Abstract:The ultimate source of bioactive molecules is nature. Although since past man has tried to imitate natural processes in laboratories for synthetic production of the plethora of bioactive molecules. In nature, many functional oligosaccharides are present, yet their production is desirable for industries. The microbes offer an excellent source of catalytic enzymes for biotransformation of raw materials into functional oligosaccharides. The present‐day food industry is facing a great demand for functional foods due to the increased health consciousness of the consumers. Since the inception of the concept of functional foods, functional oligosaccharides are the prime, eligible, and competing for bioactive molecules in the health market, conferring unimaginable health benefits to the consumers. The conventional and fortified products have good deliverables to the end‐users. This chapter focuses on functional oligosaccharides – arabinoxylo‐oligosaccharides, iso‐maltooligosaccharides, lactosucrose, and xylooligosaccharides, and their health benefits.
