Abstract:University life is a critical period for establishing healthy eating habits and attitudes. However, university students are at risk of developing poor eating habits due to various factors, including economic conditions, academic stress, and lack of information about nutritional concepts. Poor diet quality leads to malnutrition or overnutrition, increasing the risk of preventable diseases. Food environments on university campuses also play a significant role in shaping the dietary habits of students, with the availability of and accessibility to healthy food options being important factors influencing food choices and overall diet quality. Disordered eating habits and body dissatisfaction are prevalent among university students and can lead to eating disorders. Income and living arrangements also influence dietary habits, with low household income and living alone being associated with unhealthy eating habits. This study is a narrative review that aimed to address nutritional issues and eating behaviours, specifically among university students. We investigated the eating behaviours of university students, including their dietary patterns, food choices, and food environments. The objective of this review was to provide insights into the nutritional issues and eating behaviours of university students, with the aim of identifying target areas for intervention to improve the overall health and well-being among college students. University food environments need to be restructured to promote healthy eating, including the availability, accessibility, affordability, and labelling of healthy foods, and policies to limit the availability of unhealthy foods and drinks on campus.

The Association Between Food Insecurity and Dietary Outcomes in University Students: A Systematic Review

Abstract:Background: University students may experience a high prevalence of food insecurity. The impacts of food insecurity on dietary intake and meal patterns of students have not been fully researched. Objective: This systematic review aimed to examine the association between food insecurity and dietary outcomes among university students. Methods: Nine electronic databases and gray literature were searched from their inception to July 2020. Studies that reported dietary outcomes in both food-secure and -insecure students or the association between food insecurity and dietary outcomes among current students in tertiary education settings in any country were included. All study designs were eligible for inclusion, except qualitative studies. Two reviewers completed the screening, data extraction, and quality assessment independently. Study quality was assessed using the Joanna Briggs Institute appraisal tools. Results: Sixteen studies were included in the final qualitative synthesis of this review. Most studies were cross-sectional designs and of fair quality. The prevalence of food insecurity among university students ranged from 21% to 82% across studies. Lower intakes of healthy foods (eg, fruits, vegetables, and whole grains) and higher intakes of unhealthy foods (eg, fast foods, added sugars, and sugar-sweetened beverages) were observed in food-insecure students, and studies with the most representative samples of the student body found these trends. Some food-insecure students consumed breakfast and evening meals less frequently than food-secure students but the evidence was limited. Validated food security and dietary assessment tools were inconsistently used to assess diet quality among students with differing food security status. The heterogeneity of student sampling and data collection may contribute to inconsistent findings. Conclusion: Poorer dietary outcomes were found in university students with food insecurity compared with food-secure students, but statistical significance was only observed in a small number of studies. Future longitudinal studies using food security and dietary assessment tools validated in this population are recommended to confirm the observed associations between food insecurity and diet quality among university students.

University Students Suggest Solutions to Campus Food Insecurity: A Mixed Methods Study

Abstract:This study evaluated University students' experiences and suggested solutions to food insecurity (N = 16). A questionnaire survey measured students' socio-demography and food security status using Household Food Insecurity Access Scale (HFIAS). Focus group discussions assessed students' experiences and suggestions, grouped into themes. Half (50%) of the students were male, mean age was 25.1 years and 62% were food insecure. Food insecure students reported skipping meals, and grocery shopping infrequently. Students propose a campus farmers' market, cooking classes, online nutrition education, and financial literacy would address student resource management limitations. Revising financial aid, international study and work guidelines should address systemic gaps.

Abstract:Certain dietary habits may have an impact on mental health. Many studies have shown that diet affects how the body regulates mood by influencing the release of neurotransmitters, but there are conflicting results when it comes to young adults. The aim of the present study is to determine dietary patterns and its relationship with mental health status in among university students. This study was conducted in the form of a cross-sectional analytical observation at UiTM Perlis. A total of 362 students provided the data using two types of questionnaires. The Food Frequency Questionnaire (FFQ) was used to assess dietary patterns, and the General Health Questionnaire (GHQ-12) was used to assess mental health status. Results showed a high prevalence of irregular dietary patterns and mental health status in the sample. The Spearman correlation test revealed that there was no association between dietary habits and mental health status. Results also indicated that 71.3% of the students had a score below four, implying good mental health. However, 28.7% of the students were classified as having poor mental health. Our study highlights the irregularities in food intake among university students, most of whom had inadequate intakes of the recommended amounts. Therefore, the higher institution should perform studies on interventions to cope with changing dietary habits among students. However, their mental health portrayed status of good condition. This could be due to other factors that contribute to the occurrence of mental illness, including physiological, psychological, and social factors. These findings can be used by institutions to promote proper nutrition for this study population.

Abstract:Food insecurity (FI) among university students in the United States has been associated with poor mental wellbeing, but very little is known about the relationship between FI and mental wellbeing in the UK university population. Here we examined the prevalence of FI, determined potential drivers for it and its relationship with mental wellbeing and coping ability. Students studying at UK universities (n = 289) completed an online self‐reported questionnaire to obtain socio‐economic characteristics including financial status, FI status (Household Food Insecurity Access scale), mental wellbeing (Warwick‐Edinburgh Mental Wellbeing Scale) and coping ability (coping flexibility scale). Abstract:Abstract University students are at risk of experiencing mental health problems during the transition from home to university. This transition can also adversely affect their diet quality. This review aims to examine bidirectional associations from observational studies regarding the influence of diet quality on the mental health of university students, and vice versa. The databases PubMed, CINAHL, EMBASE, PsycINFO, The Cochrane Library and Web of Science were searched using relevant search terms. The searches were last updated on 15 July 2022. Majority of studies (36 out of 45) found that good diet quality of students was associated with better mental health in terms of depression, anxiety, stress and overall general mental well-being. Moreover, majority of studies (19 out of 23) found that stress and anxiety of students were associated with poorer diet quality. The effect sizes observed were generally small–moderate. Healthy diets of students have been associated with better mental health in terms of depression, anxiety, stress or other mental health issues. Stress experienced by university students has been associated with unhealthy diets. There are implications for health education research, as interventions to improve diet quality at the university level could reduce mental health issues; additionally, interventions to support students under stress may lead to healthier dietary habits when living on campuses. Randomized controlled trials and intervention studies are needed to further investigate these implications.

Abstract:Food insecurity among college students has become a growing concern, with reports documenting its prevalence for over a decade. As the demographics of university and college students change, with more first-generation, nontraditional, and minority students, the risk of food insecurity is heightened. This viewpoint contends that food security is an essential basic need among college students, and when left unmet, it significantly impacts their well-being, resulting in an increased risk of poor academic performance or departure from higher education before degree completion. To combat this issue, universities and colleges must develop and sustain food security initiatives and programs, with administrators playing a critical role. We highlight key areas in which institutional administration can take actionable steps to dedicate the necessary support and resources to proposed and ongoing programs, foster an equitable campus culture, and be advocates for policies at the state and federal level that promote students' food security.

Abstract:Eating habits are important determinants of health. Young adults who have recently transitioned to university life experience stress and lack of time, which are major risk factors for poor eating habits. This study's objectives were to identify and compare eating habits between students at health and non-health colleges at Northern Border University (NBU), Saudi Arabia and to determine the relationship between students' eating habits and their sociodemographic, lifestyle, and psychological factors. This comparative cross-section study was conducted on 480 students equally from health and non-health colleges at NBU from March to April 2023. A pre-designed electronic questionnaire was used to collect data on students' sociodemographic characteristics, eating habits, and diet-related psychological factors. Statistical analyses were carried out using STATA/SE version 11.2 for Windows. Unhealthy eating habits were reported by 44.6% and 41.3% of students at health and non-health colleges, respectively. Most students had irregular meals, skipped breakfast, ate fast food frequently, and consumed insufficient amounts of vegetables, fruits, and water. Parental separation, living away from family predisposed to unhealthy eating habits. Being 21–23 years old, playing sports, and high body mass index were linked to healthy eating habits. Psychological factors such as overeating until the stomach hurts and eating to feel happy were associated with unhealthy eating habits. Unhealthy eating habits were prevalent among students at NBU irrespective of the type of study. Thus, implementing initiatives to promote nutrition and healthy eating habits within the university environment is crucial for health promotion and well-being among students.

Abstract:Objective: To benchmark the university food environment and explore students' experiences with food insecurity and healthy eating in order to inform interventions to improve access and affordability of healthy foods for university students. Design: A food environment audit was conducted on the university campus using the Uni-Food tool from April to May 2022 and was comprised of three main components, university systems and governance, campus facilities and environment, and food retail outlets. A qualitative study design was also used to conduct focus groups and semi-structured interviews with students to explore key themes regarding their experiences with food insecurity and healthy eating. Setting: Macquarie University, Australia. Participants: For the food environment audit 24 retail outlets on campus and for the qualitative component 29 domestic and international students enrolled at Macquarie University. Results: The university only scored 27% in total for all components in the food environment audit. The results showed the need for better governance and leadership of the food environment. The qualitative component suggested that the main barriers to accessing healthy foods were related to availability, pricing, and knowledge of healthy foods. Future intervention ideas included free fruits and vegetables, food relief, discounts, improved self-catering facilities, education, and increased healthy food outlets. Conclusions: Improving governance measures related to healthy eating on campus are a core priority to strengthen the food environment and students identified pricing and availability as key issues. These findings will inform effective and feasible interventions to improve food security and healthy eating on campus.

Results: A substantial proportion of respondents experienced FIS, with 75.5% reporting low or very low food security. Students experiencing FIS had significantly higher prevalence of suicidal ideation, plans, and attempts compared to food-secure students (18.6% vs. 2.8%, 8.7% vs. 0.8%, and 5.4% vs. 0.3%, respectively; all p<0.001). In addition, students who have personal debt and participate in food assistance programs had higher risk of suicidal behaviors. Conclusions: This study sheds light on the association between FIS and suicidal behaviors among university students. Targeted mental health screening, evaluation, and interventions within universities may be crucial for addressing the needs of high-risk students facing FIS.

Abstract:Over the past decade, the impact of low food security on student well-being and academic performance has become a growing concern at institutions of higher education across the U.S. This mixed methods study adds to the growing body of evidence on the association between student socio-demographic and economic characteristics and food security. An online survey covering food access, student well-being, and housing security was sent to 35,337 undergraduate and graduate students at a large southeastern land grant university. A total of 2,116 complete responses were received; a 6% response rate. The survey responses also included 176 written statements by students. The survey found that 16% of both undergraduate and graduate students had low or very low food security, as defined by a modified USDA food security measure. The socio-demographic and economic characteristics that were linked to a higher likelihood of low food security included: having a GPA of less than 3.0, having a disability, being an international student, being a first-generation student, being a transfer student, going into debt to pay for food, being a Black or African American student, having poor mental health, having uncertain living arrangements, and having no medical insurance. Recommendations for enhancing student access to food, housing, and mental health services are discussed.

Food insecurity during COVID-19: An Australian university experience

Abstract:The aim of this study was to describe the prevalence, severity, coping strategies and precipitating factors of food insecurity in university students in a large multi-campus Australian university during the COVID-19 lockdown in 2020, in context of providing information to inform institutional support. This was a cross-sectional analysis which was part of a larger university-led research project, the Thrive@Home study conducted at Monash University during the COVID-19 pandemic. The main outcome measures included: Sociodemographic characteristics, PROMIS anxiety, PROMIS depression and the six-item US Department of Agriculture Household Food Security Survey Module. All variables were reported according to the four levels of food security status (high (H), marginal (M), low (L) and very low (VL)). Chi-squared tests were used to compare all categorical variables including demographic, mental health and food security status. A multivariable regression was conducted between food security status and mental health variables. Overall, n = 1315 students were included in the analysis. Of which, 5% were classified as having VL food security, 13% L, 14% M and 68% H. As food security worsened the likelihood of being unemployed looking for work, living alone and deteriorating physical health, diet quality and mental health increased. As food security status deteriorated the prevalence of needing to ask family or friends for food, shopping at multiple outlets for discounts, accessing emergency food relief, subsidised meals and financial assistance from organisations increased (p < 0.002). In regression models adjusting for covariates, depression (b (95%CI): VL = 7.2(4.1-10.3), L = 3.7(1.7-5.7), M = 2.0(0.1-3.8)) and anxiety (VL = 7.4(4.5-10.4), L = 3.5(1.5-5.4) and M = 2.0(0.3-3.8)) were positively associated with worsening food security. Food insecurity during COVID-19 was associated with worsening mental health. This paper provides targets for future university-led initiatives to promote student food security and supporting better access to physical and mental health services.

Abstract:'Nutritional transition' usually entails a move towards a high-energy diet and lower levels of practice with detrimental effects. The pilot research examined whether parent education works at the home level in a small group of University employees to affect food adoptions and child nutrition. Three groups of people with different degrees of skills and education participated. In all homes, weighed food records were used to determine the per capita intake. Nutrient calculators were used to determining the nutrients. Children were classified into underweight, overweight, and normal weight using BMI scores. A total of 178 individuals were present in the research, which provided us with food log data. There were 67 children from 30 households (32 (47.8%) were girls and 35 (52.2%) were males). The age of children with median age is 5.52 ± 2.89 years. Research revealed that 43.3% of children were underweight and 25.4% were overweight by using their BMI scores. Energy consumption was higher in families with overweight children compared to families with underweight and normal children. Underweight kids come from impoverished families. The per capita consumption of the whole family in children was strongly linked with the BMI. Obesity has risen among families with medium incomes belonging to Class 2—probably in families that move up from poverty. The nutritional condition of children was largely linked with motherly education.

Abstract:Food insecurity is a significant public health problem worldwide and critical to mental health. There is a complex relationship between food security and mental health. We carried out a narrative review study aiming to address how food insecurity impacts mental wellbeing by focusing on the mental health repercussions of food insecurity, recognizing its pivotal role in attaining Sustainable Development Goals 2 (on hunger) and 3 (on enhancing global wellbeing). A comprehensive search was conducted on PubMed and Google Scholar, incorporating Google searches for pertinent reports and policy documents. To address these questions, we emphasized and elucidated the interconnectedness between food security and mental health. The review shows that food security and mental health share a profound relationship influenced by multifaceted factors like socioeconomic conditions, access to nutritious food, and societal inequalities. We then provide recommendations for integrating food security into mental health strategies based on the insights and conclusions drawn. Strategies ranging from sustainable farming practices to urban agriculture initiatives and digital mental health services demonstrate avenues for enhancing food safety and mental wellbeing. This highlights the need for collaborative interdisciplinary efforts and systemic reforms to address these interconnected challenges.

Abstract:BACKGROUND: Two recent studies conducted on young College Arab Women showed a trend towards over nutrition. It is well known that good eating habits adopted early in life not only improve health and control obesity in the youthful years but also promote healthy eating behaviours in later life.OBJECTIVE: To investigate the dietary habits of young college women and identify specific areas for nutrition education.METHODS: A self-administered questionnaire containing 20 items related to qualitative dietary history was distributed to all the college (King Faisal University, Dammam) women residing in the hostel during a one-week period in April 1998.RESULT: Out of a total of 56 women, 50.7% frequently missed out on breakfast and lunch. To satisfy their state of hunger, frequent snacking with deserts/carbohydrate-rich food items (21.4%) and consumption of regular cola drinks (32.1%) was common. Fast food rich in fat and calories from restaurants was popular among a majority (98.2%) of the students. On the other hand, there was a deficient intake of protective foods and nutrients for repair, maintenance and growth, such as fruits (73.2%), vegetables (85.6%), milk and milk products (66.1%) and protein-rich foods (82.1%).CONCLUSION: To decrease the risk of malnutrition among young college women, there is a need to target them for nutrition education and adoption of healthy eating practices within the context of a healthy life style.
Exploring the Relationship Between Food Insecurity and Mental Health in an Undergraduate Student Population

Abstract:This quantitative study examined the link between food insecurity and mental health concerns among a sample of 1,229 undergraduate students at a large, public university. Using logistic regression, we found that depression and perceived stress were significantly associated with both short- and long-term food insecurity. African American students, students with concerns about paying for college, and LGBTQ students were also more likely to be food insecure. Implications for student affairs practitioners are explored.

Abstract:Food insecurity is a major social determinant of health and an assessment of how it may impact college students’ mental health is imperative, as well as differential associations by self-identified gender. A cross-sectional survey was used among college students of a mid-size minority-serving institution with a final sample size of 302 participants aged 18 years or above. Descriptive, bivariate, and multivariable regressions were conducted, by gender, to assess the role of food insecurity (United States Department of Agriculture (USDA) six-item questionnaire), on mental health outcomes (Kessler-6 scale and self-perception). All the statistical analyses were conducted in SPSS version 24 (IBM, Corp.; Armonk, NY, USA) with an alpha less than 0.05 used to denote significance. Among those with food insecurity, the odds of reporting psychological distress (odds ratio (OR) = 3.645, p < 0.05) and an average to very poor self-perceived mental health status (OR = 2.687, p <0.05) were higher compared to their food-secure counterparts, with the results consistent in a gender-specific analysis as well. Compared to men, however, women had higher odds of psychological distress (OR = 2.280, p < 0.05), as well as reporting average to very poor self-perceived mental health statuses (OR = 2.700, p < 0.05). Among women, any alcohol use in the past 12 months (OR = 2.505, p < 0.05) and a low self-perceived physical health status (OR = 3.601, p < 0.05) were associated with an average to very poor self-perceived mental health status. Among men, a low perceived physical health status was associated with higher odds of psychological distress (OR = 3.477, p < 0.05). The results of our study highlight that food insecurity should be considered a social determinant of mental health wellbeing. In addition, gender-specific trends in mental health highlight the need for targeted interventions for prevention and treatment.
