Abstract:The efficiency of soft particles to stabilize emulsions is examined by measuring their desorption free energy, i.e., the mechanical work required to detach the particle from a fluid interface. Here, we consider rubber-like elastic as well as microgel particles, using coarse-grained molecular dynamics simulations. The energy of desorption is computed for two and three-dimensional configurations by means of the mean thermodynamic integration method. It is shown that the softness affects the particle-interface binding in two opposing directions as compared to rigid particles. On the one hand, a soft particle spreads at the interface and thereby removes a larger unfavorable liquid-liquid contact area compared to rigid particles. On the other hand, softness provides the particle with an additional degree of freedom to get reshaped instead of deforming the interface, resulting in a smaller restoring force during the detachment. It is shown that the first effect prevails so that a soft spherical particle attaches to the fluid interface more strongly than rigid spheres. Finally, we consider microgel particles both in the swollen and in the collapsed state. Surprisingly, we find that the latter has a larger binding energy. All results are rationalised using thermodynamic arguments and thereby offer detailed insights into the desorption energy of soft particles from fluid interfaces.

Softness Matters: Effects of Compression on the Behavior of Adsorbed Microgels at Interfaces

Abstract:Deformable colloids and macromolecules adsorb at interfaces, as they decrease the interfacial energy between the two media. The deformability, or softness, of these particles plays a pivotal role in the properties of the interface. In this study, we employ a comprehensive \emph{in situ} approach, combining neutron reflectometry with molecular dynamics simulations, to thoroughly examine the profound influence of softness on the structure of microgel Langmuir monolayers under compression. Lateral compression of both hard and soft microgel particle monolayers induces substantial structural alterations, leading to an amplified protrusion of the microgels into the aqueous phase. However, a critical distinction emerges: hard microgels are pushed away from the interface, in stark contrast to the soft ones, which remain steadfastly anchored to it. Concurrently, on the air-exposed side of the monolayer, lateral compression induces a flattening of the surface of the hard monolayer. This phenomenon is not observed for the soft particles as the monolayer is already extremely flat even in the absence of compression. These findings significantly advance our understanding of the pivotal role of softness on both the equilibrium phase behavior of the monolayer and its effect when soft colloids are used as stabilizers of responsive interfaces and emulsions.

Abstract:Using fluorescence microscopy we study the adsorption of single latex microparticles at a water/water interface between demixing aqueous solutions of polymers, generally known as a water-in-water emulsion. Similar microparticles at the interface between molecular liquids have exhibited an extremely slow relaxation preventing the observation of expected equilibrium states. This phenomenon has been attributed to "long-lived" metastable states caused by significant energy barriers $\Delta{\cal F}\sim \gamma A_d\gg k_B T$ induced by high interfacial tension ($\gamma \sim 10^{-2}$ N/m) and nanoscale surface defects with characteristic areas $A_d \simeq$ 10--30 nm$^2$. For the studied water/water interface with ultra-low surface tension ($\gamma \sim 10^{-4}$ N/m) we are able to characterize the entire adsorption process and observe equilibrium states prescribed by a single equilibrium contact angle independent of the particle size. Notably, we observe crossovers from fast initial dynamics to slower kinetic regimes analytically predicted for large surface defects ($A_d \simeq$ 500 nm$^2$). Moreover, particle trajectories reveal a position-independent damping coefficient that is unexpected given the large viscosity contrast between phases. These observations are attributed to the remarkably diffuse nature of the water/water interface and the adsorption and entanglement of polymer chains in the semidilute solutions. This work offers some first insights on the adsorption dynamics/kinetics of microparticles at water/water interfaces in bio-colloidal systems.

Abstract:Proteins are used in food technology as biological emulsifiers which stabilize the liquid/liquid interface by lowering the interfacial tension due to their amphiphilic character. Due to the rising use of sensitive animal- and plant-based proteins in the food industry, homogenization methods with low-shear and low mechanical and thermal stresses like premix-membrane emulsification got more and more attention. However, one drawback remains: the proteins tend to adsorb to the membrane surfaces causing problems like fouling and pore-blocking. Recently, it was also found that the adsorbed proteins alter the wettability of the system which is suspected to affect the droplet breakup [Giefer et al., “Impact of wettability on interface deformation and droplet breakup in microcapillaries,” Phys. Fluids 35, 042110 (2023)], but the mechanism behind is still unknown. The study addresses the question of the extent to which proteins influence droplet propagation in micro-capillaries within membrane emulsification. Protein adsorption at liquid/liquid and liquid/solid interfaces is considered within molecular dynamic simulations and the effect on the interfacial tension is quantified. Considering the Young–Dupré equation [M. E. Schrader, “Young-dupre revisited,” Langmuir 11, 3585–3589 (1995)], interfacial energies are converted into contact angles, which are validated with experimental studies. For this purpose, idealized pore structures are considered under variation of the dynamic contact angle, for which the Kistler equation [S. Kistler, “Hydrodynamics of wetting,” Wettability (CRC Press, 1993), Vol. 6] is used. The results show that the protein adsorption to liquid/solid interfaces alters the wettability. Computational fluid dynamics reveal the dependence of the droplet propagation and interfacial instabilities in dependence on the wettability.

Abstract:We investigate the conformation, position, and dynamics of core-shell nanoparticles (CSNPs) composed of a silica core encapsulated in a cross-linked poly-N-isopropylacrylamide shell at a water-oil interface for a systematic range of core sizes and shell thicknesses. We first present a free-energy model that we use to predict the CSNP wetting behavior at the interface as a function of its geometrical and compositional properties in the bulk phases, which gives good agreement with our experimental data. Remarkably, upon knowledge of the polymer shell deformability, the equilibrium particle position relative to the interface plane, an often elusive experimental quantity, can be extracted by measuring its radial dimensions after adsorption. For all the systems studied here, the interfacial dimensions are always larger than in bulk and the particle core resides in a configuration wherein it just touches the interface or is fully immersed in water. Moreover, the stretched shell induces a larger viscous drag at the interface, which appears to depend solely on the interfacial dimensions, irrespective of the portion of the CSNP surface exposed to the two fluids. Our findings indicate that tailoring the architecture of CSNPs can be used to control their properties at the interface, as of interest for applications including emulsion stabilization and nanopatterning.

Abstract:Soft nanoparticles hold promise as smart emulsifiers due to their high degree of deformability, permeability and stimuli responsive properties. By means of large-scale simulations we investigate the structural properties of nanogels at liquid-liquid (A-B) interfaces and the miscibility of the liquids inside the nanogels, covering the whole range of interfacial strength from the limit of single-liquid to the case of stiff interfaces. To study the role of the internal architecture and deformability of the nanogel we simulate a realistic disordered and an ideal regular network, for a broad range of cross-linking degrees. Unlike in previous investigations on liquid miscibility, excluded volume interactions are considered for both the monomers and the explicit solvent particles. The nanogel permeability is analysed by using an unbiased grid representation that accounts for the surface fluctuations and adds to the density profiles the exact number of liquid particles inside the nanogel. The better packing efficiency of the regular network leads to higher values of the total liquid uptake and the invasive capacity (A-particles in B-side and viceversa than in the disordered network, though differences vanish in the limit of rigid interfaces. Uptake and invasion are optimized at a cross-linking degree that depends on the interfacial strength, tending to 15 - 20% for moderate and stiff interfaces. As the interfacial strength increases, the miscibility inside the nanogel is enhanced by a factor of up to 5 with respect to the bare interface, with the disordered networks providing a better mixing than their ideal counterparts. The emerging scenario reported here provides general guidelines for tuning the shape, uptake, invasive, and mixing capacities of nanogels adsorbed at liquid-liquid interfaces.

The paradoxical behavior of rough colloids at fluid interfaces

Abstract:Colloidal particles adsorb and remain trapped at immiscible fluid interfaces due to strong interfacial adsorption energy, with a contact angle defined by the chemistry of the particle and fluid phases. An undulated contact line may appear due to either particle surface roughness or shape anisotropy, which results in a quadrupolar interfacial deformation and strong long range capillary interaction between neighboring particles. While each effect has been observed separately, here we report the paradoxical impact of surface roughness on spherical and anisotropic ellipsoidal polymer colloids. Using a seeded emulsion polymerization technique, we synthesize spherical and ellipsoidal particles with controlled roughness magnitude and topography (concave/convex). Via in situ measurement of the interfacial deformation around colloids at an air-water interface, we find that while surface roughness strengthens the quadrupolar deformation in spheres as expected by theory, in stark contrast, it weakens the same in ellipsoids. As roughness increases, particles of both shapes become more hydrophilic and their apparent contact angle decreases. Using numerical predictions, we show that this partially explains the decreased interfacial deformation and capillary interactions between ellipsoids. Therefore, particle surface engineering has the potential to decrease the capillary deformation by asymmetric particles via changing their capillary pinning as well as wetting behavior at fluid interfaces.

Abstract:Soft particles display highly versatile properties with respect to hard colloids, even more so at fluid-fluid interfaces. In particular, microgels, consisting of a cross-linked polymer network, are able to deform and flatten upon adsorption at the interface due to the balance between surface tension and internal elasticity. Despite the existence of experimental results, a detailed theoretical understanding of this phenomenon is still lacking due to the absence of appropriate microscopic models. In this work, we propose an advanced modelling of microgels at a flat water/oil interface. The model builds on a realistic description of the internal polymeric architecture and single-particle properties of the microgel and is able to reproduce its experimentally observed shape at the interface. Complementing molecular dynamics simulations with in-situ cryo-electron microscopy experiments and atomic force microscopy imaging after Langmuir-Blodgett deposition, we compare the morphology of the microgels for different values of the cross-linking ratios. Our model allows for a systematic microscopic investigation of soft particles at fluid interfaces, which is essential to develop predictive power for the use of microgels in a broad range of applications, including the stabilization of smart emulsions and the versatile patterning of surfaces.

Abstract:The reconfiguration of individual soft and deformable particles upon adsorption at a fluid interface underpins many aspects of their dynamics and interactions, ultimately regulating the properties of monolayers of relevance for applications. In this work, we demonstrate that atomic force microscopy can be used for the in situ reconstruction of the three-dimensional conformation of model poly( N -isopropylacrylamide) microgels adsorbed at an oil-water interface. We image the particle topography from both sides of the interface to characterize its in-plane deformation and to visualize the occurrence of asymmetric swelling in the two fluids. In addition, the technique enables investigating different fluid phases and particle architectures, as well as studying the effect of temperature variations on particle conformation in situ. We envisage that these results open up an exciting range of possibilities to provide microscopic insights into the single-particle behavior of soft objects at fluid interfaces and into the resulting macroscopic material properties.

Abstract:This paper reviews current work from our group on the mechanism of droplet break-up and coalescence. In order to do this a reflectance technique was used to measure the rate of coalescence for different emulsifier types and concentrations. It was shown that droplet coalescence in flow cannot be stopped by emulsifiers and the coalescence rate was unaffected by emulsifier type or concentration. However, addition of a high concentration of Pickering particles suppressed coalescence in flow, which can be explained by the associated high adsorption energy. If the interface is only partially covered by particles, this can result in phase inversion. These results were compared for several emulsification techniques: high pressure valve homogenisation, microfluidization and membrane emulsification. In contrast to previous studies it has been shown that membranes produce droplets smaller than the pore size, and this is only possible if the emulsifier has a fast adsorption rate.

Wetting and phase separation in soft adhesion

Abstract:In the classic theory of solid adhesion, surface energy drives deformation to increase contact area while bulk elasticity opposes it. Recently, solid surface stress has been shown also to play an important role in opposing deformation of soft materials. This suggests that the contact line in soft adhesion should mimic that of a liquid droplet, with a contact angle determined by surface tensions. Consistent with this hypothesis, we observe a contact angle of a soft silicone substrate on rigid silica spheres that depends on the surface functionalization but not the sphere size. However, to satisfy this wetting condition without a divergent elastic stress, the gel separates from its solvent near the contact line. This creates a four-phase contact zone with two additional contact lines hidden below the surface of the substrate. While the geometries of these contact lines are independent of the size of the sphere, the volume of the phase-separated region is not, but rather depends on the indentation volume. These results indicate that theories of adhesion of soft gels need to account for both the compressibility of the gel network and a non-zero surface stress between the gel and its solvent.

Abstract:Our understanding of the structural features of foams and emulsions has advanced significantly over the last 20 years. However, with a search for "super-stable" liquid dispersions, foam and emulsion science employs increasingly complex formulations which create solid-like visco-elastic layers at the bubble/drop surfaces. These lead to elastic, adhesive and frictional forces between bubbles/drops, impacting strongly how they pack and deform against each other, asking for an adaptation of the currently available structural description. The possibility to modify systematically the interfacial properties makes these dispersions ideal systems for the exploration of soft granular materials with complex interactions. We present here a first systematic analysis of the structural features of such a system using a model silicone emulsion containing millimetre-sized polyethylene glycol drops (PEG). Solid-like drop surfaces are obtained by polymeric cross-linking reactions at the PEG-silicone interface. Using a novel droplet-micromanipulator, we highlight the presence of elastic, adhesive and frictional interactions between two drops. We then provide for the first time a full tomographic analysis of the structural features of these emulsions. An in-depth analysis of the angle of repose, local volume fraction distributions, pair correlation functions and the drop deformations for different skin formulations allow us to put in evidence the striking difference with "ordinary" emulsions having fluid-like drop surfaces. While strong analogies with frictional hard-sphere systems can be drawn, these systems display a set of unique features due to the high deformability of the drops which await systematic exploration.

Comparison of solid particles, globular proteins and surfactants as emulsifiers

Abstract:The aim of this paper is to present a short overview of the main mechanisms operative in the formation and stabilization of emulsions by solid particles and, on this basis, to make comparisons between solid particles, surfactants and globular proteins as emulsifiers. When available, simple quantitative relations are presented, with the respective numerical estimates and discussion of the applicability of these relations to particle-stabilized systems. Non-obvious similarities between the different types of emulsifiers are outlined in several cases in which the description of the system can be performed at a phenomenological level. Examples are presented for the process of emulsification, where we show that several simple theoretical expressions, derived originally in the studies of surfactants and protein emulsifiers, can be successfully applied to particle-stabilized emulsions. In contrast, for the phenomena in which the detailed mechanisms of particle adsorption and film stabilization are important, the differences between the various emulsifiers prevail, thus making it impossible to use the same theoretical description. The most important specific characteristics of the solid particles which strongly affect their behavior are the high barrier to particle adsorption, high desorption energy and strong capillary forces between particles trapped in liquid films, which all originate in the relatively large particle size (as compared to the size of surfactant and protein molecules). The capillary mechanism of stabilization of liquid films by solid particles is reviewed in some detail, to emphasize its specific features and to demonstrate the applicability of several simple expressions for approximate estimates. Interestingly, we found that the hypothesis for some exceptionally high coalescence stability of the particle-stabilized emulsions is not supported by the experimental data available in literature. On the other hand, the particles are able to completely arrest the process of Ostwald ripening in foams and emulsions, and this effect can be easily explained with the high desorption energy of the particles and the resulting capillary effects.
Rotating Micro-Spheres for Adsorption Monitoring at a Fluid Interface

Abstract:Hypothesis: A broad range of phenomena, such as emulsification and emulsion stability, foam formation or liquid evaporation, are closely related to the dynamics of adsorbing colloidal particles. Elucidation of the mechanisms implied is key to a correct design of many different types of materials. Experiments: Microspheres forced to rotate near a fluid interface exhibit a roto-translational hydrodynamic mechanism that is hindered by capillary torques as soon as the particles protrude the interface. Under these conditions, the time evolution in the ratio of moving spheres provides a direct description of the adsorption kinetics, while microscopy monitoring of particle acceleration\deceleration informs about the adsorption\desorption dynamics. In this work, the proposed strategy is applied at an air/water interface loaded with spherical magnetic particles negatively charged, forced to rotate by the action of a rotating magnetic field. Findings: The proposed method enables the adsorption/desorption dynamics to be followed during the earliest phase of the process, when desorption of a small fraction of particles is detected, as well as to estimate approximated values of the adsorption/desorption constants. The results obtained show that the addition of a monovalent salt or a cationic (anionic) surfactant promotes (inhibits) both adsorption and formation of permanent bonds between particles.

Exploring the Free Energy Landscape To Predict the Surfactant Adsorption Isotherm at the Nanoparticle–Water Interface

Abstract:The long-lasting stability of nanoparticle (NP) suspensions in aqueous solution is one of the main challenges in colloidal science. The addition of surfactants is generally adopted to increase the free energy barrier between NPs and hence to ensure a more stable condition avoiding the NP sedimentation. However, a tailored prediction of surfactant concentration enabling a good dispersion of NPs is still an ambitious objective. Here, we demonstrate the efficiency of coupling steered molecular dynamics (SMD) with the Langmuir theory of adsorption in the low surfactant concentration regime, to predict the adsorption isotherm of sodium-dodecyl-sulfate (SDS) on bare α-alumina NPs suspended in aqueous solution. The resulting adsorption free energy landscapes (FELs) are also investigated by tuning the percentage of SDS molecules coating the target bare NP. Our findings shed light on the competing role of enthalpic and entropic interaction contributions. On one hand, the adsorption is highly promoted by the tail–NP and tail–tail nonbonded interaction adhesion; on the other hand, our results unveil the entropic nature of water and surfactant steric effects occurring at the NP surface and preventing the adsorption. Finally, a thorough analysis on the steering works emphasizes the role of the NP curvature in the FEL of adsorption. In particular, we show that, moving from a solid infinite flat surface to a nanoscale particle, a deviation from a Markovian dynamics of adsorption occurs in close proximity to a curved solid–liquid interface. Here, both the NP curvature effect and nanoscale morphology promote a modification of the thermodynamics state of adsorption with a consequent splitting of the free energy profiles and the identification of specific sites of adsorption. The modeling framework suggested in this Article provides physical insights in the surfactant adsorption onto spherical NPs and suggests some guidelines to rationally design stable NP suspensions in aqueous solutions.A novel methodology is presented for predicting the surfactant adsorption isotherm at low coverage on high-curvature nanoparticles by linking molecular dynamics and the Langmuir theory of adsorption.

Abstract:The distribution of surfactants in waterborne colloidal polymer films is of significant interest for scientific understanding and defining surface properties in applications including pressure-sensitive adhesives and coatings. Because of negative effects on appearance, wetting, and adhesion, it is desirable to prevent surfactant accumulation at film surfaces. The effect of particle deformation on surfactant migration during film formation was previously investigated by Gromer et al. through simulations, but experimental investigations are lacking. Here, we study deuterium-labeled sodium dodecyl sulfate surfactant in a poly(butyl acrylate) latex model system. The particle deformability was varied via cross-linking of the intraparticle polymer chains by differing extents. The cross-linker concentration varied from 0 to 35 mol % in the copolymer, leading to a transition from viscoelastic to elastic. Ion beam analysis was used to probe the dry films and provide information on the near-surface depth distribution of surfactant. Films of nondeformable particles, containing the highest concentration of cross-linker, show no surfactant accumulation at the top surface. Films from particles partially deformed by capillary action show a distinct surfactant surface layer (ca. 150 nm thick). Films of coalesced particles, containing little or no cross-linker, show a very small amount of surfactant on the surface (ca. 20 nm thick). The observed results are explained by considering the effect of cross-linking on rubber elasticity and applying the viscous particle deformation model by Gromer et al. to elastically deformed particles. We find that partially deformed particles allow surfactant transport to the surface during film formation, whereas there is far less transport when skin formation acts as a barrier. With elastic particles, the surfactant is carried in the water phase as it falls beneath the surface of packed particles. The ability to exert control over surfactant distribution in waterborne colloidal films will aid in the design of new high-performance adhesives and coatings.

Abstract:The wetting dynamics of liquid particles, from coated droplets to soft capsules, holds significant technological interest. Motivated by the need to simulate liquid metal droplet with an oxidize surface layer, in this work we introduce a computational scheme that allows to simulate droplet dynamics with general surface properties and model different levels of interface stiffness, describing also cases that are intermediate between pure droplets and capsules. Our approach is based on a combination of the immersed boundary (IB) and the lattice Boltzmann (LB) methods. Here, we validate our approach against the theoretical predictions in the context of shear flow and static wetting properties and we show its effectiveness in accessing the wetting dynamics, exploring the ability of the scheme to address a broad phenomenology.
