Application of edible coating made of sturgeon gelatin and Portulaca oleracea extract for improving the shelf life of fish sausages

Abstract:In the present study, edible coatings made of gelatin from the skin and waste of sturgeon and extract of Portulaca oleracea were used for fish sausages. The results showed that the extracted gelatin had a good solubility and could be used as a biopolymer for the fabrication of edible coatings. Then, the mixed solution of gelatin and extract were used to coat the fish sausage samples. The chemical, microbial, and sensory properties of the coated/uncoated fish sausages were studied during the storage. The results showed that the sausage samples coated with a gelatin solution (concentration of 3%) in the presence of 1.5% Portulaca oleracea extract had a better shelf life, microbial attributes, chemical properties, and sensory acceptance compared to other samples. In the case of lipid oxidation, the lowest thiobarbituric acid reactive substance (TBARS) value was related to the sample which was coated with 3% gelatin coating containing 1.5% of extract. The highest amount of TBARS at day 30 of storage was found with control sample which was not coated. These results suggested that the edible coating made of sturgeon skin gelatin and extract from Portulaca oleracea plant can be effectively used to improve the quality and shelf-life of different food products.
