Abstract:Edible swiftlet’s nest (ESN), the dried saliva secretion of swiftlets during breeding season, is widely consumed as a functional food and a potential prebiotic food. The health beneficial ESN is therefore widely utilized in many industries. However, utilization of ESN is bounded due to insolubility and low extraction rate. The development of bioactive ESN hydrolysate (ESNh) has breakthrough this limitation. Yet, effect of enzymatic hydrolysis towards prebiotic activity of ESN remained unrevealed. Through in vitro colon model prebiotic study by human fecal, ESN hydrolysate showed positive prebiotic responses similar to double-boiled raw ESN (ESNRb). Specifically, ESNh1 and ESNRb stimulates probiotic growth of Bifidobacteria, Lactobacillus which then induced the production of health beneficial metabolites. The ESNh1 and ESNRb also significantly suppressed the growth of pathogenic Clostridial group (p≤ 0.05). Conclusively, enzymatic application on ESN which enhanced the bioavailability, bioaccessibility and nutritional functionalities does not a negatively affect its prebiotic activities.
