Abstract:The cultivation of edible mushrooms from fruit and vegetable residues presents itself as a promising solution for the sustainable utilization of these wastes and the production of nutritious food. Fruit and vegetable residues include crop residues, leaves, branches and unsold products, which contain a wide range of nutrients and bioactive compounds. These are used as substrate for the cultivation of edible mushrooms. Edible mushrooms, such as mushrooms, shiitake and pleurotus, are appreciated worldwide for their taste, texture and nutritional properties. They contain protein, fiber, vitamins, minerals and bioactive compounds with antioxidant, anti-cancer and anti-diabetic properties. In addition, the global market for edible mushrooms is experiencing significant growth due to their wide range of applications in the food, pharmaceutical and cosmetic industries. The method of cultivating edible mushrooms from fruit and vegetable waste involves the selection of suitable waste, its preparation by sterilization, addition of nutritional enrichment agents and inoculation of the desired mushroom. After a period of incubation and proper care, the mushrooms can be harvested and used in various food preparations. The cultivation of edible mushrooms by solid fermentation has great advantages, as it is the most efficient way of converting vegetable waste into high-value human food.

Abstract:In recent years, the global mushroom industry has seen remarkable growth due to its nutritional benefits, increasing market value, and rising consumer demand. Mushrooms are valued for their unique flavor, low sugar and salt, and rich Vitamin D content. In India as well as across the globe, mushroom cultivation is becoming increasingly popular among new entrepreneurs, leveraging the diverse agro-climatic conditions and substantial agricultural waste. Various government policies are also fostering research and development in this sector. To extend shelf life and preserve quality, various preservation techniques are employed, including drying, freezing, canning, high-pressure processing and modified atmosphere packaging. Furthermore, cutting-edge technologies such as nuclear magnetic resonance and spectroscopy are improving post-harvest processing, helping to maintain sensory properties and nutritional content. Automation is also transforming mushroom processing by enhancing efficiency and scalability. This review examines the innovative methods and technologies driving advancements in mushroom production and quality worldwide.

Abstract:Mushroom cultivation offers humongous potential to improve socio-economical condition of farmers and strengthen food security of world since it serves as utilization of agricultural wastes and offering mushroom and manure from used substrate. It becomes important part at global level due to increasing demand of mushroom. It provides livelihood to most of small and marginal farmers of Bihar, Maharashtra, Odisha and other temperate region of country. For Mushroom cultivation require labor on the daily basis so it provide employment in rural area and it is providing typical management and economical advantages over other allied sector in agriculture. This article provides a chronological study of different research articles published from the year 2013-2024. The present article provides a theme and pattern on which research was conducted and it can be classified into five categories that is socio-economic conditions of growers, production, economic analysis, marketing scenario & value chain and constraints face by growers. The finding indicates that mushroom entrepreneurship is to great extent a metropolitan or semi-metropolitan undertaking. Post-harvest losses can be reduced by providing training and adopting different value addition methods at production level. It requires concentration on various marketing strategies for spread awareness about nutrition content and increasing in demand. Thus, value addition and marketing strategies can help in export of mushroom to earn foreign revenue.

Abstract:There are At least 12000 species of fungi that can be considered as mushrooms with at least 2000 species showing various degrees of edibility. To date, only about 35 mushrooms species have been cultivated commercially, and about 20 are currently on an industrial scale. The majority of these cultivated species are both edible and posses certain medicinal properties [6]. Mushrooms are in prime focus in the food industry for their multi-functional benefits. They are gaining popularity owing to their high nutritional values and are gradually approaching a “super food” status. Mushrooms are a rich source of proteins and have very low or zero fat and cholesterol, and hence are widely accepted in most of the regions of the world. Increase in the consumption of processed food across the world is one of the major driving factors of the mushroom market. Being a promising and profitable business, mushroom cultivation is widely adopted by growers. Factors such as R&D and innovations to enhance the acceptability and continuous improving technologies to increase mushroom shelf-life are also projected to drive the mushroom market in the next five years. Technological developments in the mushroom industry in general have witnessed increasing production capacities, innovations in cultivation technologies, improvements to final mushroom goods, and utilization of mushrooms' natural qualities for environmental benefits, mainly due to contributions from developing countries such as China, India, and Vietnam. However, there is always the need to maintain current trends and to continue to seek out new opportunities. The challenge is to recognize opportunities such as increasing consumption capabilities with the increase in world population and to take advantage of this by promoting the consumption of mushrooms. Those countries, in which mushroom cultivation is not yet well established, will find difficulty to cope with the new competitive circumstances generated by globalisation. Some insights into biotechnological development of mushroom production in the world are reviewed in this paper.

Abstract:Currently, the food and agricultural sectors are concerned about environmental problems caused by raw material waste, and they are looking for strategies to reduce the growing amount of waste disposal. Now, approaches are being explored that could increment and provide value-added products from agricultural waste to contribute to the circular economy and environmental protection. Edible mushrooms have been globally appreciated for their medicinal properties and nutritional value, but during the mushroom production process nearly one-fifth of the mushroom gets wasted. Therefore, improper disposal of mushrooms and untreated residues can cause fungal disease. The residues of edible mushrooms, being rich in sterols, vitamin D2, amino acids, and polysaccharides, among others, makes it underutilized waste. Most of the published literature has primarily focused on the isolation of bioactive components of these edible mushrooms; however, utilization of waste or edible mushrooms themselves, for the production of value-added products, has remained an overlooked area. Waste of edible mushrooms also represents a disposal problem, but they are a rich source of important compounds, owing to their nutritional and functional properties. Researchers have started exploiting edible mushroom by-products/waste for value-added goods with applications in diverse fields. Bioactive compounds obtained from edible mushrooms are being used in media production and skincare formulations. Furthermore, diverse applications from edible mushrooms are also being explored, including the synthesis of biosorbent, biochar, edible films/coating, probiotics, nanoparticles and cosmetic products. The primary intent of this review is to summarize the information related to edible mushrooms and their valorization in developing value-added products with industrial applications.

Abstract:Huge volumes of organic matter are produced on earth via photosynthesis and their disposal is a serious threat to the environment and public health all over the world. Nevertheless, these agricultural wastes possess a chemical composition conducive to mushroom cultivation. Lignocellulosic wastes, comprising cellulose, hemicellulose and lignin, offer vital nutrients for mushroom growth. Oyster mushrooms are well known for their unique ability to degrade lignocellulosic materials, making them valuable contributors to the process of organic waste decomposition and nutrient cycling in ecosystems. Employing agricultural by-products as a substrate for mushroom cultivation presents a sustainable approach to waste reduction and the production of nutritionally enriched food. Cultivating oyster mushrooms, presents an economically feasible and environment friendly method of transforming waste materials into highly nutritious food. These edible mushrooms are widely grown worldwide, comprising around 27 percent of the total global production. Oyster cultivation has rapidly increased in Asia due to its low production technology, easy availability of substrates, temperature tolerance and high yield capacity. Oyster mushrooms are sought after as a functional food due to their appealing taste, aroma, flavor, nutritional benefits and medicinal properties. They contain high levels of protein, fiber, vitamins B complex, C and D2, as well as minerals like potassium, phosphorus, selenium, zinc and essential amino acids. These mushrooms are versatile, as they thrive in both tropical and temperate regions without requiring complex controlled environmental conditions for growth. This review article provides insights into the cultivation aspects of important oyster species including a novel species called Hypsizygus ulmarius. Oyster mushroom cultivation is rapidly growing in developing countries, where it can contribute to food security for the world's growing population, which is expected to reach 9.7 billion by 2050.

Abstract:Mushrooms are well-known functional foods due to the presence of a huge quantity of nutraceutical components. These are well recognized for their nutritional importance such as high protein, low fat, and low energy contents. These are rich in minerals such as iron, phosphorus, as well as in vitamins like riboflavin, thiamine, ergosterol, niacin, and ascorbic acid. They also contain bioactive constituents like secondary metabolites (terpenoids, acids, alkaloids, sesquiterpenes, polyphenolic compounds, lactones, sterols, nucleotide analogues, vitamins, and metal chelating agents) and polysaccharides chiefly β-glucans and glycoproteins. Due to the occurrence of biologically active substances, mushrooms can serve as hepatoprotective, immune-potentiating, anti-cancer, anti-viral, and hypocholesterolemic agents. They have great potential to prevent cardiovascular diseases due to their low fat and high fiber contents, as well as being foremost sources of natural antioxidants useful in reducing oxidative damages. However, mushrooms remained underutilized, despite their wide nutritional and bioactive potential. Novel green techniques are being explored for the extraction of bioactive components from edible mushrooms. The current review is intended to deliberate the nutraceutical potential of mushrooms, therapeutic properties, bioactive compounds, health benefits, and processing aspects of edible mushrooms for maintenance, and promotion of a healthy lifestyle.

Abstract:The production of mushrooms is increasing at a rapid pace due to advanced production technologies and higher consumption throughout the world. The consumption of edible mushrooms has increased throughout the world due to its high nutritive value, texture and flavor. Mushroom cultivation in India is emerging as secondary agricultural based land independent enterprises with huge local and export market potential. The post harvest life of mushrooms is very limited due to high moisture content and water activity, microbial, enzymatic activity and biochemical reactions. Storage of fresh mushrooms is a major problem in Indian conditions due to the lack of a cold chain system in India. Preservation of mushroom is very essential for reducing post harvest loss and extending shelf life whilst maintaining nutritional and organoleptic qualities for consumer’s acceptance and availability of products during off-season. Dehydration is the most popular and important technique to increase the shelf life of mushrooms by reducing moisture content up to a level at which undesirable charges are prevented. The drying techniques which have the great potential for the production of quality dried mushrooms and powders are solar drying, tray drying, vacuum drying, microwave-vacuum drying, freeze drying and heat pump drying. Pretreatment before drying seems to be an effective method of preservation of mushrooms with minimum changes in nutritional and sensory quality to increase consumer’s acceptability and market potential of dehydrated mushrooms. This review gives the information on pretreatments, dehydration and quality of dehydrate mushrooms.

Abstract:Abstract Meat products are ubiquitously consumed for their higher protein content and characteristic organoleptic properties. The enhanced capacities of meat production to meet the demands of the rapidly increasing global population is causing serious issues relating to health, environment, and animal welfare. Suitable meat alternatives that are protein‐rich, sustainable, and healthier are being continuously explored by scientists globally. In this direction, edible medicinal mushrooms can be used as promising healthier meat alternatives as they provide natural meaty texture, flavors and are also rich in proteins, essential amino acids, β‐glucans, vitamins, minerals, polyphenols, and antioxidants. Mushrooms have proven medicinal benefits including anticancer, immunomodulatory, antiviral, antihypertensive, antidiabetic, and anti‐inflammatory properties. The aim of the present review is to highlight the potential of edible mushrooms to produce meat analogs, various meat and nonmeat‐based studies focussing on mushrooms as key meat analog ingredients, impact on the product quality, associated nutraceutical aspects, consumer behavior and market availability of mushroom‐based meat analogs.
Cultivation of Kabul Dhingri (Pleurotus eryngii) mushroom by standardizing protocols in subtropical zones of world

Abstract:The study is of great relevance with present day pandemic era where mushrooms have immunity enhancing properties and they convert agro-wastes into protein rich food. India is having a youth population of about 750 million and mushroom cultivation has good potential to contribute in national income as well as enhanced immunity. The key aspects undertaken during research were the spawn production, cultivation methodology, and the suitability of various factors affecting the production and yield attributes of Pleurotus eryngii under ambient conditions in subtropical areas. Study includes yield enhancing substrate, sterilization method, spawn and substrate quantity in the growing of King Oyster i.e. Pleurotus eryngii in subtropical zones. Paddy straw was found to be the best substrate giving the highest biological efficiency and producing maximum number of fruiting bodies which is otherwise burnt by farmers in India and it is a major cause of air pollution. Whereas, maize straw showed fastest spawn run and pin head emergence out of six tested substrates and supplements. But, due to the unavailability of paddy straw in this region, the other straws resulting in optimum yields are to be recommended. Chemical steeping of substrate with chlorine water at 0.4% + carbendazim at 2% + dichlorovos at 0.1% of water used for soaking showed best results in terms of biological efficiency whereas, water and aerated steam treatment of substrate at 85 °C-90°C for about 60-90 min supported the results in leaching of nutrients and thus, biological efficiency gets lower. Out of four spawn rates used, spawn rate of 5% was found significantly best resulting in maximum biological efficiency, fastest mycelial run, primordial initiation and highest average fruit body weight. All the experiments were found statistically significant except the experiment that was performed for evaluating the optimum quantity of substrate for bag preparation. There was not much difference in the obtained yields with respect to increase in the amounts of substrate. So, growing this mushroom from the obtained best results will result in better production with higher income even for the marginal farmers in subtropical zones of world.
A Study on Mushroom Production in India and Odisha Vis a Vis Global Level

Abstract:In the 21st century, mushroom is seen as the favoured alternate source of food that would help compensate scarcity of nutritious food as mushroom is grown indoors using vertical space and more specifically address the issues of environment sustainability due to recycling of farm wastes. Mushrooms which were earlier found in the forest and forest areas have now been the most prolific and versatile agricultural and horticultural venture. The current study has been undertaken to study the comparative trends in mushroom growth in Odisha, India and world. China is the leading mushroom producer in the world with a lion share of ninety three per cent while India ranks at sixth position with a contribution of slightly more than half a per cent. Odisha, Bihar, Maharastra contribute nearly one third mushroom production in India. In Odisha four districts i.e., Puri, Ganjam, Khurda, Dhenkanal contribute sixty per cent of total mushroom production in the state. The study indicated that the (Compounded Annual Growth Rate) CAGR of world, India and Odisha in mushroom production from 2013-2022 is three, thirty six and sixteen per cent respectively Rajasthan is witnessing a new dawn in mushroom production as it contributed only one per cent with 1300 tons in 2018, is now contributing five per cent with 15000 tons in 2022 with a CAGR of sixty six per cent. Even if with the favourable climatic condition, production of mushroom in the north eastern states of India is negligible. The button mushroom which is the highest contributor in India with seventy three percent contributes only eleven per cent in the world level and one per cent in Odisha. Similarly paddy straw mushroom that contributes almost sixty six per cent in Odisha has a meagre contribution of only one per cent in the global level and seven per cent in India. Oyster mushroom has a uniform share of twenty six per cent in the world, sixteen per cent in India and thirty three per cent in Odisha. It may be estimated that if the current growth rate continues then in the next five years by 2027 the world mushroom production will be around fifty million tons, while the mushroom production in India and Odisha would stand at around six lakhs tons and sixty five thousand tons respectively.

Abstract:It is expected that the world population will reach 9 billion by 2050. Thus, meat, dairy or plant-based protein sources will fail to meet global demand. New solutions must be offered to find innovative and alternative protein sources. As a natural gift, edible wild mushrooms growing in the wet and shadow places and can be picked by hand have been used as a food. From searching mushrooms in the forests and producing single cell proteins (SCP) in small scales to mega production, academia, United Nations Organizations, industries, political makers and others, play significant roles. Fermented traditional foods have also been reinvestigated. For example, kefir, miso, and tempeh, are an excellent source for fungal isolates for protein production. Fungi have unique criteria of consuming various inexpensive wastes as sources of carbon and energy for producing biomass, protein concentrate or amino acids with a minimal requirement of other environmental resources (e.g., light and water). Fungal fermented foods and SCP are consumed either intentionally or unintentionally in our daily meals and have many applications in food and feed industries. This review addresses fungi as an alternative source of edible proteins and animal feed, focusing mainly on SCP, edible mushrooms, fungal fermented foods, and the safety of their consumption.

Abstract:Edible mushrooms have been cherished worldwide because of their nutraceutical and medicinal properties. They are recognized as the new superfood for the future due to their low-calorie content, high-protein content, low lipid levels, low cholesterol levels, and abundance of essential vitamins. The fruiting body of edible mushrooms contains a plethora of primary and secondary metabolites. However, submerged cultivation is a more reliable and controlled way of production of mycelium biomass and many bioactive compounds. Several bioactive metabolites present in mushrooms possess a range of beneficial properties, including antioxidant, antimicrobial, anticancer, antidiabetic, anti-inflammatory, antiviral and anti-COVID-19 activities. Consumers have turned more intrigued in mushroom-containing products as the world needs to diversify its protein sources to meet the growing demand for protein. In this context, mushrooms are viewed as a promising source of bioactive chemicals that can be employed as an alternative to meat products. This review aims to summarise the most recent data regarding the beneficial health effects and the development of mushroom-based food products.

Abstract:Extraction of bioactive compounds for application in nutraceuticals is gaining popularity. For this, there is a search for low-cost substrates that would make the end product and the process more economical. Mushroom waste (stalk, cap, stem etc.) is one such high valued substrate that has received much attention recently due to its rich reserves of terpenoids, polyphenols, sesquiterpenes, alkaloids, lactones, sterols, antioxidative vitamins, anthocyanidins, glycoproteins and polysaccharides, among others. However, there is a need to identify green and hybrid technologies that could make the bioactive extraction process from these substrates safe, efficient and sustainable. To this effect, many emerging technologies (supercritical fluid, ultrasound-, enzyme- and microwave-assisted extraction) have been explored in the last decade which have shown potential for scale-up with high productivity. This review systematically discusses such technologies highlighting the current challenges faced during waste processing and the research directives needed for further advancements in the field.

Abstract:In the current era, harnessing agricultural waste recycling for the production of high-value nutritional products not only addresses sustainability challenges but also holds immense potential for meeting the growing demand for nutritious food sources worldwide. In this investigation, we explored the economic viability of utilizing waste arecanut leaf sheath remnants, a byproduct of plate-making, as a substrate for the cultivation of the edible mushroom Pleurotus ostreatus spp. The study involved assessing various substrate combinations (T1, T2, T3, and T4): Paddy straw alone (T1), arecanut leaf sheath alone (T2), a 1:1 ratio of arecanut leaf sheath and paddy straw (T3), and a 2:1:1 ratio of arecanut, paddy straw, and orange peel (T4). Among the combinations experimented, T4 exhibited the most beneficial outcomes by displaying the rapid transformation of a pinhead into mature mushrooms, highest rate of primordial formation, highest average number of fruiting bodies, and greatest average weight of individual fruiting bodies. Consequently, T4 yielded the highest overall mushroom production. Importantly, T4 addressed the nutritional aspect of mushroom consumption, aligning with the goal of enhancing protein intake while maintaining a low-calorie diet. The T4 combination provided approximately 3.2 g of protein per 100 g of mushrooms, accompanied by an estimated 31.84 calories. These findings underscore the potential of utilizing arecanut leaf sheath and orange peel as sustainable and cost-effective substrates for P. ostreatus cultivation, offering both nutritional and economic benefits. This research contributes to the development of environmentally friendly practices in the field of edible mushroom cultivation.

Abstract:Global interest in mushroom farming techniques has grown in the last few years. Despite not making up a large amount of the human diet at the moment, the nutritional worth of mushrooms has prompted their usage. The three main segments of the global mushroom industry are wild, culinary (edible), and medicinal mushrooms. The quality food that mushrooms provide can be utilized to build agricultural ecosystems that are more sustainable for increasing productivity and enhancing the effectiveness of resource usage. This is mostly because mushrooms can be utilized for the recycling of biomass and remains from crop production. Culinary‐medicinal mushrooms are becoming more and more important because of their nutrient density, dietary value, and health advantages. Given its many bioactive components, which include polysaccharides, proteins, vitamins, minerals, dietary fiber, and secondary metabolites, mushrooms have been utilized extensively as health foods. These mushrooms exhibit pharmacological activities and possess prebiotic and antibacterial capabilities. This review provides information on the latest advancements in the sustainable cultivation of mushrooms, particularly with nontraditional substrates, and their potential therapeutic uses. Furthermore, some of the newest developments and difficulties in the production of mushrooms are explored.

Abstract:The worldwide consumption, health-promoting and nutritional properties of mushrooms have been extensively researched over a decade. Although, wide range of edible mushrooms is still unexplored, which can be a valuable source of bioactive compounds in dietary supplements and biopharma industry. Mushrooms represent as dynamic source of nutrients lacking in food from plant or animal origin thus, considered as vital functional food utilized for prevention of numerous diseases. The unique bioactive compounds in mushroom and their anti-inflammatory, anti-tumour and other health attributes have been discussed. The preventive action of mushroom on maintaining the gut health and their property to act as pro, pre or symbiotic is also elucidated. The direct prebiotic activity of mushroom affects gut haemostasis and enhances the gut microbiota. Recent reports on role in improving the brain health and neurological impact by mushroom are mentioned. The role of bioactive components in mushroom with relation to nutrigenomics have been explored. The nutrigenomics has become a crucial tool to assess individuals' diet according its genetic make-up and thus, cure of several diseases. Undeniably, mushroom in present time is regarded as next-generation wonder food, playing crucial role in sustaining health, thus, an active ingredient of food and nutraceutical industries.
Improving Soil Resilience and Crop Productivity Through Recycling of Spent Mushroom Substrate: A Transition Towards Circular Economy in Hill Agriculture

Abstract:This research highlights the benefits of circular agriculture by reusing spent mushroom substrate to enhance soil quality and boost local economies in hilly areas. Integrating mushroom cultivation with vegetable production improves soil fertility, offering a sustainable alternative to traditional manures. Promoting mushroom farming and recycling can improve farmers' socio‐economic conditions and address environmental challenges like carbon emissions. Unlike make–use–dispose practice in the linear economy, the circular economy aims to achieve make–use–recycle–reuse to realize higher environmental gains with minimum costs. In the present study, cultivation of Agaricus bisporus was attempted, and 20.4 kg of fresh mushroom yield was harvested per 100 kg of compost. The leftover spent mushroom substrate (SMS) after harvesting the mushrooms was further re‐composted to convert it into spent mushroom compost (SMC). French beans were raised in a field trial with SMC prepared by different methods, and a maximum yield of 11.15 t ha−1 was recorded with the application of SMC enriched with rock phosphate at 2% w/w. SMC had exhibited a strong de‐acidifying effect in the soils of the high‐rainfall temperate region of the Western Ghats, India. The soil organic carbon increased significantly by 29% than the untreated control, and the soil micro‐aggregates increased significantly from 6.72% in the pre‐treated soil to 37.39% in SMC‐treated soil. Soil CO2 efflux at the field conditions was found to be 26.5% lower in SMC‐treated soil (0.47 μmol m−2 s−1) than the recommended practice of application of farmyard manure (0.64 μmol m−2 s−1) in the study area. High‐throughput sequencing to study the fungal biota revealed that SMC‐applied soils were dominated by the genus Mortierella. Adopting circular economy practices in hill agriculture can lead to more resilient, sustainable, and environmentally friendly agricultural systems, which are essential for the long‐term viability of agriculture in these regions.

Abstract:Mushrooms are the fleshy fruiting body of some fungi arising from the group of mycelium, mushroom use as food and medicine since time immemorial. Traditional and folk medicine practitioners are using mushrooms for their healing and cleansing properties. These have been considered as the Delicacy, in the nutrition point of view mushrooms are placed between meat and vegetables and also called as vegetable meat. All varieties of mushrooms are low in calories and fat, and contain modest amounts of fiber and various nutrients. Mushrooms constitute both a nutritionally functional food as well as a source of physiologically advantageous medicine. Mushroom consumption is increasing rapidly worldwide due to their rich source of bioactive compounds such as functional protein, vitamins, minerals and dietary fibers etc. due to that considering it as precious, and functional food ingredient as food, as tonic, and as medicine to remedy and to treat numerous dangerous illnesses around the world. Mushrooms can serve as agents for promoting equitable economic growth in society. Good resource to a non-green revolution in less developed countries, and in the world at large. Mushrooms are also an important and integral component to create a clean the ecosystem.
