Abstract:The effect of germination and parboiling treatment on distribution of water molecular, physicochemical profiles and microstructure of rice was investigated. The results showed that the water molecular was evenly distributed in rice kernel after germination, but after subjecting to parboiling treatment, mobile water molecular might be confined to small region, which diffused from the outer regions into the rice kernel core. The reason may be that parboiling treatment produced macromolecular matrix where dispersed amylose chains form double-helical associations between starch granules so that water molecular is restrained and not entrapped within the starch crystallites. Meanwhile, the changes of microstructure and distribution of water molecular may be attributed to softness of germinated rice and hardness of parboiling rice. In addition, parboiling treatment had significant (p < 0.05) effect on the physicochemical properties of germinated rice. The viscosity and pasting temperature significantly (p < 0.05) increased. The storage modulus (G′), loss modulus (G′′), tan δ and shear stress had lower value compared to untreated germinated rice. Colour difference significantly (p < 0.05) increased, the microstructure of surface became smoother and compacter.
Effect of Milling on in Vitro Digestion-Induced Release and Bioaccessibility of Active Compounds in Rice

Abstract:To investigate the impact of milling on the active components in rice, this study examined the stability of phenols, vitamin B1 (VB1), and alpha-aminobutyric acid (α-GABA) during cooking and digestion of rice and their distribution in digestive juices and residue by adjusting the degree of milling (DOM). The findings revealed that milling exacerbated the instability of γ-GABA during cooking and VB1 during digestion. Their total losses peaked at 19.76% and 39.53% as DOM respectively reached 6.07% and 8.06%. In vitro digestion combined with release mathematical models demonstrated the impact of milling on their bioaccessibility. This effect increased the small intestinal bioaccessibility of phenols and γ-GABA, whilst reducing that of VB1. This was attributed to milling-induced pre-gastric full release of VB1, which amplifies its intestinal susceptibility and induces its re-entry into digestive residues. In conclusion, this study recommends keeping DOM below 6.07% to optimize the bioaccessibility of these active compounds.

Abstract:Fermentation substrates of rice with different milling degrees (MDs) were prepared and fermented with human feces to compare their fermentation properties and effects on gut microbiota. MD 0s, MD 5s and MD 60s represented brown rice, moderately-milled rice and white rice, respectively. After in vitro fermentation, the MD 5s group showed higher starch utilization, compared with the MD 0s and 60s groups evaluated by Fourier transform infrared spectrometer, and confocal laser scanning microscope. Effects of fermentation substrates of rice with different MDs on gut microbiota were evaluated by 16S rDNA sequencing. All the sample groups reduced the pH and produced short-chain fatty acids (SCFAs) and branched-chain fatty acids. The MD 5s group exhibited higher α-diversity than the MD 0s and 60s groups. Abundances of Phascolarctobacterium, Blautia and norank_f_Ruminococcaceae were higher in the MD 0s and 5s groups, compared with the MD 60s group. These bacteria were also positively correlated with the SCFAs production via Spearman correlation analysis. In vitro culture assay revealed that fermentation substrates of MD 0s and 5s promoted the growth of two probiotics (Akkermansia muciniphila and Bifidobacterium adolescentis). Our results showed that moderate milling might be an appropriate way to produce rice products with richer nutrients and better fermentation properties.

Abstract:There needs to be more information concerning the effect of different milling methods on the physicochemical properties of whole-grain mung bean flour. Therefore, the physicochemical properties of whole grain mung bean flour were analyzed using universal grinders (UGMB), ball mills (BMMB), and vibration mills (VMMB). The results showed that the particle size of the sample after ultrafine grinding treatment was significantly reduced to 21.34μm (BMMB) and 26,55μm (VMMB), and the specific surface area was increased. The particle distribution was uniform to a greater extent, and the color was white after treatment. Moreover, the water holding capacity (WHC), oil holding capacity (OHC), and swelling power (SP) increased, and the bulk density and solubility (S) decreased. The Rapid Viscosity Analyzer (RVA) indicated that the final viscosity of the sample after ultrafine grinding was high. Furthermore, rheological tests demonstrated that the consistency coefficient K, shear resistance, and viscosity were decreased. The results of functional experiments showed that the treated samples (BMMB and VMMB) increased their capacity for cation exchange by 0.59% and 8.28%, respectively, bile acid salt adsorption capacity increased from 25.56 mg/g to 27.27 mg/g and 26.38 mg/g, and nitrite adsorption capacity increased from 0.58 mg/g to 1.17 mg/g and 1.12 mg/g.

Abstract:Differential Scanning Calorimetry(DSC) and Rapid Visco-Analyzer(RVA) were applied to determine the difference of gelatinization and pasting properties between the extractable protein and None-extractable protein milled rice flours using 4 typical early-indica rice grown in early season and late season,respectively.The result showed: the extractable protein rice flours had significantly higher onset temperature(T_(o)),peak temperature(T_(p)),conclusion temperature(T_(c)) and gelatinization enthalpy(⊿T) than None-extractable protein flours did in the DSC curves;Compared with None-extractable protein flours,the extractable protein milled rice flours exhibited lower Final Viscosity(FV) and Consistence and Setback,but higher Breakdown in RVA properties and shorter Peak time(PT).

Abstract:The pasting characteristics induced by different milling degrees on the cooking quality of quinoa were investigated. The results showed that significant variations were observed in the basic composition of quinoa with different milling degrees, which indicated the existence of effects due to the degree of milling. The combination of starch and water promoted the pasting of quinoa, and with increasing milling, quinoa textural properties tended to produce softer and more viscous. LF NMR results indicated that more water was present in the dense network formed by the starch gelatinization. Rheological properties further demonstrated that milling degree enhanced the interactions between starch molecules and correspondingly increased the energy storage modulus and loss modulus. The microstructures (SEM and CLSM) confirmed that the physical property changes in quinoa were attributed to a dense network structure caused by starch pasting, which was similar to the results of RVA. The higher the amylose/amylopectin ratio (between 0.113 and 0.167), the more pronounced the characteristic peaks. The different degrees of milling of quinoa changed the quinoa crystallinity. Consequently, the degree of milling improved the cooking characteristics and enhanced the physicochemical properties. These results help the quinoa processing industry to develop healthy quinoa products with moderate milling.

Abstract:Diets including rice and rice-cooking methods influence digestive processes and blood glucose control. In this research, the effects of three different treatments (high-temperature and low-pressure plasma cooking, high-temperature cooking at atmospheric pressure (traditional method), and high-temperature cooking at high pressure) on the texture, color, molecular structure, infrared spectrum, microstructure, debranching enzyme activity, amylopectin content, glycemic index (GI), and in vitro starch digestibility of two rice varieties were studied. The results showed that the hardness, elasticity, viscosity, and chewability of rice after the high-temperature and low-pressure plasma treatment had no obvious changes compared with the traditional cooking method. A SEM analysis showed that the physical properties of the hydrophilicity on the surface of the rice increased after the high-temperature and low-pressure plasma treatment; the debranching enzyme activity reached 3.88 U/g (Xiantao rice) and 3.81 U/g (Heyuan rice), respectively, the amylose content of raw rice reached 68.77 mg/mL (Xiantao rice) and 64.92 mg/mL (Heyuan rice), which increased by 43.31 mg/mL and 39.46 mg/mL, respectively, and the GI was within the medium glycemic index of 56–69. The resistant starch in the Heyuan and Xiantao rice varieties amounted to 88.60 ± 3.10% and 89.40 ± 3.58%, respectively, after the high-temperature and low-pressure plasma processing method. The results showed positive effects and application potential for the cooking method in respect of diabetic consumers.

Abstract:This study was designed to evaluate the effects of different rice nutrient compounds on steamed bread's nutritional characteristics and sensory evaluation. The mixture design approach was used to research the interactions between different rice flours and wheat flours on the sensory evaluation of steamed bread. The arginine content of different rice flours (long-grained rice, polished round-grained rice, and black rice) was higher at 44.19%, 21.74%, and 34.78% than that of the common wheat, respectively. When the added amount of mixed rice flours exceeds 15%, the steamed bread gradually reduces its elasticity, sensory score, and has a smaller specific volume. Rice is a widely consumed grain product, which provides energy and nutrients for more than half of humanity, especially in Asia. Different rice varieties have received increased attention from researchers for their high bioactive substances and other health benefits. The results of the current study provide a theoretical basis for the nutritional steamed bread and noodle industries to use different rice flour as an ingredient for enhancing or to improve the nutritional value of flour products.

Abstract:Brown rice flour (BRF) and corresponding brown rice noodle (BRN) were prepared by different methods and the mechanism of impact of extruded rice bran on cooking stability of BRN was investigated. The particle size distribution, damaged starch content and pasting properties of BRFs were evaluated and the texture properties, microstructure and moisture distribution during cooking of BRNs were investigated. The average particle size and damaged starch of brown rice flour refilled with extruded rice bran (BRF-E) and brown rice flour refilled with nonextruded rice bran (BRF-NE) were obviously less than that of the brown rice flour by fully crushed brown rice (BRF-F). The peak viscosity (PV), setback viscosity (SV) and pasting temperature (PT) of BRF-E and BRF-NE were significantly higher than that of BRF-F. The results of scanning electron microscopy (SEM) and confocal laser scanning microscopy (CLSM) showed that the microstructure of BRN-E was most compact, which indicated that using BRF refilled with extruded rice bran to produce BRN could promote BRN formed a compact texture structure. Meanwhile, water migration and texture properties analysis demonstrated that BRN-E had better cooking stability and chewiness.

Abstract:The structural and functional properties of physical modified rice flour, including ultrasound treated rice flour (US), microwave treated rice flour (MW) and hydrothermal treated rice flour (HT) were investigated with wet-milled rice flour (WF) used as a positive control. The results showed the presence of small dents and pores on the rice flour granules of US and MW while more fragments and cracks were showed in HT. XRD and FTIR revealed that moderate ultrasonic treatment promoted the orderly arrangement of starch while hydrothermal treatment destroyed the crystalline structure of rice flour. In addition, the significant decrease of gelatinization enthalpy and the narrowing gelatinization temperature were observed in US. Compared to that of SF, adding physical modified rice flour led to a batter with higher viscoelasticity and lower tan δ. However, the batter added HT exhibited highest G′ and G′′ values and lowest tan δ, which led to a harder texture of bread. Texture analysis demonstrated that physical modified rice flour (except HT) reduced the hardness, cohesion, and gumminess of rice bread. Especially, the specific volume of bread with US increased by 15.6% and the hardness decreased by 17.6%. This study suggested that ultrasound treatment of rice flour could improve texture properties and appearance of rice bread.

Abstract:With the gradual stripping of cellulose and protein in the milling process, the proportion of starch gradually increased to 91.35 %. In particular, milling reduced the content of saponins from 5.06% to 0.23%. Milling increased the swelling power of quinoa flour but decreased the gelatinization enthalpy of quinoa starch. Accordingly, the microstructure of quinoa with higher milling degree after cooking was more uniform and denser. Fourier transform infrared (FTIR) analysis showed that starch-protein interaction was beneficial to protect the ordered structure of quinoa starch. The digestibility of protein and starch was interrelated, and the digestibility rate increased with the raising milling degree. By fitting the starch digestograms and combining the digestion kinetic model, three digestion patterns of quinoa starch during milling were determined. The results of the confocal laser scanning microscope showed that the physical barrier composed of protein matrix coated starch and starch-protein complex affected starch digestion.
Effect of the Ratio of Soluble and Insoluble Dietary Fiber from Rice Bran with Extrusion Cooking Treatment on Pasting, Thermal, and Structural Properties of Rice Starch Gel

Abstract:Compared with the unextruded rice bran SDF/IDF starch gel, the PV, FV, enthalpy, and hardness of the extruded rice bran SDF/IDF starch gel are decreased significantly with the increase of the SDF ratio. Rice starch with 25:75 ratio of SDF/IDF from extruded rice bran shows the lowest relative crystallinity, suggesting the stronger inhibition effect on rice starch retrogradation. This study aims to investigate the effect of different ratios of soluble and insoluble dietary fiber (0/100, 25/75, 40/60, 55/45, 70/30, 85/15, 100/0) in rice bran treated with or without extrusion cooking on the physicochemical and structural properties of rice starch. As the ratio of soluble dietary fiber (SDF) increases, the PV (peak viscosity), FV (final viscosity), SB (setback value), and BD (breakdown value) of starch are significantly decreased, indicating that a higher SDF ratio can delay the short‐term retrogradation of starch. Compared with the unextruded rice bran SDF/IDF starch gel, the content of weak bond water and free water in the extruded rice bran SDF/IDF starch gel is higher while the content of strong bond water in the starch gel is lower at the same SDF/IDF ratio. Meanwhile, for the results X‐ray diffraction (XRD) and fourier transform infrared spectrum (FTIR), the rice starch with the extruded rice bran SDF/IDF ratio of 25:75 shows the lowest relative crystallinity of 3.48% and the lowest peak to height ratio of FTIR (1047 cm−1/1022 cm−1) of 1.0746, suggesting that the inhibition effect on rice starch retrogradation is better. This may be beneficial for the utilization of different ratios of SDF/IDF from extruded rice bran and physicochemical properties improvement of rice starch gel.

Abstract:As a nutritious and ready-to-eat staple, reconstituted rice presents significant potential in food industry. This study investigated the impact of extrusion temperature on the physicochemical properties, eating quality, and digestibility of multigrain reconstituted rice. The morphology revealed that starch particles that not fully gelatinized in multigrain reconstituted rice are observed at an extrusion temperature range of 60-90 °C. As extrusion temperature increased, the degree of gelatinization (DG) enhanced, while the contents of water, protein, total starch, and amylopectin decreased substantially. Concurrently, the relative crystallinity, short-range order of starch, heat absorption enthalpy (ΔH) diminished significantly, and water absorption (WAI) and water solubility (WSI) increased markedly. Regarding eating quality, sensory evaluation displayed an initial increase followed by a decrease. Optimal sensory qualities, along with moderate hardness and viscosity, were achieved at extrusion temperatures between 90-100 °C. In terms of digestibility, the estimated glycemic index (eGI) ascended from 61.10 to 70.81, and the glycemic index (GI) increased from 60.41 to 75.33. In addition, the DG was significantly correlated with both eGI (r = 0.886**) and GI (r = 0.947**). The findings offer a theoretical reference for developing low GI, high-quality multigrain reconstituted rice.

Abstract:Resistant starch (RS) content was determined in 10 indica and japonica milled rices with different levels of amylose. The effect of microbial growth during starch digestion on the measurement of RS, and the correlation between physico-chemical characteristics and RS contents of milled rice were analysed. Results indicated a significant decrease (P<0.01) in assay values of RS after antibiotics addition, and the markedly decreased sample pH due to fermentation might be the main reason for errors in RS determination. Correlation analyses showed that RS contents of milled rice were closely related to amylose content (r=0.75, P<0.05) and protein content (r=0.78, P<0.01). No significant correlation existed between RS content and some relatively simple physical properties, such as width, shape and elongation ratio of rice grain, which were reported to be good indictors of rate of rice starch digestion, while a significant positive correlation was found between elongation ratio and digestible starch in cooked milled rice (r=0.67, P<0.05).

Abstract:Effects of varying degree of milling (DOM) (0-22%) on the bran layer structure, physicochemical properties, and cooking quality of brown rice were explored. As the DOM increased, bran degree, protein, lipid, dietary fiber, amylose, mineral elements, and color parameters (a* and b* values) of milled rice decreased while starch and L* value increased. Microscopic fluorescence images showed that the pericarp, combined seed coat-nucellus layer, and aleurone layer were removed in rice processed at DOM of 6.6%, 9.2%, and 15.4%, respectively. The pasting properties, thermal properties, and palatability of rice increased as the DOM increased. Principal component and correlation analysis indicated that excessive milling lead to a decline in nutritional value of rice with limited impact on enhancing palatability. Notably, when parts of aleurone cell wall were retained, rice samples exhibited high cooking and sensory properties. It serves as a potential guide to the production of moderately milled rice.

Abstract:In order to improve the retrogradation of rice starch (RS) and the quality of rice products, soy protein isolate (SPI), whey protein isolate (WPI), and rice flour were mixed and further extruded into mixed flour. The physicochemical properties and morphology of starch of extruded rice flour (ERS) and starch of extruded mixtures of SPI, WPI, and rice flour (SPI-WPI-ERS) were analyzed. The distribution of amylopectin chain length, molecular weight, microstructure, crystallinity, short-range ordered structure, pasting properties, and thermodynamic properties of RS, ERS, and SPI-WPI-ERS were measured. The results showed that, compared with rice starch, the proportion of long-chain starch, total starch content, and molecular weight were decreased in ERS and SPI-WPI-ERS, but the proportion of short-chain and amylose content was increased. The short-range order structure was destroyed. The water absorption of ERS and SPI-WPI-ERS was much higher than rice starch at 55 °C, 65 °C, and 75 °C, but lower than that of rice starch at 95 °C. Therefore, the retrogradation characteristics of SPI-WPI-ERS were improved. The setback of rice starch products was reduced and the setback of SPI-WPI-ERS was lower than that of ERS. Overall, the retrogradation of rice starch was delayed by adding exogenous protein and extrusion technology, and the application range of rice flour in staple food products was broadened.

Abstract:The effect of carboxymethyl cellulose (CMC), high-methoxyl pectin (HMP), konjac glucomannan (KGM), and xanthan gum (XG) on the physicochemical, structural properties, and digestibility of rice starch were investigated and compared. The four viscous soluble dietary fibers (VSDFs) increased the viscosity, storage modulus and loss modulus while decreased the pasting temperature and gelatinization enthalpy. Moreover, XG produced the lowest peak viscosity and dynamic modulus compared with the other VSDFs. Furthermore, the degree of short-range ordered structure of starch with KGM increased from 0.8448 to 0.8716; and the relative crystallinity of starch with XG increased by 12%. An ordered and reunited network structure was observed in SEM. In addition, VSDF inhibited the digestibility of rice starch and significantly increased the resistant starch content. The Possibility of Replacing Wet-Milling with Dry-Milling in the Production of Waxy Rice Flour for the Application in Waxy Rice Ball

Abstract:Due to the large consumption and discharge of water in wet milling, dry-milling is an alternative to produce waxy rice flour. The physical properties and sensory characteristics for preparing waxy rice balls in dry-milled waxy rice flour were compared in this study. The results showed that the damaged starch content increased significantly with the particle size of dry-milled flour, which decreased from 160 to 30 μm. The reduction in particle size increased the pasting viscosity of waxy rice flour, which further improved the stretch ability of dough and increased the viscoelasticity of the rice ball. The increase in damaged starch content directly led to a significant increase in the solubility of dry-milled flour, thereby increasing the freeze cracking rate of the rice ball and reducing its transparency, resulting in a decline in quality. In comparison with wet-milled waxy rice balls, dry-milled waxy rice balls made from rice flour in the range of 40 μm to 60 μm particle size had a similar texture and taste to that of wet-milled ones, moderate freeze cracking rate and better storage stability, as well as a stronger aroma of waxy rice that the consumer favored. GC-MS analysis showed that the content of key aroma compounds, such as grassy and fruity, noted nonanal in dry-milled flour, was 15–30% higher than that in the wet-milled depending on the difference of waxy rice variety. In conclusion, dry-milled waxy rice flour with a particle size in the range of 40 μm to 60 μm could be a candidate to replace wet-milled flour in the preparation of a waxy rice ball.

Effects of four kinds of improver on fermentation characteristics of gluten-free rice dough

Abstract:Rice is commonly utilized as a wheat bread substitute due to its low allergenicity. However, rice bread faces challenges in processing efficiency and the formation of a cohesive gel network structure, resulting in suboptimal taste Hence, this study compared four improvers-trypsin, whey protein (WPC), hydroxypropyl methyl cellulose (HPMC), and molecularly distilled monoglycerides (GMSs). The impacts of the four improvers on the processing attributes of rice dough were comprehensively assessed across fermentation, moisture content analysis, rheology, heat stability, and pasting characteristics. The findings indicated that the incorporation of trypsin, HPMC, and WPC resulted in 107%, 61%, and 1% increases in gas production of fermented rice dough, respectively, while reducing the regrowth values to 564.00 ± 7.21, 176.67 ± 0.58, and 611.00 ± 3.61 cP. Notably, the air-holding capacity of HPMC-fermented rice dough exhibited a 7% enhancement. All four types of improvers raised the enthalpy of melting (ΔH) and the difference in melting point (ΔT) of fermented rice doughs, with trypsin enhancing ΔH by 44% and ΔT by 40%. GMS, HPMC, and WPC increased the degree of water incorporation in fermented doughs. This study could serve as a benchmark for enhancing the fermentation attributes of rice dough and establish a groundwork for the future advancement of gluten-free dietary options. PRACTICAL APPLICATION: The thorough analysis conducted in this experiment provides a theoretical framework for rice dough preparation during the fermentation process, addressing the dietary needs of individuals with coeliac disease and those following a gluten-free diet. This study also paves the way for the development of improved gluten-free rice products in future research pursuits.
