Abstract:As a pharmacal and edible vegetable,green asparagus is rich in many kinds of nutrients and widely welcome.At present,most of the asparagus produced in China are for exporting.But at ambient temperature,its extreme perishable property and high respiration rate seriously limit the shelf-life.Some proper preserving methods have been proved to reserve its fresh property effectively.Lately,there were a lot of studies and reports on green asparagus preserving which were summarized in this review.

Abstract:The market demand is directly affected by food freshness and the post-harvest spoilage of raw fresh foods,which causes incalculable economic losses and therefore motivates the development of preservation technologies.High voltage electric field (HVEF) is a safe and environment-friendly technology for food processing.HVEF is one of the most promising technologies to preserve raw fresh foods that requires very small energy consumption with no heat effect and only a small temperature increase in the processed foods and causes little effect on the quality of the foods themselves.This manuscript outlines the basic principle of HVEF and provides a systematic elucidation of its mechanism for preserving fruits and vegetables,aquatic products and meat products with respect to membrane potential,enzyme activities and microstructure.Furthermore,future research prospects are discussed.

Abstract:Edible fungi are well known for their rich nutrition and unique flavor. However, their post-harvest shelf-life is relatively short, and effective post-harvest preservation techniques are crucial for maintaining their quality. In recent years, many new technologies have been used for the preservation of edible fungi. These technologies include cold plasma treatment, electrostatic field treatment, active packaging, edible coatings, antimicrobial photodynamic therapy, and genetic editing, among others. This paper reviews the new methods for post-harvest preservation of mainstream edible fungi. By comprehensively evaluating the relative advantages and limitations of these new technologies, their potential and challenges in practical applications are inferred. The paper also proposes directions and suggestions for the future development of edible fungi preservation, aiming to provide reference and guidance for improving the quality of edible fungi products and extending their shelf-life.

Abstract:China has a large variety of edible mushrooms and ranks first in the world in terms of production and variety. Nevertheless, due to their high moisture content and rapid respiration rate, they experience constant quality deterioration, browning of color, loss of moisture, changes in texture, increases in microbial populations, and loss of nutrition and flavor during postharvest storage. Therefore, this paper reviews the effects of essential oils and plant extracts on the preservation of edible mushrooms and summarizes their mechanisms of action to better understand their effects during the storage of mushrooms. The quality degradation process of edible mushrooms is complex and influenced by internal and external factors. Essential oils and plant extracts are considered environmentally friendly preservation methods for better postharvest quality. This review aims to provide a reference for the development of new green and safe preservation and provides research directions for the postharvest processing and product development of edible mushrooms.

An Overview of Wild Edible Fungi Resource Conservation and Its Utilization in Yunnan

Abstract:As one of the province with the most abundant bio-diversity in China, Yunnan is also one of the most-concerned region in the world which is famous for its bio-diversity. The wild edible fungi resources in Yunnan are extremely rich and diverse, which account for nearly 40.7% of the world’s known resources and 90% of China’s known resource respectively. Serving as one important type of forest understory resource and product, the wild edible fungi has a large market due to its unique flavor, texture or special health care function. Therefore, sustainable utilization of the wild edible fungi resource is of paramount importance to develop the rural livelihood and furthermore conserve forest and animal resources in Yunnan. Integrating a large number of previous researches, this paper has summarized the current situations of edible fungi resources as well as the existing problems on production, food, medicine utilization, processing, trade and resource conservation inYunnan. Data showed that the wild edible fungi resources are playing extremely important roles on the peasant household incomes in the vast mountainous areas in Yunnan. For example, the fungi collection incomes can account for 50% to 80% of the household income in Xishuangbanna. However, the wild edible fungi resources are facing the problems of the reductions in resource types and quantities, unclear ownership, improper collection and conservation measures, unscientific management as well as other outstanding issues. The author point out that it is quite essential to clear the ownership, implement the community-based conservation strategies as well as to strengthen the researches on the scientific collection, conservation and breeding technologies in order to solve the problems in the effective conservation and sustainable utilization of the wild edible fungi resources in the future.

Abstract:The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years, focusing on a variety of technological approaches such as antimicrobial photodynamic therapy based on nanotechnology, electromagnetic radiation sterilization based on radiation technology, and antimicrobial peptides based on biomolecules. We also discuss the preservation mechanism and the application of the different methods to specific categories of products. We evaluated their advantages and limitations in the food industry, describing their development prospects. In addition, as microorganisms are the main causes of food spoilage, our review also has reference significance for clinical antibacterial treatment.

Abstract:Edible fungi have high edible, medicinal and economic value. Rapid development of the edible fungi industry can meet people's consumption demands. However, due to lack of suitable preservation technology after harvest, edible fungi are susceptible to mechanical damage, microbial infection, and discoloration, which could affect the quality and shelf life of fresh edible fungi. Many techniques have been developed to extend the postharvest storage time of fresh edible fungi and irradiation technology has been proven to be one of the potential technologies. This review summarizes the internal and external factors affecting the postharvest quality deterioration of edible fungi, introduces the types of irradiation preservation technology and describes comprehensive advances in the effects of irradiation on shelf life, microbiology, organoleptic qualities, nutritional qualities (proteins, fats, sugars and vitamins) and enzymatic activities of edible fungi from different regions and of different species worldwide. This review uncovers that the postharvest quality decay of edible fungi is a complex process. The irradiation preservation of edible fungi is affected not only by the edible fungus itself and the storage environment but also by the radiation type, radiation dose and radiation source conditions. Future studies need to consider the combined application of irradiation and other novel technologies to further improve the preservation effect of edible fungi, in particular in the area of irradiation's influence on the flavor of edible fungus.

Abstract:Fresh mushrooms have a long history of cultivation and consumption, but high postharvest losses are a concern in the commercial production of mushrooms worldwide. Thermal dehydration is widely used in the preservation of commercial mushrooms, but the flavor and taste of mushrooms are significantly altered after dehydration. Non-thermal preservation technology, which effectively maintains the characteristics of mushrooms, is a viable alternative to thermal dehydration. The objective of this review was to critically assess the factors affecting fresh mushroom quality after preservation is remarkable, with the ultimate goal of developing and promoting non-thermal preservation technology for preserving fresh mushroom quality, effectively extending the shelf life of fresh mushrooms. The factors influencing the quality degradation process of fresh mushrooms discussed herein include the internal factors associated with the mushroom itself and the external factors associated with the storage environment. We present a comprehensive discussion of the effects of different non-thermal preservation technologies on the quality and shelf life of fresh mushrooms. To prevent quality loss and extend the shelf life after postharvest, hybrid methods, such as physical or chemical techniques combined with chemical techniques, and novel nonthermal technologies are highly recommended.

Abstract:Background Edible mushrooms are nutritious, tasty and have a high edible and medicinal value which makes them very popular among people. Fresh mushrooms have high water content and crisp texture. They have strong metabolic activity after harvesting. So they are prone to textural changes, microbial infestation, nutritional and flavor loss and therefore, require appropriate post‐harvest processing and preservation. In addition, the quality, source, microbial contamination, physical damage and chemical residues are important factors affecting safety and quality during the processing and storage of edible mushrooms. Thus, these aspects should be tested carefully to ensure safety. Results In recent years, many new techniques have been used to preserve mushroom; these include: electrofluidic drying and cold plasma treatment, as well as some new packaging and coating technologies. In terms of detection, many new detection techniques, such as nuclear magnetic resonance and imaging technology, spectroscopy can be used as a rapid and effective means of detection. This paper reviews the new technological methods for processing and detecting the quality of mainstream edible mushrooms. It mainly introduces their working principles and application, and highlights the future direction of preservation, processing and quality detection technologies of edible mushrooms. Conclusion Adopting appropriate post‐harvest processing and preservation techniques can effectively maintain the organoleptic properties, nutrition and flavor of mushrooms. The use of rapid, accurate and nondestructive testing methods can provide a strong guarantee for food safety. At present, these new processing, preservation and testing methods have achieved good results, but at the same time there are certain shortcomings. So it is recommended that they also be continuously researched and improved, such as the use of new technologies and combinations of different technologies. This article is protected by copyright. Abstract:Edible mushrooms are favored by consumers for their excellent nutritional value and pharmacological properties. However, fresh mushrooms are highly perishable and undergo rapid quality deterioration induced by a series of intrinsic and extrinsic factors during postharvest storage. In recent years, the application of natural products derived from plants, animals, microorganisms, and other sources in mushroom quality preservation has drawn increasing attention. Compared to chemical preservatives, natural products show similar or higher biological activity and have few side effects on human health. This review summarizes the recent advances in the application of natural products used for quality maintenance of postharvest mushrooms. These natural substances mainly include essential oils, polyphenols, polysaccharides, bacteriocins, and other extracts. They have the potential to inhibit mushroom weight loss, softening, and browning, reduce the count of pathogenic microorganisms, and retain nutrients and flavor, effectively improving the quality of mushrooms and extending their shelf-life. The preservation techniques for natural products and their preservation mechanisms are also discussed here. Overall, this review provides current knowledge about natural products in edible mushroom preservation and aims to inspire more in-depth theoretical research and promote further practical application.

Abstract:Edible mushrooms are the highly demanded foods of which production and consumption have been steadily increasing globally. Owing to the quality loss and short shelf-life in harvested mushrooms, it is necessary for the implementation of effective preservation and intelligent evaluation technologies to alleviate this issue. The aim of this review was to analyze the development and innovation thematic lines, topics, and trends by bibliometric analysis and review of the literature methods. The challenges faced in researching these topics were proposed and the mechanisms of quality loss in mushrooms during storage were updated. This review summarized the effects of chemical processing (antioxidants, ozone, and coatings), physical treatments (non-thermal plasma, packaging and latent thermal storage) and other emerging application on the quality of fresh mushrooms while discussing the efficiency in extending the shelf-life. It also discussed the emerging evaluation techniques based on the various chemometric methods and computer vision system in monitoring the freshness and predicting the shelf-life of mushrooms which have been developed. Preservation technology optimization and dynamic quality evaluation are vital for achieving mushroom quality control. This review can provide a comprehensive research reference for reducing mushroom quality loss and extending shelf-life, along with optimizing efficiency of storage and transportation operations.

Abstract:ABSTRACT Shiitake mushroom (Lentinus edodes) is one of the most precious edible mushrooms. It has a variety of nutritional and bioactive compounds consumed as both food and medicine. Several preservation approaches were applied to avoid the short shelf-life of fresh shiitake mushroom. The present review aimed to comprehensively discuss the latest development in different preservation methods including drying, modified atmosphere packaging (MAP), coating, irradiation and fumigation techniques, and the effect on physicochemical and microbiological properties of shiitake mushroom during storage period. Various influences have been observed in physicochemical properties of shiitake mushroom such as sensory properties, weight loss, respiration rate, nutritional compounds (vitamins, sugars and proteins) and non-nutritional compounds (polysaccharides, phenols and volatile components). Additionally, the microbiological counts, the aerobic mezophilic bacterial count, yeasts and molds count, were reduced. Quality attributes were better maintained by synergistically treatment of two or more preservation approaches. The development of potentially novel preservation approaches should be considered in future trends.

Abstract:With the rising awareness of a healthy lifestyle, natural functional foods have gained much interest as promising alternatives to synthetic functional drugs. Recently, wild Agaricus bisporus (Lange) Sing. Chaidam has been found and artificially cultivated for its thick fresh body and excellent taste, with its antioxidant and anti-hypoxic abilities unknown. In this work, the antioxidant potential of its methanolic, 55% ethanolic, aqueous extracts and crude polysaccharide was evaluated in different systems. The results showed that polysaccharide was the most effective in scavenging ability on 2,2-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radicals, metal chelating activity and reducing power, with EC50 values of 0.02, 2.79, 1.29, and 1.82 mg/mL, respectively. Therefore, we further studied the anti-hypoxic activity of crude polysaccharide. The results turned out that polysaccharide (300 mg/kg) prolonged the survival time, decreased the blood urea nitrogen and lactic acid content as well as increased the liver glycogen significantly, compared with the blank control and the commercialized product Hongjingtian (p < 0.05). With such excellent activities, we purified the polysaccharide and analyzed its molecular weight (120 kDa) as well as monosaccharide components (glucose, fructose and mannose). This study indicated that wild Agaricus bisporus (Lange) Sing. Chaidam had strong potential to be exploited as an effective natural functional food to relieve oxidative and hypoxia stresses.
