Abstract:Fruit tissue is heavily damaged during fresh-cut processing, which induces a series of physiological disorders such as softening, browning and microbial infection. Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. This paper introduces physiological and biochemical characteristics and summarizes key biotechnologies for fresh-cut processed fruit to provide practical and theoretical basis for the development of fresh-cut fruit industry.

Abstract:With a growing demand for safe, nutritious, and fresh-like produce, a number of disinfection technologies have been developed. This review comprehensively examines the working principles and applications of several emerging disinfection technologies. The chemical treatments, including chlorine dioxide, ozone, electrolyzed water, essential oils, high-pressure carbon dioxide, and organic acids, have been improved as alternatives to traditional disinfection methods to meet current safety standards. Non-thermal physical treatments, such as UV-light, pulsed light, ionizing radiation, high hydrostatic pressure, cold plasma, and high-intensity ultrasound, have shown significant advantages in improving microbial safety and maintaining the desirable quality of produce. However, using these disinfection technologies alone may not meet the requirement of food safety and high product quality. Several hurdle technologies have been developed, which achieved synergistic effects to maximize lethality against microorganisms and minimize deterioration of produce quality. The review also identifies further research opportunities for the cost-effective commercialization of these technologies.

Advanced application of slightly acidic electrolyzed water for fresh-cut fruits and vegetables preservation

Abstract:Fresh-cut fruits and vegetables (F&V) play a pivotal role in modern diets due to their convenience and nutritional value. However, their perishable nature renders them susceptible to rapid spoilage, causing quality deterioration, safety risks, and economic losses along the supply chain. Traditional preservation methods, while effective to some extent, often fall short in maintaining the quality and safety of fresh-cut F&V. This comprehensive review examines the utilization of slightly acidic electrolyzed water (SAEW) as a novel preservation technique for fresh-cut F&V. The review encompasses the production mechanisms, sterilization principles, classifications and application of SAEW. It explores the effects of SAEW on microbial inactivation, quality parameters, and metabolic pathways in fresh-cut F&V. Additionally, it assesses the synergistic effects of SAEW when combined with other preservation methods. SAEW demonstrates remarkable potential in extending the shelf life of fresh-cut F&V by effectively inhibiting microbial growth, suppressing browning, preserving chemical content, and influencing various metabolic processes. Moreover, its synergy with different treatments enhances its overall efficacy in maintaining fresh-cut F&V quality. The review highlights the promising role of SAEW as an innovative preservation approach for fresh-cut F&V. However, challenges regarding its widespread implementation and potential limitations require further exploration. Overall, SAEW stands as a significant contender in ensuring the safety and quality of fresh-cut F&V paving the way for future research and application in the food industry.

Abstract:The fresh-cut industry supplies the food market with healthy fresh fruit and vegetables and, in that way, may contribute to improve the nutritional status of the general population. On the other hand, over the last few years increasing concerns have been raised regarding the environmental impact of the fresh-cut industry, human health risks from exposure to disinfection by-products found in fresh-cut products and chlorine-based disinfection treatments during produce processing. This review provides a comprehensive view of the main interlinked aspects related to food safety and environmental impact of processing of fresh-cut vegetables. Advantages and downsides of the mainstream disinfection strategy, based on the use of chlorine-related disinfecting agents, along with some alternative treatments close to a wide commercial application, are discussed. Limitation in the application of these strategies to processing of organic fresh-cut produce are also highlighted, examining the specific environmental and food safety problems in the organic sector. Areas where lack of available information hinders at present a clear understanding of priorities of research and action are pointed out. Innovative conceptual tools are proposed to address these multiple and interlinking issues and to overcome limitations of currently available technologies. A comprehensive and multidisciplinary approach is suggested to move toward a more safe and environmentally sustainable production of fresh-cut products.

Abstract:Minimal processing is the fastest growing industry. The consumption of minimally processed foods has increased worldwide due to changing consumer attitudes towards fresh, healthy and convenient foods. In today's busy world, MPFV is an ideal food because it does not require additional requirements and provides a variety of minerals and vitamins necessary for human health. These new market trends have increased the need for the industry to explore new ideas to increase shelf life of the produce. The application of oil based nanoemulsions to minimally processed fruits and vegetables, used as cleaning or disinfecting agents, or added to food coatings, has been shown to significantly improve the microbiological quality and safety of minimally processed f&v. The antibacterial properties of essential oils reduce microbial activity, keeping the food fresh without compromising its quality. Other technologies, such as MAP on small-scale processors, can also play an important role. There are several strategies that can be implemented with the goal of reducing the rate of deterioration of fresh cut crops. The several new emerging technologies, are intelligent packaging, sensors, films, and modified atmosphere.

Abstract:The market size of fresh and minimally-processed fruits and vegetables (MPFVs) have grown rapidly in the last years as a result of consumer attitudes change due to their increasing use in prepared mixed salad for fresh, healthy and convenient food. Handling and mechanical operations of cutting and peeling induce injures and release of on-site cellular contents which promote the growth of harmful microbes. Chlorine has been widely adopted in fresh and MPFVs disinfection in washing due to its low cost and high efficacy against a broad spectrum of microorganisms; but, continuous replenishment of chlorine into high organic wash water can promote the formation of suspected carcinogenic compounds. There is a real need to find new alternatives to chlorine to preserve MPFVs quality for longer time. Although several methods and chemicals can be used to achieve similar reduction of microorganism counts without the production of harmful compounds, nor compromising the quality of MPFVs produce, fewer amount of them have gained widespread acceptance by the food industry. The challenge of this work was to give an upgraded level of understanding for producers and retailers to underpin future research directions for a modern food industry in order to resolve existing issues that limit fresh-cut quality and shelf-life. This paper covers a comprehensive review to improve shelf-life and quality of MPFVs, from the traditional technologies toward the most promising advancements.

Probiotics and Antimicrobial Proteins

Abstract:Postharvest losses in fruits and vegetables exert substantial economic and environmental repercussions. Chemical interventions are being widely utilized for the past six decades which may lead to significant health complications. Bioprotection of fruits and vegetables is the need of the hour in which use of lactic acid bacteria (LAB) with GRAS status predominantly stands out. Incorporation of LAB in postharvest fruits and vegetables suppresses the growth of spoilage organisms by synthesizing various antimicrobial compounds such as bacteriocins, organic acids, hydrogen peroxide (H 2 O 2 ), exopolysaccharides (EPS), and BLIS. For example, Pediococcus acidilactici , Lactobacillus plantarum , and Limosilactobacillus fermentum convert natural sugars in fruits and vegetables to lactic acid and create an acidic environment that do not favour spoilage organisms. LAB can improve the bioavailability of vitamins and minerals and enrich the phenolic profile and bioactivity components. LAB has remarkable physiological characteristics like resistance towards bacteriophage, proteolytic activity, and polysaccharide production which adds to the safety of foods. They modify the sensory properties and preserve the nutritional quality of fruits and vegetables. They can also perform therapeutic role in the intestinal tract as they tolerate low pH, high salt concentration. Thus application of LAB, whether independently or in conjunction with stabilizing agents as edible coatings, is regarded as an exceptionally promising methodology for ensuring safer consumption of fruits and vegetables. This review addresses the most recent research findings that harness the antagonistic property of lactic acid bacterial metabolites, formulations and coatings containing their bioactive compounds for extended shelf life of fruits and vegetables.

Abstract:Chitosan, derived from chitin, a major constituent (in quantity) of crustaceans, is a unique aminopolysaccharide with emerging commercial potential in agriculture, food, pharmaceuticals and nutraceuticals due to its nontoxic, biodegradable and biocompatable properties. Chitosan coating on fruits and vegetables has been found to be effective for the reduction of a variety of harmful micro-organims and extend the shelf-life of these products. In this review, our focus is on the antimicrobial properties of chitosan and its application as a natural preservative for fresh products. We detailed the key properties that are related to food preservation, the molecular mechanism of the antimicrobial activity of chitosan on fungi, gram-positive and gram-negative bacteria, coating methods for using chitosan and its formulation for preserving fruits and vegetables, as well as the radiation method of producing chitosan from chitin. Understanding the economic and scientific factors of chitosan’s production and efficiency as a preservative will open its practical application for fruits and vegetable preservation.

Abstract:The fruit farming industry faces spoilage and disease after harvest, with Colletotrichum being the most common cause. Safer, more effective, biorational, and sustainable disease management are suggested. Plant-based essential oils (Eos) have synergistic antimicrobial, herbicide, insecticide, antioxidant, and fungicide properties that can fight agricultural fungi. Due to their negative effects on agroecosystems and public health, the OECD recommends a switch to sustainable food systems and synthetic fungicides. Essential oils are complex lipids from plants' secondary metabolism that are allelopathic, herbivorous, and phytopathogenic microorganism-protective. Their effects on bacteria and fungi include cell wall degradation, cytoplasmic and lipid membrane synthesis interference, lysis, cell death, and mitochondrial dysfunction. Essential oils were shown to treat postharvest diseases in apple cultivars and Penicillium spp., B. cinerea in strawberries and apples. Combining essential oils and non-toxic additives can control fruit postharvest fungal infections. Immersion, spraying, fumigation, and volatilization can be applied to fruit. Researchers suggest adding essential oils to edible or biodegradable films and coatings to extend fruit shelf life and reduce microorganism spoilage. Agriculture is promising with nanobiotechnologies that improve volatile compound stability, pesticide residual effects and Aedes aegypti adhesion and repellency. Further research is needed to determine nanomaterials' toxicity and environmental impact.

Abstract:Fruit juices are important commodities in the global market providing vast possibilities for new value added products to meet consumer demand for convenience, nutrition, and health. Fruit juices are spoiled primarily due to proliferation of acid tolerant and osmophilic microflora. There is also risk of food borne microbial infections which is associated with the consumption of fruit juices. In order to reduce the incidence of outbreaks, fruit juices are preserved by various techniques. Thermal pasteurization is used commercially by fruit juice industries for the preservation of fruit juices but results in losses of essential nutrients and changes in physicochemical and organoleptic properties. Nonthermal pasteurization methods such as high hydrostatic pressure, pulsed electric field, and ultrasound and irradiations have also been employed in fruit juices to overcome the negative effects of thermal pasteurization. Some of these techniques have already been commercialized. Some are still in research or pilot scale. Apart from these emerging techniques, preservatives from natural sources have also shown considerable promise for use in some food products. In this review article, spoilage, pathogenic microflora, and food borne outbreaks associated with fruit juices of last two decades are given in one section. In other sections various prevention methods to control the growth of spoilage and pathogenic microflora to increase the shelf life of fruit juices are discussed.

Abstract:Fruits and vegetables are widely employed in food production in India. Depending on their nature and cooking procedure, these products are consumed uncooked, half-cooked, or fully cooked, with or without peels. If these peel remnants are not further handled, they become garbage. But different studies conducted on peels revealed the presence of important metabolites, using the polar and carbohydrates, carotenoids, proteins, steroids, flavonoids, alkaloids, tannins, saponins, triterpenoids, and phlobatannin, coumarin, and other nonpolar solvent systems. These extracts are also having potent antimicrobial effects on enteric human pathogens. Various phytochemical elements have antibacterial, antioxidant, antiproliferative, and anti-inflammatory properties. etc. The current study examines the medicinal potential of Indian regional fruits and vegetable peels.

Abstract:Fruit preservation after harvest is one of the key issues in current agriculture, rural areas, and for farmers. Using chitosan to keep fruits fresh, which can reduce the harm caused by chemical preservative residue to human health. It also helps avoid the disadvantages of the high cost of physical preservation and the challenges associated with difficult operation. This review focuses on the application progress of chitosan in fruit preservation. Studies have shown that chitosan inhibits the growth of bacteria and fungi, and delays fruit aging and decay. Furthermore, it can regulate the respiration and physiological metabolism of fruit, helping to maintain its quality and nutritional value. The preservation mechanism of chitosan includes its antibacterial properties, film-forming properties, and its effects on the physiological processes of fruit. However, in practical applications, issues such as determining the optimal concentration and treatment of chitosan still require further research and optimization.

Abstract:The food industry has extensively explored postharvest microbial control, seeking viable technologies to ensure food safety. Although numerous chlorine-based commercial sanitizers serve this purpose, many are plagued by constraints such as instability and diminished disinfectant efficacy. These issues arise from exposure to organic matter in wash water, light, or air. As an innovative and promising alternative, slightly acidic electrolyzed water (SAEW) has emerged, captivating attention for its robust sterilization potential and eco-friendliness in agricultural and food sectors. SAEW generated via electrolysis of a diluted hydrochloric acid (HCl) solution with concentrations ranging from 2 to 6% or aqueous solution of sodium chloride (NaCl) in a nonmembrane electrolytic chamber is reported to possess equivalent antimicrobial properties as strong acidic electrolyzed water (StAEW). In contrast to traditional chlorine sanitizers, SAEW leaves less chlorine residue on sanitized foods such fresh-cut fruit and vegetables, meat, poultry, and aquatic products due to its low available chlorine concentration (ACC). Its near neutral pH of 5 to 6.5 not only renders it environmentally benign but also mitigates the production of chlorine gas, a contrast to low pH conditions seen in StAEW generation. The bactericidal effect of SAEW against various strains of foodborne pathogens is widely believed and accepted to be due to the combined action of high oxidation-reduction-potential (ORP) reactions and undissociated hypochlorite/hypochlorous acid (HOCl). Consequently, a burgeoning interest surrounds the potential of SAEW for sanitation in the food industry, offering an alternative to address shortcomings in sodium hypochlorite solutions and even StAEW. It has been hypothesized from a number of studies that SAEW treatment can increase the quality and nutritional value of harvested fruits, which in turn may enhance their ability to be stored. Therefore, SAEW is not only a promising sanitizer in the food industry but also has the potential to be an efficient strategy for encouraging the accumulation of bioactive chemicals in plants, especially if it is used extensively. This review encapsulates the latest insights concerning SAEW, encompassing its antimicrobial effectiveness, sanitization mechanism, advantages vis-à-vis other sanitizers, and plausible applications across the food industry.

Abstract:Citrus fruits are well known for their taste, flavour, aroma and fragrance, with rich vitamin C content. Fruits are rich in various nutrients, minerals and vitamins because of which they have the important role in pharmaceutical and nutraceutical industries. The citrus fruit cultivation experiences many challenges through biotic and abiotic stresses leading to occurrence of pest and diseases coupled with physiological disorders. The occurrence of pre and post-harvest disorders due to abiotic stresses and improper harvesting methods and unhygienic field conditions would lead to reduction in yield, fruit quality and commercial value of the produce and products. Improper harvesting and management in citrus fruits reduce the quality and appearance of the fruits. Pre-harvest disorders like granulation, fruit cracking, puffiness, superficial rind pitting, creasing and sunburn, and post-harvest disorders such as chilling injury, oleocellosis, rind staining, peteca, stylar end breakdown and stem end rind breakdown are the resultant disorders repeatedly noticed in citrus fruits. Maintenance of garden hygiene, flower regulation, water and nutrient management, bahar treatment, use of growth regulators and crop load coupled with canopy management would help in minimising the above disorders in citrus fruit crops.

Abstract:The fruits and vegetables industry in India is experiencing significant growth and is considered an emerging and fast-expanding sector. However, food waste, scarcity, safety, and security are pressing issues that need attention. With the current levels of dearth in fruits and vegetables, establishing a well-designed supply chain is crucial to ensuring food security for the growing population and improving farmers' livelihoods and incomes. Research and investigations on the pre-treatment of fruits and vegetables have highlighted the substantial losses and wastage, contributing to India's food security challenges. The primary purpose of pre-treatment is to prolong the shelf life of vegetables and fruits and minimize losses due to spoilage. Various pre-treatment procedures involve physical, chemical, physiochemical, and biological approaches. This review focuses on the technologies implemented for pre-treatments, including osmotic dehydration, ethylene and CO 2 treatments, high-pulsed electric field techniques, and other modern drying methods. By exploring these technologies, we aim to find effective solutions to address food security concerns and improve the freshness and longevity as well as the quality of fruits and vegetables in India's supply chain. Implementing efficient pre-treatment methods can contribute significantly to reducing food waste, ensuring a stable food supply, and supporting the sustainable growth of the fruit and vegetable industry in the country.

One area of focus involves scrutinizing the gaps in the current body of knowledge, particularly the intricate molecular mechanisms governing enzymatic activity and microbial spoilage. Recent developments in technology also present intriguing possibilities for future research. Artificial Intelligence (AI) offers transformative potential in monitoring the quality of stored produce by predicting the onset of spoilage using complex algorithms. This work also delves into the prospects of employing the Internet of Things (IoT) for real-time assessment and control of storage conditions, which could revolutionize supply chain management and significantly minimize deterioration during transport. Another exciting avenue lies in the utilization of novel packaging materials especially those which are biodegradable and may be imbued with natural preservatives, a move that aligns well with global sustainability goals. Any such technological advancements must be scrutinized in the context of existing food safety standards and regulations, both at the national and international levels. These standards govern everything from permissible microbial activity levels to waste management, and are dictated by organizations such as the FDA and EFSA, as well as international frameworks like the Codex Alimentarius.

Abstract:Citrus fruits are subjected to a diversity of postharvest diseases caused by various pathogens during picking, packing, storage and transportation. Green and blue molds, caused by Penicillium digitatum and Penicillium italicum, respectively, are two major postharvest citrus diseases and cause significant economic losses during the commercialization phase. Currently, the control of postharvest citrus diseases relies mainly on the use of synthetic fungicides, which usually result in the resistance against fungal attack, environment pollution and health hazards. In recent years, much attention has been given to the preservation of citrus by naturally isolated edible plant extracts, medicinal plant extracts, Citrus extracts and volatiles, et al. Scientists worldwide devote their time and energy to discover the high effect, low toxicity, safety and inexpensive plant-derived fungicides. The current review will highlight plant-derived fungicides and chemical constituents that aim to inhibit P. digitatum and P. italicum in vitro and in vivo. Coatings enriched with plant extracts could be good alternative methods for Citrus fruits preservation. Problems and prospects of the research and development of plant-derived natural fungicides will also be discussed in this article.

Abstract:Chitosan coating is beneficial to maintaining the storage quality and prolonging the shelf life of postharvest fruits and vegetables, which is always used as the carrier film for the antimicrobial agents. This review focuses on the preparation, property, mechanism, and application effectiveness on the fruits and vegetables of chitosan-based coating with antimicrobial agents. Chitosan, derived by deacetylation of chitin, is a modified and natural biopolymer as the coating material. In this article, the safety and biocompatible and antimicrobial properties of chitosan were introduced because these attributes are very important for its application. The methods to prepare the chitosan-based coating with antimicrobial agents, such as essential oils, acid, and nanoparticles, were developed by other researchers. Meanwhile, the application of chitosan-based coating is mainly due to its antimicrobial activity and other functional properties, which were investigated, introduced, and analyzed in this review. Furthermore, the surface and mechanical properties were also investigated by researchers and concluded in this article. Finally, the effects of chitosan-based coating on the storage quality, microbial safety, and shelf life of fruits and vegetables were introduced. Their results indicated that chitosan-based coating with different antimicrobial agents would probably have wide prospect in the preservation of fruits and vegetables in the future.
