Abstract:Absrak-Salah satu serat alam yang memiliki pontensi ialah serat Nata de coco atau lebih dikenal dengan sari kelapa. Nata de coco merupakan bahan yang umum dijumpai di indonesia dan pembuatannya sendiri tidak terlalu rumit. Nata de coco merupakan produk komersial dalam industri makanan, dan sangat populer karena membuat pencernaan lebih lancar dan cocok untuk menu diet. Ini karena gajihnya yang tinggi. Secara kimiawi, serat yang berkembang dalam nata adalah selulosa. Di sisi lain, penelitian tentang selulosa telah sangat luas, baik pada senyawa selulosa itu sendiri maupun pada senyawa turunannya. Nata de coco adalah makanan yang terbuat dari air kelapa. Nata digunakan untuk mendemonstrasikan perkembangan gel atau agar terapung yang dibawa oleh jamur Acetobacter xylinum pada lapisan luar media yang mengandung sumber karbon (gula), hidrogen, nitrogen, dan asam. Nata sebagai lapisan tebal mengandung 35-62% selulosa, berwarna putih dan keras. Selulosa yang terbentuk selama pematangan adalah kelas polisakarida mikroba yang terdiri dari filamen selulosa yang dibawa oleh Acetobacter xylinum dan diikat oleh mikrofibril. penelitian ini akan mengkaji proses pembuatan dan kelayakan fermentasi air kelapa dalam produksi Nata de coco, selain itu juga akan mempelajari kadar glukosa dan waktu optimum untuk kekentalan nata selama proses pembuatan Nata de coco. Proses fermentasi Nata de coco,dengan keterbatasan pengontrolan Nata de coco maka di buat alat pengendali temperatur dan pH untuk optimalisasi pembuatan Nata de coco, sebagai tujuan untuk mengetahui optimalisasi suhu 29 C° sampai 30 C° dan membutuhkan keasamaan (pH) nata dapat terbentuk pada pH optimal 3,7-5. pH netral.Abstract—One of the natural fibers that have potential is Nata de coco fiber or better known as coconut juice. Nata de coco is a common ingredient in Indonesia and the manufacture itself is not too complicated. Nata de coco is a commercial product in the food industry, and is very popular because it makes digestion easier and is suitable for diet menus. This is because of the high salary. Chemically, the fiber that develops in nata is cellulose. On the other hand, research on cellulose has been very extensive, both on the cellulose compound itself and on its derivative compounds. Nata de coco is a food made from coconut water. Nata is used to demonstrate the development of a gel or floating agar carried by the fungus Acetobacter xylinum on the outer layer of media containing carbon (sugar), hydrogen, nitrogen, and acid sources. Nata as a thick layer contains 35-62% cellulose, white and hard. Cellulose formed during ripening is a class of microbial polysaccharides consisting of cellulose filaments carried by Acetobacter xylinum and bound by microfibrils. This research will examine the process of making and the feasibility of fermenting coconut water in the production of Nata de coco, besides that it will also study the glucose levels and the optimum time for the viscosity of nata during the process of making Nata de coco. Nata de coco fermentation process, with limited control of Nata de coco, a temperature and pH control device was made for optimizing the manufacture of Nata de coco, as the aim is to determine the optimal temperature of 29 C° to 30 C° and requires acidity (pH) nata can be formed at Optimal pH 3.7-5. neutral pH.
