Abstract:Abstract Historically, sugar cane and sugar beets were the two major food crops that have furnished extractable sucrose as a basic sweetener need of millions throughout the world. With the revolutionary advances in enzyme technology witnessed since 1967 on corn starch, a new sweetener development is emerging that has a potential to furnish the multitudes with a natural sweetener which for all practical purposes is equivalent to the product obtained upon hydrolysis of sucrose, namely, invert. This enzymatic innovation for the conversion of corn syrup to high fructose corn syrup, is closing the gap between sweeteners from beets and cane and a high fructose syrup or an invert produced not only from corn syrup, but from any agricultural food crop rich in starch such as wheat, rice, potato or tapioca. Sucrose, invert and high fructose syrup now converge to meet the demand in furnishing energy and sweetness to the millions throughout the world. Die wechselseitigen Beziehungen zwischen landwirtschaftlichen Rohstoffen für die Herstellung von Süßungsmitteln. Ursprünglich waren Zuckerrohr und Zuckerrübe die beiden hauptsächlichen landwirtschaftlichen Produkte, die für Millionen von Menschen auf der ganzen Welt extrahierbare Saccharose als Grundsüßmittel geliefert haben. Mit den umwälzenden Fortschritten auf dem Gebiet der Enzymtechnologie der Maisstärke seit 1967 setzte eine neue Entwicklung hinsichtlich der Süßmittel ein. Sie ermöglichte es, der Menschheit ein natürliches Süßmittel anzubieten, das praktisch die gleichen Anwendungsmöglichkeiten erlaubt wie Produkte, die durch Hydrolyse von Saccharose erhalten werden, also wie Invertzucker. Die erst durch den Einsatz von Enzymen möglich gewordene neue Entwicklung der Umwandlung von Glucosesirup in fructosehaltigen Sirup schließt die Lücke zwischen den Süßmitteln aus Zuckerrohr und Zuckerrübe und hoch‐fructosehaltigen Sirupen bzw. invertierten Produkten, deren Ausgangsmaterial nicht unbedingt Glucosesirup sein muß, sondern auch irgendein hoch‐stärkehaltiges landwirtschaftliches Erzeugnis sein kann, wie Weizen, Reis, Kartoffeln oder Tapioka. Saccharose, Invertzucker und Isosirupe sind gemeinsam in der Lage, den Bedarf von Millionen Menschen in der ganzen Welt an Kohlenhydraten ais Süßmittel und Energielieferant zu decken.
