Sensory evaluations of ultrahigh temperature milk and drinkable yogurt produced from milk obtained from ear-corn silage-fed cows, assessed by untrained panel

Abstract:A total of 65 general consumers were recruited to participate in sensory evaluation tests of ultrahigh temperature (UHT) milk and drinkable yogurt. These tests were conducted to investigate how the taste of UHT milk and drinkable yogurt is affected by feeding Holstein milking cows with ear-corn silage (ECS) or freaked corn (FC), as part of the mixed concentrate feed. The tests were conducted using the two-point discrimination method (taste intensity and preference) and testers chose either ECS or FC in response to each question. Overall palatability of the milk from cows fed with ECS was significantly higher than that of milk from cows fed with FC (P=0.046). In the case of drinkable yogurt, there was no significant difference in the overall palatability between the ECS and FC groups, although there were significant differences in the intensity of aroma (P=0.046), sweetness (P<0.001), and acidity (P<0.001) of yogurt between the ECS and FC groups. The category attribute analysis revealed that intensity of the body/kokumi (P<0.001) and preferences for the after taste (P<0.001) and aroma (P<0.01) influenced the determination of overall palatability of both the UHT milk and drinkable yogurt. Our findings show that by using sustainable ECS as a part of the mixed feed in cows, there is a possibility of introducing variability in the flavor of dairy products.
