Abstract:The market demand is directly affected by food freshness and the post-harvest spoilage of raw fresh foods,which causes incalculable economic losses and therefore motivates the development of preservation technologies.High voltage electric field (HVEF) is a safe and environment-friendly technology for food processing.HVEF is one of the most promising technologies to preserve raw fresh foods that requires very small energy consumption with no heat effect and only a small temperature increase in the processed foods and causes little effect on the quality of the foods themselves.This manuscript outlines the basic principle of HVEF and provides a systematic elucidation of its mechanism for preserving fruits and vegetables,aquatic products and meat products with respect to membrane potential,enzyme activities and microstructure.Furthermore,future research prospects are discussed.

Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. Abstract:The preservation of the freshness of fruits and vegetables until their consumption is the aim of many research activities. Quality losses of fresh fruit and vegetables during cold chain are frequently attributable to an inappropriate use of postharvest technologies. Moreover, especially when fresh produce is transported to distant markets, it is necessary to adopt proper postharvest preservation technologies in order to preserve the initial quality and limit microbial decay. Nowadays, for each step of supply chain (packing house, cold storage rooms, precooling center, refrigerate transport and distribution), are available innovative preservation technologies that, alone or in combination, could improve the fresh products in order to maintain the principal quality and nutritional characteristics. The issue groups five original studies and two comprehensive reviews within the topic of preservation technologies related to innovative packaging and postharvest operation and treatments, highlighting their effect on quality keeping.

Abstract:Quality losses in fresh produce throughout the postharvest phase are often due to the inappropriate use of preservation technologies. In the last few decades, besides the traditional approaches, advanced postharvest physical and chemical treatments (active packaging, dipping, vacuum impregnation, conventional heating, pulsed electric field, high hydrostatic pressure, and cold plasma) and biocontrol techniques have been implemented to preserve the nutritional value and safety of fresh produce. The application of these methodologies after harvesting is useful when addressing quality loss due to the long duration when transporting products to distant markets. Among the emerging technologies and contactless and non-destructive techniques for quality monitoring (image analysis, electronic noses, and near-infrared spectroscopy) present numerous advantages over the traditional, destructive methods. The present review paper has grouped original studies within the topic of advanced postharvest technologies, to preserve quality and reduce losses and waste in fresh produce. Moreover, the effectiveness and advantages of some contactless and non-destructive methodologies for monitoring the quality of fruit and vegetables will also be discussed and compared to the traditional methods.

Abstract:The production of vegetables and fruits is at a high rate but the major challenging task is the postharvest handling and processing of the products. Approximately 20–30% of the production is being wasted due to a lack of proper postharvest management. Many developments were made to reduce this wastage such as cold chain development, different storage structures, some drying methodologies to promote the shelf life of produce. But all these systems need to be improved and utilized commercially. The losses still occur due to a lack of sound knowledge on the chemical nature of products and different management techniques (e.g., drying, cooling, blanching). Therefore, the successful design of the cooling, packing, storage transport, and drying processes of fresh food requires linking materials sciences, fluid dynamics, mechanical deformation, food chemistry, and process control.

Abstract:The fruits and vegetables are important for the world population due to the nutritional contribution they offer; in addition, its production is relatively less expensive compared to animal foods. The principal strategies to preserve them include the use of aseptic packaging, heat treatments through the application of heat, sub-zero temperatures, application of chemical sanitizers, etc. However, these strategies can be affect the quality of fruits and vegetables. Therefore, there is a constant search and development of strategies in order not only to guarantee safe food but also technologies that can increase their quality (improving their appearance, nutritional contributions, etc.), extend the shelf life and reduce production costs. These technologies are known as "emerging technologies". Examples of these are high hydrostatic pressure, electromagnetic pulses, ohmic heat, cold plasma, UV rays, use of ozone, edible coatings, packaging systems. Each technology offers many benefits and in some cases limitations that still make it impossible to use it on a large scale. This review shows a broad panorama of the use of emerging technologies to increase the postharvest life of fruits and vegetables, in addition to discussing the advantages, potentials and limitations of their use. Information from conventional technologies is included as a contrast.

Abstract:After harvesting fruits and vegetables and during storage and transportation, its sensorial, nutritional and sensorial quality decreases due to its high moisture content, microbial growth, environmental factors, maturity and senescence. Considering their very short shelf life, fruits and vegetables need immediate post-harvest care to increase it. The most common conservation methods are based on the control of the transpiration rate, respiration and microbial spoiling. However, traditional methods have proven to be vulnerable. Between 25 and 40% of fruits and vegetables are lost before consumption because of inadequate post-harvest treatments. In recent years, the development of alternative methods to assure microbial safety of fresh fruits and vegetables has been an important topic of investigation. Among these new methods, biopreservation using Lactic Acid Bacteria has been gaining interest, since they are classified as “generally recognized as safe” and have shown antimicrobial capacities; additionally, it is considered an environmentally friendly method. On the other hand, microencapsulation in a biodegradable matrix protects Lactic acid bacteria against unfavorable environmental conditions, which maintains their viability for a longer period. Therefore, the use of microencapsulated Lactic acid bacteria promises to be an effective technique to guarantee safety and to extend the useful life of fruits and vegetables during post-harvest. This review describes the main methods of preservation, as well as the emerging methods used to preserve fresh fruits and vegetables, with emphasis on bio-preservation as a proposal for future research.

Abstract:Fruits and vegetable (FV) production is an emerging horticulture sub-sector in sub-Sahara Africa (SSA) despite the fact that, almost one-third of the produced FV is lost before reaching the plate. FV postharvest losses in SSA range from 30 to 80%, depending on a crop. Lack of postharvest management skills and technology such as temperature control to maintain the cold chain, value addition, and packaging have caused several economic and food security setbacks among them are high levels of poverty, hidden hunger and malnutrition. Globally, applications of postharvest technologies for instance; use of ethylene, 1-methylcyclopropene (1-MCP) and temperature management has proved to reduce postharvest losses of FV. Also, chemical and non-chemical methods are useful for controlling spoilage and pathogenic microbes especially on ready to eat FV products. Postharvest technologies such as controlled ripening, edible coating, temperature management, and chemical treatment methods are potential tools to reduce FV postharvest losses, increase food and nutritional security and alleviate poverty in SSA. At the same time, sanitizing chemicals and pesticides malpractice should be avoided to ensure final consumer safety.

Abstract:Despite the recommendations of international health organizations and scientific research carried out around the world, consumers do not take in sufficient quantities of healthy fruit and vegetable products. The use of new, 'advanced' preservation methods creates a unique opportunity for food manufacturers to retain nutrient content similar to that found in fresh fruits and vegetables. This review presents a summary of the published literature regarding the potential of high-pressure and microwave preservation, the most studied of the 'advanced' processes, to retain the natural vitamin A, B, C, phenolic, mineral and fiber content in fruits and vegetables at the time of harvest. Comparisons are made with more traditional preservation methods that utilize thermal processing. Case studies on specific commodities which have received the most attention are highlighted; these include apples, carrots, oranges, tomatoes and spinach. In addition to summarizing the literature, the review includes a discussion of postharvest losses in general and factors affecting nutrient losses in fruits and vegetables. Recommendations are made for future research required to evaluate these advanced process methods.

Abstract:Fruit preservation and packaging have been practiced since ages to maintain the constant supply of seasonal fruits over lengthened periods round the year. However, health and safety issues have attracted attention in recent decades. The safety and quality assurance of packaged fruits/fruit products are vital concerns in present day world-wide-integrated food supply chains. The growing demand of minimally or unprocessed packaged fruits has further aggravated the safety concerns which fuelled in extensive research with objectives to develop novel techniques of food processing, preservation, and packaging as well as for rapid, accurate, and early detection of contaminant products/microbes. Nevertheless, fruits and fruit-based products have yet to observe a panoramic introduction. Tropics and subtropics are the stellar producers of a variety of fruits; majority if not all is perishable and prone to postharvest decay. This evoked the opportunity to critically review the global scenario of emerging and novel techniques for fruit preservation and packaging, hence providing insight for their future implementation. This review would survey key nanotechnology innovations applied in preservation, packaging, safety, and storage of fruits and fruit-based products. The challenges and pros and cons of wider application of these innovative techniques, their commercial potential, and consumer acceptability have also been discussed.

Abstract:Fresh-cut (FC) produce is one of the major growing segments in food retail establishments. However, FC tropical and subtropical fruits are still under study because of the difficulties in preserving their fresh-like quality for longer periods. This chapter covers different aspects of the FC industry which includes biochemical, physiological, microbiological, nutritional and quality changes in FC processing and storage and distinct equipment design, packaging requirements, production economics, marketing considerations and new trends for FC products. Aspects concerning specific conditions suggested for FC tropical and subtropical fruits in each one of the processing steps such as washing, sanitation, cutting, and dipping treatments, use of edible coatings alone or in conjunction with antioxidants and antimicrobials, and/or preservation under modified atmospheres, are thoroughly discussed. The chapter covers the most frequent causes of quality loss of FC tropical and subtropical products such as browning and other discolourations, softening, surface dehydration, water loss, translucency, off-flavour and off-odour development, as well as microbial spoilage and the techniques used to prevent or reduce these problems. Special attention is devoted to the new development of edible coatings that can be used as a complement or alternative to modified atmosphere packaging (MAP) or as carriers of controlled release systems that contain natural antioxidants and antimicrobials.

Abstract:It is known that in developing countries, a large quantity of fruit and vegetable losses results at postharvest and processing stages due to poor or scarce storage technology and mishandling during harvest. The use of new and innovative technologies for reducing postharvest losses is a requirement that has not been fully covered. The use of edible coatings (mainly based on biopolymers) as a postharvest technique for agricultural commodities has offered biodegradable alternatives in order to solve problems (e.g., microbiological growth) during produce storage. However, biopolymer-based coatings can present some disadvantages such as: poor mechanical properties (e.g., lipids) or poor water vapor barrier properties (e.g., polysaccharides), thus requiring the development of new alternatives to solve these drawbacks. Recently, nanotechnology has emerged as a promising tool in the food processing industry, providing new insights about postharvest technologies on produce storage. Nanotechnological approaches can contribute through the design of functional packing materials with lower amounts of bioactive ingredients, better gas and mechanical properties and with reduced impact on the sensorial qualities of the fruits and vegetables. This work reviews some of the main factors involved in postharvest losses and new technologies for extension of postharvest storage of fruits and vegetables, focused on perspective uses of edible coatings and nano-laminate coatings.

Abstract:Postharvest handling in agriculture, is a stage right after harvest, as well as cleaning, cooling, packing, and sorting. Crop starts to deteriorate when separated from mother plant or picked up from the ground. Quality of fruits and vegetables relies on the postharvest handling. It decides that either the product will be sold fresh or it may use as ingredient in any food processing unit. Quality of fruits and vegetables cannot be improved after harvesting. So, it is momentous for harvesting the crop at its peak stage when the size and quality is at its maximum. After harvesting, degradation process starts in the fruits and vegetables. Various biochemical reactions change the actual composition continuously until it become unvendible. The time in which eating of that fruit or vegetable is acceptable called “postharvest shelf-life”. Postharvest chain loss of horticultural commodities is one of the major issues. There are many factors affecting it, from sowing to handling at trade level. It is not only the waste of product, it is the waste of human resources, human efforts, farm inputs, investments and some other resources like space, water, and energy. It is difficult to measure the postharvest losses of horticultural crops accurately. Sometimes the produce harvested by farmer may be extensive and losses are 100%. Thus, average loss figure is confusing. There will be losses in quality, nutritional value, profit as well as in quantity.

Abstract:In recent years, minimally processed fruits and vegetables have gained widespread consumer attention due to the need for a convenient yet healthy diet. As several factors can affect the shelf life of minimally processed products, it is essential to use preservation technologies that maintain the freshness of fruits and vegetables ensuring consumer health. In the second part of this review, the main physical preservation methods including heat treatments, refrigeration, irradiation, high pressure, ultraviolet radiation, and electrolyzed water are discussed in terms of their advantages, disadvantages, and applications. Advances in packaging for minimally processed products are also explored, such as active and intelligent packaging, edible films and coatings, and vacuum packaging. Defining the operational parameters related to treatment time and dose/intensity appropriate is one of the greatest difficulties in the application of physical methods. Therefore, these factors must be carefully evaluated, as must the sustainability and economic viability of each method.

Abstract:Increasing public demands for improved safety and quality of fruits and vegetables in the fresh market, awaken a growing interest for novel technologies for the preservation of postharvest fruits and vegetables before storage. Ultrasound technology provides one of the methods that with better treating time, enhanced products quality, reduced chemical hazards, low consumption of energy, and is environmentally friendly. This review provides an up-to-date summary of published findings on the application of ultrasound in the preservation of fresh fruits and vegetables. The ultrasound devices commonly utilized, effects of power ultrasound treatment. as a factor that affects decay incidence, safety and quality of fresh fruits and vegetables are included. Application challenges and research trends in the future are also analyzed. It is concluded that much progress has been achieved in this field during recent years. These achievements paved the way for the industrial-scale application of ultrasound in the preservation of postharvest fruits and vegetables.

Abstract:Fresh-cut fruits and vegetables have become more popular among consumers because of their nutritional value and convenience. However, the lower shelf life of fresh-cut fruits and vegetables due to processing and mechanical damage is a critical factor affecting their market expansion, and advances in preservation technology are needed to prolong their shelf life. Some traditional chemical preservatives are disliked by health-seeking consumers because of worries about toxicity. Chemical preservation is inexpensive and highly efficient, but sometimes it carries risks for human health. Biological preservation methods are safer and more appealing, but they are not applicable to large-scale production. Physical fresh-keeping methods have been used for the storage and transportation of fresh-cut fruits and vegetables due to the ease of application. This review discusses current research in fresh-keeping technology for the preservation of fresh-cut fruits and vegetables. Preservation methods include low temperature, modified atmosphere packaging, cold plasma, pulsed light, ultrasonics, ultraviolet light, and ozonated water. As promising alternatives to chemical methods, these novel processes have been evaluated singly or combined with natural preservatives or other methods to extend the shelf life of fresh-cut fruits and vegetables and to provide references and assessments for further development and application of fresh-cut fruit and vegetable preservation technology.

Abstract:Abstract Fruits are natural, healthy, economically feasible, ready to eat, and provide essential nutrients such as vitamins and minerals, making them a fascinating food. Deterioration of fruits during transportation can cause food security concerns and financial losses. Globally, about 45% of horticultural crops are spoiled and wasted for numerous reasons, such as environmental contamination during growth, harvesting under unsuitable conditions, and improper storage, handling, and display. There are three groups of factors affecting the spoilage of food: physical, chemical, and microbial, which damage the size, color, taste, and texture of fruits. Conventional methods of preserving food products comprise chemical preservation, freezing, drying, and pasteurization, which can result in the loss of nutrients and the addition of unwanted chemicals produced during processing. Therefore, “green” technology is required to preserve fresh produce, which protects and enhances nutritional value in equal measure. This review will present emerging trends and advancements in the biopreservation of fruits, such as lactic acid bacteria, essential oils, herbal extracts, nanoparticles, microcapsules, edible films and coatings, bacteriocins, and bacteriophages. These biopreservative techniques should be easy, inexpensive, eco-friendly, and generally recognized as safe (GRAS) by the World Health Organization (WHO).

Abstract:Recently, consumers’ demand for fresh, nutritious, and convenient food has shown a significant rise. This trend has forced increased sales of minimally processed and/or pre-packed fruit- and vegetable-based products. New product development and the diversification of plant-based foods have supported this growth. The food production sector should balance this requirement with the necessity to provide safe food with extended shelf life while meeting consumer demands for novel, nutritious, and affordable food products. The use of alternative “soft hurdles” may result in a decrease in the rate of food deterioration and spoilage attributed to microbial activity or other physiological/chemical degradation reactions. The objective of the article is to provide a systematic review of the preservative effect of the available hurdles implemented during processing and packaging of fresh-cut fruits and vegetables, focusing on recent applications aiming at improving product quality and prolonging their limited shelf life.

Abstract:Many significant advances have been made in agriculture over the past century; we now have the ability, in theory, to feed the entire world population. Nonetheless, “there still remain great hunger, health and environmental concerns remaining to be addressed” (Hazell and Wood 2008). These are not problems that can be solved simply by increasing agricultural production (Alexandratos and Bruinsma 2006), especially considering the environmental issues that if left unchecked could adversely affect food supply in the future (M.E.A. 2005). Even though increasing agricultural yields and developing better varieties have great importance, a significant breakthrough can be made through better management of agricultural supply chains. The potential for better resource efficiency should not be overlooked, especially in view that one-third of the food produced for human consumption is estimated to be lost or wasted globally; some of the loss can be attributed to a lack of coordination of the different actors of the supply chain (Gustavsson et al. 2011). Thus, the issue of how to efficiently meet the demand with the production available is of utmost importance when high levels of perishability are present in the underlying product, as it is the case in fresh produce. For this reason the planning of supply chain will play an increasingly key role in the definition of those products that are successfully marketed.
