Abstract:Sous-vide is a technique of cooking foods in vacuum bags under strictly controlled temperature, offering improved taste, texture and nutritional values along with extended shelf life as compared to the traditional cooking methods. In addition to other constituents, vegetables and seafood represent important sources of phytochemicals. Thus, by applying sous-vide technology, preservation of such foods can be prolonged with almost full retention of native quality. In this way, sous-vide processing meets customers’ growing demand for the production of safer and healthier foods. Considering the industrial points of view, sous-vide technology has proven to be an adequate substitute for traditional cooking methods. Therefore, its application in various aspects of food production has been increasingly researched. Although sous-vide cooking of meats and vegetables is well explored, the challenges remain with seafoods due to the large differences in structure and quality of marine organisms. Cephalopods (e.g., squid, octopus, etc.) are of particular interest, as the changes of their muscular physical structure during processing have to be carefully considered. Based on all the above, this study summarizes the literature review on the recent sous-vide application on vegetable and seafood products in view of production of high-quality and safe foodstuffs.

Abstract:Sous vide cooking implies cooking foods, packed under vacuum conditions, at controlled temperatures (<80 °C). Although this method opens a new window of culinary possibilities, it also involves a series of risks, mainly microbiologically related, that must be assessed. The aim of this work was to evaluate the effectiveness of SV processes to inactivate three important foodborne pathogens (Campylobacter, Salmonella, and Clostridium spores) in chicken breast and eggs (omelet). For this purpose, two levels of inoculation (102 and 106 CFU/g), two different recipes, and two distinct treatments (with and without storage) for each food were studied. After treatments and storage, the corresponding microbiological counts were performed with standard methods. Average inactivation rates observed were 1.70, 4.82, and 4.34 log for Clostridium spores, Campylobacter, and Salmonella, respectively. No significant differences in microbial inactivation were perceived between the different recipes (food composition) or treatments, except for Clostridium spores, which showed a higher inactivation rate (2.30 log) when samples were stored. In general, preliminary results showed that, although appropriate levels of inactivation are reached for vegetative pathogenic cells, in some cases (spores in breast and Salmonella in eggs), the remaining microbiological risks should be considered and further studied, especially if long-term storage is planned.

Abstract:The wide range of products, processing conditions, processing equipment, methods for assessing sensory and nutritional quality calls for a more holistic approach to when choosing the right food technology. The sensory quality of sous vide foods was the main factor which brought it to international attention. Today this new food service technology used by catering companies, restaurants and, increasingly, home cooks. Sous vide differs from traditional cooking methods in two fundamental ways: the raw food is vacuum-sealed in heat-stable, food-grade plastic pouches and the food is cooked using precisely-controlled heating. Sous vide cooking method it provides a high nutritional value, improved texture, and tenderness, maintains the juiciness as a result of low-temperature cooking, reduces lipid oxidation for an extended shelf life and prevents loss of volatile flavors and moisture during cooking because of vacuum packaging.This article summary reviews the basic techniques, changes in quality indicators of meat, fish and vegetable foods in regard to food safety, and science of sous vide cooking.

Abstract:Increasing consumer demands for microwaveable, convenience foods with extended shelf life yet retaining ‘closer to fresh’ characteristics, has resulted in the growth of sous vide or vacuum cooking processing technology. However, this new generation of minimally processed sous vide products are not shelf stable and pose a potential public health risk if subjected to temperature abuse at any stage of the product's production, storage, distribution and marketing. To ensure the microbiological safety of sous vide products, a Hazard Analysis Critical Control Point (HACCP) approach is recommended at all stages of sous vide processing and distribution of end product. The HACCP approach is a preventive approach to microbiological quality control and is intended to prevent problems before they occur rather than finding them in the finished product. Hazard Analysis identifies the microbiological hazards and potential entry points of these hazards in the sous vide process. Critical Control Points to control the identified microbiological hazards include quality of raw ingredients, time/temperature relationship, sanitation and packaging control and incorporation of additional barriers, such as pH and water activity (aω) reduction, in the formulated product. The practical application of HACCP to ensure the microbiological safety of a sous vide processed meat/pasta product are given.

Abstract:Properly using controllable atmospheric containers can facilitate investigations of the survival abilities and physiological states of key and emerging-foodborne pathogens under recreated applicable food processing environmental conditions. Notably, saturated salt solutions can efficiently control relative humidity in airtight containers. This chapter describes a practical experimental setup, with necessary prerequisites for exposing foodborne pathogens to simulated and relevant food processing environmental conditions. Subsequent analyses for studying cell physiology will also be suggested.
Effect of sous vide processing on physicochemical, ultrastructural, microbial and sensory changes in vacuum packaged chicken sausages

Abstract:The processing of sous vide chicken sausages was optimized under vacuum packaging condition and cooking at 100 °C for 30 min (SV30), 60 min (SV60) and 120 min (SV120) and compared with aerobically cooked control at 100 °C for 30 min. Sous vide processing of chicken sausages (SV30) produced higher ( p < 0.05) cooking yield, Hunterlab a* values and sensory attributes without affecting proximate composition and shear force values relative to control. The sodium dodecyl sulphate-polyacrylamide gel electrophoresis and scanning electron microscopy results revealed no significant changes in protein quality and emulsion ultra-structure due to SV30 processing relative to control sausages. Sous vide processing of chicken sausages enriched with rosemary diterpene phenols retained the freshness and quality up to 120 days during storage at 4 ± 1 °C relative to control sausages that were spoiled on 20th day. Lipid oxidation and microbial growth remained below the spoilage levels for all the SV-processed sausages throughout the storage and addition of rosemary diterpene mixture at 0.02% v/w reduced the microbial growth and improved ( p < 0.05) the sensory attributes. Our results demonstrate that sous vide processing minimizes lipid oxidation and microbial growth of chicken sausages with improved product quality and shelf-life at 4 ± 1 °C.

Abstract:Ultrasound technology is an emerging food processing technology that helps food processing/preservation shifting away from conventional thermal technologies due to their detrimental effects on food quality, composition, and sensory attributes. This review highlights the applications of ultrasound technology in food processing, and its prospects for eliminating microbial spores, important agents of food spoilage and foodborne intoxication/infection. Ultrasound (sound waves between 20–100 kHz and 2–10 MHz), when applied to foods, inhibits the proliferation of micro-organisms, extends shelf-life, and sustain food quality/sensory attributes. The generated sound waves induce intermolecular forces within the food medium and microbial cells, leading to cell wall rupture and cell lysis, and consequently inactivation. It has found application in the processing of various food items, including beef muscles, juices, oils, etc. The mode of microbial or bacterial spores’ inactivation includes cell wall and membrane disruption, inhibiting enzymatic activities and damaging DNA materials. As a tool for eliminating spores in foods, the technology is commonly used in combination with other treatments such as high temperature (thermosonication), high pressure (manosonication), and UV radiations. These combinations have been shown to improve foods’ physicochemical attributes while increasing spore permeability and sensitivity to other treatments, although through unclear mechanisms.

Abstract:Over the last few decades, advancements in process safety and quality methods have been significantly improved, yet new challenges continue to emerge in the sustainable food supply chain. This study aimed to investigate some physicochemical and microbiological parameters impacting meat products, particularly cooked sausages, within a sustainable supply chain, focusing on quality, spoilage populations, and syneresis formation under vacuum conditions. A comprehensive analysis was conducted on 355 samples collected over four seasons using high-throughput sequencing (16S/ITS) and microbiological and physicochemical [pH and water activity (aw)] assessments. The microbial growth predictor MicroLab_ShelfLife was employed, and multiple factor analysis (MFA) and agglomerative hierarchical clustering (AHC) were utilized to understand how these variables influence the microbiome resilience of these products. Lactic and acetic acids were correlated with the microbiome of the sausages and the liquid coating covering them using metagenomic analyses. The study highlighted that 52% of the evaluated meat industries in southeastern Brazil are implementing effective protocols for sustainable chain production. The results indicated that the durability of vacuum-packaged cooked sausages was primarily influenced by storage temperature (RV coefficient of 0.906), initial microbial load (0.755), and aw (0.624). Average microbial counts were 4.30 log cfu/g (initial), 4.61 (7°C/4 days), 4.90 (7°C/8 days), 6.06 (36°C/4 days), and 6.79 (36°C/8 days). Seasonal durability analysis revealed that winter had the highest average durability of 45.58 days, while summer had the lowest at 26.33 days. Yeast populations, including Trichosporon sp. and Candida sp., were identified as key genera influencing spoilage dynamics. In addition, Bacillus species emerged as dominant spoilage microorganisms, highlighting the need for new critical controls. This study demonstrates the impact of metagenomic approaches, including ITS and 16S amplicon sequencing, in revealing microbial community dynamics, storage temperature, and aw, which are essential for developing targeted interventions to enhance food safety and quality sustainably.

Abstract:Nowadays, food treatment technologies are constantly evolving due to an increasing demand for healthier and tastier food with longer shelf lives. In this review, our aim is to highlight the advantages and disadvantages of some of the most exploited industrial techniques for food processing and microorganism deactivation, dividing them into those that exploit high temperatures (pasteurization, sterilization, aseptic packaging) and those that operate thanks to their inherent chemical–physical principles (ultrasound, ultraviolet radiation, ozonation, high hydrostatic pressure). The traditional thermal methods can reduce the number of pathogenic microorganisms to safe levels, but non-thermal technologies can also reduce or remove the adverse effects that occur using high temperatures. In the case of ultrasound, which inactivates pathogens, recent advances in food treatment are reported. Throughout the text, novel discoveries of the last decade are presented, and non-thermal methods have been demonstrated to be more attractive for processing a huge variety of foods. Preserving the quality and nutritional values of the product itself and at the same time reducing bacteria and extending shelf life are the primary targets of conscious producers, and with non-thermal technologies, they are increasingly possible.

Abstract:SUMMARY Consumers are more conscious of both the quality and microbial safety of the food they eat. Therefore, their demand for safe food and food products has motivated researchers to develop non-conventional processing technologies. Numerous investigations have shown the effectiveness of high-pressure processing, ultraviolet, pulsed light, ultrasonic sterilisation, pulsed electric field, irradiation, and cold plasma to produce safe and high-quality products compared to conventional processes. This review aims to summarise the advanced applications of these promising non-conventional thermal technologies to provide safe and high-quality food products. Many innovative strategies have been proposed as an alternative to conventional technologies, normally applied to reduce pathogenic microbes. This study presents some potential non-conventional technologies that show emerging microbial decontamination abilities for improving finished food products' freshness, safety and multiplication. It also summarises the inactivation mechanism of foodborne pathogens, which presents an outline of the effects on finished food product quality based on microbiological and physicochemical perspectives. The key advantage of these technologies is their potential to inactivate foodborne microorganisms without affecting the nutritional value of food products. These technologies are gradually entering the food industry due to technological advances and low investment costs. A comprehensive study is critical to keep abreast of these technologies' merits, application scope and recent developments to ensure food products satisfy consumer demands while maintaining the highest quality and safety standards.

Abstract:Emerging technologies were combined to ensure the safety for consumers of Asian green mussel (AGM; Perna viridis). The combination of acidic electrolyzed water (AEW) depuration and sous vide cooking effectively reduced Vibrios while maintaining the quality of mussel. The use of AEW depuration combined with sous vide cooking at 100 degrees C for 1 min (D/SV-1) provided the yield of mussel meat of 27.22%, maintained the color, and texture properties. It could prevent the oxidation of polyunsaturated fatty acids and caused no changes in patterns of main proteins including paramyosin, actin and tropomyosin. Vibrio parahaemolyticus, V. vulnificus and Shewanella algae in AGM without treatment were 4.12, 3.00 and 3.30 log10 CFU/g, respectively. Those bacterial species were confirmed by MALDI Biotyper & REG; technique. They were potentially inactivated by the selected process. In addition, the next generation sequencing (NGS) based on the 16S rRNA gene revealed a low percentage of V. vulnificus genome (2.72%) and the complete elimination of other naturally existing Vibrios. Overall, AEW depuration of raw mussels, followed by sous vide cooking could be a promising method for the production of safe ready-to-cook Asian green mussels for consumption. Industry relevance: Common Asian green mussel (AGM; Perna viridis) may represent a risk for public health associated with pathogenic bacteria originating from the aquatic environment. It also deteriorates rapidly within 1-2 days because of its perishable nature, thus losing its market value. To tackle such problems, appropriate pretreatment using acidic electrolyzed water depuration, followed by sous vide cooking under proper conditions could be implemented for safety assurance of ready-to-cook AGM by eliminating both pathogenic and spoilage bacteria. Also, the eating quality could be maintained. As a consequence, the technology developed in the present study could offer an effective solution for ensuring customer safety without compromising eating quality. It could be commercially employed for seafood processing industry, especially for bivalve mollusks, e.g., mussels, scallops, and clams.

Abstract:Food safety and quality control are critical concerns in food processing and manufacturing due to the potential risks of contamination and the need for consistent product quality. This paper explores advancements in food safety protocols and quality control measures, focusing on technologies such as pasteurization methods—including Vat Pasteurization, High-Temperature Short-Time (HTST), and Ultra-High Temperature (UHT) processing—and vacuum packaging. The implementation of Good Manufacturing Practices (GMP) and sanitation protocols is examined, alongside the role of data analytics in microbiological monitoring. A comparative analysis of Vat Pasteurization and UHT processing is presented, highlighting that there are no major differences in their effectiveness for microbial inactivation. The paper discusses how these advancements contribute to a more robust food safety framework applicable across the entire food processing industry. Future trends in food safety over the next decade are also explored.

Abstract:Heat processing is one of the most efficient strategies used in food industry to improve quality and prolong shelf life. However, conventional processing methods such as microwave heating, burning charcoal treatment, boiling, and frying are energy-inefficient and often lead to inferior product quality. Superheated steam (SHS) is an innovative technology that offers many potential benefits to industry and is increasingly used in food industry. Compared to conventional processing methods, SHS holds higher heat transfer coefficients, which can reduce microorganisms on surface of foodstuffs efficiently. Additionally, SHS generates a low oxygen environment, which prevents lipid oxidation and harmful compounds generation. Furthermore, SHS can facilitate development of desired product quality, such as protein denaturation with functional characteristics, proper starch gelatinization, and can also reduce nutrient loss, and improve the physicochemical properties of foodstuffs. The current work provides a comprehensive review of the impact of SHS on the nutritional, physicochemical, and safety properties of various foodstuffs including meat, fruits, and vegetables, cereals, etc. Additionally, it also provides food manufacturers and researchers with basic knowledge and practical techniques for SHS processing of foodstuffs, which may improve the current scope of SHS and transfer current food systems to a healthy and sustainable one.

Critical Reviews in Food Science and Nutrition

Abstract:Chilled beef is inevitably contaminated with microorganisms, starting from the very beginning of the slaughter line. A lot of studies have aimed to improve meat safety and extend the shelf life of chilled beef, of which some have focused on improving the decontamination effects using traditional decontamination interventions, and others have investigated newer technologies and methods, that offer greater energy efficiency, lower environmental impacts, and better assurances for the decontamination of beef carcasses and cuts. To inform industry, there is an urgent need to review these interventions, analyze the merits and demerits of each technology, and provide insight into 'best practice' to preserve microbial safety and beef quality. In this review, the strategies and procedures used to inhibit the growth of microorganisms on beef, from slaughter to storage, have been critiqued. Critical aspects, where there is a lack of data, have been highlighted to help guide future research. It is also acknowledge that different intervention programs for microbiological safety have different applications, dependent on the initial microbial load, the type of infrastructures, and different stages of beef processing.

Abstract:Nowadays, the reduction of food waste, as well as protection of the nutritional value, are significant trends in domestic and catering food processing. Among the trends are innovations in food technology like sous-vide. The aim of this study was to evaluate the effect of sous vide cooking on the technological, nutritional, and microbiological quality of the chicken breast as well as to compare it to conventional methods (boiling and steaming). Meats after low-temperature sous-vide heat treatment were characterized by a significantly higher yield (p ≤ 0.05) and water content than those prepared with conventional methods. The energy and time consumption of sous-vide preparation was 5–10 times higher than other methods. The examined heat treatments resulted in a good microbiological quality of samples. The nutritional value of sous-vide products depended on the process parameters. A higher temperature and sous-vide processing time resulted in a higher content of dry matter, protein, and fat in the meat and was close to that of conventional methods. Low parameters of the process resulted in the least changed profile of fatty acids in meat. The use of the sous-vide method protects the nutritional value and allows for the extension of the shelf life of the meat which ultimately reduces food waste. The sous-vide heat treatment method is more suitable for foodservice than use in home conditions because of high energy consumption, despite the protection of nutrition value.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Spoilage and deterioration of aquatic products during storage are inevitable, posing significant challenges to their suitability for consumption and the sustainability of the aquatic products supply chain. Research on the nonthermal processing of fruit juices, probiotics, dairy products, and meat has demonstrated positive outcomes in preserving quality. This review examines specific spoilage bacteria species and mechanisms for various aquatic products and discusses the principles, characteristics, and applications of six nonthermal processing methods for bacterial inhibition to maintain microbiological safety and physicochemical quality. The primary spoilage bacteria groups differ among fish, crustaceans, and shellfish based on storage conditions and durations. Four metabolic pathways utilized by spoilage microorganisms-peptides and amino acids, nitrogen compounds, nucleotides, and carbohydrates-are crucial in explaining spoilage. Nonthermal processing techniques, such as ultrahigh pressure, irradiation, magnetic/electric fields, plasma, and ultrasound, can inactivate microorganisms, thereby enhancing microbiological safety, physicochemical quality, and shelf life. Future research may integrate nonthermal processing with other technologies (e.g., modified atmosphere packaging and omics) to elucidate mechanisms of spoilage and improve the storage quality of aquatic products.

Application of immersion vacuum cooling to water-cooked beef joints – Quality and safety assessment

Abstract:Immersion vacuum cooling (IVC) was compared against air blast cooling (AB) and vacuum cooling (VC), to establish its applicability to cool water-cooked beef joints. Process parameters (cooling time and cooling loss) and quality parameters (proximate; physical; sensory and microbial analysis) were compared. Results showed IVC samples have lower cooling losses and improved quality properties compared to VC, while generally comparable to AB samples. IVC cooling times were slower then VC, but faster than AB. Sensory results showed no preference between samples (P>0.05), even though differences in tenderness and juiciness were detected. Cooling methods had no significant effect on thermoduric spore survival or heat activation in the case of Bacillus atrophaeus and Geobacillus stearothermophilus spores. Results confirmed IVC is capable of combining rapid process times and lower mass losses producing microbiologically safe beef joints of overall high quality in terms of sensory, physical and composition characteristics.

Abstract:Background: Food safety, which is the primary goal of food analysis, is a worldwide health concern to both humans and animals. Thus, this topic is of substantial interest to food science researchers. The development of analytical methods and techniques to ensure food safety is thriving, particularly as consumers have increasing concerns regarding the content and safety of their food supply. Conventional methods of food analysis, including mass spectroscopy (MS), high-performance liquid chromatography (HPLC), enzyme-linked immunosorbent assay (ELISA), gas chromatography (GC), and capillary electrophoresis (CE), are time-consuming, labor intensive, and require skilled technicians. Therefore, there is an urgent need to develop sustainable, high-efficiency, reliable, and cost-effective methods for rapid analysis and safety inspections of food products.Scope and approach: This review describes the latest developments in the field of food safety monitoring using microfluidic methods. Challenges and future perspectives of microfluidics are also discussed.Key findings and conclusions: Microfluidics and microfluidic analytical devices blaze a new way for rapid and efficient detection of foodborne pathogens, allergens, toxins, heavy metals, pesticide residue, additives, and other chemical and physical contaminants. Portability, miniaturization, and a significantly reduced sample reagent volume make microfluidic technology an ideal choice for field use, particularly in resource-limited areas. Abstract:This paper reviews the mechanisms, advantages and limitations of non‐thermal processing technologies for meat preservation and sterilisation within the last 5 years and discusses the opportunities and challenges they face. Summary Meat is widely regarded as the optimal source of protein for human consumption. However, meat is susceptible to spoilage and microbial contamination throughout processing, transportation and storage stages. Traditional thermal processing techniques are commonly employed in the global meat industry. While these methods ensure microbiological safety, they may also impact the sensory and functional attributes of meat products. To address these limitations, non‐thermal processing technologies are progressively replacing conventional thermal approaches. This review will primarily focus on the potential application of non‐thermal processing technologies as alternatives to traditional methods in meat and meat product processing. Various technologies exhibiting promising performance in this field will be presented. Additionally, the mechanisms, advantages and limitations of these non‐thermal technologies in recent years will be summarised, along with a discussion on the challenges and prospects they present. This study provides an overview of non‐thermal processing technology specifically applied to meat products, emphasising the underlying mechanisms associated with different approaches. By employing diverse technical combinations, it is possible to address existing processing limitations and expand their applicability range. Non‐thermal processing technology demonstrates significant potential for enhancing meat processing practices; however, concerns regarding safety aspects and limited clinical verification about to environmental pollution have impeded its widespread adoption within the food industry.
