Abstract:Abstract The current global food system has detrimental outcomes for global health, environmental conditions and social inclusion. A coherent vision of a desirable food system can guide a sustainable food system transformation and help to structure political processes and private decisions by quantifying potential benefits, facilitating debates about co-benefits and trade-offs, and identifying key measures for desirable change. Such a transformation requires integrating measures targeting human diets, livelihoods, biosphere integrity, and agricultural management. Here, we apply a global food and land system modeling framework to quantify the impacts of 23 food system measures by 2050. Our multi-criteria assessment shows that a food system transformation can improve outcomes for health, the environment, social inclusion, and the economy. All individual measures come with trade-offs, particularly those targeting agricultural management, while few trade-offs and multiple co-benefits are linked to dietary change measures. By combining measures in packages, trade-offs can be reduced and co-benefits enhanced. We show that a sustainable food system also requires a transformation of the overall economy to stop global warming, reduce absolute poverty, and create alternative employment options. Within the context of a cross-sectoral sustainable development pathway, the food system transformation improves 14 of our 15 outcome indicators.

Abstract:The Anthropocene, marked by human-induced climate change, necessitates urgent action to address climate goals and respect planetary boundaries. While sustainability research provides knowledge, the first challenge lies in communicating the findings in an adequate manner to the public and several stakeholders, such as economic and political actors. Therefore, this study explores the significance of science communication in sustainability science, focusing on a case study—the True Cost Accounting (TCA) campaign by the University of Greifswald, Technical Institute of Nuremberg, and German retailer PENNY. TCA herein serves as a transparency tool, economic incentive, and discussion basis for sustainable consumption. This study investigates consumer perceptions of ecological prices of foods through a face-to-face survey during the 2023 PENNY campaign, comparing results to an informational campaign carried out in 2021. Findings indicate a high awareness of the true cost campaign in 2023, with 50.8% of participants hearing about it. Consumers' willingness to pay true costs and potential behavior changes were explored. In comparison to results from the informational campaign of 2021, customers showed a decrease in this WTP when the true prices would actually impact their spending, indicating an attitude–behavior gap. In addition, a willingness to reduce the consumption of animal foods—if TCA was implemented—of 60.5% was determined, which suggests that TCA has the potential for sustainable behavior change. This study highlights factors that influence consumer attitudes and preferences regarding the inclusion of TCAs, such as environmental, social, and animal welfare costs. Customers' understanding of increased prices—like, in this case, the compensation for environmental and social costs—is an argument in favor of true prices. The results emphasize the need for differentiated scientific communication strategies to bridge knowledge and action gaps in sustainability science.

Abstract:Most climate mitigation scenarios point to a combination of GHG emission reductions and CO 2 removal for avoiding the most dangerous climate change impacts this century. The global food system is responsible for ~1/3 of GHG emissions and thus plays an important role in reaching emission targets. Consumers, technology innovation, industry, and agricultural practices offer various degrees of opportunity to reduce emissions and remove CO 2 . However, a question remains as to whether food system transformation can achieve net negative emissions (i.e., where GHG sinks exceed sources sector wide) and what the capacity of the different levers may be. We use a global food system model to explore the influence of consumer choice, climate-smart agro-industrial technologies, and food waste reductions for achieving net negative emissions for the year 2050. We analyze an array of scenarios under the conditions of full yield gap closures and caloric demands in a world with 10 billion people. Our results reveal a high-end capacity of 33 gigatonnes of net negative emissions per annum via complete food system transformation, which assumes full global deployment of behavioral-, management- and technology-based interventions. The most promising technologies for achieving net negative emissions include hydrogen-powered fertilizer production, livestock feeds, organic and inorganic soil amendments, agroforestry, and sustainable seafood harvesting practices. On the consumer side, adopting flexitarian diets cannot achieve full decarbonization of the food system but has the potential to increase the magnitude of net negative emissions when combined with technology scale-up. GHG reductions ascribed to a mixture of technology deployment and dietary shifts emerge for many different countries, with areas of high ruminant production and non-intensive agricultural systems showing the greatest per capita benefits. This analysis highlights potential for future food systems to achieve net negative emissions using multifaceted "cradle-to-grave" and "land-to-sea" emission reduction strategies that embrace emerging climate-smart agro-industrial technologies.

Abstract:The land use sector of agriculture, forestry, and Other land use (AFOLU) plays a central role in ambitions climate change mitigation efforts. Yet, mitigation policies in agriculture may be in conflict with food security related targets. Using a global agro economic model, we analyze the impacts on food prices under mitigation policies targeting either incentives for producers (e.g, through taxes) or consumer preferences (e.g., through education programs). Despite having a similar reduction, potential of 43-44% in 2100, the two types of policy instruments result in opposite outcomes for food prices. Incentive-based mitigation, such as protecting carbon-rich forests or adopting low-emission production techniques, increase land scarcity and production costs and thereby food prices. Preference-based mitigation, such as reduced household waste or lower consumption of animal-based products, decreases land scarcity, prevents emissions leakage, and,concentrates production on the most productive sites and Consequently lowers food prices. Whereas agricultural emissions are further abated in the combination of these mitigation measures, the synergy of strategies fails to substantially lower food prices. Additionally, we demonstrate that the efficiency of agricultural emission abatement is stable across a range of greenhouse-gas (GHG) tax levels, while resulting, food prices exhibit a disproportionally larger spread.

Abstract:True Cost Accounting (TCA) aims to assess positive and negative externalities in agri-food value chains by focusing on four capitals: produced, natural, human, and social. While produced capital is easily measured through market values, obtaining relevant data for measuring natural, human, and social capitals can be challenging. To address this challenge, this paper presents a case study around the production in Asia of three globally important edible plant oils: palm, rapeseed, and coconut. Results show that readily available methods and data from different types of Life Cycle Assessments (LCAs) can be integrated into the framework of TCA to quantify and monetize positive and negative externalities associated with the production and consumption of these oils and to analyze the tradeoffs involved in choosing among them. However, the use of LCA methods and data also entails significant assumptions and limitations that must be considered when evaluating their use in TCA. Specific results show that the environmental impacts of production are small in comparison to the potential nutritional health benefits of consuming one oil over another. This study provides a roadmap for conducting similar analyses, allowing for a greater understanding of often overlooked sustainability and nutritional issues of food items.

What is the real cost of our food? Implications for the environment, society and public health nutrition

Abstract:The current, globalised food system supplies 'cheap' food to a large proportion of the world's population, but with significant social, environmental and health costs that are poorly understood. The present paper examines the nature and extent of these costs for both rural and urban communities, by illustrating the financial pressures on food producers and manufacturers to produce cheap food, the disconnection people experience with how and where their food is produced, and the rise in obesity levels that plague the globe. The paper then proposes that community food systems may play an important role in mitigating the adverse environmental, economic and social effects of the dominant food system, by the use of more sustainable food production methods, the development of local economies and enabling closer connections between farmers and consumers. There are many opportunities for public health nutritionists to contribute to the local food system literature to ascertain whether these systems improve inequities, provide better access to healthy food and help stem the tide of rising global obesity levels. Public health nutritionists can play a key role in supporting people to become food citizens and to advocate for democratic and sustainable food systems.

Abstract:Purpose Manufacturing and service companies are likely to make a variety of costs possible. Environmental costs are one of those costs. Environmental performance is one of the most important factors in assessing a company’s success. For environmental accounting, companies need to work together as teams of system designers, chemists, engineers, production managers, operators, employees, purchasing circle and accountants (those who may have never worked together before). Design/methodology/approach Nowadays, most of the companies are facing environmental issues and are seeking an appropriate way to report and disclose the information to the public. The environmental pollution issue is among the most important problems of today’s human society. Therefore, this is very important to use environmental accounting as an attempt towards protecting the environment. Findings Green accounting is a type of accounting that attempts to factor environmental costs into the financial results of operations. Apart from answering the question whether the economy has performed sustainably during one or more accounting periods, green accounting indicators [green gross domestic product (GDP)] can be used in policy formulation and evaluation. Green GDP calculations can contribute to raise awareness for sustainability concerns among national governments/policy-makers, who tend to concentrate on their countries’ fast economic development. Practical implications Environmental accounting can be applied to large and small companies in various industries, as well as in manufacturing or service sectors. Environmental accounting can be applied on a large or a smaller scale in a systematic manner for the required bases. Social implications Environmental accounting requires the collection of information from all the groups. People of various groups need to talk to each other to achieve a common vision and understanding of environmental accounting and to realize this vision. Originality/value Undoubtedly, to establish an ideal system of environmental accounting in the country, accountants can become a powerful forearm of the government regarding economical and financial controls. To achieve this goal, environmental accounting objectives and tasks should be identified and defined in detail, and the standards, rules and criteria should be grounded and codified based on reasonable and practical principles.

Abstract:Affordability is often seen as a barrier to consuming sustainable diets. This study provides the first worldwide test of how retail food prices relate to empirically estimated environmental impacts and nutritional profile scores between and within food groups. We use prices for 811 retail food items commonly sold in 181 countries during 2011 and 2017, matched to estimated carbon and water footprints and nutritional profiles, to test whether healthier and more environmentally sustainable foods are more expensive between and within food groups. We find that within almost all groups, less expensive items have significantly lower carbon and water footprints. Associations are strongest for animal source foods, where each 10% lower price is associated with 20 grams lower CO2-equivalent carbon and 5 liters lower water footprint per 100kcal. Gradients between price and nutritional profile vary by food group, price range, and nutritional attribute. In contrast, lower-priced items have lower nutritional value in only some groups over some price ranges, and that relationship is sometimes reversed. These findings reveal opportunities to reduce financial and environmental costs of diets, contributing to transitions towards healthier, more environmentally sustainable food systems.

Abstract:Food prices have experienced unprecedented increases in recent times. Simultaneously, grocers are facing allegations of capitalizing on inflation to generate unjustifiable profits. Escalating expenses and a lack of transparency have engendered heightened consumer skepticism. This perceived presence of barriers and excessive profitability gives rise to ethical concerns. Our case study delves into the ethical landscape surrounding Canadian grocers, aiming to probe the public's demand for accountability. To comprehend the factors responsible for the transformation in consumer perception of Canadian grocers in 2022, we conducted an analysis utilizing data from consumers, corporate watchdogs, and industry sources. We extended the paradox perspective on corporate sustainability framework to include a historical aspect to use as our analytical lens. This study sheds light on the alterations in circumstances that have led Canadian consumers to question entire industries and accounting practices that were previously considered unproblematic. As a remedy, we recommend the establishment of a mandatory code of conduct for grocers and an enhancement in the transparency of financial reporting. Paradoxically, corporate profits may continue to grow when societal needs are no longer perceived as being neglected or, even worse, exploited.
Cost of the Diet: a method and software to calculate the lowest cost of meeting recommended intakes of energy and nutrients from local foods

Abstract:Background: When food is available, the main obstacle to access is usually economic: people may not be able to afford a nutritious diet, even if they know what foods to eat. The Cost of the Diet method and software was developed to apply linear programming to better understand the extent to which poverty may affect people's ability to meet their nutritional specifications. This paper describes the principles of the method; the mathematics underlying the linear programming; the parameters and assumptions on which the calculations are based; and then illustrates the output of the software using examples taken from assessments. Results: The software contains five databases: the energy and nutrient content of foods; the energy and nutrient specifications of individuals; predefined groups of individuals in typical households; the portion sizes of foods; and currency conversion factors. Data are collected during a market survey to calculate the average cost of foods per 100 g while focus group discussions are used to assess local dietary habits and preferences. These data are presented to a linear programming solver within the software which selects the least expensive combination of local foods for four standard diets that meet specifications for: energy only; energy and macronutrients; energy, macronutrients and micronutrients; and energy, macronutrients and micronutrients but with constraints on the amounts per meal that are consistent with typical dietary habits. Most parameters in the software can be modified by users to examine the potential impact of a wide range of theoretical interventions. The output summarises for each diet the costs, quantity and proportion of energy and nutrient specifications provided by all the foods selected for a given individual or household by day, week, season and year. When the cost is expressed as a percentage of income, the affordability of the diet can be estimated. Conclusions: The Cost of the Diet method and software could be used to inform programme design and behaviour change communication in the fields of nutrition, food security, livelihoods and social protection as well as to influence policies and advocacy debates on the financial cost of meeting energy and nutrient specifications.

Abstract:Four years after the EAT-Lancet landmark report, worldwide movements call for action to reorient food systems to healthy diets that respect planetary boundaries. Since dietary habits are inherently local and personal, any shift toward healthy and sustainable diets going against this identity will have an uphill road. Therefore, research should address the tension between the local and global nature of the biophysical (health, environment) and social dimensions (culture, economy). Advancing the food system transformation to healthy, sustainable diets transcends the personal control of engaging consumers. The challenge for science is to scale-up, to become more interdisciplinary, and to engage with policymakers and food system actors. This will provide the evidential basis to shift from the current narrative of price, convenience, and taste to one of health, sustainability, and equity. The breaches of planetary boundaries and the environmental and health costs of the food system can no longer be considered externalities. However, conflicting interests and traditions frustrate effective changes in the human-made food system. Public and private stakeholders must embrace social inclusiveness and include the role and accountability of all food system actors from the microlevel to the macrolevel. To achieve this food transformation, a new "social contract," led by governments, is needed to redefine the economic and regulatory power balance between consumers and (inter)national food system actors.

Abstract:Subject. This article analyzes the approaches to environmental cost accounting proposed by different researchers. Objectives. The article aims to systematize and summarize knowledge about the problems and opportunities of accounting for environmental costs at crop production enterprises, as well as develop recommendations for dealing with areas of concern of accounting. Methods. For the study, we used the methods of observation, synthesis and analysis, the dialectical approach, as well as accounting methods and their elements such as valuation, accounts and double entry, reporting, etc. Results. Based on the analysis of the possibilities of accounting for environmental costs in the conditions of modern automation, the article formulates the definition of environmental costs, which implies the possibility of influence of force majeure circumstances on the environmental component in the activities of the enterprise. It substantiates and proposes an approach to environmental cost accounting based on the allocation of current and capital expenditure items in financial accounting. Conclusions. In modern accounting programs, there is no need to use new accounts to summarize environmental costs. The introduction of an additional account leads to the division of costs between accounts, which contradicts the production accounting methodology implemented in accounting programs.

This practice is widespread for reporting 'scope 2' electricity emissions and has recently been proposed for both 'scope 1' (direct) and 'scope 3' (other value chain) emission sources. Abstract:Nowadays, the effects of human societies have increased on environment due to technological and industrial development. So environment variations could affect human beings like other animal species. Given the importance of environmental costs, one can consider them as a parts of final cost of products or services in business units , so failure to report these costs in financial statements cause to firstly that environmental costs remain hidden and unknown to the management and necessary actions to control them fail to do , and secondly that failure to report environmental costs as a parts of final cost would undermine the most important qualitative characteristic of accounting information namely their reliability. This environmental accounting facilitates environmental costs management and reducing costs through making the relationships between costs and their underlying activities. Researches in recent years led to the criticism about the framework of traditional financial reporting and its ability to provide a complete list of company activities and its accountability. Social and environmental reporting is a tool to account companies against their performance. The reports should provide impartial information which allows beneficiaries to provide a reliable estimation of their social and environmental performance.

Abstract:Social critics have taken aim at modern production agriculture using a common theme: many food, health, and environmental problems are explained by corporate farms, agribusinesses, and fast-food restaurants failing to account for the full costs of their actions. How accurate is this diagnosis? How feasible is the assumption that these externalities are most effectively mitigated via Pigovian taxes and subsidies? Drawing on my experiences at a National Institute of Medicine meeting on the subject, I seek to clarify the definition and nature of externalities and discuss situations in which public policy is most and least effective in efficiently making “hidden” costs of food visible.

Abstract:Concentration of power among transnational ‘Big Food’ companies has contributed to food systems that are unsustainable, unhealthy and inequitable for people and planet. Given these commercial determinants of health, if ‘food systems transformation’ is to be authentic—more than a passing narrative—then leveraging Big Food is paramount. To this end, researchers, practitioners and policy-makers are increasingly encouraged to engage with these powerful entities. However, given the conflicts of interest at stake, engagement relies on trust and transparency, that all stakeholders take responsibility for their actions and demonstrate commitment to do no harm. Given Big Food’s track record in influencing policy, shifting costs and responsibility for their harms—and while profit primarily drives business decision making—we question whether it is logical to expect trust. This analysis explores concepts of responsibility and trust in relation to food systems transformation involving public-private partnerships. Through short cautionary case studies—looking at the United Nations Food Systems Summit, and Big Food’s plastic burden—it argues that unless such companies take responsibility for their cross-cutting effects and earn authentic trust through demonstrably doing no harm, their participation in evidence generation and policy processes should be limited to responding to information requests and adhering to regulation. Any involvement in research agenda-setting or formulating policy solutions introduces conflicts of interest, legitimises corporate irresponsibility and jeopardises scientific integrity. Big Food has dynamism and power to address food system problems, but while it contributes to so many of these problems it should follow—not formulate—transformational evidence, policies and regulations.

Abstract:The food industry should evolve towards new business models which take into account the damage cost in decision making, considering the impact that its products generate on the natural and human environment. Hence, the present study aims to calculate the damage cost caused by the production of whole fresh (as average of potatoes, aubergines, and broccoli), and processed vegetables (fresh-cut and pre-cooked).

Abstract:The current energy prices do not include the environmental, social, and economic short and long-term external effects. There is a gap in the literature on the decision-making model for the energy transition. True Cost Accounting (TCA) is an accounting management model supporting the decision-making process. This study investigates the challenges and explores how big data, AI, or blockchain could ease the TCA calculation and indirectly contribute to the transition towards more sustainable energy production. The research question addressed is: How can IT help TCA applications in the energy sector in Europe? The study uses qualitative interpretive methodology and is performed in the Netherlands, Germany, and Poland. The findings indicate the technical feasibilities of a big data infrastructure to cope with TCA challenges. The study contributes to the literature by identifying the challenges in TCA application for energy production, showing the readiness potential for big data, AI, and blockchain to tackle them, revealing the need for cooperation between accounting and technical disciplines to enable the energy transition.
