Abstract:The effect of germination and parboiling treatment on distribution of water molecular, physicochemical profiles and microstructure of rice was investigated. The results showed that the water molecular was evenly distributed in rice kernel after germination, but after subjecting to parboiling treatment, mobile water molecular might be confined to small region, which diffused from the outer regions into the rice kernel core. The reason may be that parboiling treatment produced macromolecular matrix where dispersed amylose chains form double-helical associations between starch granules so that water molecular is restrained and not entrapped within the starch crystallites. Meanwhile, the changes of microstructure and distribution of water molecular may be attributed to softness of germinated rice and hardness of parboiling rice. In addition, parboiling treatment had significant (p < 0.05) effect on the physicochemical properties of germinated rice. The viscosity and pasting temperature significantly (p < 0.05) increased. The storage modulus (G′), loss modulus (G′′), tan δ and shear stress had lower value compared to untreated germinated rice. Colour difference significantly (p < 0.05) increased, the microstructure of surface became smoother and compacter.
The Effects of Genotype × Environment on Physicochemical and Sensory Properties and Differences of Volatile Organic Compounds of Three Rice Types (oryza Sativa L.)

Abstract:Understanding the effects of genotype, environment and their interactions on rice quality is of great importance for rice breeding and cultivation. In this study, six rice varieties with two indica, two japonica and two indica–japonica types of rice were selected and planted at ten locations in Zhejiang Province to investigate the genotype (G) × environment (E) on physicochemical and sensory properties and the differences of volatile organic compounds (VOCs) among the three types of rice. Analysis of variances showed that apparent amylose content (AC), total protein content (PC), alkali spreading value (ASV), RVA profiles, and appearance (ACR), palatability (PCR), and sensory evaluation value (SEV) of cooked rice and texture of cooled cooked rice (TCCR) were mainly affected by genotypic variation, whereas the smell of cooked rice (SCR) was mainly affected by environment (p < 0.05). The G × E effect was significant for most parameters. The weather in the middle and late periods of filling had important effects on the formation of rice quality, especially on setback (SB) and pasting temperature (PT) (p < 0.01). They were negatively correlated with the texture of cooked rice (TCR) and SEV (p < 0.05). Peak viscosity (PV) and breakdown (BD) were positively related to the sensory evaluation parameters (p < 0.01) and could be used to predict cooked rice quality. A total of 59 VOCs were detected, and indica, japonica and indica–japonica had 9, 6 and 19 characteristic compounds, respectively. The principal component analysis showed that the physicochemical and sensory properties and VOCs of indica–japonica rice were more stable than those of indica and japonica rice at ten locations in Zhejiang Province. It is helpful for rice breeders to understand how the environment affects the physicochemical, sensory properties and VOCs of the three rice types, and it is also important for food enterprises to provide rice products with stable quality.
Comparison of Germination–parboiling, Freeze–thaw Cycle, and High Pressure Processing on the Cooking Quality of Brown Rice

Abstract:Three treatments, namely, germination-parboiling (GP), freeze-thaw cycle (FTC), and high pressure processing (HPP) were compared for different qualities of brown rice (BR): appearance characteristics, cooking time and texture, and compared with those of untreated BR and white rice. All these three methods significantly (p < .05) reduced cooking time by 12-23% and hardness of cooked BR by 17-23% (except GP), but reduced chewiness and generated some cracks in rice kernel. Moreover, GP process resulted in the best springiness and chewiness, FTC held the original lightness of BR well and had loose structure after cooking, while HPP (500 MPa) showed the lowest cooking time and cooking loss. The results of this study show that these three treatments could improve majority of the cooking qualities of BR and provide better commercial processing opportunities. Practical applications This study successfully tackles the rough cooking properties of BR via three treatments: germination-parboiling (GP), freeze-thaw cycle (FTC), and high pressure processing (HPP). Among them, GP and HPP have been adopted for commercial applications and the products are getting increasingly accepted by Chinese consumers. FTC is a simple and effective processing method, which is rarely reported, and the expected cost of its equipment is less than 1/10 of that for HPP and 1/3 of GP. This research provides incentives for farmers and food processors to increase their incomes and it can also promote the development of whole grain foods focused to improve the health of consumers.

Abstract:Postharvest operations, such as drying, storage, and milling, have been used to ameliorate the aging of rice grains and to achieve and maintain desirable rice grain quality, and thus play a key role in determining rice commercial quality and value. This review summarizes publications from the past decade and outlines the evidence supporting attribution of grain quality changes induced by postharvest processes to changes in the physical properties and chemical composition of the rice grain (starch, protein, lipids, and antioxidants). Rice drying mainly affects rice milling quality as rice kernel fissuring that may occur during drying leads to head rice yield reduction. Rice grain aging occurring during storage is inevitable and responsible for the changes in rice appearance, milling, eating, cooking, and nutritional quality. As milling significantly changes the chemical composition of rice by removing protein- and lipid-rich bran layers, milling can alter the aging process of rice and also affect rice appearance, eating, and sensory quality, but mainly affects the nutritional quality. Therefore, drying methods, storage conditions, and milling methods warrant further research to achieve and maintain the desired rice grain quality. This review may contribute to better understanding of the impacts of postharvest processes on rice grain quality, and provide insights into potential improvements in these practices for rice production and utilization in the whole rice industry.

Abstract:Investigation on stability of rice-eating quality, including luster, viscosity, tenderness, elasticity and integrated valueof organleptic evaluation (IVOE) of 18 varieties wascarried out using additive main effects and multiplicative interaction (AMMI) model in three sites and two years. Eighteen tested varieties were further clustered and evaluated based on the phenotypic values of five palatability properties and IPCA 1-3 from the AMMI analysis. Results showed that genotype by environment interactions and the eating quality differences between different genotypes, sites and years were all significant at 1% level. Meanwhile, different cultivations could significantly affect the five rice-eating quality traits with the samedirection, namely, green food cultivation organic cultivation common cultivation high production cultivation. In general, the five palatability properties and their stability in Japonica varieties were better than those of Indica varieties. Five Japonica varieties and four Indica varieties, which included W002, Zaofeng9, Wuyujing3, Guanglingxiangjing, Yanjing5, 3004, Fengyouxiangzhan, R405, Nanjing16, had good eating quality and high stability. In consideration with the grain production, appearance quality, etc., W002, Fengyouxiangzhan and Nanjing16 could be applied as breeding parents to improve the eating and appearance quality and their stability of elite rice.

Abstract:Drying rice in a single layer in a silo-dryer-aerator allows uniform drying. The objective of this study was to evaluate the physical, physicochemical, and morphological quality of rice grain cultivars (IRGA 424, BRS Pampeira, and Guri INTA) in the lower (initial time) and upper (final time) layers in a silo-dryer-aerator, employing single-layer loading at low temperatures, using the methods of near-infrared spectroscopy, X-ray diffraction analysis, scanning electron microscopy, and multivariate statistical analysis. Drying rice in silo-dryer-aerator attenuated the moisture diffusivity in the grains, minimizing its effects on the physical, physicochemical, and morphological properties of the grains. However, the physicochemical constituents and morphology of starch were preserved by the low drying temperatures, mainly in the lower layers throughout the 2-month drying. The rice grains of the Guri INTA and BRS Pampeira cultivars were the most resistant to drying and showed greater uniformity on the final quality.

Abstract:Brown rice (BR) and brown rice germinated (GBR) for different times (0 hr, BR; 5 hr, GBR5; 9 hr, GBR9) were high pressure (HP) processed at 200-600 MPa for 10 min. Swelling, rheological, pasting and textural properties, and microstructural changes that are important in the cooking quality of BR flour were investigated. Germination and HP contributed to restricting swelling. The germination treatment induced more severe HP modifications. The 10 min treatment at 400 MPa was found to be the most desirable HP condition. Besides, the germination process reduced the viscosity and hardness, while HP resulted in enhancing them. Further, the setback and break down pasting property values decreased after germination and HP. Changes in starch granule size and flour structure due to germination might be responsible for the different effects of HP among samples. The results from this study can help to design diversified GBR-based products with enhanced cooking qualities. Practical applications Consumers are interested in brown rice (BR) because of its high nutritive value with multiple bioactive components and leading to health benefits. Basing on a systematic evaluation of germination and high pressure (HP) treatments effects on swelling, rheological, pasting, textural and structural properties of BR flour, this study not only developed new modification methods for promoting rheological behavior of BR flour, but also provided opportunities for better use BR flour as the principal material for developing new food products for particular requirements. Results showed that germination and HP treatment conditions can be selected to obtain flour with desirable characteristics for specific consumer/producer demand.
Effect of Dehydrating Agent Application on Hybrid Rice Seed Quality

Abstract:Reducing the moisture content (MC) of hybrid rice seeds during the late maturation stage will reduce seed drying costs and losses due to pre-harvest sprouting (PHS), and enable earlier harvesting. Six different dehydrating agents, (A) 20% lishougu, (B) 20% paraquat, (C) 20% diquat + assisting agents-1, (D) 20% diquat + assisting agents-2, (E) 20% diquat + assisting agents-3 and (F) 20% diquat + assisting agents-4 were used for hybrid rice seed desiccation prior to harvesting. The changes in seed moisture content (MC), seed physiology, biochemistry and seed vigour were studied after the application of the dehydrating agents. Seed viability and vigour were also tested after six months storage. The relative transcription level of 64S Hsp18.0 gene was significantly down-regulated in the control; in contrast, it was significantly up-regulated after the application of dehydrating agents. The MC of seeds harvested six days after application of dehydrating treatments A, B and F was significantly reduced, by 5.9, 7.9 and 5.3%, respectively. The activities of superoxide dismutase (SOD), peroxidase (POD) and catalase (CAT) were significantly changed during dehydration of hybrid rice seeds. The content of soluble protein showed no significant change after the application of dehydrating treatments E and F. Dehydrating treatment F had no detrimental effect on the thousand-seed weight, germination percentage and germination energy before and after storage. The results suggest that dehydrating treatment F can be used in hybrid rice production during seed maturation.

Abstract:Water absorption, color, morphology and cooked texture of brown rice were evaluated after selected soaking (30–50 °C, 30 min) and high pressure treatment (HPT) (100–500 MPa; single or two cycle; total holding time 10 min). Water absorption ratio and lightness values of brown rice were increased by soaking and HPT. Hardness and gumminess values of cooked brown rice were reduced while springiness and cohesiveness were elevated by HPT. Scanning electron microscopy indicated that HPT improved the texture of brown rice by disrupting the structure of rice bran layer, which allowed easier water penetration into the rice grain during cooking. Moreover, the two cycle HPT resulted in lighter color and softer texture for cooked brown rice than single cycle HPT primarily caused by the more severe structural disruption of bran layer. Overall, two cycle HPT after soaking could potentially improve the quality of brown rice, taking about the same time as the single cycle HPT. Further, the quality improvements with the two cycle HPT were facilitated at lower pressure levels thereby providing better commercial processing opportunities.

Abstract:Various post-harvest processes of rice are commonly employed, especially during the off-season, to ensure its consumption feasibility, which often affect the grain quality. Different forms of drying, storage and processing of rice are evaluated to identify their effects on grain quality. Microwave drying has emerged as an alternative to the widely-used intermittent-drying and fixed-bed-dryer methods of drying paddy rice. Control of drying-air temperatures (between 40°C and 60°C) according to the rice variety can improve quality, especially for exotic varieties. Keeping stored grain in hygroscopic balance, with water content between 11% to 15%, at temperatures between 16°C and 20°C and with intergranular relative humidity near 60%, allows 12 months of storage in a controlled environment without significant deterioration. Other innovations, notably the application of artificial refrigeration to grain stored in bulk in vertical cylindrical silos and the use of impermeable packaging for storage, ensure the conservation of grain mass. The different stages and equipments used to obtain polished, brown and parboiled rice result in significant changes in the nutritional value of rice because of the removal of the outermost layers of the grains. Polishing reduces the nutritional value and physical homogeneity of rice. Brown rice retains more bioactive compounds and nutrients because it does not lose the outer layer of the grains in the polishing processes. Parboiled rice, although less nutritious than brown rice, has better grain integrity and milling yield and less loss of nutrients than white rice.

Influences of emerging drying technologies on rice quality

Abstract:Rice is an important staple food in the world. Drying is an important step in the post-harvest handling of rice and can influence rice qualities and thus play a key role in determining rice commercial and nutritional value. In rice processing, traditional drying methods may lead to longer drying times, greater energy consumption, and unintended quality losses. Thus, it is imperative to improve the physical, chemical, and milling properties of rice while preserving its nutritional value, flavor, and appearance as much as possible. Additionally, it is necessary to increase the efficiency with which heat energy is utilized during the thermal processing of freshly harvested paddy. Moreover, this review provides insights into the current application status of six different innovative drying technologies such as radio frequency (RF) drying, microwave (MW) drying, infrared (IR) drying, vacuum drying (VD), superheated steam (SHS) drying, fluidized bed (FB) drying along with their effect on the quality of rice such as color, flavor, crack ratio, microstructure and morphology, bioactive components and antioxidant activity as well asstarch content and glycemic index. Dielectric methods of drying due to volumetric heating results in enhanced drying rate, improved heating uniformity, reduced crack ratio, increased head rice yield and better maintain taste value of paddy grains. These novel emerging drying techniques increased the interactions between hydrated proteins and swollen starch granules, resulting in enhanced viscosity of rice flour and promoted starch gelatinization and enhanced antioxidant activity which is helpful to produce functional rice. Moreover, this review not only highlights the existing challenges posed by these innovative thermal technologies but also presents potential solutions. Additionally, the combination of these technologies to optimize operating conditions can further boost their effectiveness in enhancing the drying process. Nevertheless, future studies are essential to gain a deeper understanding of the mechanism of quality changes induced by emerging processing technologies. This knowledge will help expand the application of these techniques in the rice processing industry.

Abstract:Fermentation substrates of rice with different milling degrees (MDs) were prepared and fermented with human feces to compare their fermentation properties and effects on gut microbiota. MD 0s, MD 5s and MD 60s represented brown rice, moderately-milled rice and white rice, respectively. After in vitro fermentation, the MD 5s group showed higher starch utilization, compared with the MD 0s and 60s groups evaluated by Fourier transform infrared spectrometer, and confocal laser scanning microscope. Effects of fermentation substrates of rice with different MDs on gut microbiota were evaluated by 16S rDNA sequencing. All the sample groups reduced the pH and produced short-chain fatty acids (SCFAs) and branched-chain fatty acids. The MD 5s group exhibited higher α-diversity than the MD 0s and 60s groups. Abundances of Phascolarctobacterium, Blautia and norank_f_Ruminococcaceae were higher in the MD 0s and 5s groups, compared with the MD 60s group. These bacteria were also positively correlated with the SCFAs production via Spearman correlation analysis. In vitro culture assay revealed that fermentation substrates of MD 0s and 5s promoted the growth of two probiotics (Akkermansia muciniphila and Bifidobacterium adolescentis). Our results showed that moderate milling might be an appropriate way to produce rice products with richer nutrients and better fermentation properties.

Abstract:Effects of varying degree of milling (DOM) (0-22%) on the bran layer structure, physicochemical properties, and cooking quality of brown rice were explored. As the DOM increased, bran degree, protein, lipid, dietary fiber, amylose, mineral elements, and color parameters (a* and b* values) of milled rice decreased while starch and L* value increased. Microscopic fluorescence images showed that the pericarp, combined seed coat-nucellus layer, and aleurone layer were removed in rice processed at DOM of 6.6%, 9.2%, and 15.4%, respectively. The pasting properties, thermal properties, and palatability of rice increased as the DOM increased. Principal component and correlation analysis indicated that excessive milling lead to a decline in nutritional value of rice with limited impact on enhancing palatability. Notably, when parts of aleurone cell wall were retained, rice samples exhibited high cooking and sensory properties. It serves as a potential guide to the production of moderately milled rice.

Abstract:The objective was to study the drying characteristics and milling quality of rough rice subjected to single-pass drying while controlling kernel material states. Drying experiments were conducted at 60, 70, and 80°C and relative humidities ranging from 13 to 83%. For all drying air temperatures and tempering conditions, milling quality was not significantly different from the controls when the relative humidity of the drying air was maintained above 63% (kernel core and surface maintained in a rubbery state) and rice was tempered immediately after drying, in sealed plastic bags and at the drying air temperature, for at least 60 min.

Assessment of One-Pass Drying of Rough Rice with an Industrial Microwave System on Milling Quality

Abstract:Abstract. The volumetric heating phenomenon of microwaves has the potential to dry rough rice rapidly with reduced inter-kernel rice temperature and moisture content (MC) gradients thereby minimizing rice fissuring and maintaining milled rice quality. The objective of this study was to determine the feasibility of using an industrial-type microwave heating system to achieve one-pass rice drying with minimum implications on rice milling quality, especially the head rice yield. Freshly-harvested, medium-grain rough rice samples (cv. Jupiter) at initial moisture content (IMC) of 23% to 24% (wet basis) were heated using an industrial microwave system with a frequency of 915 MHz and set to transmit energy to rice at power levels of 2, 5, 10, and 15 kW for durations of 1, 2, 3, and 4 min. The effects of natural air and forced air cooling and tempering of the rice after microwave treatments on moisture removal and head rice yield reduction were determined. The goodness of fit of linear, quadratic, and cubic models to describe the kinetics of the head rice yield reduction due to the treatments were determined. Results showed that microwave treatments at power levels of 5 and 15 kW for 4 and 1 min, respectively, bore much promise in decreasing the rice MC to 13.0% (wet basis) for a rice bed thickness at 0.03 m. Supplying microwave energy of up to 600 kJ/kg grain followed by 4 h of tempering at 60°C dried the rice to final MCs of 14% to 16%, and the resulting head rice yield was not significantly (p >0.001) different from that of rice dried with natural air at 25°C and relative humidity of 65%. Without a tempering step, microwave heating with energy input exceeding 300 kJ/kg-grain resulted in head rice yield that was 20 percentage points lower than that of the control samples. The cubic model best fitted the correlations of specific energy input and the head rice yield with Root Mean Square Errors (RMSE) of 1.19%, 4.70%, and 5.56% and coefficients of determination (R 2 ) of 0.597, 0.911, and 0.889 for treatment with microwave heating followed by tempering and natural air cooling, microwave heating followed by forced air cooling, and microwave heating followed by natural air cooling, respectively. The marginal reduction in head rice yield, especially resulting from microwave heating followed by tempering treatment, provided a strong justification to optimize the treatments to achieve commercially viable rough rice drying throughput; it was concluded that such endeavors may have immediate applications, especially in rice parboiling operations which typically require rapid drying of rice at high initial moisture contents â€“ often greater than 24% wet basis.

Abstract:There were complicated biochemical changes in rice grains, and dry matter of rice was accumulated and moisture content of rice decreased gradually during rice maturity. Post-harvested rice grains were fractionated by kernel thickness with grader of slotted screen; there were differences of physical, physicochemical and milling characteristics among grains in various thickness sections. This fractionating process by kernel thickness improved uniformity among grains and applicability of processing product of rice, and the relative characteristics on fractionating process to rice grains could be applied in drying, storing and milling with better the applicability.

Abstract:This study investigates the interactive effects of processing parameters on the quality of milled rice using a one-step milling machine. Also, predictive models were generated using response surface methodology. The processing parameters were moisture content (10-14 % dry basis), shaft speed of rotation (600-900 rpm), and polishing time (1-3 min). The quality parameters evaluated were milling (head rice yield, percentage broken rice, fine broken rice, and milled rice yield), cooking (optimum cooking time, kernel elongation ratio, and width expansion ratio), and sensory (flavor, aroma, appearance, texture, and overall acceptability) properties. The results showed that the interactive effects of moisture content, shaft speed, and polishing time were significant (P < 0.05) on percentage broken rice, milled rice yield, fine broken rice, optimum cooking time, kernel elongation ratio, width expansion ratio, aroma, and appearance but was not significant on head rice yield, flavor, texture, and overall acceptability. These results were similar to the regression models generated. In conclusion, the interactive effects of these processing parameters affect all the cooking properties but not all milling and sensory properties while using a one-step milling machine.
Assessing Grain Quality Changes in White and Black Rice under Water Deficit

Abstract:Rice is an essential diet component for a significant portion of the population worldwide. Due to the high water demand associated with rice production, improving water use efficiency and grain quality is critical to increasing the sustainability of the crop. This species includes rice varieties with diverse pigmentation patterns. Grain quality, including industrial, nutritional, and functional quality traits, of two black rice genotypes and a commercial white rice cultivar were evaluated in different locations and under different water regimes. Flooding produced higher grain weight compared to alternate wetting and drying irrigation. A high correlation was found between grain color, total phenolic content (TPC), and antioxidant activity. The black rice genotypes showed higher TPC levels and antioxidant capacity, mainly due to higher levels of cyanidin 3-O-glucoside. The phenolic profile varied between whole and polished grains, while mineral composition was influenced by location and irrigation regime. In turn, the environment influenced grain quality in terms of industrial and nutritional characteristics, with significant differences in quality between whole and polished grains. This study provides valuable information on the genotype–environment relationship in rice and its effect on grain quality, which could contribute to selecting genotypes for an appropriate environment.

Abstract:This study evaluated the changes in physicochemical properties and appearance quality of long-grain rice during the grinding process using image technologies and aimed to provide reference for future research. The brown rice milling process was divided into three stages, and flatbed scanning, scanning electron microscopy (SEM), X-ray micro-computed tomography (micro-CT), low-field nuclear magic resonance (LF-NMR), and headspace-gas chromatography-ion mobility spectrometry (HS-GC-IMS) were employed to examine the physicochemical and volatile properties of the samples. Results revealed a continuous increase in the degree of milling, with a broken rice rate and a whiteness value increasing by 50.84% and 21.13%, respectively, compared with those during the initial stage; dietary fiber and vitamin B1 contents were reduced by 54.41% and 66.67%, respectively. The image results visualized showed that the cortex of brown rice was gradually peeled off with the increase in milling degree; the cortical thickness was gradually reduced, the endosperm was gradually exposed, and the surface was smoother and shinier. T2 populations exhibited a shift toward longer relaxation times, followed by a decrease in relaxation time during the milling process. Additionally, 31 target compounds impacting rice flavor, mainly ketones, alcohols, and esters, were identified, and the concentration of volatile substances in the B region decreased with the reduction in the bran layer; the concentration of volatile substances in the C region provided rice flavor, which increased with the milling process. This study showed changes in the physicochemical properties and appearance quality of long-grain brown rice during milling. Furthermore, the use of various image processing techniques offers significant insights for optimizing processing parameters and enhancing overall quality and taste.
