Effects of high-speed shear homogenization on the emulsifying and structural properties of myofibrillar protein under low-fat condition.

Abstract:BACKGROUND Emulsification is important for food quality and processing functionality. Most emulsifications are realized under high-fat conditions that cause eventual health concerns. In addition, protein emulsifiers have drawbacks such as lower dispersity. Therefore, we studied the effects of different high-speed shear homogenization speeds on the emulsifying and structural properties of myofibrillar proteins under low-fat condition. RESULTS High-speed shear homogenization significantly increased emulsifying activity and emulsifying stability of myofibrillar proteins within lower speeds (8000 to 14 500 rpm). The primary structure of myofibrillar protein was not significantly altered by high-speed shear homogenization, whereas, its secondary, tertiary and quaternary structures were changed. The particle size decreased first and then increased significantly, and reached minimum when the high-speed shear homogenization speed was 14 500 rpm. The absolute values of zeta potential significantly increased and the dendritic fibrous structure of sample was destroyed when the speed of high-speed shear homogenization exceeded 14 500 rpm. High-speed shear homogenization (14 500 rpm) decreased the particle size and unfolded the protein, which improved the emulsifying properties of myofibrillar proteins. Excessive high-speed shear homogenization speed (20 500 rpm or higher) caused aggregation of myofibrillar protein molecules, which was not conducive to improve their emulsifying properties. CONCLUSION The speed of high-speed shear homogenization was achieved at 14500 rpm to modify the emulsifying and structural properties of myofibrillar proteins under low-fat conditions.
