Abstract:The dynamic changes of chemical composition in tea infusion released to water from tea leaf were studied,Also,we analyzed the changes of their concentrations within 24h standing,and discussed the extraction dynamics during holding and its influence on tea food safety. The results showed that contents of tea polyphenols, amino acids, thearubigin, theaflavin and catechins released into the tea infusion were not abviously changed with standing time.

Abstract:Background: Brewing is the final stage in tea consumption, which amplifies the original flavor or embellishes defects of tea infusion, turning drinking into a life attitude and an artistic pursuit. Nevertheless, present research focused on tea brewing is majorly about chemical compositions and sensory evaluation, which lacks a systematic framework that connects apparent phenomena, underlying principles, and technical applications. Besides, the daily methods employed for tea brewing primarily rely on experience because of lacking a systematic generalization of the scientific brewing design. Simultaneously, lacking targeted tea brewing technology leads to underexpressed tea qualities and is difficult to innovate tea brewing techniques. Scope and approach: In this review, the latest research progresses of the release principle, extraction and transformation process of tea chemical components, the effect of brewing parameters on sensory quality were summarized. Meanwhile, existing methods and potential pollutants during brewing were reviewed. Key findings and conclusions: According to brewing kinetics, more efficient brewing would be achieved by providing enough space for tea to swell (such as reducing the single tea particle size and the height of tea bed). Meanwhile, Non-fermented and lightly-fermented teas were recommended to be brewed with low total dissolved solids (TDS) and weakly acidic water, and higher fermented teas should be brewed with higher TDS water. Temperature, time and water/tea ratio affect the overall quality of tea infusion by affecting the leaching and conversion of tea polyphenols, caffeine and theanine. Moreover, innovative CBT processing technologies have been collated, including DLC, UAE, HHP, etc. In view of the above, an interconnected framework "brewing kinetics principles - key influencing factors - brewing technologies" was proposed, which lays a foundation for the brewing technologies. Based on this framework, the possible future research orientation was also prospected in this review, especially in the aspects of healthy activity, nanoparticles and additives.

Abstract:Shaking, essential in oolong tea production, is becoming an innovative method to impart floral fragrance. Research on shaking primarily concentrates on biological underpinnings, including modifications in gene expression and stress-triggered enzymatic catalysis, and consequent physicochemical properties. Water phase and distribution, reshaped by shaking and affected the biological and physicochemical alterations of tea leaves, is always ignored. This work utilized TEM, LF-NMR, UPLC-QqQ-MS, and GC-TOF-MS to explore physicochemical alterations during shaking. Results revealed shaking induced stomatal opening, water migration from stems to leaf veins, and a reduction in free water, transformed into bound water. Mechanical stimulation disrupted cell microstructures, including vacuoles, chloroplasts, and cell walls, releasing precursors and enzyme substrates. Shaking triggered intracellular physicochemical reactions that decreased polyphenols, amino acids, chlorophyll, and carotenoids, while increasing organic acids and sugars. Also catalyzed the synthesis of aromatic compounds like (E)-nerolidol, β-ionone epoxide, and α-farnesene, shaping the floral-fruity aroma and mellow taste of tea.

Abstract:Tea is one of the biggest categories of modern non-alcoholic beverages with health benefits. Through different processes, tea products are divided into six main types: green tea, yellow tea, white tea, oolong tea, black tea and dark tea. Metabolomics is helpful for the comprehensive, accurate and rapid determination of tea metabolites in different types of tea products and tea processing materials. It has been widely applied in studying the relationship of tea metabolites and its quality. Therefore, it is necessary to summarise the application of metabolomics in tea. In this review, we described and summarised (1) the main metabolites of six types of tea and their implications on tea quality with emphasis on the content differences in the main metabolites in different types of tea; (2) the research on optimising the key processing steps of six types of tea based on metabolomics and the discussion of various new strategies for effectively improving their quality and (3) the advanced approach to characterise and distinguish different grades of tea products via metabolomics. The current review offers guidance for the improvement of tea quality by metabolomics and its potential challenges.

Abstract:Although among the five main types of teas (white, green, oolong, black and pu-erh), black tea is the most consumed worldwide, an impressive number of scientific publications have been focused on green tea and its major compounds, flavan-3-ols (“catechins”). However, besides flavan-3-ols, there are other compounds present in tea that could be accounted as potential bioactive compounds. Therefore, the objective of the present review is to provide a new perspective on the health benefits associated with tea consumption by critically analyzing the available literature on the potential tea bioactive compounds and the current level of scientific evidence for these health benefits. Until now the exact mechanisms of action or compounds responsible for the health benefits associated with tea consumption have only been poorly investigated. It is important to consider that tea compounds will be extensively metabolized to different metabolites that will, most likely, be the compounds circulating in blood and potentially reaching the different sites of action.

Abstract:Tea is among the most important beverages globally. The spread of tea from the East to West has not only affected lifestyles, but also promoted the exchange of exchange between the East and West. Tea processing, which is critical for the development of tea flavor, includes multiple steps, such as withering, deactivation, rolling, fermentation (enzymatic oxidation) and post-fermentation. With the development of mechanical processing, tea has now become widely produced, both by hand-crafting and mechanical processing. Multiple components of tea, such as tea polyphenols, theanine, tea pigments and caffeine, have also been acquired by modern separation techniques. In traditional Chinese medicine, tea has long been documented as beneficial to health. Modern medical and nutritional studies have demonstrated that tea has many health benefits, acting to lower blood lipids, blood sugars, anti-inflammation, and anti-oxidation. To some extent, the activities of tea verified by modern medicine are consistent with the recordings in traditional medicine. Interdisciplinary theories, methods and techniques will contribute bridging knowledge contained within historical documents on tea and modern technology and science.

Abstract:In the mid-1800s, plantation-produced tea from India came onto the British market. Tea retailers blended this more malty and black tea with the lighter Chinese-grown tea to which consumers had become accustomed. By the turn of the 20th century, blending helped Empire-grown tea supplant Chinese-grown tea on the market. Scholars of tea have shown how British tea companies working in South Asia stoked racialized fears that Chinese tea arrived in Britain in an adulterated state, laden with impurities that included dyes, perfumes and even human sweat. This article describes how concerns about protecting tea leaves from outside adulteration gave way to concerns about the potential digestive threat that lay inside tea leaves themselves. Medical journals linked the increased consumption of Indian teas to a population-wide ‘epidemic’ of indigestion. The most cited culprits in this epidemic were tannins, chemical compounds that were also thought to give black tea its characteristic bitterness and color. The normalization of black tea consumption among the British public was not just a work of marketing or branding but a work of resolving uncertainty about what tannins were at a material, biophysical level. As this uncertainty was resolved scientifically, tea was materialized not as a singular, unified product but as an active chemical assemblage.

Abstract:This paper explores the cultural meaning of tea drinking for the literati in the later part of the Ming dynasty (around 1500-1644), using the pair ideas of tea as representing a lifestyle close to nature, and tea as a powerful representation of tasteful life in the society. The dual meanings of tea reinforce each other for the Ming literati, giving them the means and outlets to bolster their self-expression and to distinguish their identity in the social-cultural context of limited career opportunities. I examine the role of tea in tea books, tea-themed paintings, and Ming literati’s engagement in tea clubs and other related activities. This paper contributes to dialogues at the intersections of nature, culture, and history by treating tea as a nature-culture object, highlighting that the pursuit of nature is itself a form of cultural power.

Abstract:A bibliometric approach to assess trends in global tea research using literature in the Science Citation Index Expanded database from 1991 to 2014 has been conducted. Articles were analysed by scientific output and research performances of countries and institutions. The distribution of keywords in the articles' titles, author-supplied keywords and KeyWords Plus as well as citation and publication trends of tea-related articles was used to evaluate the research trends. The research output devoted to tea science increased greatly after the year 2002 indicating a paradigm shift that demonstrated that researchers became increasingly keen on biochemical relevance of active compounds in tea in mitigating emergent health challenges over classical tea research.

Abstract:In the process of adapting to the environment, tea plants (Camellia sinensis) endow tea with unique flavor and health functions, which should be attributed to secondary metabolites, including catechins, L-theanine, caffeine and terpene volatiles. Since the content of these flavor-contributing metabolites are mainly determined by the growth of tea plant, it is very important to understand their alteration and regulation mechanisms. In the present work, we first summarize the distribution, change characteristics of the main flavor-contributing metabolites in different cultivars, organs and under environmental stresses of tea plant. Subsequently, we discuss the regulating mechanisms involved in the biosynthesis of these metabolites based on the existing evidence. Finally, we propose the remarks and perspectives on the future study relating flavor-contributing metabolites. This review would contribute to the acceleration of research on the characteristic secondary metabolites and the breeding programs in tea plants.

Abstract:It is fascinating to reflect that tea, the world's most widely consumed beverage next to water, began in Chinese antiquity not as a beverage but as a medicine. Several millennia later, modern scientific research is confirming that such ancient intuition has relevance to contemporary health concerns including cancer, heart disease, and antibiotic-resistant bacteria. The timeliness of this message as the 20th century concludes could not be better. The importance of a balanced diet has been recognized and studied throughout this century. The concept that we are what we eat has become a part of popular culture. If tea's health message, which future scientific research will continue to articulate, is creatively presented and embraces the romantic image that tea affords the industry, there is every reason to expect a rebirth and reinvigoration of this ancient beverage as a new millennium commences.

Abstract:A symposium entitled "Chemistry, Flavor, and Health Effects of Tea" was held at the 256th American Chemical Society (ACS) Meeting in August 2018 in Boston, MA, U.S.A., and was sponsored by the ACS Division of Agricultural and Food Chemistry and the International Joint Laboratory on Tea Chemistry and Health Effects, Anhui Agricultural University, China. The purpose of the symposium was to bring together the leading tea researchers throughout the world to discuss the current state of knowledge as well as research needs with respect to chemistry and health beneficial properties of tea. Speakers from North America, Europe, and Asia delivered a total of 35 oral presentations. The presentations covered such diverse topics as polyphenol chemistry and flavor chemistry of tea, metabolomics application to identify the changes of phytochemical composition during processing, and health beneficial effects of drinking tea. This paper is intended to provide a brief summary of the presentations.
