What problem does this paper attempt to address?
The aim of this paper is to address the problem of simulating the real gastric emptying process in an in vitro digestion model. Specifically, the research team developed an advanced Dynamic Human Stomach In Vitro system (DHS-IV) to more accurately simulate the gastric emptying curve. By adjusting the system's operational parameters, such as peristaltic distance, pyloric opening size and frequency, and stomach tilt angle, the researchers attempted to optimize these parameters to achieve a gastric emptying curve consistent with theoretical data. Cheese was used as a difficult-to-empty food material in the experiments. By comparing the gastric emptying curve obtained from the in vitro experiments with the theoretical data in the literature, the effectiveness and accuracy of the system were validated. The research results indicate that this improved in vitro system can better simulate the structural changes and physicochemical properties of food in the stomach, which has practical significance for understanding the fate of food in the digestive tract and its impact on health.
