Abstract:Baijiu is one of the important representatives of Chinese liquor culture. It plays an irreplaceable role in banquets and is often used as a gift in Chinese society. Baijiu production and the number of baijiu companies in the past ten years show that the market is saturated and shrinking. On the other hand, comparing the revenue and profits between listed baijiu companies and the entire industry, it can be found that the baijiu industry has obvious monopoly characteristics and structural prosperity. These two phenomena can be divided into political and economic reasons. Politically, the Chinese government promulgated restrictions on government spending and family planning policies, which directly reduced the consumption group of baijiu, leading to the shrinkage of the baijiu industry. Economically, China's rapid development has increased people's disposable income, and people began to care more about their health and pursue high-end baijiu, leading to a monopoly. To broaden the market, the baijiu industry can consider e-commerce channels and international expansion.

Abstract:Based on the background of China's new economic development and the new development pattern of domestic and international double cycle, this paper systematically sorts out the relevant liquor industries and Chinese literature on the formation of "new development pattern with domestic great cycle as the main body and the domestic and international double cycle promoting each other", and systematically analyzes the paths and countermeasures for promoting the liquor industry into the new development pattern of double cycle from the perspective of the industry chain of the liquor industry. Abstract:With the acceleration of economic integration, the development of Internet platform, big data technology, and the elimination of “liquor production line” from the restricted category, the development of Sichuan liquor industry is bound to usher in a new trend. This paper analyzes the current situation of Sichuan liquor industry development, and then based on Porter diamond theory, analyzes the competitiveness of Sichuan liquor industry, on this basis, combined with the Haken synergy theory, constructs an evaluation model to measure the competitiveness of Sichuan liquor industry. This will lay a foundation for the evaluation of the competitiveness of Sichuan liquor industry and the path to enhance the competitiveness of Sichuan liquor industry in the future, so as to promote the high-quality and sustainable development of Sichuan liquor industry. Dynamic diversification of bacterial functional groups in the Baiyunbian liquor stacking fermentation process

Abstract:The stacking fermentation (SF) process is a bridge between Daqu making and alcoholic fermentation in the pits. Revealing the dynamic diversification of the microbial functional groups in this process is of vital importance to unfold the mechanism of Baiyunbian liquor flavor, and improve the quantity and production of the traditional Chinese liquor fermentation process. A total of 142 strains of bacteria were isolated from the Baiyunbian liquor SF process, which were divided into 17 species and two subspecies. These isolated bacteria could hydrolyze the main carbon resources such as starch, protein, cellulose, lignin, and fat as well as produce acetic acid, lactic acid, or butyric acid. Our results indicated that the dynamic variations of the bacterial functional groups revealed their specific functions in the Baiyunbian SF process. Interestingly, although the bacterial bio-diversity decreased during the SF process, the total bacterial biomass increased at the end, in which the biomass of the starch degrading bacteria was dominate throughout the whole SF process. Among the identified bacteria, B.licheniformis and B.subtilis contributed the most biomass and functionalities during the Baiyunbian SF process, playing important roles in the formation of the Maotai-flavor. Our study revealed the bio-diversity of the microbial functional groups in the Baiyunbian liquor SF process and the mechanism of the Baiyunbian liquor flavor formation, providing valuable guidance to improve the traditional Chinese liquor fermentation process. It could also act as an attempt to turn the present manufacturing process to standardized procedures.

Abstract:The liquor industry has rebounded in recent years, especially in the high-end liquor market competition (represented by Kweichou Moutai and others) has gradually stabilized. However, many liquor companies are still facing multiple challenges due to the macro environment and industry environment. Therefore, this paper explored the financial situation of representative enterprises in the high-end liquor industry, selecting three listed high-end liquor companies as the research sample and conducting factor analysis based on their financial report data from 2019 to 2022 to rank the performance of the enterprises, focusing on the competitiveness issues of the industry leader Kweichou Moutai. According to the anlaysis, Kweichou Moutai had a significant advantage in profitability. Conversely, Moutai's growth ability was a shortcoming that needed to be focused on. This paper offers an in-depth analysis of Kweichou Moutai's weaker growth capability so as to provide a reference for each liquor company to improve its market competitiveness and the healthy development of the liquor industry.

Abstract:In the post-epidemic period, the liquor industry has entered a new round of adjustment cycle. This paper takes the average financial data of the annual reports of 18 listed companies in the liquor industry from 2021-2021-2022 as sample data. Through S PSS23.0 data analysis software, the factor analysis method selects the corresponding public factor, and the investment value of listed companies in liquor industry is analyzed according to the comprehensive evaluation of each public factor and weight. According to the scores of various factors, the profitability of Kweichow Moutai is far higher than that of other companies, the development capacity of Laobaigan liquor industry is at the forefront of the industry, and the operating capacity of Swellfun is strong, with high resource utilization efficiency, and Yanghe Stock's solvency and capital utilization efficiency are strong. According to the comprehensive score research, it is found that among the listed companies in the liquor industry with strong profitability, their business ability and solvency are generally weak. At the same time, according to the comprehensive score, the top three enterprises are Shanxi Fenjiu, Luzhou Laojiao and Shide Wine Industry.

Abstract:The Sichuan government has issued a series of policies and measures to ensure the high-quality development of spirits enterprises, based on the concept of high-quality development of the spirits industry. Luzhou Laojiao Distillery, as one of the representative enterprises of Sichuan spirits, has also undergone a number of reforms and breakthroughs. Based on the financial performance of Luzhou Laojiao Distillery over the last five years and using DuPont analysis, this paper studies the changes in financial performance of Luzhou Laojiao Distillery after reform, evaluates its development, and proposes reform suggestions to further promote the high-quality development of Luzhou Laojiao Distillery and provide some reference for enterprises in the same industry.

Abstract:Focusing on the liquor industry, this study takes Kweichow Moutai Liquor Co., LTD., Shanxi Xinghuacun Fen Distillery Co., LTD., and Sichuan Tuopai Shed Liquor Co., LTD., as the objects, and provides targeted investment suggestions for different types of investors by analyzing risk, profitability, valuation and other indicators. The results show that Kweichow Moutai has an excellent performance in market value and ROA, which is suitable for index investment and ratio analysis investors. Shanxi Xinghuacun Fen Distillery attracts the attention of income investors with its high dividend rate; Sichuan Tuopai Shede Wine's low PE Ratio may attract value investors. Depending on the type of investment, we provide investment advice for index investors, ratio analysis investors, income investors, value investors, PEG investors, discounted cash flow investors, momentum investors, insider trading investors and share buyback investors. The results and analysis of this study can help investors more accurately evaluate the investment value of different liquor companies to meet their specific investment objectives and risk preferences.

Abstract:<p>Chinese traditional liquor, a major type of global distilled spirits, offers a unique flavor system acquired across thousands of years of development. Owing to the various raw brewing materials, types of koji, fermentation vessels, and processes used during liquor production, significant differences can occur in the content of flavor chemical components, such as esters, alcohols, aromatics, ketones, nitrogen compounds, acids, and aldehydes in the resulting liquor. Therefore, the liquor can be characterized on the basis of four basic flavors: sauce‐, strong‐, light‐, and rice‐aroma, and eight derivative flavors: feng‐, sesame‐, chi‐, te‐, mixed‐, laobaigan‐, herbal‐, and fuyu‐aroma. In this review, we describe the production and development process of Chinese traditional liquor in detail; summarize the flavor types, flavor chemical composition characteristics, and research progress related to this liquor; and discuss the influence of trace chemical components on liquor flavor, with the aim of laying a theoretical foundation for stabilizing the quality and increasing the yield of traditional liquor.</p>

Abstract:Chinese liquor is a conventional fermented alcoholic beverage that plays an important role in East Asian traditional culture. Each person who lives in or wants to come to East Asia is familiar with Kweichow Moutai. Moreover, not only the adults know it, but also the small children do not feel strange with the brand of Kweichow Moutai, although they may not know what it is. There are so many different brands for liquor, why is the Kweichow Moutai so famous as the Chinese national liquor. This will raise questions, why Kweichow Moutai can reach such a height, both price and status, which has become the theme of research. Digging the reason why Kweichow Moutai can be successful can help other companies to learn experience from Kweichow Moutai so that they can improve themself. In order to explore this problem, this article analyzes the whole economical environment of China, the company's financial data and the decision made by Kweichow Moutai using Microsoft's PowerBI tool to perform a visual analysis of data. Data for this research were selected from the Tushare website. liquor as a special industry which has high level requirements for the process and resources makes each company have a chance to have their own special aspect to attract the customers. With the shock of the whole liquor industry around 2013 year, the veteran company Wuliangye lost control of the liquor industry due to their exposed problems. At the same time, Kweichow Moutai focuses on several main famous products and keeps them at a luxury level. The healthy financial data and clear decisions make Kweichow Moutai become Chinese national liquor.

Abstract:Focusing on the development quality of enterprises in the liquor industry, this paper selects 16 representative listed enterprises, and uses the cross-sectional data in 2021 to score and classify enterprises through factor analysis and cluster analysis. From the perspectives of the industry-level and firm-level development ability, this paper further investigates the development status of kweichow Moutai Co., LTD., a leading enterprise, and uses the relative valuation method to explore its intrinsic value. With the rapid development of the financial industry, the stock market as an important investment channel has attracted extensive attention, and the research on stock forecasting has also made remarkable achievements. In this paper, BP neural network and PCA-BP neural network models are respectively used to predict the next day's closing price of the time series data, and the advantages and disadvantages of the two models are compared respectively. So as to put forward innovative prediction methods for stock price trend prediction.

Abstract:China's modern wine industry began in 1892 when Changyu Wine Company was founded. After more than 130 years of development, China has formed 11 major wine regions with their own characteristics. The wine grape varieties of China are divided into three categories: international mainstream varieties, Chinese indigenous varieties, and varieties that can be used for both winemaking and table grape purposes. There are various types of wine produced in China, including sparkling wine, dry white, dry red, rose, ice wine, aromatized wine, and fortified wine. There are more than 1,680 wineries in China, whose production modes are categorized as "Chateau & Chateau wines" mode and "winery & brand wines" mode. The number of Chateau enterprises accounts for 80% of the total, and is developing fast. China's wine industry management organizations mainly include Ministry (departments, bureaus) of Agriculture, and the Ministry (departments, bureaus) of Industry and Information Technology. And the industry service organizations mainly include the China Alcoholic Drinks Association (Wine Branch), China National Food Industry Association (Wine Branch), and Grape and Wine Association or Wine Industry Development Service Center established by provinces and cities. Up to now, 12 sub-wine regions in China have obtained the certification of geographical indication protection. Chinese wine consuming markets are divided into five groups, with huge consumption potential, and the activity of consumer market remains the top of Asia. China's wine industry integrates the three industries of grape growing, wine making and wine consumption, tourism, and cultural promotion. Such growth is in accordance with the advancement of agriculture, rural areas, and ecological protection, exhibiting sustainable development with vigor and vitality.

Abstract:The development of standardized techniques for Chinese liquor severely lags behind compared with the long history of Chinese liquor. Some recommendations were put forward for the development of liquor standardized techniques: 1. all basic units in relative liquor standards should be uniform; 2. national standards of nutritional liquor should be added; 3. the definition of aging liquor should be elaborated clearly; 4. the terms of "the addition of non-self-fermented substances is prohibited" should be abolished; 5. the indexes of storage period should be added in the standards.
