Production and Evaluation of Probiotic Black Grape Juice Containing Gamma-Aminobutyric Acid by Lactobacillus Plantarum Plantarum Ibrc(10817) and Lactobacillus Brevis Ibrc(10818)

Abstract:This study aimed to investigate the possibility of producing probiotic black grape beverage containing gamma-aminobutyric acid using two microorganisms; Lactobacillus Plantarum Plantarum IBRC (10817) and Lactobacillus brevis IBRC (10818). For this purpose, grape juice was inoculated with 3ₓ107 (CFU / ml) of each microorganism, individually in different containers, and the amount of GABA produced, changes in the viability of microorganisms, some physicochemical and sensory properties over 28 days were evaluated. Based on the findings, the amount of gamma-aminobutyric acid produced during the fermentation process increased until day 21st and then decreased on day 28th. Also, the count of probiotic microorganisms in both samples with different bacteria increased after 72 hours and then until the end of the period, was showed a decreasing trend so that this drink was probiotic until the end of day 21st, and no significant difference was observed between the two bacterial species in terms of viability. The fermented beverage inoculated with Lactobacillus Plantarum Plantarum IBRC(10817) contained a high amount of gamma-aminobutyric acid on day 21st with 117.33 mg / l. there was no significant difference in their overall acceptance at the end of the storage time, and they received an overall acceptance score of 4-5. This study found that Lactobacillus Plantarum Plantarum IBRC10817 was more successful in producing probiotic drinks of black grape juice containing gamma-aminobutyric acid and a sensory acceptance property.
