Abstract:Infrared (IR) radiations are an important source of energy used in the food industry for a wide range of applications such as drying, roasting, pasteurization, blanching, peeling, and removal of antinutrients from legumes. IR drying can be combined with other drying methods such as hot air, vacuum, microwave, and freeze drying to augment the speed of the process and also to get better results. The review puts forward a critical discussion on the principle, applications, and comparative performance of IR energy for drying a range of food materials including grains, fruits, vegetables, and sea food in the recent past. The effects of process variables on energy consumption, drying time, rate of drying, and quality of the dried product are explained in detail. Model calculations for penetration depth of IR in food materials and for heat and mass transfer are also explained. Thin layer drying models to govern kinetics of drying under different configuration of infrared drying systems are also reviewed. The insights presented by this review would help in better understanding and proper selection of process variables for design of advanced IR drying systems.

Abstract:Ohmic heating is a variation of conventional heating which generates heat by passing an electric current through a material. It is known as Joule heating and involves passing electricity flowing through a material that can withstand the passage in electrical to produce heat. Numerous scientific studies contend that ohmic heating is an evolution of traditional heating in the food industry owing to its capacity to warm products swiftly and uniformly. Other benefits of ohmic heating include its capacity to inactivate microorganisms, low maintenance costs, high energy efficiency, and the ability to preserve food's nutritional value. Due to these benefits, ohmic heating is commonly employed in food processing. There is considerable research on the use of ohmic heating in various food processing techniques, such as sterilization, pasteurization, blanching, fermentation, and microbial inactivation. This paper provides a summary of several research on the utilization regarding ohmic heating methods in food processing.

Abstract:Fresh foods, such as vegetables, fruits, and aquatic products, have high water activity and are highly heat-sensitive. Thermal processing of fresh foods is often employed to extend shelf-life without chemical treatment in order to avoid any chemical residues in the preserved food. Radio frequency (RF) heating is one of the most promising heating methods applicable to fresh foods due to rapid heating, low cost, deep thermal penetration, and possibility of better quality control. This paper reviews the recent literature on applications of RF heating in fresh food processing, including cooking, microorganism reduction, disinfestation, thawing, and blanching. The heating efficiency and product quality of aforementioned applications were further discussed. Moreover, recommendations were made for future research on RF to effectively achieve enhanced thermal processing and reliable scale-up. The present study provides some useful information for the use of RF heating in industry and the future study of RF application in fresh food processing.

Abstract:Radio frequency (RF) heating is a technology on which quite a number of publications have emerged in recent years. The current paper reviews the history of this form of heating and introduces the basic principle of this technology including how it is applied and how it differs from other forms of heating. Recent literature on RF heating applications is examined, highlighting the impact of this form of heating on general quality aspects of foods. An understanding of physical characteristics which influence food heating including geometry, shape, product position and dielectric properties is extremely important in the design of RF heating systems and recent publications in these areas are discussed in addition to the most recent developments on mathematical modelling. In the final section the authors give their opinion on future trends and prospects for this form of heating.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Fruit and vegetable processing can effectively maintain the quality and safety of fruit and vegetable-based products while extending the shelf life of products and saving transportation costs. Infrared (IR) technology has been widely used in many operating units of fruit and vegetable processing because of its versatility of uniform heating, high heat transfer efficiency, and minimized damage to fruit and vegetable tissues. Catalytic IR (CIR), compared to traditional electric IR, is powered by natural gas or liquefied gas, which can improve thermal efficiency while significantly saving energy. However, there is no comprehensive overview discussing and summarizing the utilization and application of the CIR technology in fruit and vegetable processing. Therefore, this review aims to highlight recent advances in the application of CIR technology in fruit and vegetable processing. Specifically, a comprehensive discussion of the physicochemical properties and underlying mechanisms of CIR is provided, and its applications as a single method or in combination with other technologies in fruit and vegetable processes, such as blanching, peeling, microbial population reduction, and drying, are also presented. Besides, the currently used laboratory and pilot-scale equipment of CIR has also been summarized.

Abstract:Food industries use thermal treatments as a common strategy to inactivate microorganisms and enzymes, and guarantee safe products, avoiding the utilization of preservatives and solving several shelf life problems. Commercial pasteurisation usually rely on conduction or convection mechanisms, transferring the heat from the outer surfaces of a foodstuff to its interior, often leading to long process times and to surface’ dehydration phenomena and overheating. On the other hand, the direct interaction between electromagnetic energy and foods can significantly reduce the time for foodstuffs to reach the desired temperatures, and control the targeted bacteria, improving organoleptic quality, appearance, and nutritional values. The aim of this work was to review the recent applications of RF electro-heating on food of animal origin, focusing on the reported impact on safety and the general quality aspects.

Abstract:Thermosetting polymers offer a wide range of applications in modern industries, including coatings, the automotive and aerospace industries, and furniture manufacturing. The curing process, which is a key step in the application of such materials, has become a research hotspot. More specifically, significant research efforts have been devoted toward shortening the curing cycle and reducing curing energy consumption without affecting product quality. Two common curing methods, namely, infrared (IR) curing and hot air convection curing, have been commonly employed. IR curing technology demonstrates certain advantages, such as high energy efficiency and adaptability, compared to traditional convection curing technology. Moreover, it has achieved desirable results in engineering applications and research. In this review, the current research on IR curing technology is presented in detail based on two fundamental aspects: the heat transfer process and the curing process. This article provides a comprehensive overview of the IR curing heat transfer process in terms of IR heating equipment, heat transfer monitoring devices, heat transfer models, and heat transfer simulation methods. Moreover, it summarizes and compares the basic research methods, equipment, and theoretical models involved in the curing process. In addition, it describes the non-thermal effect and its impact on the properties of cured products. This study describes the author's perspective and opinions on the research direction in IR radiation-based curing technology. This literature review concludes that IR curing technology has strong research value and application prospects, particularly in fields requiring low-temperature rapid curing of thermosetting polymers.

Abstract:Food grains constitute a vital part of the daily diet of the population worldwide, and are generally considered as safe products with high storage stability due to their low moisture contents. However, post-harvest losses (PHL) caused by insects, fungi, food-borne pathogens, and undesirable enzymes remain a major concern for the grain industry. Thermal treatments are commonly used to reduce the PHL of grains and their products without any chemical residues. Among which, radio frequency (RF) technology has been regarded as a promising alternative to traditional heating methods for improving safety and quality of food grains due to its fast, volumetric, and deep penetration heating characteristics. This review provided comprehensive information about principles of RF technology and its main applications including disinfestation, pasteurization, enzyme inactivation, drying, and roasting for processing food grains and their products. The methods to improve the RF heating uniformity and effects of RF heating on product quality were also reviewed. Finally, the current problems and recommendations for future work related to RF processing of grains and their products were discussed. This review would improve the understanding of RF heating for food grains and their products and promote the application of RF technology in the food grain industry.

Abstract:<section class="article-section__content"><p>In recent years, many infrared (IR) and IR-assisted drying methods such as IR-hot air, IR-vacuum, IR-microwave, and vibration aided IR-dryer have been reported for drying of food materials due to its rapid drying behavior and less processing time due to high drying rate, consumes less energy, offers better control over temperature, superior quality products, less ecological footprint and also easily it can be combined with other modes of heating technologies. The combination of IR radiation with other drying methods is very promising as it not only improves the drying rate but also preserve the food quality. IR and IR-assisted drying have been proved as a potential drying method for many food products. Drying kinetics of food materials during IR drying is very critical for the design of IR dryer, selection of appropriate drying parameters, product quality maintenance, and control and optimization of the drying process. Therefore, this paper aims to report the optimum process parameters for IR and IR-assisted drying of food materials and its drying kinetics. Similarly, critically reviewed the effect of various factors on the IR drying process such as drying rate, specific energy consumption, effective moisture diffusivity, and activation energy during drying of various food materials.</p></section><section class="article-section__content"><h3 class="article-section__sub-title section1"> Practical applications</h3><p>Infrared (IR) heating allows more uniform heating resulting in better quality characteristics of dried products than other drying methods. The combination of hot air and IR improves the effectiveness of drying. Drying kinetics of food materials and the factors affecting the drying characteristics of food materials during IR and IR-assisted heating are essential for the optimization of the drying process and the successful design of IR dryers with improved efficiency. Most of the IR and IR-assisted drying technologies developed for the food drying and dehydration process in the thermal food processing sector are still in a laboratory or experimental stage only. This review paper helps to analyze the further possibilities for scaling up of these technologies to industrial level or design of innovative dryer would be very beneficial to the food processing industries.</p></section>

Abstract:Food processing is an important operation in the food industry that converts fresh foods into final products with desirable characteristics for consumption and storage. Ohmic heating is an emerging technique for food processing that seems to be a suitable alternative to conventional heat treatment. Recently, there has been a lot of research into ohmic heating applications in processing various foods. This review highlights the findings of studies conducted in 2018–2022 on the impact of ohmic heating on the physical, chemical, and sensory properties of foodstuffs during processing. We found that this technology provides more reliable process control compared to the traditional technique, namely conventional heating. Although ohmic heating has a positive effect on the quality of foods, its efficiency is limited by certain food components, including acid and fat, that markedly affect the electrochemical attributes of foods. Therefore, to achieve optimal results, ohmic heating conditions should be set in accordance with the properties of food materials. There is a need for further in-depth studies on the performance of ohmic heating in food processing on a large, rather than a lab scale.

Abstract:Microwave measurements and the dielectric properties of materials are finding increasing application, as new electro-technology is adapted for use in agriculture and food processing industries. The interest in dielectric properties of materials has historically been associated with the design of electrical equipment, where various dielectrics are used for insulating conductors and other components of electric equipment. Although direct heating by microwaves can offer advantages over conventional heat transfer, the different mechanism of energy transfer in microwave heating has led to new processing challenges. This paper is the outcome of an extensive and comprehensive literature review in the area and mainly summarises several microwave processing aspects and its usefulness in understanding the microwave–material interaction and the role of dielectric properties.

Abstract:In the last decades, different non-thermal and thermal technologies have been developed for food processing. However, in many cases, it is not clear which experimental parameters must be reported to guarantee the experiments' reproducibility and provide the food industry a straightforward way to scale-up these technologies. Since reproducibility is one of the most important science features, the current work aims to improve the reproducibility of studies on emerging technologies for food processing by providing guidelines on reporting treatment conditions of thermal and non-thermal technologies. Infrared heating, microwave heating, ohmic heating and radiofrequency heating are addressed as advanced thermal technologies and isostatic high pressure, ultra-high-pressure homogenization sterilization, high-pressure homogenization, microfluidization, irradiation, plasma technologies, power ultrasound, pressure change technology, pulsed electric fields, pulsed light and supercritical CO2 are approached as non-thermal technologies. Finally, growing points and perspectives are highlighted.

Abstract:Food irradiation provides an effective means for controlling the physiological processes causing spoilage and for eradication of microbes, insect pests and parasites. Irradiation has multipurpose role in food processing and is applicable for a variety of food commodities such as fruits, vegetables, cereals, pulses, spices, meat, poultry and seafood. Several years of scientific research, evaluation, and testing have resulted in regulatory approvals for the food irradiation technology in a number of countries. Commercial application of this technology has greatly advanced in recent years following the approval of the health authorities of different countries. This review summarises the applications of irradiation technology in controlling pathogens and food spoilage, and the development of irradiation treatment worldwide.

Abstract:Abnormal body temperature is a natural indicator of illness. Infrared thermography (IRT) is a fast, passive, non-contact and non-invasive alternative to conventional clinical thermometers for monitoring body temperature. Besides, IRT can also map body surface temperature remotely. Last five decades witnessed a steady increase in the utility of thermal imaging cameras to obtain correlations between the thermal physiology and skin temperature. IRT has been successfully used in diagnosis of breast cancer, diabetes neuropathy and peripheral vascular disorders. It has also been used to detect problems associated with gynecology, kidney transplantation, dermatology, heart, neonatal physiology, fever screening and brain imaging. With the advent of modern infrared cameras, data acquisition and processing techniques, it is now possible to have real time high resolution thermographic images, which is likely to surge further research in this field. The present efforts are focused on automatic analysis of temperature distribution of regions of interest and their statistical analysis for detection of abnormalities. This critical review focuses on advances in the area of medical IRT. The basics of IRT, essential theoretical background, the procedures adopted for various measurements and applications of IRT in various medical fields are discussed in this review. Besides background information is provided for beginners for better understanding of the subject.

Abstract:The advanced thermal technologies being investigated and applied for food safety include microwave heating, radiofrequency heating, infrared heating, Ohmic heating, and sous-vide processing. In addition to the development of advanced thermal technologies, investigations are being carried out to enhance the heat transfer in conventional thermal methods using appropriate materials such as molecular sieves. Advanced thermal methods are applied for cooking as well as the pasteurization and sterilization of foods. In addition to the control of pathogenic microorganisms, the advanced thermal technologies are being investigated for the control of allergenicity and pests in food materials. Advanced thermal technologies for food processing are efficient in energy transfer and rapidly inactivate the pathogenic microorganisms in foods. The details of advanced thermal technologies and their applications for the pasteurization and sterilization of foods are discussed in this chapter.

Abstract:Traditional food processing techniques can no longer meet the ever increasing demand for high quality food across the globe due to its low process efficiency, high energy consumption and low product yield. This review article is focused on the mechanism and application of Infrared (IR) and ultrasound (US) technologies in physical processing of food. We herein present the individual use of IR and US (both mono-frequency and multi-frequency levels) as well as IR and US supported with other thermal and non-thermal technologies to improve their food processing performance. IR and US are recent thermal and non-thermal technologies which have now been successfully used in food industries to solve the demerits of conventional processing technologies. These environmentally-friendly technologies are characterized by low energy consumption, reduced processing time, high mass-transfer rates, better nutrient retention, better product quality, less mechanical damage and improved shelf life. This work could be, with no doubt, useful to the scientific world and food industries by providing insights on recent advances in the use of US and IR technology, which can be applied to improve food processing technologies for better quality and safer products.
