Abstract:Adulteration in food has been a concern since the beginning of civilization, as it not only decreases the quality of food products but also results in a number of ill effects on health. Authentic testing of food and adulterant detection of various food products is required for value assessment and to assure consumer protection against fraudulent activities. Through this review we intend to compile different types of adulterations made in different food items, the health risks imposed by these adulterants and detection methods available for them. Concerns about food safety and regulation have ensured the development of various techniques like physical, biochemical/immunological and molecular techniques, for adulterant detection in food. Molecular methods are more preferable when it comes to detection of biological adulterants in food, although physical and biochemical techniques are preferable for detection of other adulterants in food.

Abstract:Food adulteration is the intentional addition of foreign or inferior substances to original food products for a variety of reasons. It takes place in a variety of forms, like mixing, substitution, hiding poor quality in packaging material, putting decomposed food for sale, misbranding or giving false labels, and adding toxicants. Several analytical methods (such as chromatography, spectroscopy, electronic sensors) are used to detect the quality of foodstuffs. This review provides concise but detailed information to understand the scope and scale of food adulteration as a way to further detect, combat, and prevent future adulterations. The objective of this review was to provide a comprehensive overview of the causes, risks, and detection techniques associated with food adulteration. It also aimed to highlight the potential health risks posed by consuming adulterated food products and the importance of detecting and preventing such practices. During the review, books, regulatory guidelines, articles, and reports on food adulteration were analyzed critically. Furthermore, the review assessed key findings to present a well-rounded analysis of the challenges and opportunities associated with combating food adulteration. This review included different causes and health impacts of food adulteration. The analytical techniques for food adulteration detection have also been documented in brief. In addition, the review emphasized the urgency of addressing food adulteration through a combination of regulatory measures, technological advancements, and consumer awareness. In conclusion, food adulteration causes many diseases such as cancer, liver disease, cardiovascular disease, kidney disease, and nervous system-related diseases. So, ensuring food safety is the backbone of health and customer satisfaction. Strengthening regulations, taking legal enforcement action, enhancing testing, and quality control can prevent and mitigate the adulteration of food products. Moreover, proper law enforcement and regular inspection of food quality can bring about drastic changes.

It is difficult to find food that is free from adulteration. Consumption of adulterated food contributes to numerous diseases in society, ranging from mild to life threatening. Therefore, detection of adulteration in food is essential to ensure the safety of the food we consume. To provide consumers with food that is free of adulterants, various detection methods such as physical, chemical, biochemical, and molecular techniques are used to identify adulterants in food. Abstract:Food adulteration refers to the alteration of food quality that takes place deliberately. It includes the addition of ingredients to modify different properties of food products for economic advantage. Color, appearance, taste, weight, volume, and shelf life are such food properties. Substitution of food or its nutritional content is also accomplished to spark the apparent quality. Substitution with species, protein content, fat content, or plant ingredients are major forms of food substitution. Origin misrepresentation of food is often practiced to increase the market demand of food. Organic and synthetic compounds are added to ensure a rapid effect on the human body. Adulterated food products are responsible for mild to severe health impacts as well as financial damage. Diarrhea, nausea, allergic reaction, diabetes, cardiovascular disease, etc., are frequently observed illnesses upon consumption of adulterated food. Some adulterants have shown carcinogenic, clastogenic, and genotoxic properties. This review article discusses different forms of food adulteration. Abstract:Food safety and authenticity have become a serious concern among consumers worldwide. Economically motivated practices of food fraud can have widespread implications for public health and reduce the overall food quality. As such, there is a rapidly increasing requirement for more sensitive and accurate methods to detect deliberate adulteration of food commodities. An attempt to summarize the present status of adulterated foods, the most common adulterants used, and the non-destructive methods to detect food fraud, has been made in this review article. The techniques and modern methods of food adulteration detection including NIR, FTIR, Raman spectroscopy, NMR, e-nose/e-tongue, and LIBS have been discussed. The methods of qualitative and quantitative data analysis have a significant role in the determination of process efficiency and as such a comprehensive knowledge of the process and recent applications discussed in the review would be of high interest to solve food adulteration problems.

Abstract:In India, food contamination has become a serious problem now-a-days. Consumer education and awareness is considered as the need of the hour. Adulteration like corruption has become rampant with alarming rate. The government knows that most of the spices, dal, ghee, milk sugar, tea etc are adulterated. The nature of contaminants is often impure, unhygienic, harmful, and detrimental to public health like adding the urea to milk, duplicate products often sold for the products of reputed brand, cold drinks like Pepsi, Coca cola etc and unhygienic substances, dal with stone bits, tea garnished by saw dust, turmeric mixed with chromate powder, chilly powder mixed with red colour and even fruits vegetables and cereals sold in market often having high level of toxic metals like lead, nickel, cadmium etc. Adulteration of food stuffs is commonly practised in India by traders due to consumers’ behaviour. They want to buy the food stuffs at lower price as possible as lower. The sellers now try to meet the needs of the buyers and their purchasing habit/tendency. This tendency of purchasing the stuffs motivates the sellers and traders to sell the adulterated food stuffs in the markets. Despite of ISI or Agmark certification mandatory for all edible items and food adulteration laws, food contamination has been rising at alarming rate especially in India. To encounter this ticklish situation, consumer awareness may play a vital role to combat the prevailing adulteration from a right perspective with the help of mass media and educational activities in school or colleges.

Abstract:Food is a basic necessity for life, growth, survival, and maintaining a proper body function. Rising food demand leads both producers and consumers to search for alternative food sources with high nutritional value. However, food products may never be completely safe. The oxidation reaction may alter both the physicochemical and immunological properties of food products. Maillard and caramelization nonenzymatic browning reactions can play a pivotal role in food acceptance through the ways they influence quality factors such as flavor, color, texture, nutritional value, protein functionality, and digestibility. There is a multitude of adulterated foods that portray adverse risks to the human condition. To maintain food safety, the packaging material is used to preserve the quality and freshness of food products. Food safety is jeopardized by plenty of pathogens by the consumption of adulterated food resulting in multiple foodborne illnesses. Though different analytical tools are used in the analysis of food products, yet, adulterated food has repercussions for the community and is a growing issue that adversely impairs human health and well-being. Thus, pathogenic agents’ rapid and effective identification is vital for food safety and security to avoid foodborne illness. This review highlights the various analytical techniques used in the analysis of food products, food structure, and quality of food along with chemical reactions in food processing. Moreover, we have also discussed the effect on health due to the consumption of adulterated food and focused on the importance of food safety, including the biodegradable packaging material.

Abstract:Food additives are the basis of the modern food industry, and play a significant role in improving the colour, aroma, and taste of food, altering its nutritional structure, perfecting its processing conditions, and extending its shelf life. The need of food additives in the food processing industries have sharply increased due to consumers’ preferences and commercial advantage they provide to the manufactured food because of longer shelf life, standardized composition and convenience in processing. Additives can be added to food directly and intentionally while indirectly, foods are exposed to them during processing, packaging, or storage Some additives are either natural or from synthetic sources and are classified into several groups, although there overlap exist between them. The use of food additives has been criticized for multiple health impacts such as cancer, asthma, allergies, and behavioral disorders in children. It is therefore important to balance the potential risks of an additive against its perceived benefits and allowing the consumer the choice of consuming or not consuming the food. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) is charged with the responsibility of assessing the risks of food additives to human health and safety through the establishment of the acceptable daily intake (ADI) for additives and in any case, the decision of consuming food with a particular additive is left to consumers.

Abstract:This review covers mainly publications that appeared in Analytical Abstracts (Royal Society of Chemistry) from January 1990 to February 2001. The number of publications on this topic continues to grow, and during the past three years (1998-2000) about 150 reviews and/or overviews have been published in the area of food. Numerous techniques and food matrices or chemical components are presented and discussed in these reviews. The present review is intentionally limited to eight techniques or classes of techniques and intends to be a "technique by technique" presentation of "what was used" or "what is used" to characterize food products and to detect their possible adulteration. The present review focuses on the following techniques: microscopic analysis; HPLC; GC, GC-(MS, FTIR); UV-visible spectrophotometry; AAS/AES, ICP-(AES, MS); IRMS, GC-IRMS, GC-C-IRMS; DSC; IR, mid-IR, and NMR (202 references). Emphasis is placed as much as possible on chemometrical treatment of analytical data, which are commonly used to achieve the final objective, either food characterization or adulteration detection. Finally, a brief description is given of the new generation of analytical systems that combine powerful analytical techniques and powerful computer software for a best extraction of the information from analytical data.

Abstract:In the food sector, the problem of food fraud—which encompasses the more focused category of adulteration driven by economic gain—is becoming more widely acknowledged and is raising concerns. Both the government and the industry are accountable for avoiding food adulteration, regardless of where the food danger originated. Food adulteration can result from incidents concerning food safety, food fraud, and food defence, which poses serious risks to the general public's health. In contrast to inadvertent injury in food safety events and intentional harm in food defence incidents, food fraud entails intentional activities for financial gain. Although financially motivated adulteration may have financial motivations, the unusual nature of contaminants frequently makes the related public health hazards more dangerous than traditional food safety threats. Establishing and executing a database that aggregates reports of food component fraud available for publicly accessible sources is an essential task. For governments, agencies, and individual enterprises assessing the possible dangers associated with certain items created in specific regions and those disseminated and sold elsewhere, this database provides essential information and useful data. Abstract:Adulteration of edible substances is a potent contemporary food safety issue. Perhaps the overt concern derives from the fact that adulterants pose serious ill effects on human health. Edible oils are one of the most adulterated food products. Perpetrators are adopting ways and means that effectively masks the presence of the adulterants from human organoleptic limits and traditional oil adulteration detection techniques. This review embodies a detailed account of chemical, biosensors, chromatography, spectroscopy, differential scanning calorimetry, non-thermal plasma, dielectric spectroscopy research carried out in the area of falsification assessment of edible oils for the past three decades and a collection of patented oil adulteration detection techniques. The detection techniques reviewed have some advantages and certain limitations, chemical tests are simple; biosensors and nuclear magnetic resonance are rapid but have a low sensitivity; chromatography and spectroscopy are highly accurate with a deterring price tag; dielectric spectroscopy is rapid can be portable and has on-line compatibility; however, the results are susceptible to variation of electric current frequency and intrinsic factors (moisture, temperature, structural composition). This review paper can be useful for scientists or for knowledge seekers eager to be abreast with edible oil adulteration detection techniques.

Analytical Approaches to Verify Food Integrity: Needs and Challenges

Abstract:A brief overview of the main analytical approaches and practices to determine food authenticity is presented, addressing, as well, food supply chain and future requirements to more effectively mitigate food fraud. Food companies are introducing procedures and mechanisms that allow them to identify vulnerabilities in their food supply chain under the umbrella of a food fraud prevention management system. A key step and first line of defense is thorough supply chain mapping and full transparency, assessing the likelihood of fraudsters to penetrate the chain at any point. More vulnerable chains, such as those where ingredients and/or raw materials are purchased through traders or auctions, may require a higher degree of sampling, testing, and surveillance. Access to analytical tools is therefore pivotal, requiring continuous development and possibly sophistication in identifying chemical markers, data acquisition, and modeling. Significant progress in portable technologies is evident already today, for instance, as in the rapid testing now available at the agricultural level. In the near future, consumers may also have the ability to scan products in stores or at home to authenticate labels and food content. For food manufacturers, targeted analytical methods complemented by untargeted approaches are end control measures at the factory gate when the material is delivered. In essence, testing for food adulterants is an integral part of routine QC, ideally tailored to the risks in the individual markets and/or geographies or supply chains. The development of analytical methods is a first step in verifying the compliance and authenticity of food materials. A next, more challenging step is the successful establishment of global consensus reference methods as exemplified by the AOAC Stakeholder Panel on Infant Formula and Adult Nutritionals initiative, which can serve as an approach that could also be applied to methods for contaminants and adulterants in food. The food industry has taken these many challenges aboard, working closely with all stakeholders and continuously communicating on progress in a fully transparent manner.

Abstract:The food products may attract unscrupulous vendors to dilute it with inexpensive alternative food sources to achieve more profit. The risk of high value food adulteration with cheaper substitutes has reached an alarming stage in recent years. Commonly available detection methods for food adulteration are costly, time consuming and requires high degree of technical expertise. However, a rapid and suitable detection method for possible adulterant is being evolved to tackle the aforesaid issues. In recent years, electronic nose (e-nose) system is being evolved for falsification detection of food products with reliable and rapid way. E-nose has the ability to artificially perceive aroma and distinguish them. The use of chemometric analysis together with gas sensor arrays have shown to be a significant procedure for quality monitoring in food. E-nose techniques with numerous provisions are reliable and favourable for food industry in food fraud detection. In the present review, the contributions of gas sensor based e-nose system are discussed extensively with a view to ascertain the adulteration of food products.

Abstract:Milk and fruit juices have paramount importance in human diet. Increasing demand of these liquid foods has made them vulnerable to economic adulteration during processing and in supply chain. Adulterants are difficult to detect by consumers and thus necessitating the requirement of rapid, accurate and sensitive detection. The potential adulterants in milk and fruit juices and their limits set by different regulatory bodies have been briefly described in this review. Potential advantages and limitations of various techniques such as physicochemical methods, chromatography, immunoassays, molecular, electrical, spectroscopy with chemometrics, electronic nose, and biosensors have been described. Spectroscopy in combination with chemometrics has shown potential for rapid, precise, and sensitive detection of potential adulterants in these liquid foods.

Abstract:Abstract In the Islamic and Jewish religions, there are various restrictions that should be followed in order for food products to be acceptable. Some food items like pork or dog meat are banned to be consumed by the followers of the mentioned religions. However, illegally, some food producers in various countries use either the meat or the fat of the banned animals during food production without being mentioned in the label on the final products, and this considers as food adulteration. Nowadays, halal or kosher labeled food products have a high economic value, therefore deceiving the consumers by producing adulterated food is an illegal business that could make large gains. On the other hand, there is an insistent need from the consumers for getting reliable products that comply with their conditions. One of the main challenges is that the detection of food adulteration and the presence of any of the banned ingredients is usually unnoticeable and cannot be determined by the naked eye. As a result, scientists strove to develop very sensitive and precise analytical techniques. The most widely utilized techniques for the detection and determination of halal/kosher food adulterations can be listed as High-Pressure Liquid Chromatography (HPLC), Capillary Electrophoresis (CE), Gas Chromatography (GC), Electronic Nose (EN), Polymerase Chain Reaction (PCR), Enzyme-linked Immuno Sorbent Assay (ELISA), Differential Scanning Calorimetry (DSC), Nuclear Magnetic Resonance (NMR), Near-infrared (NIR) Spectroscopy, Laser-induced Breakdown Spectroscopy (LIBS), Fluorescent Light Spectroscopy, Fourier Transform Infrared (FTIR) Spectroscopy and Raman Spectroscopy (RS). All of the above-mentioned techniques were evaluated in terms of their detection capabilities, equipment and analysis costs, accuracy, mobility, and needed sample volume. As a result, the main purposes of the present review are to identify the most often used detection approaches and to get a better knowledge of the existing halal/kosher detection methods from a literature perspective.

Abstract:Food fraud is widespread nowadays in the food products supply chain, from raw materials processing to the final product and during storage and transport. The most frequent fraud is practiced in staple food commodities like cereals. Their origin, variety, genotype, and bioactive compounds are altered to deceive consumers. Similarly, in various food sectors like beverage, baking, and confectionary, items like melamine, flour improver, and food colors are used in the market to temple consumers. To tackle food fraud and authentication, non-destructive techniques are being used. These techniques have limitations like lack of standardization, interference from multiple absorbing species, ambiguous results, and time-consuming to perform, depending on the type, size, and location of the system proved difficult to quantify the samples of adulteration. Chromatography has been introduced as an effective technique. It serves to safeguard public health due to its detection capabilities. Abstract:AbstractIn recent decades safety of food has played a pivotal role from raw material till it reaches the consumer. The food consumed may contain unwanted contaminants, which may impose severe health implications on the consumers. Instrumental techniques like HPLC, GCMS, LCMS, AAS, FTIR, and NIRS detect the contaminants, but the need for low cost, continuous, specific, real-time, and rapid contaminant detection method is required. To meet these essentials, a biosensor stands as a powerful tool. Its applications express more scope and potential with progress in research, including studies on biosensing and uploading the data to the internet cloud. Several advancements have been made in biosensors for detecting multi-components in the food system. This review provides insights into the recent advancements made in the development of biosensors to detect chemical contaminants in foods for ensuring safety and quality. The objectives of this research were to collect such information from publicly available articles in scholarly journals and general media, organize into a database, and review and analyze the data to identify trends. The results summarized are a database that will be published in the US Pharmacopeial Convention's Food Chemicals Codex, 8th edition, and includes 1305 records, including 1000 records with analytical methods collected from 677 references. Olive oil, milk, honey, and saffron were the most common targets for adulteration reported in scholarly journals, and potentially harmful issues identified include spices diluted with lead chromate and lead tetraoxide, substitution of Chinese star anise with toxic Japanese star anise, and melamine adulteration of high protein content foods. High-performance liquid chromatography and infrared spectroscopy were the most common analytical detection procedures, and chemometrics data analysis was used in a large number of reports. Future expansion of this database will include additional publically available articles published before 1980 and in other languages, as well as data outside the public domain. The authors recommend in-depth analyses of individual incidents. Practical application: This report describes the development and application of a database of food ingredient fraud issues from publicly available references. The database provides baseline information and data useful to governments, agencies, and individual companies assessing the risks of specific products produced in specific regions as well as products distributed and sold in other regions. In addition, the report describes current analytical technologies for detecting food fraud and identifies trends and developments.

Abstract:Edible oils and fats are crucial components of everyday cooking and the production of food products, but their purity has been a major issue for a long time. High-quality edible oils are contaminated with low- and cheap-quality edible oils to increase profits. The adulteration of edible oils and fats also produces many health risks. Detection of main and minor components can identify adulterations using various techniques, such as GC, HPLC, TLC, FTIR, NIR, NMR, direct mass spectrometry, PCR, E-Nose, and DSC. Each detection technique has its advantages and disadvantages. For example, chromatography offers high precision but requires extensive sample preparation, while spectroscopy is rapid and non-destructive but may lack resolution. Direct mass spectrometry is faster and simpler than chromatography-based MS, eliminating complex preparation steps. DNA-based oil authentication is effective but hindered by laborious extraction processes. E-Nose only distinguishes odours, and DSC directly studies lipid thermal properties without derivatization or solvents. Mass spectrometry-based techniques, particularly GC-MS is found to be highly effective for detecting adulteration of oils and fats in food and non-food samples. This review summarizes the benefits and drawbacks of these analytical approaches and their use in conjunction with chemometric tools to detect the adulteration of animal fats and vegetable oils. This combination provides a powerful technique with enormous chemotaxonomic potential that includes the detection of adulterations, quality assurance, assessment of geographical origin, assessment of the process, and classification of the product in complex matrices from food and non-food samples.
