Abstract:The advantages of high pressure (HP) technology have been widely accepted by researchers in domestic and overseas in recent years. However, research and development on HP processing of aquatic products didn't attract much attention in last century as compared to that of fruit and vegetable products. Since entering the new century, more and more research work has been done focusing on HP processing of aquatic products. Literature information on HPP of aquatic products was analyzed, including pasteurization, preservation, HP freezing and thawing, shellfish shucking, compound extraction and functional modification. The significance, applications and prospect of these research achievements were introduced and discussed. The main research fields for future development on HP processing of aquatic products were explored and presented.

Abstract:Fresh aquatic products are rich in nutritional compounds and are an important source of good protein for humans. Dehydration processing technologies of aquatic products used in practice are a mix of old and new technologies. With the rapid development of drying technologies and steadily increasing living standards, drying processing techniques as well as types of products produced have changed fundamentally. Two broad types of dried aquatic products are commercially available on a large scale: traditional products and snack foods. In this article, the development of dried aquatic product processing technologies will be expounded along with an overview of the necessary quality attributes and control strategies to produce high-quality dried products of aquatic origin.

Abstract:The global population has rapidly expanded in the last few decades and is continuing to increase at a rapid pace. To meet this growing food demand fish is considered a balanced food source due to their high nutritious value and low cost. Fish are rich in well-balanced nutrients, a good source of polyunsaturated fatty acids and impose various health benefits. Furthermore, the most commonly used preservation technologies including cooling, freezing, super-chilling and chemical preservatives are discussed, which could prolong the shelf life. Non-thermal technologies such as pulsed electric field (PEF), fluorescence spectroscopy, hyperspectral imaging technique (HSI) and high-pressure processing (HPP) are used over thermal techniques in marine food industries for processing of most economical fish products in such a way as to meet consumer demands with minimal quality damage. Many by-products are produced as a result of processing techniques, which have caused serious environmental pollution. Therefore, highly advanced technologies to utilize these by-products for high-value-added product preparation for various applications are required. This review provides updated information on the nutritional value of fish, focusing on their preservation technologies to inhibit spoilage, improve shelf life, retard microbial and oxidative degradation while extending the new applications of non-thermal technologies, as well as reconsidering the values of by-products to obtain bioactive compounds that can be used as functional ingredients in pharmaceutical, cosmetics and food processing industries.

Abstract:Freezing storage is an important preservation method for aquatic products as it could maintain their freshness to the maximum extent. However, the quality of aquatic products may inevitably be damaged in terms of flavor and texture due to the formation of ice crystals during freezing storage. Drip loss may also be unavoidable during thawing. This review elucidates the mechanism of the formation of ice crystals, and discusses the factors which affect the formation of ice crystals including freezing rate, freezing temperature, and temperature fluctuation. The existing methods for controling the formation of ice crystals in the aquatic products are also described such as superchilling and pressure shift freezing.

Abstract:China is rich in aquatic resources and the aquatic processing industry is developing rapidly, and the market potential of products produced using various aquatic raw materials is huge. The socio-economic development and the improvement of people's consumption level have put forward higher requirements for aquatic products, which further promote the technological innovation of related processing. The article classifies aquatic products into six categories: fish, shellfish, algae, crustaceans, echinoderms and cephalopods, and introduces the technological innovations and applications in freezing and preservation, sterilization, and by-product utilization in recent years, respectively, to provide reference for the continued development of aquatic products processing industry in the future.

Abstract:Fresh aquatic products, due to their high water activity, are susceptible to microbial contamination and spoilage, resulting in a short shelf life. Drying is a commonly used method to extend the shelf life of these products by reducing the moisture content, inhibiting microbial growth, and slowing down enzymatic and chemical reactions. However, the drying process of aquatic products involves chemical reactions such as oxidation and hydrolysis, which pose challenges in obtaining high-quality dried products. This paper provides a comprehensive review of drying processing techniques for aquatic products, including drying preprocessing, drying technologies, and non-destructive monitoring techniques, and discusses their advantages and challenges. Furthermore, the impact of the drying process on the quality attributes of dried products, including sensory quality, nutritional components, and microbial aspects, is analyzed. Finally, the challenges faced by drying processing techniques for aquatic products are identified, and future research prospects are outlined, aiming to further advance research and innovation in this field.

Abstract:Aquatic products are favored by the majority of consumers because of their low fat, high protein, particularly low cholesterol. In recent years, consumers are demanding the high nutrition, freshness and safety of aquatic products. Therefore, the efficient preservation technologies are all‐important. Freezing can extend the shelf life and inhibit the seasonal fluctuations in different species. Thawing is an important step of aquatic products. Repeated freezing‐thawing usually occurs because of the imperfection of cold chain technology and temperature fluctuations in warehousing, transportation and retail. These can affect the quality of aquatic products, including water holding capacity, texture, total volatile basic nitrogen, k value, protein oxidation and lipid oxidation. Emerging freezing and thawing technologies can improve the quality of aquatic products. This review introduces the influences of freezing, thawing and repeated freezing‐thawing on the quality of aquatic products and the development of freezing and thawing technologies of aquatic products.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Spoilage and deterioration of aquatic products during storage are inevitable, posing significant challenges to their suitability for consumption and the sustainability of the aquatic products supply chain. Research on the nonthermal processing of fruit juices, probiotics, dairy products, and meat has demonstrated positive outcomes in preserving quality. This review examines specific spoilage bacteria species and mechanisms for various aquatic products and discusses the principles, characteristics, and applications of six nonthermal processing methods for bacterial inhibition to maintain microbiological safety and physicochemical quality. The primary spoilage bacteria groups differ among fish, crustaceans, and shellfish based on storage conditions and durations. Four metabolic pathways utilized by spoilage microorganisms-peptides and amino acids, nitrogen compounds, nucleotides, and carbohydrates-are crucial in explaining spoilage. Nonthermal processing techniques, such as ultrahigh pressure, irradiation, magnetic/electric fields, plasma, and ultrasound, can inactivate microorganisms, thereby enhancing microbiological safety, physicochemical quality, and shelf life. Future research may integrate nonthermal processing with other technologies (e.g., modified atmosphere packaging and omics) to elucidate mechanisms of spoilage and improve the storage quality of aquatic products.

Abstract:Edible films and coatings have recently received growing attention in the food packaging sector due to their protective ability from the external environment and biodegradability characteristic. Generally, any layer of biomaterial incorporated into food to prolong its shelf-life and that can be consumed along with the food with or without further peeling is defined as an edible film or coating. These biodegradable films improve mechanical properties, moisture and gas barriers, microbial protection, sensory perception, and the shelf-life of food products. In particular, films obtained from polysaccharides are characterized by better gas barrier properties, whereas proteins are known for their excellent mechanical properties. However, both polysaccharides and proteins show poor water barrier properties in films which can be improved by incorporating lipids as well as combining one or more hydrocolloids (proteins and polysaccharides). Moreover, essential oils (EOs) consist mainly of volatile components obtained from plants, which can be added to the film to improve antimicrobial and antioxidant properties. On the other hand, fishery products are highly perishable due to the combined action of chemical reaction, lipid oxidation, endogenous enzymes, and microbial growth. Cold storage and freezing with or without vacuum packaging are often used to preserve fishery products, but they do not always completely preserve quality. Therefore, this review aims to summarize the components and chemistry of edible films and coatings, and their application to aquatic food for quality preservation. Moreover, deterioration of aquatic food and how these films and coatings can improve antimicrobial, antioxidant, physical, and sensory properties are also discussed.

Postharvest Preservation Technologies for Marine-Capture Shrimp: A Review

Abstract:Marine-capture shrimp is a general term for a type of shrimp that is different from marine-aquaculture shrimp. It is rich in protein, trace elements, and essential amino acids. It is an aquatic product with delicious meat and high nutritional and economic value. Most marine-capture shrimp are consumed fresh, with a small proportion subjected to processing. However, marine-capture shrimp is a highly perishable aquatic product, and hence, extensive preservation and processing methods have been developed to extend its shelf life. This review presents the current status of marine-capture shrimp in the world and the key issues (spoilage and melanization inhibition) regarding marine-capture shrimp preservation. Low-temperature preservation remains the predominant strategy for preserving marine-capture shrimp. Different preservation strategies combined with low temperature would maintain the quality of marine-capture shrimp more effectively, thereby extending the shelf life of the shrimp. The advantages and disadvantages of various preservation technologies are comprehensively considered and compared, as well as their scope of application. New processing technologies should be introduced, and various preservation technologies with complementary advantages should be organically combined to achieve the best preservation effect on marine-capture shrimp. This review provides a useful theoretical reference and a practical basis for future research on the shelf life extension of marine-capture shrimp.

Abstract:Aquatic foods are nutritious, enjoyable, and highly favored by consumers. In recent years, young consumers have shown a preference for prefabricated food due to its convenience, nutritional value, safety, and increasing market share. However, aquatic foods are prone to microbial spoilage due to their high moisture content, protein content, and unsaturated fatty acids. Furthermore, traditional processing methods of aquatic foods can lead to issues such as protein denaturation, lipid peroxidation, and other food safety and nutritional health problems. Therefore, there is a growing interest in exploring new technologies that can achieve a balance between antimicrobial efficiency and food quality. This review examines the mechanisms of cold plasma, high-pressure processing, photodynamic inactivation, pulsed electric field treatment, and ultraviolet irradiation. It also summarizes the research progress in nonthermal physical field technologies and their application combined with other technologies in prefabricated aquatic food. Additionally, the review discusses the current trends and developments in the field of prefabricated aquatic foods. The aim of this paper is to provide a theoretical basis for the development of new technologies and their implementation in the industrial production of prefabricated aquatic food.

This paper introduces the super-cooling phenomenon, and analyses the microscopic mechanism of the super-cooling phenomenon from the perspective of thermodynamics. Freezing point and nucleation point are two key factors that affect the super-cooling state. This paper summarizes the physical means of regulating freezing point and nucleation point. The effect of super-cooling on the shelf life and quality of aquatic products is also reviewed, which provides a basis for the further development of super-cooling preservation, for this food category.

Abstract:Frozen storage technology has been widely used for the preservation of Aquatic products. However, ice crystals formation, lipid oxidation and protein denaturation still easily causes aquatic products deterioration. Cryoprotectants are a series of food additives that could efficiently prolong the shelf life and guarantee the acceptability of frozen aquatic products. This review comprehensively illustrated the mechanism of protein denaturation caused by the ice crystal formation and lipid oxidation. The cryoprotective mechanism of various kinds of antifreeze agents (saccharides, phosphates, antifreeze proteins and peptides) and these cryoprotective structure–activity relationship, application efficiency on the quality of aquatic products were also discussed. Moreover, the advantages and disadvantages of each cryoprotectant are also prospected. Compared with others, antifreeze peptides show higher commercial and application values. While, lots of scientific research works are still required to develop novel antifreeze agent as a versatile ingredient with commercial value, applicable in the aquatic products preservation industry.

Abstract:Background: The intersection of population growth, resource scarcity, and climate change has created formidable obstacles to ensuring global food security. Simultaneously, a rising consumer demand for safe, nutritious diets has spotlighted the significance of "blue foods," particularly nutrient-rich and easily digestible fish and fish products. Within this context, the by-products of fish processing-comprising skin, viscera, scales, heads, bones, and fins-emerge as valuable reservoirs of proteins. To address the imperative of 'zero waste' and embrace a 'biorefinery for high-value compounds' approach, it becomes crucial to methodically extract and synthesize proteins from these by-products. This not only holds the potential to bolster the global economy but also aligns with environmental sustainability goals, reducing pollution and fostering a trajectory towards sustainable development. Scope and approach: This review endeavors to delve into recent literature focusing on the extraction and utilization of proteins from fish by-products obtained by chemical hydrolysis, enzymatic hydrolysis, fermentation, or other methods. In addition, this study will explore the biological activities and applications of these proteins in medical tissue engineering, food, and cosmetics. Key findings and conclusions: Extensive research findings highlight the manifold beneficial activities of proteins derived from fish by-products, showcasing their potential in health promotion, disease prevention, and therapeutic interventions. These proteins exhibit a broad spectrum of applications, ranging from health pharmacology to food supplements and pharmaceuticals. However, to comprehensively understand their mechanisms and ascertain their market potential, further in vivo and clinical trials are imperative. This exploration is essential not only to harness the full spectrum of marine resources but also to stimulate the growth of the blue bioeconomy. By unlocking the potential of fish by-products, people can contribute to global sustainable development and foster common prosperity.

Abstract:The most important processing technologies used for fish and their effect on the product quality are reviewed. Among the traditional processes are smoking, salting, drying and their combinations as well as marinating. Canning, sous-vide cooking, preparation of surimi and ready-to-eat products belong to the technologies of modern times. In addition, also the effects of the preparation of fish at home and some specialties like fermented and graved fish are included. It is stressed that the quality of fish products will be influenced by each action during processing and preparation. It is important to adapt the processes to the special requirements that easily spoiled products as fish have. If processing techniques are applied in an innovative way, quality products with high nutritional value will be achieved. Dialogue with the industry and the consumers is needed to assure a high nutritional value and quality of the final fish products.

Abstract:Color plays a pivotal role in guiding and assessing the industrial production of aquatic products due to the swift sensory perception of information through vision. This review provides a comprehensive overview of the following four aspects: (a) mechanisms governing natural color formation in aquatic products, (b) factors and mechanisms contributing to the discoloration of aquatic products, (c) cutting-edge methods for color analysis and detection, and (d) current valuable techniques for preserving color quality. The natural color of aquatic products is derived from skin chromatophores, endogenous pigment proteins, and astaxanthin . Discoloration of aquatic products can occur due to lipid oxidation, as well as enzymatic and non-enzymatic browning. Furthermore, this review examines frontier color protective technologies, encompassing physical methods like ultra-high pressure, irradiation, and low-temperature plasma, as well as chemical methods involving natural preservatives. The findings of this study offer significant insights into the development of high-quality aquatic products.

Abstract:Globally, aquatic processing industries pay great attention to the production of aquatic proteins for the fulfillment of the nutritive requirements of human beings. Aquatic protein can replace terrestrial animal protein due to its high protein content, complete amino acids, unique flavor, high quality and nutritional value, and requirements of religious preferences. Due to the superior functional properties, an aquatic protein based delivery system has been proposed as a novel candidate for improving the absorption and bioavailability of bioactive substances, which might have potential applications in the food industry. This review outlines the extraction techniques for and functional properties of aquatic proteins, summarizes the potential modification technologies for interaction with polyphenols, and focuses on the application of aquatic-derived protein in delivery systems as well as their interaction with the gastrointestinal tract (GIT). The extraction techniques for aquatic proteins include water, salt, alkali/acid, enzyme, organic solvent, and ultrasound-assisted extraction. The quality and functionality of the aquatic proteins could be improved after modification with polyphenols via covalent or noncovalent interactions. Furthermore, some aquatic protein based delivery systems, such as emulsions, gels, films, and microcapsules, have been reported to enhance the absorption and bioavailability of bioactive substances by in vitro GIT, cell, and in vivo animal models. By promoting comprehensive understanding, this review is expected to provide a real-time reference for developing functional foods and potential food delivery systems based on aquatic-derived proteins.
