Abstract:Processing of fruits and vegetables generates physiological stresses in the still living cut tissue, leading to quality deterioration and shorter shelf life as compared with fresh intact produces. Several strategies can be implemented with the aim to reduce the rate of deterioration of fresh-cut commodities. Such strategies include low temperature maintenance from harvest to retail and the application of physical and chemical treatments such as modified atmosphere packaging (MAP) with low O2 and high CO2 levels and antioxidant dips. Other technologies such as edible coatings with natural additives, new generation of coatings using nanotechnological solutions such as nanoparticles, nanoencapsulation, and multilayered systems, and nonconventional atmospheres such as the use of pressurized inert/noble gases and high levels of O2 have gained a lot of interest as a possibility to extend the shelf life of minimally processed fruits and vegetables. However, the high perishability of these products challenges in many cases their marketability by not achieving sufficient shelf life to survive the distribution system, requiring the combination of treatments to assure safety and quality. This review reports the recent advances in the use of MAP, edible coatings, and the combined effect of both technologies to extend the shelf life of fresh-cut fruits and vegetables.

Abstract:Respiration and microbial infection are important causes of postharvest spoilage of fruits and vegetables (F&V). Atmosphere storage technology can significantly reduce postharvest losses. This comprehensive review aims to cover recent progress in the application of atmosphere storage to F&V preservation, not only focusing on the effect of gas conditions but also evaluating combination applications involving newer preservation technologies, including ethylene scavengers, high-pressure and decompression technology, ozone, ultraviolet radiation, active packaging, high-voltage electrostatic field, plasma treatment, and pulse-controlled atmosphere. Appropriate choice of storage conditions optimal for each F&V is essential since the physiological properties and sensory qualities are affected by them. The combination of atmosphere storage with these emerging technologies could contribute to significant reductions in food loss during storage.

Abstract:Modified atmosphere packaging (MAP) technology has been commercially viable since the 1970s. Currently, MAP is extensively used worldwide to preserve the quality and extend the shelf-life of whole fresh fruits and vegetables, but is also increasingly used to extend the shelf-life of minimally processed fresh fruit and vegetables. This review discusses new processes and technologies that can be used to improve quality preservation and consumer acceptability of minimally processed produce where high respiration rates and challenging degradation processes operate. New packaging innovations are enabling producers and retailers to further maintain quality for longer. Innovative approaches to extend shelf-life include active MAP with differentially permeable films, films that incorporate antimicrobial properties, edible coatings that confer barriers properties, and the use of non-traditional gases to modify respiration. Intelligent packaging using integrated sensor technologies that can indicate maturity, ripeness, respiration rate and spoilage are also appearing. This review demonstrates that preservation technologies and associated packaging developments that can be combined with modified atmosphere are constantly evolving technology platforms. Adoption of combinations of technology improvements will be critical in responding to commercial trends towards more minimally processed fresh-cut and ready-to-eat fruit and vegetable products, which require specialized packaging solutions.

Abstract:Fruit preservation and packaging have been practiced since ages to maintain the constant supply of seasonal fruits over lengthened periods round the year. However, health and safety issues have attracted attention in recent decades. The safety and quality assurance of packaged fruits/fruit products are vital concerns in present day world-wide-integrated food supply chains. The growing demand of minimally or unprocessed packaged fruits has further aggravated the safety concerns which fuelled in extensive research with objectives to develop novel techniques of food processing, preservation, and packaging as well as for rapid, accurate, and early detection of contaminant products/microbes. Nevertheless, fruits and fruit-based products have yet to observe a panoramic introduction. Tropics and subtropics are the stellar producers of a variety of fruits; majority if not all is perishable and prone to postharvest decay. This evoked the opportunity to critically review the global scenario of emerging and novel techniques for fruit preservation and packaging, hence providing insight for their future implementation. This review would survey key nanotechnology innovations applied in preservation, packaging, safety, and storage of fruits and fruit-based products. The challenges and pros and cons of wider application of these innovative techniques, their commercial potential, and consumer acceptability have also been discussed.

Abstract:This study aimed to enhance the durability of selected green leafy vegetables, including Lettuce and Palak, by manipulating influential factors such as storage conditions (Ambient (35±5°C) and Refrigerated (5±5°C)), packing substrate (Low-density polyethylene and High-density polyethylene covers), and gas composition using modified atmosphere packaging. Factorial completely randomized design (FCRD) was employed, incorporating a total of 12 treatments for each crop. The evaluation primarily relied on calculating physiological weight loss. Lettuce showed optimal results with treatment T5 (0.38%) exhibiting superior performance, followed by T6 (0.45%) and T3 (0.58%) under ambient conditions. Similarly, for palak, T5 (0.18%) outperformed T3 (0.19%) and T2 (0.37%). Thus, it is advisable to adopt T5 (R1G3M1) as the preferred treatment with T3 (R1G2M1) as a viable alternative for ambient storage conditions. Refrigerated lettuce performed optimally with T11 (0.54%) leading, followed by T7 (0.56%) and T9 (0.69%). Similarly, palak exhibited superior results with T9 (0.61%) in the fore, succeeded by T11 (0.77%) and T7 (0.97%). Notably, produce stored under ambient conditions had a relatively short shelf life of approximately 5 days, while refrigeration extended it to 15 days, after which a decline in quality was observed across all treatments. Therefore, refrigerated produce has an extended shelf life, with T9 (R2G2M1) followed by T7 (R2G1M1) yielding highly favorable outcomes.
Microporous modified atmosphere packaging to extend shelf life of fresh foods: A review

Abstract:In recent years, microporous modified atmosphere packaging has been widely concerned because of its adjustable air permeability and low processing cost. With the development and increasing demand of fresh food industry, the limited permeability of film in modified atmosphere packaging can't meet the fresh-keeping requirements of fresh foods, especially vegetables and fruits. Microporous film can flexibly adjust the gas permeability according to the physiological metabolic characteristics of fresh foods, which has gradually become a fresh-keeping technology in the domain of vegetables and fruits. This paper reviewed the research progress of microporous modified atmosphere packaging and its extension on shelf life of fresh foods. The latest applied researches were described in a comprehensive manner, particularly fruits and vegetables. Besides, this article also covered theoretical support and analysis, including the perforation mode, air permeability mechanism and mathematical model of microporous film, the characteristics of fresh foods, pore parameters and traits of film materials. This paper payed attention to the application of environmentally friendly degradable film materials (biological film materials, nano materials) in fruits and vegetables preservation. Research has shown that the degradable material can enlarge the fresh-keeping effect of microporous modified atmosphere packaging, which is worthy of further research and development. Finally, the development trends and directions in the future were discussed.

Abstract:Modified atmosphere packaging (MAP) technology offers the possibility to retard the respiration rate and extend the shelf life of fresh produce, and is increasingly used globally as value adding in the fresh and fresh-cut food industry. However, the outbreaks of foodborne diseases and emergence of resistant foodborne pathogens in MAP have heightened public interest on the effects of MAP technology on the survival and growth of pathogenic organisms. This paper critically reviews the effects of MAP on the microbiological safety of fresh or fresh-cut produce, including the role of innovative tools such as the use of pressurised inert/noble gases, predictive microbiology and intelligent packaging in the advancement of MAP safety. The integration of Hazard Analysis and Critical Control Points-based programs to ensure fresh food quality and microbial safety in packaging technology is highlighted.

Abstract:Fruits and vegetables are grown and consumed worldwide as they are source of nutrients and fiber in human diet. They are consumed either fresh or after processing and are produced on farms with conventional organic agricultural production methods or under intensively managed environmentally controlled glasshouses. It is not known when cultivation of first plant took place however domestication of plant species provided innumerable plant products required to satisfy the needs of living beings. As the plant species were selected for higher yield potential and better quality, the levels of resistance to biotic as well as abiotic stresses were depleted over long periods. Consequently, plant pathogenic fungi continue to inflict considerable losses in harvested yield and also reduced the aesthetic value and storage life of agricultural crops (Sharma N, Ghosh R, Post-harvest diseases of fruits and vegetables: an overview. Abstract:Active packaging is developed as a favorable method to address the challenge and prolong the shelf life of perishable foodstuffs while maintaining their freshness and quality. This abstract provides an overview of the active packaging systems and their roles in preserving food quality and safety. Active packaging incorporates various technologies, oxygen scavengers, moisture absorbers, antimicrobial agents, and flavor-release systems, within the packaging materials. These technologies actively interact with the food product to create a modified atmosphere or inhibit microbial growth, resulting in improved preservation and quality retention. Active packaging provides many benefits, including its ability to reduce food waste, enhance product safety, and meet consumer demands for convenience and sustainability. In inference, active packaging offers a favorable opportunity to enhance the shelf’s life of food products and maintain their freshness and quality.

Abstract:Guava (Psidium guajava L.) fruit is also known as the apple of tropics, belongs to the family of genus Psidium, and is widely cultivated in tropical zones of the world. Recently, the importance of guava fruit has increased due to its inherent nutritional content, pleasant aroma, excellent flavor, and delicious taste. It is considered an excellent source of nutrients and phytochemicals. Guava is a climacteric fruit that continues to mature or ripen even after harvest, showing an increase in the rate of respiration and metabolic activities within a short period, leading to rapid senescence or spoilage of fruit. It has limitations in terms of commercialization due to short storage life after harvest and sensitivity to diseases and chilling injury during the storage period. Many postharvest technologies such as edible packaging, modified atmosphere packaging (MAP), composite packaging, controlled atmosphere packaging (CAP), antimicrobial/antifungal packaging, and nano packaging have been used to retard the chilling injury and enhance the keeping quality of guava fruits during the storage period to control respiration rate, reduce weight loss, minimize lipid oxidation, and maintain organoleptic properties. However, these packaging technologies have varied effects on the internal and external quality attributes of guava fruits. This review, therefore, discusses the physiology, mechanism of ripening, oxidation, and ethylene production of guava fruits. The review also discusses the packaging technologies and their effect on the postharvest characteristics of guava fruits during the storage period.

Abstract:Background: Mango (Mangifera indica L.), a perishable tropical climatic fruit, has a short post-harvest life. Modified atmospheric packaging is an efficient way to keep their quality safe during extended storage. This study aims to assess the efficacy of various combinations of gas concentrations under MAP. Methods: Mature green mangoes were subjected to a hot water dip (40°C) for 30 min which was followed by packaging in polyethylene pouches under two different MAP gas concentrations and stored for 25 days at 10 and 15°C for physico-chemical analysis and texture profile analysis. Result: Warm water dip (40°C) for 30 min was the most effective post-harvest storage condition, followed by packaging in poly bags under MAP gas combination, i.e., O2- 7%: CO2- 50%. The keeping quality of 25 days was achieved significantly better than the control samples, which showed deterioration after 12 days of storage.

Abstract:As the top grocery list priorities, the primary challenge when purchasing fruits and vegetables from supermarkets is obtaining fresh, minimally processed perishable goods. This source of diet is critical for obtaining vitamins, minerals, antioxidants, and fibres. However, the short shelf life caused by moisture content in rapid deterioration and decay caused by microbial growth, results in unappealing appearances. Fruits and vegetables undergo ripening and eventually the ageing process, in which the tissues of the plants degrade. Even after harvesting, numerous biological processes occur, generating a significant variation of ethylene production along with respiration rates between fruits and vegetables. Thus, the utilization of ethylene scavengers in food packaging or films has been revealed to be beneficial. The synergistic effects of these biomaterials have been demonstrated to reduce microorganisms and prolong the shelf life of greens due to antimicrobial activity, oxygen scavenging capacity, enzyme immobilization, texture enhancers, and nutraceuticals. The current review fills this void by discussing the most recent advances in research on ethylene scavengers and removal mechanisms of ethylene, including oxidation in fruit and vegetable packaging. The application and advantages of ethylene scavengers in packaging are then discussed with the addition of how the efficiency related to ethylene scavengers can be increased through atmospheric packaging tools. In this context, the article discusses characteristics, types of applications, and efficacy of ethylene control strategies for perishable commodities with the inclusion of future implications.

Abstract:Pomegranate has nutritional value and health benefits due to its bioactive compounds and antioxidant properties. Fruit consumption is strongly recommended due to its high content of vitamins, fiber, minerals, and polyphenols. Supplying ready-to-eat pomegranate can be a beneficial technique to increase consumption with regard to its nutritional properties. However, maintaining nutritional quality and preventing microbial spoilage is a major challenge. Fruit quality is lost with visible symptoms such as weight loss, shriveling, husk scald, chilling injury, fungal rot, aril color degradation, and off-flavor during long-term storage. Therefore, it is very important to use appropriate strategies to maintain pomegranate whole fruit and aril quality. Gases around the product create a suitable environment for oxidative reactions and aerobic microorganism growth. Therefore, changing the atmosphere around the product can help maintain its quality. One of the effective methods to increase the postharvest life of products is to use modified atmosphere packaging (MAP), which reduces microbial spoilage and chilling injury, preserves the quality, and extends the shelf life by reducing the respiration rate. Modified atmosphere packaging, which uses natural atmospheric components (O2, CO2 and N2), has been widely accepted due to the lack of toxic residues on the product. This review discusses on recent research in terms of MAP application on quality properties and postharvest life of pomegranate fruit and arils during storage.

Abstract:The production of vegetables and fruits is at a high rate but the major challenging task is the postharvest handling and processing of the products. Approximately 20–30% of the production is being wasted due to a lack of proper postharvest management. Many developments were made to reduce this wastage such as cold chain development, different storage structures, some drying methodologies to promote the shelf life of produce. But all these systems need to be improved and utilized commercially. The losses still occur due to a lack of sound knowledge on the chemical nature of products and different management techniques (e.g., drying, cooling, blanching). Therefore, the successful design of the cooling, packing, storage transport, and drying processes of fresh food requires linking materials sciences, fluid dynamics, mechanical deformation, food chemistry, and process control.

Abstract:Fresh leafy vegetables are great source of vital nutrients, to promote health and prevent diseases but they can transmit pathogenic microorganisms to human beings. Shelf life of these products is very limited post harvest and after three days at refrigeration temperature, they will spoil. Radiation processing combined with modified atmosphere packaging and refrigeration temperature is a practical treatment to ensure safety and enhance vegetables shelf life even to be used in international trades. The effects of irradiation doses at 0, 0.25, 0.5 and 1 kGy on fresh leafy vegetables packed under air, N2 and vacuum atmospheres up to10 days of storage at 4 °C were studied. According to the results of microbial tests, and antioxidant activity of DPPH°, gamma radiation at dose of 0.5 kGy under N2 packing atmosphere are recommended as optimal storage conditions up to 10 days at 4 °C for fresh garlic chives, basil, mint and parsley.

Abstract:Minimal processing is the fastest growing industry. The consumption of minimally processed foods has increased worldwide due to changing consumer attitudes towards fresh, healthy and convenient foods. In today's busy world, MPFV is an ideal food because it does not require additional requirements and provides a variety of minerals and vitamins necessary for human health. These new market trends have increased the need for the industry to explore new ideas to increase shelf life of the produce. The application of oil based nanoemulsions to minimally processed fruits and vegetables, used as cleaning or disinfecting agents, or added to food coatings, has been shown to significantly improve the microbiological quality and safety of minimally processed f&v. The antibacterial properties of essential oils reduce microbial activity, keeping the food fresh without compromising its quality. Other technologies, such as MAP on small-scale processors, can also play an important role. There are several strategies that can be implemented with the goal of reducing the rate of deterioration of fresh cut crops. The several new emerging technologies, are intelligent packaging, sensors, films, and modified atmosphere.

Abstract:The issue of post-harvest deterioration in fruits and vegetables constitutes a critical concern, especially given the rising global food security challenges. The aim of this review article is to present a comprehensive examination of the diverse facets contributing to the deterioration of these valuable food resources, ranging from biological and environmental factors to economic implications and current preservation methods. One area of focus involves scrutinizing the gaps in the current body of knowledge, particularly the intricate molecular mechanisms governing enzymatic activity and microbial spoilage. Recent developments in technology also present intriguing possibilities for future research. Artificial Intelligence (AI) offers transformative potential in monitoring the quality of stored produce by predicting the onset of spoilage using complex algorithms. This work also delves into the prospects of employing the Internet of Things (IoT) for real-time assessment and control of storage conditions, which could revolutionize supply chain management and significantly minimize deterioration during transport. Another exciting avenue lies in the utilization of novel packaging materials especially those which are biodegradable and may be imbued with natural preservatives, a move that aligns well with global sustainability goals. Any such technological advancements must be scrutinized in the context of existing food safety standards and regulations, both at the national and international levels. These standards govern everything from permissible microbial activity levels to waste management, and are dictated by organizations such as the FDA and EFSA, as well as international frameworks like the Codex Alimentarius.
