Abstract:Pulsed electric field (PEF) technology is an alternative to traditional food processing because this application can ensure good product quality and energy use efficiency. In PEF applications, the functional compounds extracted from food products can be enhanced, and the microorganisms contaminating the food products during processing can be inactivated. These properties are considered advantageous by alcoholic beverage producers. In this review, studies on the PEF treatment of wine, beer, and rice wine are summarized. The PEF technology is used in the pretreatment in grape wine and control of microbial growth in grape wine, beer, and rice wine. In grape wines, the PEF pretreatment can increase phenolic compound and anthocyanin contents and can enhance color intensity; this pretreatment slightly influences the organoleptic characteristics of samples. The PEF technology is also an effective tool to sterilize grape wine, beer, and rice wine. With this application, the quality of these three alcoholic beverages can be ensured because the PEF technology can be applied in the absence of heat. In addition, the main negative effect of PEF technology is discussed as well.

Abstract:As a non-thermal pasteurization process, pulsed electric fields (PEF) technology has been receiving wide attention. This rapid process can provide consumers with microbiologically safe, minimally processed, fresh-like products. The treatment chamber, which houses electrodes and delivers a high voltage to a food material, is one of the key components in the PEF pasteurization process. This paper mentions the current designs of the PEF treatment chambers, reviewing various configurations of static and continuous-flow treatment chambers, the effect of basic design parameters, and the performance of the optimized treatment system based on the existent chambers.

Abstract:As a non-thermal technology, pulsed electric field (PEF) treatment can be utilized in food processing and bioengineering for the inactivation of microorganisms and quality-degrading enzymes, as well as the retention of health-related compounds and the extension of shelf-life. Development of kinetic models that fit the degree of microbial inactivation and the loss of food quality is important to improve the efficiency of PEF treatment. The current review aims to provide an overview of the kinetic models used by PEF for microbial inactivation in liquid foods. Kinetics modeling for the destruction of microorganisms, inactivation of enzymes, retention of health-related compounds, and extension of shelf-life are discussed. Additionally, the fitting accuracy of several models, as well as issues that need further investigation, are discussed to promote further understanding and the deployment of PEF technology. Abstract:Dairy and plant-based proteins are widely utilized in various food applications. Several techniques have been employed to improve the techno-functional properties of these proteins. Among them, pulsed electric field (PEF) technology has recently attracted considerable attention as a green technology to enhance the functional properties of food proteins. In this review, we briefly explain the fundamentals of PEF devices, their components, and pulse generation and discuss the impacts of PEF treatment on the structure of dairy and plant proteins. In addition, we cover the PEF-induced changes in the techno-functional properties of proteins (including solubility, gelling, emulsifying, and foaming properties). In this work, we also discuss the main challenges and the possible future trends of PEF applications in the food proteins industry. PEF treatments at high strengths could change the structure of proteins. The PEF treatment conditions markedly affect the treatment results with respect to proteins' structure and techno-functional properties. Moreover, increasing the electric field strength could enhance the emulsifying properties of proteins and protein-polysaccharide complexes. However, more research and academia–industry collaboration are recommended to build highly effective PEF devices with controlled processing conditions.

Abstract:Pulsed electric field (PEF) processing of juice has been intensively studied with benchtop scale experiments. However, there is still limited information regarding critical factors to be considered for PEF efficacy in microbial reduction with PEF processing during pilot or commercial scale production of juice. In the present study, continuous benchtop (3.6-7.2 L/h) PEF processing systems with co-field treatment chambers and bipolar square waveform pulses were used and simulated production conditions were tested for pomegranate juice. Microbial reductions of Escherichia coli, as affected by PEF process conditions (field strength, pulse width, pulse frequency, total treatment time, input energy), production conditions (flow rate, juice holding time and temperature), and juice properties (pH, conductivity, particulate), were investigated. Flow rate, PEF process parameters, production conditions, type of target microorganism, and properties of juice significantly affected microbial reductions by PEF treatments. E. coli ATCC 35218, a non pathogenic surrogate bacterium, exhibited higher resistance to PEF treatments than E. coli 0157:H7 and E. coli K12 in pomegranate juice. Increase of a single PEF parameter (field strength, pulse width, pulse frequency, total treatment time, or energy input) is insufficient to achieve maximum microbial reduction. Optimal PEP treatment conditions for maximum microbial reduction depend on multiple factors including PEF processing parameters, production conditions and product properties. This study demonstrates that scale-up and validation studies in a specific PEF system for specific products are very important and necessary before successful commercial application of this novel technology is possible. Abstract:A great number of research works have demonstrated the feasibility of pulsed electric fields (PEF) technology as a novel treatment to obtain safe and high-quality foods with significant concentration of health-related compounds. PEF can be applied either as a preservation process with the potential to substitute conventional heat treatments or as a way to assist common industrial food processes with the aim of enhancing the characteristics of the final product and improving their efficiency in terms of processing time and yield. PEF application provides an excellent advantage to retain significant amounts of valuable compounds, due to its non-thermal nature, thus resulting in safe high-quality foods from both sensory and nutritional points of view, which is greatly appreciated by current consumers. This review gathers the most relevant information related to the application of PEF, using either high or moderate intensities of processing conditions, to different food matrices with the aim of enhancing their health-related attributes and improve the efficiency of some processes. The main challenges and opportunities for being implemented at industrial level are highlighted.

Abstract:The food processing industry is a continuously developing sector that uses innovative technologies to efficiently process food products. During processing, food industries generate substantial amounts of by-products in the form of waste materials. This food waste consists of organic matter rich in bioactive compounds, such as polyphenols, carotenoids, and flavonoids. Improper management of food waste can adversely affect both the environment and human health, leading to environmental pollution and the release of greenhouse gas emissions. Thus, proper food waste management has become an urgent global issue. The presence of bioactive compounds (mainly polyphenols, flavonoids, and anthocyanins, but also carotenoids, alkaloids, proteins, lipids, and carbohydrates) in food waste holds the potential to transform them into valuable resources. Several sectors, including food and energy, have recognized food waste as an innovative source. Recently, much emphasis has been placed on optimizing the extraction yield of such bioactive compounds through the utilization of environmentally friendly and sustainable methodologies and solvents. Pulsed electric field (PEF)-assisted extraction is an emerging technique that holds promise for the utilization of waste materials. PEF technology can efficiently optimize the extraction of valuable compounds within a shorter time while minimizing solvent and energy consumption. In this review, we provide a comprehensive overview of the current state of PEF technology and its implications for recovering bioactive compounds from food waste. The integration of innovative technologies like PEF in the food processing industry can play a crucial role in managing food waste sustainably, reducing environmental impact, and harnessing the full potential of bioactive compounds contained in these waste materials. The objective of this critical review is to provide an overview of the utilization of PEF pretreatment for food by-products and to conduct a comparative analysis with other extraction techniques.

Abstract:Pulsed electric field (PEF) is an innovative physical method for food processing characterized by low energy consumption and short processing time. This technology represents a sustainable procedure to extend food shelf-life, enhance mass transfer, or modify food structure. The main mechanism of action of PEF for food processing is the increment of the permeability of the cell membranes by electroporation. However, it has also been shown that PEF may modify the technological and functional properties of proteins. Generating a high-intensity electric field necessitates the flow of an electric current that may have side effects such as electrochemical reactions and temperature increments due to the Joule effect that may affect food components such as proteins. This article presents a critical review of the knowledge on the extraction of proteins assisted by PEF and the impact of these treatments on protein composition, structure, and functionality. The required research for understanding what happens to a protein when it is under the action of a high-intensity electric field and to know if the mechanism of action of PEF on proteins is different from thermal or electrochemical effects is underlying.

Abstract:Proteins are complex molecules, which play a vital role in our body's function, the building of tissues, and the regulation of metabolic activity. They are crucial to children's growth and serve as a key component in the body's process of distributing oxygen. Proteins fuel the body by supplying the required nutrition and energy. Currently, there is an increasing demand for proteins on large scales with no detrimental effects. The adverse health effects of animal proteins have resulted in a growing preference for plant-based proteins, which offer a healthier daily dosage. Valuable proteins can be extracted from various parts of the plant, including stems, leaves, seeds, fruits, vegetables, and roots. Notably, protein extraction from waste plant and mushroom parts minimizes the product wastage and improves the overall production to support economic sustainability. There are several protein extraction techniques available, where the replacement of non-thermal methods with thermal ones is promising nowadays due to the appreciable retainment of protein quality. Pulsed Electric Field (PEF) technology is one of the most efficient non-thermal tools used to assist with extracting these proteins at the minimum processing time and energy consumption when compared with thermal techniques. It relies on the application of a high-voltage pulse between two electrodes to treat samples inside the treatment chamber. While electrode shapes and treatment chamber designs primarily govern the electric field's application, optimizing process parameters such as electric field strength, pulse width, number of pulses, and pulse waveshape assists in obtaining a desirable enhancement in the protein yield. The primary objective of this review is to explain the PEF-assisted protein extraction process applicable to waste plant parts and deformed mushrooms. While PEF is not a novel concept, utilizing it as a pre-extraction treatment to the aforementioned waste resources would aid in improving the production of value-added protein products economically. So far, PEF has shown immense promise in assisting with protein extraction studies, but requires further research in order to establish this area for large-scale industrial applications.

Abstract:Pulsed Electric Fields (PEF) technology is an emerging non-thermal food processing technology that is widely used because of its low damage to food quality and its ability to kill harmful microorganisms in food. The oxidative stress caused by PEF results in the synthesis and accumulation of nutrients, and plant foods stimulated by PEF produce large amounts of Reactive Oxygen Species (ROS), which activate the metabolite synthesis pathway and eventually synthesize proteins, polyphenols, thioglucosides and carotenoids; ROS accumulate in the cell membrane of microorganisms and cause protein expression. The accumulation of ROS in the cell membrane of microorganisms can cause abnormal protein expression, damage the lipid layer and Deoxyribonucleic Acid (DNA), and eventually lead to microbial inactivation. PEF technology in food processing are multifaceted, enhancing both the nutritional value of food through the augmented presence of health-beneficial compounds and ensuring food safety by effectively inactivating harmful microorganisms. Abstract:The application of pulsed electric field (PEF) in food processing, has gained significant attention as a key non-thermal method. Studies have shown that PEF can not only effectively inactivate common microorganisms in fruit and vegetable juices without affecting the organoleptic quality, but also effectively promote the food drying and extraction of active substances, as well as the modification of macromolecules can be effectively realized by PEF, promoting the circular economy and the reuse of processing wastes. Over the past few years, PEF technology has made substantial progress, transitioning from laboratory and pilot plant stages to large-scale industrial applications. Future research is essential to optimize PEF parameters (e.g. field strength, pulse duration) for different food materials to maximize efficiency and effectiveness, facilitating the broader adoption of PEF technology in the industry. Understanding the molecular mechanisms underlying PEF-induced changes in food composition is also crucial. Moreover, conducting more pilot studies will help address practical challenges, enhancing the technology's suitability for industrial-scale applications. This paper aims to systematically review the achievements of the PEF technology in various fields of food processing over the past five years, detailing its working principles and addressing the challenges and future directions for its large-scale application.

Harnessing the Structure Modifying Potential of Pulsed Electric Fields (PEF) – Food Processing Examples in Product Stabilization, Process Acceleration and Compound Extraction

Abstract:Pulsed electric fields (PEF) can electroporate eukaryotic and prokaryotic cells which can be used in food processing for product preservation and extraction of intracellular components. In this paper a number of potential processing applications for PEF will be considered. These will include its incorporation in hurdle preservation strategies, its use in the termination of enzyme hydrolysis of proteins, its application in the waste stream valorization through enhancing compound extraction and also its potential for accelerating processes such as meat tenderization or curing. In terms of product pasteurization, the paired combinations of novel technologies examined certainly inactivated more microorganisms than each technology alone but the effect of the combinations was largely additive or overlapping with few examples of synergy. In addition some combinations introduced high specific energy into products (in some cases higher than conventional UHT). In terms of product sterilization, PEF applied at temperatures of 120°C gave a slight though not significant increase in spore inactivation compared to thermal treatments. The use of PEF for endoprotease inactivation in bioactive compound production also proved to be very promising and could have application in hydrolyses termination especially where the resultant bioactives are heat labile. PEF pre-treatments of potato peel and brewers spent grain increased the extraction of glycoalkaloids and β-glucans respectively which is promising as conventional methods for the extraction of these compounds are expensive and the market value of the target compounds is high. In terms of its application in meat processing, PEF can have a positive impact on meat tenderization, though ageing/conditioning is still necessary. It has also been shown to accelerate the curing of meat when it is applied as a pre-treatment prior to curing. Overall, these applications are all promising though it remains to be seen which of these niche areas are likely to achieve significant commercial uptake.

Abstract:Pulsed electric fields (PEF), a non-thermal food preservation technique, employs short electrical pulses that disable bacteria while having a negligible impact on the properties of the food. PEF technology aims to deliver nutritious meals to customers. PEF technology is regarded to be superior to traditional thermal processing methods for food quality attributes because it prevents or significantly reduces negative variations to the sensory and physical features of food. Foods that are placed between two electrodes using PEF technology are treated using high voltage pulses. Most PEF research has been centred on how PEF treatments affect the microbial inactivation of milk, dairy goods, egg-related goods, juice along with and other liquid meals. Successful applications of the PEF treatment include the inactivation of microorganisms, enhancement of pressurising productivity, and extraction of juice from food-producing plants, as well as intensifying food dehydrating and drying. The creation of a kind of solid, semisolid, and liquid food preservation system based on PEF. The creation of the chamber and the accomplishment of its tomato ketchup test A 20 kHz frequency was used to test the system.

Abstract:The worldwide market for vegetable and fruit juices stands as a thriving sector with projected revenues reaching to $81.4 billion by 2024 and an anticipated annual growth rate of 5.27% until 2028. Juices offer a convenient means of consuming bioactive compounds and essential nutrients crucial for human health. However, conventional thermal treatments employed in the juice and beverage industry to inactivate spoilage and pathogenic microorganisms, as well as endogenous enzymes, can lead to the degradation of bioactive compounds and vitamins. In response, non-thermal technologies have emerged as promising alternatives to traditional heat processing, with pulsed electric field (PEF) technology standing out as an innovative and sustainable choice. In this context, this comprehensive review investigated the impact of PEF on the microbiological, physicochemical, functional, nutritional, and sensory qualities of vegetable and fruit juices. PEF induces electroporation phenomena in cell membranes, resulting in reversible or irreversible changes. Consequently, a detailed examination of the effects of PEF process variables on juice properties is essential. Monitoring factors such as electric field strength, frequency, pulse width, total treatment time, and specific energy is important to ensure the production of a safe and chemically/kinetically stable product. PEF technology proves effective in microbial and enzymatic inactivation within vegetable and fruit juices, mitigating factors contributing to deterioration while maintaining the physicochemical characteristics of these products. Furthermore, PEF treatment does not compromise the content of substances with functional, nutritional, and sensory properties, such as phenolic compounds and vitamins. When compared to alternative processing methods, such as mild thermal treatments and other non-thermal technologies, PEF treatment consistently demonstrates comparable outcomes in terms of physicochemical attributes, functional properties, nutritional quality, and overall safety.

Abstract:Abstract Generally, thermal inputs dominate the food processing industry for food preservation. Pulsed electric field (PEF) is one of the most promising nonthermal microorganism‐killing techniques. The most important factors in PEF processing are electric field strength and treatment duration. At the laboratory level, encouraging results are reported; however, industrialization raises the cost of the command charging power supply and the high‐speed electrical switch. In this review, the results of previous experimental studies on PEFs and proposed future research directions in this field are discussed. There is currently no successful PEF processing system for industrial applications. Those who wish to promote the industrial application of the PEF processing system face a significant barrier in the form of the system's high initial cost of installation. Innovative developments in high‐voltage pulse technology will reduce the cost of pulse generation and make PEF processing competitive with thermal processing methods.

Abstract:The objective of this study was to investigate the effects of pulsed electric field (PEF) pretreatment on the valorization of extractives (proteins and polyphenols) from rapeseed green biomass (stems) by pressing. The effect of pressure, electric field strength and pulse number on the juice expression yield, total polyphenols and total proteins content in the expressed juices were studied. Experiments conducted under optimal conditions (E = 8 kV/cm, tPEF = 2 ms, P = 10 bar) permitted to increase the juice expressed yield from 34% to 81%. Significant increases in total polyphenols content (0.48 vs. 0.10 g GAE/100g DM), in total proteins content (0.14 vs. 0.07 g BSA/100g DM) and in consolidation coefficient (9.0 × 10(-8) vs. 2.2 × 10(-8)m(2)/s) were also observed after PEF pretreatment. The recovered press cake was well dehydrated with an increase of dry matter content from 8.8% to 53.0%.

The utilization of a non-thermal pulsed electric field (PEF) as a promising technology for retaining the fresh-like qualities of juice by efficiently inactivating enzymes and bacteria will be discussed in this review. Induced structural alteration provides for energy savings, reduced raw material waste, and the development of new products. PEF alters the α-helix conformation and changes the active site of enzymes. Furthermore, PEF-treated juices restore enzymatic activity during storage due to either partial enzyme inactivation or the presence of PEF-resistant isozymes. The increase in activity sites caused by structural changes causes the enzymes to be hyperactivated. PEF pretreatments or their combination with other nonthermal techniques improve enzyme activation. For endogenous enzyme inactivation, a clean-label hurdle technology based on PEF and mild temperature could be utilized instead of harsh heat treatments. Furthermore, by substituting or combining conventional pasteurization with PEF technology for improved preservation of both fruit and vegetable juices, PEF technology has enormous economic potential. PEF treatment has advantages not only in terms of product quality but also in terms of manufacturing. Extending the shelf life simplifies production planning and broadens the product range significantly. Supermarkets can be served from the warehouse by increasing storage stability. As storage stability improves, set-up and cleaning durations decrease, and flexibility increases, with only minor product adjustments required throughout the manufacturing process.

Abstract:Pasteurisation of fruit juices is normally carried out by thermal means. Heat treatment is an efficient technology for pasteurisation, but may also cause impairment of nutritive and sensory attributes. High-voltage pulsed electric field (PEF) treatment is a promising non-thermal processing method for pasteurisation of liquid foods. Sensory quality of fruit juices is important for consumers. PEF lends itself to be employed as an alternative to produce fruit juices of high quality and safe for consumption, and yet its practical application has been really limited. This paper reviews research carried out recently about the potential use of PEF to different fruit juices, aimed at employing the technology at industrial scale in order to search for wider commercialisation.
