermittent microwave heating profiles were set as (1) 5 min drying-on, 5 min drying-off; (2) 5 min drying-on, 10 min drying-off; and (3) 5 min drying-on, 15 min drying-off. Energy consumption during drying was determined, and physicochemical properties such as moisture content, vitamin C, total phenolics, color, and sensory evaluation of dried products were assessed. In microwave vacuum drying, intermittent microwave volumetric heating was found to be energy-efficient (about 32 KJ/g to 45 KJ/g) and saved at least 31% of energy consumption compared with microwave vacuum drying as well as decreasing product browning. In addition, microwave volumetric heating had no substantial effects on sugar and protein contents, while antioxidants were affected significantly (p ≤ 0.05). Moreover, sensory evaluation showed that intermittent microwave-assisted vacuum drying (IMVD) increased the acceptance of the dried product compared with microwave vacuum drying (MVD).

Abstract:Microwave freeze-drying of foamed blueberry puree assisted by wave-absorbing material was investigated experimentally. Freeze-drying times and dried product qualities were evaluated. Unfoamed and foamed samples were prepared with whey protein isolate as the foaming agent and pectin as the stabilizer. Silicon carbide (SiC) was used as the wave-absorbing pad of the sample in comparison with quartz as the wave-transparent pad. The effect of foaming treatment was first examined. At 30 °C of radiation temperature and 15 Pa of chamber pressure with a quartz pad, the foamed sample saved 39.1% of drying time compared with the unfoamed one. The appropriate increasing temperature could shorten the freeze-drying time. The effect of microwave heating was then explored. With quartz pad at 0.5 W/g of microwave power, 30 °C and 15 Pa, only limited enhancements were attained for the two samples. With SiC pad at 0.25 W/g, 30 °C, and 15 Pa, the microwave freeze-drying time of the foamed sample was decreased by 50.0% and 17.9%, respectively, compared with conventional freeze-drying times of unfoamed and foamed samples. When the power was increased to 0.5 W/g, the drying time was shortened by 56.5% and 28.6%, respectively. There were no significant differences in color, total monomeric anthocyanin (TMA), and total phenolic content (TPC) between microwave and conventional freeze-dried products. TMA and TPC retentions in all products were more than 80% and 75%, respectively. The wave-absorbing material-assisted microwave freeze-drying of foamed material could greatly reduce the drying time and improve the process economy, while maintaining the comparable product quality with the conventional freeze-drying.

Abstract:Partially dehydrated cranberries (osmotically dehydrated) were dried to low water contents using one of following four methods: hot air drying; microwave-assisted convective drying; freeze-drying; and vacuum drying. Quality evaluation was performed on all samples, including sensory evaluation (appearance and taste), texture, color, water activity, and rehydration ratio. Hot air drying produced dried cranberries with the best visual appearance while freeze-dried cranberries had the highest rehydration ratio. The other methods presented similar rehydration ratios. There was no significant difference in color measurements and water activity. Few differences in texture were found, except for freeze-dried cranberries, which had a lower toughness compared to the other drying methods including commercially available dried cranberries. Microwave-assisted to hot air drying rate ratios increased as the moisture content decreased.
