Abstract:Pectin has emerged as the third-largest food hydrocolloid by revenue, and is a crucial natural source of polysaccharides in the food, biological, and medical industries. Since 2019, the market and research landscape surrounding pectin have undergone major transformations. Projections indicate substantial growth in the global pectin market, with estimates suggesting an increase from one billion USD in 2019 to approximately two billion USD by 2026. The utilization of pectins as emulsifiers, particularly in the food industry, has garnered interest. Despite the burgeoning research on pectin-stabilized emulsions, a comprehensive and contemporary compilation elucidating the emulsifying behavior of pectins over the last five years is notably absent. This review evaluates recent research (2019-2023) on understanding the emulsification behavior of pectins. It covers approaches aimed at enhancing the emulsification properties of pectin, the multiscale aspects underlying pectin emulsification processes (spanning macroscale, mesoscale, microscale, and molecular scale), and emerging applications of pectin with emulsification potential. Recent strategies to bolster pectin emulsification include exploring natural sources, innovative extraction and modification methodologies, and synergistic combinations with natural constituents. Emulsification characterization of pectin has shifted towards multi-dimensional approaches, incorporating investigations at the macroscale, mesoscale, microscale, and molecular scale. An recent trend involves leveraging the emulsification benefits of pectin in multifunctional food applications, such as developing carriers for active substance delivery and stabilizers for acidified milk beverages. Consequently, harnessing the emulsifying capacity of pectin holds immense promise for advancing the use of both new and traditional natural products, thereby propelling progress within the food industry.
