Underlying the Effect of Soybean Oil Concentration on the Gelling Properties of Myofibrillar Protein-Based Emulsion Gels: Perspective on Interfacial Adsorption, Rheological Properties and Protein Conformation

Abstract:This work was designed to systematically investigate the effect of soybean oil concentration (0-25%, w/w) on the gelling properties of myofibrillar protein (MP) -based emulsion gels perspective on interfacial adsorption, rheological properties and protein conformation. The results showed that the gel strength and water holding capability of MP-based emulsion gels significantly increased with the increase of soybean oil concentration and reached the most superior gelling properties at 20% soybean oil (P < 0.05). Scanning electron microscopy also indicated that the oil droplets were involved in the formation of the gel network of MP as copolymers or fillers, which enhanced the gel properties of MP-based emulsion gels. Moreover, the emulsifying activity index, emulsifying stability and particle size of MP emulsion increased in an oil concentration dependent manner, and interfacial adsorbed protein content reached the maximum value at 20% soybean oil (P < 0.05). The presence of soybean oil greatly improved the storage modulus (G') with the greatest elevation achieved at a level of 20%, while higher soybean oil concentration (> 25%) decreased the G' during thermal gelation. Protein conformation pointed out that the appropriate soybean oil concentration contributed to the transition of the secondary structure of MP from α-helix to β-sheet structure and enhance the endogenous fluorescence intensity and surface hydrophobicity of MP in MP-based emulsion gels (P < 0.05). Hydrogen bonds and the hydrophobic interactions were the dominant forces to form and maintain the of MP-based emulsion gels. Our results provide a theoretical basis for the development of MP-based emulsion gel products with wide applications in the food field.
