Abstract:Deterioration and mildewing caused by moisture of wheat seeds are serious problems that should be addressed for safe storage. In this work, simulated storage facilities were employed to preserve wheat seeds with different moisture contents (16%, 18%, 20% and 22%). The temperature changes in grain bulk, the mildewing situation, and the biochemical properties of wheat seeds were analyzed. Microstructures of endosperm and embryos were observed under electron microscopy. The results showed that with the increase of moisture content in wheat seeds, the deterioration and mildewing became serious. In the storage of wheat seeds with high moisture content, serious damage to the internal structure of endosperm and embryo was observed. Besides, the temperature increase and the fungal growth in grain bulk are attributed to the moisture of wheat seeds. Particularly, with the nutrient loss and cell damage, germination efficiency decreased with the extension of the storage period and the biochemical properties of wheat seeds are negatively impacted. Based on the results of this study, to prevent the deterioration and mildewing of wheat seeds and protect the biochemical properties in long-term storage, moisture should be controlled during the storage.

Abstract:Compared with polished rice,brown rice has a higher nutritional value,which contains a variety of nutrients,such as selenium,oryzanol,cholesterol,γ-aminobutyric acid and so on.As people's pursuit of nutritional value in food,brown rice is gradually accepted by the public.However,brown rice has a poor storage ability,and its various qualities will change significantly when the storage time and conditions change.This review summarized the changes of biochemical indexes of brown rice during storage,such as the oxidation of protein and lipid,the increasing of fatty acid value,the increasing content of insoluble amylose,the decreasing content of amylopectin,the intensifying smell of rice and the darken color and so on.What's more,the changes of rice edible quality showed a decrease in viscosity,a deterioration in taste and impure fragrance.Finally,this article can provide references for the storage of brown rice.

Abstract:Mycotoxin contamination in grain has been an ongoing concern in the world. Wheat, as a staple crop in China, is particularly notable for its mycotoxin contamination. The main mycotoxins in wheat include deoxynivalenol (DON) and its derivates, zearalenone (ZEN) and aflatoxin B1 (AFB1). After harvest, drying process is an effective technique and a necessary step to ensure the long-term safe storage of wheat. In this study, the moisture content, the concentrations of total fungi and main mycotoxins in post-harvest wheat of three wheat growing areas in the North China Plain were examined, and the effect of different drying methods on wheat quality was evaluated. The results showed that 87.5% of wheat samples were simultaneously contaminated with two or more mycotoxins. Due to the pre-harvest heavy rainfall, the moisture content, the levels of total fungi and mycotoxins in wheat samples of Liaocheng city were significantly higher compared to other regions. Moreover, the effects of different drying methods on the starch gelatinization and viscosity properties of wheat were investigated. The results showed that both natural air drying and dryer drying altered the crystal structure within starch particles and affected the gelatinization and viscosity properties of wheat starch. However, there is no significant difference between the wheat samples treated with two drying methods.

Abstract:Wheat (Triticum aestivum L.) seeds were stored in simulated conditions of four regions for 300 d. Changes of biochemical properties and electron microscope pictures demonstrated that unfavorable storage conditions caused serious internal deterioration and promoted the accumulation of unhealthy products in wheat seeds. Two hypotheses were proposed to explain the internal deterioration during storage. This work confirmed that the unfavorable storage conditions damaged enzymatic scavenging systems. As a result, without an effective scavenging system, serious internal deterioration occurred in wheat seeds. Atmospheric composition was adjusted to evaluate the potential of applying nitrogen atmosphere control in wheat storage. The results showed that 98% nitrogen gas in atmosphere effectively protected scavenging systems in wheat seeds and alleviate the internal deterioration.

Abstract:Seeds dried to moisture contents of 7.1% to 1.2% were stored at 35℃,room temperature, 15℃ and 5℃ for 1～3 years. Moderate drying during storage could improve the longevity of onion seeds, but drying to extremely low moisture contents resulted in reduced seed longevity. The optimum moisture content for onion seeds during storage depended on temperature. The optimum moisture content in which onion seeds were stored at 35℃,room temperature, 15℃ and 5℃ were 3.4%, 3.4 %～4.5%, 4.5%～5.1%, respectively (Fig.1). Excessive drying (MC≤2.2%)decreased seed longevity(Fig.1). During room temperature storage, the MDA and H 2 O 2 contents, the production rate of O -· 2and LOX activity in moderately dried seeds (MC 3.4%) were lower than those in the control (MC 7.1%) and excessively dried seeds (MC 1.2%). Activities of catalase, ascorbate peroxidase and superoxide dismutase in moderately dried seeds (MC 3.4%) were higher than those in the control (MC 7.1%) and excessively dried seeds (MC 1.2%)(Figs.2,3). These results show that aging results in a general deterioration of seed cells or organization, and that these changes can be slowed by drying seeds to moisture contents as low as 3.4%.

Abstract:Rice seeds with different moisture contents were stored in simulated storage facilities at different temperatures for 300 days. Measurement of biochemical properties and the observation of embryo and endosperm structures showed that high temperature and moisture content accelerated the deterioration in rice seeds and damaged the cell structures. Two hypotheses were proposed to explain the mechanisms of deterioration in rice seeds. The study of scavenging systems supported that scavenging system performed well and external storage conditions partly contributed to the deterioration in the early stage while the self-protection metabolism was damaged to some extent with the malfunction of scavenging systems in the later stage of storage. In the practice, it is an energy-saving way to prevent deterioration of rice seeds by moisture removal and staged low-temperature storage.
