Abstract:Starch is an important quality index in potato, which contributes greatly to the taste and nutritional quality of potato. At present, the determination of starch depends on chemical analysis, which is time consuming and laborious. Thus, rapid and accurate detection of the starch content of potatoes is important. This study combined hyperspectral imaging with chemometrics to predict potato starch content. Two varieties of Kexin No.1 and Holland No.15 potatoes were used as experimental samples. Hyperspectral data were collected from three sampling sites (the top, umbilicus, and middle regions). Standard normal variate (SNV) was used for spectral preprocessing, and three different methods of competitive adaptive reweighted sampling (CARS), iterative variable subset optimization (IVSO), and the variable iterative space shrinkage approach (VISSA) were used for characteristic wavelength selection. Linear partial least-squares regression (PLSR) and nonlinear support vector regression (SVR) models were then established. The results indicated that the sampling site has a considerable impact on the accuracy of the prediction model, and the umbilicus region with CARS-SVR model gave best performance with correlation coefficients in calibration (Rc) of 0.9415, in prediction (Rp) of 0.9346, root mean square errors in calibration (RMSEC) of 15.9 g/kg, in prediction (RMSEP) of 17.4 g/kg, and residual predictive deviation (RPD) of 2.69. The starch content in potatoes was visualized using the best model in combination with pseudo-color technology. Our research provides a method for the rapid and nondestructive determination of starch content in potatoes, providing a good foundation for potato quality monitoring and grading.

Abstract:Starch is one of the main components of rice. The feasibility of confocal Raman microspectroscopy (CRM) combined with spectral screening algorithms for quantitative detection of starch in rice was investigated in this paper. Firstly, the Raman spectra of the samples were processed by pre-processing and spectral screening algorithm of the data. Secondly, the quantitative starch detection models were respectively established by correction set by partial least squares regression, particle swarm optimization-support vector regression, gray wolf optimizer-support vector regression (GWO-SVR) as well as back propagation neural network. After that, the quantitative starch detection models were validated using the prediction set. Eventually, the related coefficient of the prediction set, root mean square error of the prediction set, and mean relative error of GWO-SVR starch quantification detection model combined with normalization and IPLS screening were respectively 0.8915, 1.03%, and 1.08%. The experimental results manifested that the swift and precise detection of starch content in rice by CRM was workable after proper pre-processing and spectral screening algorithm.

Abstract:Color index and water content are important indicators for evaluating the quality of fresh-cut potato tuber slices. In this study, hyperspectral imaging combined with multivariate analysis was used to detect the color parameters (L*, a*, b*, Browning index (BI), L*/b*) and water content of fresh-cut potato tuber slices. The successive projections algorithm (SPA) and competitive adaptive reweighted sampling (CARS) were used to extract characteristic wavelengths, partial least squares (PLS) and least squares support vector machine (LS-SVM) were utilized to establish regression models. For color prediction, R2c, R2p and RPD of all the LSSVM models established for the five color indicators L*, a*, b*, BI, L*/b* were exceeding 0.90, 0.84 and 2.1, respectively. For water content prediction, R2c, R2p, and RPD of the LSSVM models were over 0.80, 0.77 and 1.9, respectively. LS-SVM model based on full spectra was used to reappear the spatial distribution of color and water content in fresh-cut potato tuber slices by pseudo-color imaging since it performed best in most cases. The results illustrated that hyperspectral imaging could be an effective method for color and water content prediction, which could provide solid theoretical basis for subsequent grading and processing of fresh-cut potato tuber slices.

Fine structure and relationships with functional properties of pigmented sweet potato starches

Abstract:Variations in fine structure of pigmented sweet potato starches and their relationships with starch functional properties were explored in this study. The amylose content (18.63-20.45%), X-AM1 (308-387) and h(AP2) (0.723-0.810) and h(AM2) (0.134-0.167) significantly differed (P < 0.05), while other structural parameters had small variations. The average chain length of amylopectin ranged in degree of polymerization (DP) from 23.3 to 24.7. The proportions of fa, fb(1), fb(2) and fb(3) were 21.88-27.18%, 45.45-50.81%, 11.87-13.29% and 14.02-16.96%, respectively, with significant (P < 0.05) differences among these samples. Pearson correlation analysis indicated that fine structures of both amylose and amylopectin had significant impacts on pasting, gelatinization, and textural properties. X-AM2, fa, fb(1), X-AM2 and fa/fb(1) were significantly correlated with pasting parameters, while fa and fa/fb(1) were negatively correlated with thermal parameters. X-AM1 and h(AP2) were negatively correlated with texture. These results may provide an overview of structure-function correlations for sweet potato starches.
A two-dimensional correlation spectroscopy analysis-based approach for asymptomatic rot detection in stored potatoes using hyperspectral imaging

Abstract:Fusarium dry rot (FDR), which is caused by several Fusarium species, is a major disease affecting potatoes during storage. The study aimed to identify the gleyic stage and monitor rot progression in stored potatoes using a hyperspectral imaging (HSI) system. We evaluated the susceptibility parameters and quality attributes during the infection process and monitored starch, soluble protein, malondialdehyde, and aerobic bacterial contents in all samples. To further characterize the infection process, we collected spectral data on different storage days and then mapped these data using two-dimensional correlation spectroscopy. The results revealed 20 peaks related to these component contents. Then, the quantitative analysis models of these indicators were established based on the 2D correlation synchronization spectrum. The optimal correlation coefficients of the validation set were 0.9273, 0.9634, 0.9470, and 0.9487 for these indicators. Visual analysis was implemented to these indicators, and the content distribution can be effectively observed on hyperspectral images.

Abstract:The color potato has the function of both a food and vegetable. The color potato not only contains various amino acids and trace elements needed by the human body but also contains anthocyanins. Anthocyanins have many functions, such as antioxidation, inflammation inhibition, vision improvement, and cancer prevention, so colored potatoes are deeply loved by consumers and have good market prospects. However, at present, the detection of anthocyanin content in color potatoes mainly depends on chemical methods, which are time-consuming and laborious, so it is necessary to study a fast and accurate detection method. In this study, microscopic hyperspectral equipment was used to collect the spectral information of the outer skin and inner skin of potatoes. The original spectrum, pretreatment spectrum, and characteristic spectrum variables of the outer skin and inner skin were predicted by the convolution neural network (CNN) algorithm and partial least squares regression (PLS) algorithm, respectively, and the performance of the model was evaluated by the prediction set correlation coefficient (Rp), prediction set root mean square error (RMSEP), correction set correlation coefficient (Rc), correction set root mean square error (RMSEC), and residual prediction deviation (RPD). The results revealed that the inner skin Raw + CNN model constructed under raw spectral data is optimal with Rc = 0.9508, RMSEC = 0.0374%, Rp = 0.9461, RMSEP = 0.2361% and RPD = 4.4933. The inner skin Savitzky-Golay (SG) + Detrend (DET) + CNN model constructed from pre-processed spectral data is optimal with Rc = 0.9499, RMSEC = 0.0359%, Rp = 0.9439, RMSEP = 0.2384%, RPD = 4.6516. The inner skin DET + competitive adaptive reweighted sampling (CARS) +CNN model constructed from the feature-based spectral data was optimal with Rc = 0.9527, RMSEC = 0.0708%, Rp = 0.9457, RMSEP = 0.2711%, and RPD = 4.1623. It can be seen that the Rp, RMSEP, Rc, RMSEC, and RPD values for modeling the spectral information of the inner skin were higher than those of the outer skin under the three different spectral data. The prediction accuracy of the model built by the CNN algorithm was better than the conventional algorithm PLS, the application of the CNN algorithm in inner skin can achieve accurate prediction of anthocyanin content in potato.

Abstract:Sprouted potatoes are not allowed for healthy diet. A good knowledge of the sprouting stage of potatoes can help manage the storage conditions and guide market distribution, thus enabling the quality assurance of potatoes on table. This article presented an intelligent method for precautionary analysis of potato eyes based on hyperspectral imaging technique. Potential potato eyes were classified into two categories according to the time gap to the sprouting date, i.e. by-sprouting and pre-sprouting potato eyes, representing eyes about to sprout and eyes that will take a while to sprout. Features used for classification were extracted by two methods, including successive projections algorithm (SPA) and a newly-developed sine fit algorithm (SFA). Then classifiers of fisher discriminant analysis (FDA) and least square support vector machine (LSSVM) were utilized for classification of potential sprouting potato eyes. Results showed that FDA was more effective than LSSVM in classifying pre-sprouting and by-sprouting potato eyes, and SFA performed well in FDA classifier with the recognition accuracy of 95.3% for prediction set. It is concluded that hyperspectral imaging has the potential for predicting the sprouting stages of potato eyes.
Nondestructive identification and classification of starch types based on multispectral techniques coupled with chemometrics

Abstract:Starch is the main source of energy and nutrition. Therefore, some merchants often illegally add cheaper starches to other types of starches or package cheaper starches as higher priced starches to raise the price. In this study, 159 samples of commercially available wheat starch, potato starch, corn starch and sweet potato starch were selected for the identification and classification based on multispectral techniques, including near-infrared (NIR), mid-infrared (MIR) and Raman spectroscopy combined with chemometrics, including pretreatment methods, characteristic wavelength selection methods and classification algorithms. The results indicate that all three spectral techniques can be used to discriminate starch types. The Raman spectroscopy demonstrated superior performance compared to that of NIR and MIR spectroscopy. The accuracy of the models after characteristic wavelength selection is generally superior to that of the full spectrum, and two-dimensional correlation spectroscopy (2D-COS) achieves better model performance than other wavelength selection methods. Among the four classification methods, convolutional neural network (CNN) exhibited the best prediction performance, achieving accuracies of 99.74 %, 97.57 % and 98.65 % in NIR, MIR and Raman spectra, respectively, without pretreatment or characteristic wavelength selection.
Detection of browning of fresh‐cut potato chips based on machine vision and electronic nose

Abstract:This study explored the feasibility of achieving rapid nondestructive detection of browning in potatoes from a visual and olfactory perspective. In five grades, 15 pieces were taken out from each batch, respectively, and tested for browning characteristics using Chroma meter (CM), machine vision (MV), and electronic nose (E‐nose). Linear discriminant analysis, support vector machine (SVM), K‐Nearest Neighbor, and Back Propagation Artificial Neuron Network were used to classify the samples. The discriminant accuracy of the MV and E‐nose datasets was 0.960 and 0.813, respectively, and this increased to 1,000 after data fusion. Partial least squares regression and SVM regression were also used to investigate the correlation between two data sets and CM data. The MV results for L*, a*, and b* were 0.864, 0.966, and 0.992, with variances of 1.062, 0.575, and 0.123, respectively, indicating a very strong correlation. The predicted result of E‐nose for a* reached 0.705, and the variance was 1.815, which also showed a high correlation. The data fusion models for L*, a*, and b* yielded 0.883, 0.968, and 0.997, with variances of 1.264, 0.633, and 0.083, respectively. These results indicated that MV and E‐nose can be used as nondestructive detection tools for detecting browning in potatoes. Practical ApplicationsPotato products are popular among consumers because of its rich nutrition and processing characteristics. However, enzymatic reactions during peeling and processing of fresh‐cut potato results in color defects which compromise the quality of the final products. Therefore, it is an inevitable requirement for the development of the industry to adopt appropriate methods to detect and prevent browning in fresh‐cut potatoes as a means of strengthening quality management. The present study explored the feasibility of rapid nondestructive detection of browning in potato from the visual and olfactory aspects. A new idea for the application of machine vision and electronic nose in the field of nondestructive detection of agricultural products was proposed. At the same time, this article has certain reference value to the quality management of potato and other fruit and vegetable processing industry.

Characterization and Correlation Analysis of Physico-chemical Properties of Starch from Different Potato Cultivars

Abstract:Potato starch has some special properties,which contribute to its versatile utilization and application potential.Starches from different sources have different physico-chemical and functional properties.In this work,eight potato cultivars were extracted to obtain starch,and the extracted starches were subjected to characterization and correlation analysis of physicochemical properties such as chemical composition,swelling power,solubility and thermal and rheological properties.Potato starch crystallinity was negatively correlation with temperature at storage modulus peak and swelling power,respectively.The contents of amylose and phosphorus were both positively correlated with temperature at storage modulus peak,storage modulus peak,transition temperature(onset,To;peak,Tp;and conclusion,Tc) but negatively correlated with crystallinity.Furthermore,a negative correlation between amylase content and gelatinization enthalpy was also observed.

Abstract:Monitoring the chlorophyll content in tuber formation and tuber bulking stage has great significance for the nutritional status diagnosis in the potato field. In this paper, the 314 canopy spectra of potato crops were collected at four stages, respectively. The leaves were collected simultaneously to measure the chlorophyll content. After spectra pre-processing, the dynamic changes in chlorophyll content and spectral response during growth were analyzed. Two variable selection algorithms (successive projection algorithm, and random frog algorithm) were employed to select chlorophyll characteristic wavelengths. The partial least square algorithm was used for modeling analysis. The performance of sensitive wavelengths selected by two algorithms was compared, respectively, from the perspective of correlation with chlorophyll, reflecting leaf information, and model result. The sensitive wavelengths selected by random frog was optimal. The determination coefficient of calibration and validation set of the detection model established based on above sensitive wavelengths was respectively 0.827 and 0.798. The results showed the chlorophyll content of potato could be detected accurately based on the spectroscopy method.

Abstract:Sodium pyrosulfite is a browning inhibitor used for the storage of fresh-cut potato slices. Excessive use of sodium pyrosulfite can lead to sulfur dioxide residue, which is harmful for the human body. The sulfur dioxide residue on the surface of fresh-cut potato slices immersed in different concentrations of sodium pyrosulfite solution was classified by near-infrared hyperspectral imaging (NIR-HSI) system and portable near-infrared (NIR) spectrometer. Principal component analysis was used to analyze the object-wise spectra, and support vector machine (SVM) model was established. The classification accuracy of calibration set and prediction set were 98.75% and 95%, respectively. Savitzky–Golay algorithm was used to recognize the important wavelengths, and SVM model was established based on the recognized important wavelengths. The final classification accuracy was slightly less than that based on the full spectra. In addition, the pixel-wise spectra extracted from NIR-HSI system could realize the visualization of different samples, and intuitively reflect the differences among the samples. The results showed that it was feasible to classify the sulfur dioxide residue on the surface of fresh-cut potato slices immersed in different concentration of sodium pyrosulfite solution by NIR spectra. It provided an alternative method for the detection of sulfur dioxide residue on the surface of fresh-cut potato slices.

Detection and analysis of sweet potato defects based on hyperspectral imaging technology

Abstract:In order to identify the defective sweet potato quickly, this study used hyperspectral imaging technology to classify healthy, frostbitten and diseased sweet potatoes. The training set and prediction set were divided according to the ratio of 3:1 by sample set partitioning based on joint x-y distances (SPXY) algorithm, and then the standard normal variable (SNV) pretreatment was carried out for the spectral data. In order to improve the running speed of the model and eliminate redundant variables, Monte Carlo uninformative variables elimination (MCUVE), Random frog (RF) algorithm and successive projections algorithm (SPA) were used to extract characteristic wavelengths. Finally, partial least square discrimination analysis (PLS-DA) and linear discrimination analysis (LDA) were used to establish classification models. The final results showed that the classification performance of the SPA-LDA model was the best, and the total accuracy of the prediction set reached 99.52%. In summary, hyperspectral imaging technology can accomplish the accurate detection of sweet potato defects, and provides feasible ideas for the automatic classification of sweet potatoes.

Abstract:As the largest component of crops, water has an important impact on the growth and development of crops. Timely, rapid, continuous, and non-destructive detection of crop water stress status is crucial for crop water-saving irrigation, production, and breeding. Indices based on leaf or canopy temperature acquired by thermal imaging are widely used for crop water stress diagnosis. However, most studies fail to achieve high-throughput, continuous water stress detection and mostly focus on two-dimension measurements. This study developed a low-cost three-dimension (3D) motion robotic system, which is equipped with a designed 3D imaging system to automatically collect potato plant data, including thermal and binocular RGB data. A method is developed to obtain 3D plant fusion point cloud with depth, temperature, and RGB color information using the acquired thermal and binocular RGB data. Firstly, the developed system is used to automatically collect the data of the potato plants in the scene. Secondly, the collected data was processed, and the green canopy was extracted from the color image, which is convenient for the speeded-up robust features algorithm to detect more effective matching features. Photogrammetry combined with structural similarity index was applied to calculate the optimal homography transform matrix between thermal and color images and used for image registration. Thirdly, based on the registration of the two images, 3D reconstruction was carried out using binocular stereo vision technology to generate the original 3D point cloud with temperature information. The original 3D point cloud data were further processed through canopy extraction, denoising, and k-means based temperature clustering steps to optimize the data. Finally, the crop water stress index (CWSI) of each point and average CWSI in the canopy were calculated, and its daily variation and influencing factors were analyzed in combination with environmental parameters. The developed system and the proposed method can effectively detect the water stress status of potato plants in 3D, which can provide support for analyzing the differences in the three-dimensional distribution and spatial and temporal variation patterns of CWSI in potato.

Abstract:Rapid, non-destructive and reliable detection of starch content in single seed is significant to facilitate the breeding of high-starch corn but difficult for a traditional method of seed composition analysis. This study investigated the possibility of using near-infrared (NIR) hyperspectral imaging technology to determine the starch content in a single kernel corn seed. The hyperspectral images including embryo-up and embryo-down orientations of a corn seed were acquired with a range of 930-2500 nm. The characteristic spectrum of each corn seed was calculated by averaging the two sides' spectra. All spectra were preprocessed by the smoothing and derivative algorithm, and then, the characteristic wavelengths were selected by competitive adaptive reweighted sampling (CARS) method. The selected wavelengths were used as the inputs to develop partial least squares regression (PLSR) and nonlinear statistical data models with artificial neural networks (ANN) algorithm. The results indicated that the ANN prediction model based on Levenberg-Marquardt algorithm (LMA) was the optimal for starch content determination with correlation coefficient (Rp) of 0.96 and root mean square error of prediction (RMSEP) of 0.98 in prediction sets. Therefore, NIR hyperspectral imaging technology combined with appropriate chemometric analysis can be considered as a useful tool for starch content determination in corn seed at a kernel level. These results can provide a useful reference for rapid and non-destructive detection of other chemical composition in single corn seed.

Abstract:Plant potassium content (PKC) is a crucial indicator of crop potassium nutrient status and is vital in making informed fertilization decisions in the field. This study aims to enhance the accuracy of PKC estimation during key potato growth stages by using vegetation indices (VIs) and spatial structure features derived from UAV-based multispectral sensors. Specifically, the fraction of vegetation coverage (FVC), gray-level co-occurrence matrix texture, and multispectral VIs were extracted from multispectral images acquired at the potato tuber formation, tuber growth, and starch accumulation stages. Linear regression and stepwise multiple linear regression analyses were conducted to investigate how VIs, both individually and in combination with spatial structure features, affect potato PKC estimation. The findings lead to the following conclusions: (1) Estimating potato PKC using multispectral VIs is feasible but necessitates further enhancements in accuracy. (2) Augmenting VIs with either the FVC or texture features makes potato PKC estimation more accurate than when using single VIs. (3) Finally, integrating VIs with both the FVC and texture features improves the accuracy of potato PKC estimation, resulting in notable R 2 values of 0.63, 0.84, and 0.80 for the three fertility periods, respectively, with corresponding root mean square errors of 0.44%, 0.29%, and 0.25%. Overall, these results highlight the potential of integrating canopy spectral information and spatial-structure information obtained from multispectral sensors mounted on unmanned aerial vehicles for monitoring crop growth and assessing potassium nutrient status. These findings thus have significant implications for agricultural management.
Isolation and characterization of starch from light yellow, orange, and purple sweet potatoes

Abstract:Sweet potato is attracting increased research attention because of its high nutritional value (e.g., carotene, anthocyanin, and minerals) and the wide application of its starch in foods and nonfoods. Herein, eight Chinese sweet potato varieties were investigated in terms of the physicochemical properties of starches. The lightness values of the eight sweet potato starches were higher than 90, which was satisfactory for starch purity. The average molecular weight (MW) and amylopectin average chain length (ACL) of sweet potato starches ranged from 6.93 × 107 g/mol to 16.57 × 107 g/mol and from 21.85% to 23.00%, respectively. Su16 starch with low amylose content and a large amount of short chains exhibited low crystallinity and thermal properties. These results suggested that the molecular structure of amylose and amylopectin was the main influencing factor in determining sweet potato starch physicochemical properties. The swelling power and water solubility of the starches ranged within 20.14–30.51 g/g and 5.28%–11.71% at 95 °C, respectively. Regarding pasting properties, all the starch samples presented high peak viscosity (>5500 cP) and peak temperature (>78 °C), indicating that sweet potato starch can be used as a thickener. All eight sweet potatoes varieties showed great application potential in the food industry.

Abstract:(1) Background: To achieve the rapid, non-destructive detection of corn freshness and staleness for better use in the storage, processing and utilization of corn. (2) Methods: In this study, three varieties of corn were subjected to accelerated aging treatment to study the trend in fatty acid values of corn. The study focused on the use of hyperspectral imaging technology to collect information from corn samples with different aging levels. Spectral data were preprocessed by a convolutional smoothing derivative method (SG, SG1, SG2), derivative method (D1, D2), multiple scattering correction (MSC), and standard normal transform (SNV); the characteristic wavelengths were extracted by the competitive adaptive reweighting method (CARS) and successive projection algorithm (SPA); a neural network (BP) and random forest (RF) were utilized to establish a prediction model for the quantification of fatty acid values of corn. And, the distribution of fatty acid values was visualized based on fatty acid values under the corresponding optimal prediction model. (3) Results: With the prolongation of the aging time, all three varieties of corn showed an overall increasing trend. The fatty acid value of corn can be used as the most important index for characterizing the degree of aging of corn. SG2-SPA-RF was the quantitative prediction model for optimal fatty acid values of corn. The model extracted 31 wavelengths, only 12.11% of the total number of wavelengths, where the coefficient of determination RP2 of the test set was 0.9655 and the root mean square error (RMSE) was 3.6255. (4) Conclusions: This study can provide a reliable and effective new method for the rapid non-destructive testing of corn freshness.
